USA, MN: Bricksworth Brewing getting ready to open in Burnsville
Burnsville is getting a new brew pub from Cooper Johnson, the son of St. Paul’s BlackStack Brewing owners Scott Johnson and Shawne Murphy-Johnson, TwinCities.com reported on October 22.
Bricksworth Brewing will be located in a business park adjacent to the Burnsville Transit Center and just up the street from the suburb’s Heart of the City development.
Cooper Johnson, who has been head of operations at the St. Paul brewery since its 2017 opening, said he has lots of family in the south metro suburb who were pining for more locally brewed beer. It’s not just his family who would like to drink beer closer to home, either.
“If you work behind the bar at BlackStack on a weekend, every other patron is from Burnsville, Eagan, Apple Valley,” Johnson said.
The brew pub will brew its own beer, of course, everything from IPAs, which BlackStack is known for, to lighter and barrel-aged beers. Since it’s a brew pub, which means they can’t distribute outside the taproom, they’ll also have guest taps and a full bar, including a cocktail program from Matt Theison, who works for BlackStack and has worked in the past with Bittercube and other companies.
A lunch and dinner menu will focus on Detroit-style pizza, which is usually square with a crisp, thick, focaccia-like crust.
Johnson said he can’t yet reveal the identity of the head brewer of the chef for Bricksworth, but both are well-known in the industry.
The 200-seat space will feature a 10-barrel brewhouse that will be designed by architect Aaron Wittkamper, who designed the Tattersall Distilling cocktail room and the taproom at Wild Mind Artisan Ales. The plan is to eventually add outdoor seating, as well.
