USA, MN: Bricksworth Beer Co. sets an opening date
Bricksworth Beer Co. in Burnsville has set an opening date, kind of, TwinCities.com reported on September 29.
Owner Cooper Johnson (his parents own BlackStack Brewing) said there’s been a delay in getting approval for selling beer (a key person in the city of Burnsville was on a long vacation when they applied), but they’re ready to start offering food.
So, late next week, they’ll roll out a take-out only menu of Detroit-style pizzas, wings and salads. As soon as they can, they’ll sell crowlers of their house-made beer as well.
Chef Angelo Pennacchio, who was the owner of recently closed Bar Luchador in Minneapolis, is heading the kitchen. Pennacchio told us that although he loves tacos, as “an Italian guy from Chicago,” pizza is definitely in his wheelhouse.
Cooper nabbed Steve Snyder, formerly of Fair State, to be the head brewer at Bricksworth. There will be a wide variety of beers, with an emphasis on lagers.
The brewery itself is huge, with a capacity for about 400 during normal times, and because they have high-risk staff members, Johnson said they’re committed to waiting out the pandemic before fully opening.
