USA, SD: Severance Brewing Company to launch in Sioux Falls in less than a month
The doors to Severance Brewing Company will be open to Sioux Falls in less than a month, the Sioux Falls Argus Leader reported on July 3.
The new brewing company is set to open its brewery and taproom on Aug. 2 inside The Cascade, the apartment complex on Phillips Avenue across from the Levitt Shell inside Falls Park.
“It’s been a long time in the making,” said owner and co-founder Mark Stavenger. We’ve been working on it for almost two years now so we’re ready.”
Stavenger said the team is still planning the specifics of their opening, such as food trucks or catering, but they plan to have 11 beers on tap, along with cold-brew coffee and dry-hop infused waters and lemonade for non-drinkers and designated drivers.
Two of those beers include the Monster Cookie Stout — an oatmeal stout with the hints of peanut butter, chocolate and brown sugar — and a hazy, fruitier New England IPA.
Construction on Severance Brewing began April 1. Today, Stavenger said they’re installing countertops and fermenting six of the beers that will be on tap on opening day.
