No stranger to Austin’s beer community, St. Elmo Brewing Co. (St. Elmo) Founders,Bryan Winslow and Tim Bullock, began their career at Austin Beerworks in 2012. As Lead Brewer and Bar Manager, Winslow and Bullock helped Austin Beerworks win notoriety, including: gold medal at the 2013 Great AmericanBeer Festival (GABF) for Black Thunder schwarzbier, bronze medal at the 2014 World Beer Cup for Black Thunder and silver medal at the 2014 GABF for the Fire Eagle IPA as well as Austin BeerGuide’s Best Brewery Tour/Tasting Room in 2014.
“I had, not-so-secretly, been planning my own brewery since I started at Austin Beerworks. I decided from day one to learn every single aspect about how beer is made,” said Winslow. “It wasn’t until about 2013 that I started to get an idea about what I wanted to do in Austin. The St. Elmo neighborhood was the goal from the beginning. It is so unique and ripe with opportunity.”
St. Elmo boasts a spacious beer hall for indoor seating, a15 barrel in-house brewing system, and a 22 ft. bar handmade by the owners. The brewery also plans to host live music and food pairings with onsite food truck, Soursop. Owned by Chef Teddy Bricker, Soursop’s menu serves a diverse selection of Southeast Asian-inspired dishes, intended to accompany St. Elmo’s beer menu. The brewery and food truck will be open six days a week: Tuesday –Thursday 4pm -11pm, Friday 4pm-12am, Sat 11-12am and Sun 12-10pm. Closed Mondays.
St. Elmo’s menu will include three constant brews with rotating selections. The year-round menu will include Carl, a Kölsch-style ale, Chico, an American pale ale, and Angus, a dry stout. At opening, the brewery will also have an American IPA named Slater, a hefe-barley named Dampf, and a German IPA named Jan. Other unnamed rotating beer styles will include kettle sours, saisons, lagers, and more. All beverages will be made in house and will be rotated based on availability and demand. In addition to beer, St. Elmo will serve coffee from a rotating list of roasters, Wholly Water, St. Elmo’s house-made mineral water, as well as house-made soda.
“It’s been a long, amazing road and we can’t believe the day to open our brewery is finally here. For two dudes who love beer, this brewery is our opportunity to surprise the Austin beer community with new brew styles and recipes that engage the community,” said Bullock. “In addition to continually brewing new beers, we’re also planning to host a variety of events that include music, storytelling and brewer panels. The opportunities to support Austin’s creative community are endless and we’re thrilled to participate!”
St.Elmo’s grand opening party will be held on Saturday, Dec. 3rd and will include live music, screen printing with exclusive t-shirt designs, and a special menu from Soursop.
