Calcofluor homogeneity

The method of Carlsberg has for goal to appreciate the disintegration and the homogeneity of malts by evidencing of the beta-glucanes with the help of a fluorochrome calcofluor that fixes itself on these. The scale of values is very variable and depends of :
- the species (OH6R or OP2R)
- the variety

The limits are between: 80-98 for the modification 60-80 for homogeneity.
By means of an UV lamp and through a yellow filter, the parts :
- non disintegrated of the endosperme = fluorescence yellow/greenish
- disintegrated =fluorescence brown/orange.
