How good is the presence of yeast for dry hopping?


ABSTRACT
A presentation at the Young Scientist Symposium described brewing trials and dry hopping with yeast present versus yeast removed. The US researchers found that the presence of yeast was advantageous in this instance as the method of dry hop removal was by centrifugation and the presence of yeast was found to have several benefits on the operation of the centrifuge but also for the flavour stability of the beer. The researchers also found that with the removal of yeast cells, measurable quantities of myrcene with an effect on the aroma and flavor of the beer were removed.

Brewery news USA & Canada: Chicago’s Goose Island craft beer brands to be available in Ontario
Goose Island Brewery, acquired a couple of years ago by AB InBev, is making its first foray into Ontario with a little help from Labatt, National Post reported on April, 15.

Thanks to a tie-up between Goose Island and Anheuser-Busch InBev’s Labatt Breweries division Ontarians will get their first taste of the label’s Vintage Ales collection this spring in the form of Sofie and Matilda, two Belgian-style ales that will be available at select LCBO locations beginning in early May, on a “permanent” basis.

Having seen the explosion of small-batch craft brewers in recent years in the province, as well as its global competitors Molson-Coors gobble up craft brewers such as Creemore Springs and Granville Island, Labatt is looking to carve out its own niche by piggybacking on the established reputation of the Goose Island brand in the craft beer world.

In addition to the two Belgian-style ales, Labatt will also be offering a limited quantity of Pepe Nero, a farmhouse ale brewed with black peppercorns, and Pere Jaques, both styled after Belgian Dubbels. They come in the 765 ml format.


Brewery news Canada, AB: Alberta beermakers ask for changes in the local beer tax policy
A group of small-scale brewers in Alberta are pressing the province to close beer tax loopholes they say are putting them at a competitive disadvantage, CBC News reported on April, 15.

All small-scale brewers’ beers sold in Alberta qualify for the same tax breaks, regardless of whether they are produced in province or not.

This makes it difficult for local brewers to compete, says Alley Kat Brewery co-owner Neil Herbst.

“Because of the way the system works [here], it doesn’t really make economic sense to set up in Alberta,” he said.

“You’re better off to set up in B.C., better off to set up in Quebec — and sell into to Alberta because you get the same rate as if you lived here.”

But it doesn’t go both ways, says Herbst.

Most other provinces have policies in place to encourage the growth of local breweries, says Herbst — but no such legislation currently exists in Alberta.

As a result, it actually costs him more if he wants to sell his company’s beer outside of the province.

He says he’d like to see the playing field levelled.

Thomas Lukaszuk, Alberta’s minister of Enterprise and Advanced Education, is currently conducting a review of the issue.

Brewery news USA, NC: Foothills Brewing to increase production by 72%
Foothills Brewing is expanding the Southeast reach of its craft beers through a major production expansion - buying four 200-barrel fermentation vessels, Winston-Salem Journal reported on April, 12.

The company, based in Winston-Salem, said that the expansion eventually will increase its production by 72 percent, as well as allow it to use its existing 100-barrel vessels for new flavor development.

The company received two of the 23-foot tall stainless steel vessels. The other two are scheduled for delivery in early May. The vessels are being placed in Foothills’ 50,000-square-foot brewing facility in south Winston-Salem.

Foothills spokesman Ray Goodrich declined to say how much the company paid for the vessels.

The expansion will enable Foothills to brew up to 40,000 barrels annually compared with just more than 13,000 barrels now.

“We need this equipment to keep up with demand for Foothills beer,” said Jamie Bartholomaus, company president and brewmaster. The company plans to expand its market in the Carolinas, as well as push north to Richmond and northern Virginia and as far west as Nashville, Tenn.

Brewery news USA, CA: Karl Strauss Brewing beer sales up 30% in the first quarter of 2013
The Brewers Association released its annual list of the Top 50 craft breweries based on 2012 beer sales volume. Karl Strauss Brewing Company was ranked #39 on the list, moving up from #44 in 2011, beerpulse.com reported on April, 15.

Karl Strauss has achieved this ranking with sole distribution in California, while most breweries listed are available in multiple states. “Our approach to growth is to penetrate our local market and provide the freshest beer possible to craft beer fans across California,” says Matt Rattner, President and Co-founder, Karl Strauss Brewing Company. “There are so many people in California who still don’t know about craft beer and we look forward to exposing them to our brand.”

Karl Strauss is keeping up its tremendous growth momentum in 2013 with beer sales up 30% in the first quarter. This far outpaces the craft industry average of 15% volume growth in 2012 and puts Karl Strauss on a pathway to reach more than 60,000 barrels in 2013. Brewery news USA, MO: Urban Chestnut Brewing Co. to open second brewery
Two-year-old Urban Chestnut Brewing Co. plans to open a second brewery in St. Louis that will quadruple its current brewing capacity and give it the largest footprint of any St. Louis-area craft brewery, stltoday.com reported on April, 15.

Clayton-based real estate firm Green Street bought the 75,000-square-foot building last month and will lease it to Urban Chestnut. The brewery had been working with Green Street for more than a year to find an expansion property.

Brewery owners David Wolfe and Florian Kuplent will present the project to the Forest Park Southeast Development Committee at a meeting on April, 23. They said they have gotten positive feedback from 17th Ward Alderman Joe Roddy and members of Park Central Development, the 17th Ward’s community development corporation.

“We’re really excited about it, and the next step will be to see what the neighborhood has to say,” said Chris Colizza, Park Central’s neighborhood planner. “To me, it seems like a slam-dunk. It would be a win for the commercial district and the neighborhood at large.”

If all goes according to plan, work will begin next month, and the new brewery and pub will open in early 2014. The redevelopment is expected to cost about $10 mln.

Ninkasi Brewing Company announced on April, 16 the release of Sterling Pils, a German-style pilsner, to its line-up of 12-ounce offerings.

As the next installment of its Prismatic Lager Series, this is the first time Sterling Pils will be available in both bottles and on draft throughout all of its distribution areas.

“Sterling Pils is a Ninkasi twist on the Northern German-style lager in which we employ traditional techniques with North American ingredients,” explains Jamie Floyd, Ninkasi founding brewer. “We are excited to release our third Prismatic Lager Series brew, continuing a tradition of thirst-quenching, drinkable beers for all occasions.”

The Prismatic Lager Series, established in 2011 with the release of Ninkasi’s Helles Belles, was created to highlight Ninkasi offerings that are Northwest embellishments of traditional lager styles. Sterling Pils is no exception.

Founded in 2006 by Jamie Floyd and Nikos Ridge, Ninkasi Brewing Company continues to grow from its first batch of Total Domination IPA, to a 50-barrel brewing system located in Eugene, Oregon. Ninkasi’s Flagship Series beers include Total Domination IPA, Tricerahops Double IPA, Believer Double Red, Oatis Oatmeal Stout, and Vanilla Oatis Oatmeal Stout, and are sold throughout Oregon, Washington, Idaho, Alaska, California, Montana, and British Columbia.


Brewery news USA, HI: Maui Brewing Company and Lost Abbey release collaborative beer
Maui Brewing Company recently collaborated with Lost Abbey, a brewery located in San Marcos, California known for its Belgian-inspired beers, mauinow.com reported on April, 15.

Together they have incorporated local Maui-grown lemongrass to create Lemongrass Saison, a 5.5% ABV beer.

This first limited release of 2013 will be available this month in 12 oz. cans and draft.

In total, approximately 500 barrels will be produced. The company plans to can 400 barrels’ worth and make the rest available on draft.

“All market areas where Maui Brewing Company is distributed will receive product but specific allocations will be based on sales,” explained brewery founder Garrett Marrero.

“We have always wanted to can a saison. Working with Lost Abbey really helped put us on the right path to build a great recipe for the style.”

Lemongrass is a popular spring seasoning and Marrero felt it would accentuate the traditional saison character. “The citrusy notes play well into the style. We also wanted to find a locally raised ingredient to showcase.”

The lemongrass came from a local farmer using traditional Polynesian permaculture farming methods to sustainably grow food on lands once depleted by pineapple plantations. A total of 150 pounds of lemongrass was used for the project.

Brewery news USA, MI: Unruly Brewing Co. to open in June in downtown Muskegon
Unruly Brewing Co. is beginning to take shape in the Russell Block Market in downtown Muskegon and owners hope to be open sometime in June, mlive.com reported on April, 12.

Equipment is being installed in the lower level of the historic building undergoing renovation, said co-owner Jeff Jacobson. Hopes are for a June opening of the downtown craft-beer microbrewery, but the business will be open for sure by Muskegon Bike Time in July, he said.

“We are making progress and moving along in bringing craft beer to Muskegon,” said Jacobson, a Muskegon business attorney for Parmenter O’Toole. “We think this brewery will be a downtown destination and help bring tourism and many more businesses downtown.”

Unruly isn’t expected to be the only downtown Muskegon microbrewery but it should be the community’s first. Also in the planning stage is the Pigeon Hill Brewing Co.

Rumors continue to float around town about a third and possibly a fourth Muskegon-area microbrewery wanting to establish a location, but no formal announcement has been made. Meanwhile, earlier this year the Fetch Brewing Co. announced plans for downtown Whitehall.

Big Rock Brewery announced the release of the latest instalment in the Alchemist Edition series of limited edition one-off beers, Canadian Beer News reported on April, 16.

Erratic Stone-Fired Ale is a “modern interpretation of a medieval classic”.

Erratic Stone-Fired Ale was released on April, 15 in a limited run of 3,300 swing-top 750 ml bottles, and will be available at select retail outlets in Alberta while supplies last.

A Melbourne brewery seeking to revive historic beers is taking on beverage giant Carlton and United Breweries (CUB) over the trademark of more than 50 beer labels, ABC News reported on April, 15.

A two-day hearing into the matter began in Melbourne on Tuesday, April, 16.

Thunder Road Brewing Company is hoping to remake many of Australia's historic and forgotten beers.

It says CUB, which is part of South African-owned Foster's, no longer uses the historic labels and should not be able to retain the trademarks.

Thunder Road chief executive Philip Withers says consumers should have the right to drink the labels because they represent Australia's rich beer history.

"We claim they've actually been hoarding these trademarks, they've been banking these trademarks, and that's in order to maintain their domination of the Australian brewing industry," Mr Withers said.

"There's some great examples or regional labels, for example Richmond, Richmond Lager and the actual name Richmond, that was a brewery that was shut down soon after it was sold and bought by CUB in the 1960s.

Brewery news Ireland: Diageo to close its state-of-the-art plant in Waterford
Diageo has announced that it intends to pull out of its Waterford city facility ending hundreds of years of brewing on the site, The Irish Times reported on April, 11.

Guinness will close its plant by the end of the year with the loss of 16 full-time and six support staff.

The plant makes Guinness flavour essence (GFE), a liquid concentrate made from barley, which is used in all Guinness brewed worldwide.

Though parent company Diageo said the plant was under review, the closure of the operation still came as a shock to the workers involved.

Diageo invested €40 million in the brewery in 2004 and it remains a state-of-the-art facility.

The company is now looking to consolidate its brewing operations in an expanded facility in St. James’ Gate.

Siptu representative Terry Bryan said the workers were particularly shocked that the plant is closing at the end of this year.

When Diageo announced that it was closing its Dundalk and Kilkenny facilities, the lead in time was almost five years.

He said that the workers did not intend to take the proposed closure as a “fait accompli” and would be making the case for it to remain open.

Whisky news South Africa & UK: Burn Stewart Distillers sold to South Africa’s Distell
Distell has acquired Scotch whisky firm Burn Stewart Distillers from CL World Brands and Angostura Limited for ZAR2.2 bln (US$244 mln).

The deal, announced on April, 15 gives the South African company ownership of Burn Stewart's single malt whisky distilleries, a bottling hall and its marketing and distribution operations. All Burn Stewart whisky stocks currently in maturation also transfer to Distell.

The three distilleries are:

Bunnahabhain, on Islay, which makes Burn Stewart's flagship single malt of the same name;

Tobermory, the only distillery on the Isle of Mull, which produces Tobermory and Ledaig single malts;

Deanston Distillery near Stirling, where Scottish Leader, the top blended Scotch in its category in Taiwan, is produced.

“Our acquisition of Burn Stewart is a very significant development for Distell from a strategic perspective, but also given the rich and proud history and heritage of the brands involved," said Distell MD Jan Scannell. "This gives us an outstanding foundation from which to build, while cherishing their individual traditions.”

The deal follows a JV established in 2007 between Distell and Burn Stewart in which the two parties co-owned and marketed three Scotch whiskies – Bunnahabhain, Black Bottle and Scottish Leader - in sub-Saharan Africa.

Barley news UK: New spring barley growers urged to treat their crops as if they were destined for malting
New spring barley growers are being urged to treat their crops as if they were destined for malting and to take any premium as a bonus, Farmers’ Weekly reported on April, 16.

Growers are advised to get nitrogen fertiliser on as early as possible and aim for malting as there is little yield downside if the crop ends up in the feed bin.

The area of spring barley is set to soar to the highest level since the late 1980s, after many growers failed to drill all their winter crops in the wet autumn.

Most spring barley varieties are malting ones, so as long as nitrogen is applied early many crops could make malting with no yield penalty.

"Treat it as a malting crop and if you get a premium then that is a bonus," Tim Mayhew, agronomy services manager at farming group Velcourt, is quoted as saying.

His experience of growing malting barley in southern England is that all nitrogen needs to be applied by the end of the first week of April, and his crops always go for malting.

Brewery news North Korea: Beer demand outstrips supply but brewing approval from authorities may just never come
Setting up a brewery in North Korea seemed like a good idea to Harry Kim and his Chinese friends two years ago. Everyone likes beer, even in one of the world's most closed and least understood countries, they reckoned.

Kim and his partners even got the beer flowing after workers strapped equipment onto a truck in the Chinese border town of Tumen and drove it to the North Korean coastal city of Chongjin. Chinese engineers taught the locals how to brew. City officials loved the taste, Harry Kim was quoted as saying by Reuters on April, 12.

But the small Chinese-North Korean venture ran aground within months after failing to get final approval from authorities in Pyongyang.

Kim's experience is an illustration of both the challenge and the potential of doing business in North Korea, which has grabbed global attention in recent weeks with its threats to wage nuclear war on South Korea and the United States.

"It wasn't rejected. We just waited. The central government didn't come and say 'no', but the documents were just never issued and so we eventually gave up," said Kim, a Chinese national of Korean descent living in Tumen in China's northeastern Jilin province.

Brewery news Malawi: Carlsberg Malawi hikes prices by an average of 20%
Carlsberg Malawi has confirmed it has adjusted prices for beer and soft drinks by an average of 20 percent, Nyasa Times reported on April, 15.

With the new prices, the cost of 300 millilitre Carlsberg Green is now pegged at $0.7 (K300); while the 640 millilitre bottle is now selling at $ 1.13 (K470).

The brands of Carlsberg Special Brew and Stout are selling at $ 0.8 (K320) from $ 0.7 (K270).

Carlsberg Malawi corporate communications officer Towela Pilling attributed the price increases to “ a number of variables, including raw material costs, commodity price cycles, transportation, freight costs (fuel cost), exchange rates and the general inflation outlook.”

The brewer said they cannot completely rule out price adjustments in the course of time.

Economic observers say the price increase would impact on inflationary pressures.

Malawi inflation is hovering around 35 percent, according to National Statistics Office in Zomba.
