How to efficiently dry hop?


ABSTRACT
A work presented at the Young Scientist Symposium was looking into the different methodologies of dry hopping in the US. In comparing different methods these researchers found that dry hopping with pellets (compared to cone hops) yielded in a better aroma extraction but also higher polyphenol values. It was also found that stirring increases the aroma extraction compared to static dry hopping (even with very long contact time). The concentration of selected marker compounds, as linalool or geraniol, did not increase further after approximately 6hrs. So dry hopping can perhaps be accomplished much faster than generally believed?

Brewery news USA, OH: AB InBev upset with Ohio lawmakers
Anheuser-Busch InBev, the world’s largest brewer, says it was blindsided by Ohio lawmakers who approved an amendment “in the space of four hours” that will prohibit breweries from buying wholesale distributorships in the future, Dayton Daily News reported on April, 24.

The beer giant is now publicly pleading with legislative leaders to reverse course or even take the unusual step of asking Gov. John Kasich to veto substitute Senate Bill 48.

AB InBev North American President Luiz Edmond said if the bill becomes law, it will violate the Ohio Constitution, reverse 30 years of established law, hurt the state’s reputation and favor one business group over another.

“To make matters worse, the legislation was passed in complete violation of normal legislative procedure, and outside the boundaries of basic fairness and respect for a corporate employer in your state,” Edmond wrote to Senate President Keith Faber, R-Celina, and House Speaker William Batchelder, R-Medina.

AB InBev runs the nation’s fourth largest brewery in Columbus and employs more than 700 workers in Ohio.

“If this is not fixed, this legislation will have a direct and immediate impact on our future investments in the state,” Edmond warned.

Brewery news USA: Heineken brings Mexican Indio beer to the US market
Heineken USA Inc. is introducing another Mexican beer to the Phoenix, Tucson and Las Vegas markets, bizjournals.com reported on April, 22.

Heineken is bringing Indio beer to the Southwest markets after a U.S. launch of the Mexican-brewed darker ale in Texas, Southern California and Chicago last year.

Indio is brewed by Heineken-owned Cuauhtémoc-Moctezuma Brewery in Mexico. The Monterrey-based brewery also produces Mexican brands such as Dos Equis, Tecate, Bohemia, Sol and Carta Blanca.

Heineken executives are marketing Indio to U.S. Hispanics in their 20s. They identify their target demographic as bi-cultural millennials who are into music and art and blend their American and Latino cultures.

“One of the reasons why we brought Indio into the U.S. last year was that we saw a strong connection between the brand’s consumers in Mexico and adult bi-cultural millennials in this country who are passionate about alternative art and music,” said Felix Palau, vice president of marketing for Indio.

The Mexican beer brand was first brewed in 1893.


Brewery news USA, MI: Greenbush Brewing Co. to triple production by the end of 2013
The founders of Greenbush Brewing Co. never expected to grow as fast as they are. Greenbush is on track to more than triple its production by the end of 2013, with 13,000 barrels, mlive.com reported on April, 22.

Last year, the brewery put out about 4,000 barrels.

“Our growth over the last 23 months has been like nothing we'd ever expected,” said owner Jill Sites. “We had no idea our taproom would be as popular as it is. We obviously needed to add seating in the first year. But then, our brewing needs quadrupled, and then tripled on top of that, and you need to keep growing. And in order to keep growing in a small space, you eventually have to add what little amount of space you can find and manage, which is what we've been doing.”

The brewery is currently expanding for the fourth time in less than two years.

Greenbush added 1,500 square feet to its 3,000-square-foot building for a fermentation room, a 15 barrel brew house and additional seating space. The kitchen improvements should be completed by mid-May.

Brewery news USA, OR: 10 Barrel Brewing Company to open in downtown Boise
10 Barrel Brewing Company - founded in Bend, Oregon, is finally ready to open their pub in downtown Boise, ktvb.com reported on April, 21.

Co-owner Garrett Wales says his company is about simplicity and beer. “Just nice and simple and clean,” he said. “Just make it about the beer.”

“We want people to feel like you are walking into a brewery that has a restaurant in it, not a restaurant that brews beer,” he said.

Wales said the company started in 2006 with a small ten barrel brewing system. “And (we) just really grew organically, very slow and just started off selling beer to our friends that owned bars,” Wales said.

“(We) had our eyes on Boise pretty much the whole time,” recalls Wales.

10 Barrel opened their Bend pub in 2010 and soon after, work started on Boise. Although, they were already distributing their beer to the Boise market, they ran into hurdles with state law when it came time to finally open the Boise pub.

“There was some legislative issues as far as statutes on the books and the interpretation of those, I guess you could say,” explained Wales.

Brewery news Canada, BC: Granville Island Brewing to release three limited edition beers
Granville Island Brewing announced release details for three limited edition beers – one a new beer to launch a new series, the second a replacement for an older beer, and the third a returning favourite, Canadian Beer News reported on April, 22.

Already available is Cloak & Dagger Cascadian Dark Ale, the previously announced first release in the new Black Notebook Series. Named for the black notebook used by brewmaster Vern Lambourne to record ideas and recipes, the series will feature small-batch beers brewed at the original GIB location on Granville Island.

Following next Monday April 29th is Ginja Ninja Ginger Beer, a new seasonal beer that replaces the Ginger Beer previously available in the GIB Limited Release Series. While the older brand was an ale, this new one is a lager.

Also coming soon is this year’s edition of Imperial IPA, an annual limited release beer that has been amped up slightly from previous versions, rising from 8.2% to 8.6% abv.


Brewery news USA, OH: Great Lakes Brewing and Market Garden Brewery to release collaborative beer
Great Lakes Brewing Co. and Market Garden Brewery are merging forces for a collaborative effort, cleveland.com reported on April, 23.

Market Garden has developed an ESB called "2", while Great Lakes is crafting an altbier called "5". The brewers then merged parts of both recipes for "25th Street Pale Ale".

ESB means Extra Special Bitter, a British style that is not overly hoppy or alcoholic. Altbier is German in origin ("alt" means "old"), maltier and fairly low in alcohol.

The 25 is significant for both the street cutting through the area - West 25th - as well as the anniversary Great Lakes is marking this year.

The beers will be available on draft Friday, May 10.


Brewery news USA, NC: Hi-Wire Brewing to open in downtown Asheville in June
Downtown Asheville is about to get another new craft brewery with the June opening of Hi-Wire Brewing, citizen-times.com reported on April, 2013.

Hi-Wire has purchased the equipment and leased the site of the old Craggie Brewing Co., which closed last year. The brewery is owned by Adam Charnack, Chris Frosaker and Matt Kiger. “We wanted to share our love of craft with the people of Asheville,” said Charnack.

The brewery will open with both draft and 12-ounce bottles. Luke Holgate, who previously worked at Craggie, will brew for Hi-Wire. “We are going to let (Holgate) stand out as much as he can,” said Kiger.

With a circus motif in its logo, Hi-Wire will offer four-year round beers: Prime Time Pale Ale, Hi-Pitch IPA, Bed of Nails Brown Ale and a year-round pilsner lager, Hi-Wire Lager. They will also offer seasonals, starting with a hefeweizen.

Hi-Wire will be the 13th craft brewery in Buncombe County.


Brewery news USA, ID: MickDuff’s Brewing Company to expand
MickDuff’s Brewing Company announced on April, 23 the expansion of the brewery in the spring and early summer of 2013.

The plan involves taking over the lease of what is the current Pend d’Oreille Winery starting June, 1 and moving their current 7-barrel brew house to the production space.

The expansion allows many things. First, brewery operations will more than double in the first year of being at their new location. The increase in production means the pub will hopefully never be out of brews and distribution to outside markets will start immediately. MickDuff’s will not be bottling or canning for the first year of production but plans to service restaurants and bars with kegs of their award winning ales.

“It is our hopes that fans and craft beer drinkers in Coeur d’Alene and Spokane, plus many other local regional locations, will be able to have our brews on tap as early as this summer,” said Duffy Mahoney, owner of MickDuff’s Brewing Co. “Growth and change was always something we hoped would come and we are excited to be able to expand after being in business for more than seven years.”

Walkerville Brewery is getting set to release a new beer that pays tribute to “all independent musicians, artists, businesses, and free spirits alike”, Canadian Beer News reported on April, 22.

Walkerville Indie Pale Ale is a 6.3% abv and 55 IBU unfiltered ale.

A launch party for Indie Pale Ale will take place at the brewery this Wednesday April 24th.


Brewery news Canada, ON: Church-Key Brewing releases St. George’s New Nut Brown Ale
Church-Key Brewing announced the release of the latest installment in the Heavyweight Series of limited edition beers, this one marking this week’s feast day of St. George, Canadian Beer News reported on April, 22.

As with all Heavyweight releases, St. George’s Nut Brown Ale will be available in 650 ml bottles at the Church-Key retail store, and on tap in select bars and pubs in Ontario.


Brewery news USA, NC: Foothills Brewing celebrates 100th anniversary of the merging of the towns of Winston and Salem with the release of Hundred Foot
Foothills Brewing said it will introduce a limited-supply beer, Hundred Foot, which celebrates the 100th anniversary of the merging of the towns of Winston and Salem, Winston – Salem Journal reported on April, 22.

The merger was effective May 9, 1913.

The beer will be available at most of the city’s centennial events, at Foothills’ downtown Winston-Salem pub and in limited release 22-ounce bottles at selected retail establishments.

“We’re thrilled that the city wanted us to be a part of their celebration,” said Jamie Bartholomaus, president and brewmaster of Foothills. “This community has embraced us ever since we opened our doors, so to be recognized as an integral part of this city and this historic event is something we’re extremely proud of.”

Mayor Allen Joines said that since Old Salem had a brewery, “it seems appropriate that we should celebrate our 100th birthday with a locally-brewed craft beer.”


Brewery news Canada, BC: Vancouver Island Brewery partners with Surfrider Vancouver Island
Vancouver Island Brewery announced a partnership with Surfrider Vancouver Island in support of Combing the Coast, a program that has been hitting Vancouver Island beaches over the past five years in an effort to clean up and reduce debris, Canadian Beer News reported on April, 19.

The partnership corresponds with the launch of this year’s edition of Beachcomber Summer Ale.

To celebrate this partnership, Vancouver Island Brewery will be hosting an open house on Saturday, May 11th, where they will be pouring samples of Beachcomber Summer Ale and a special cask of Flying Tanker White IPA.

Brewery news UK: SABMiller accelerates Alan Clark promotion as CEO after Graham Mackay is diagnosed with brain tumor
SABMiller Plc said Alan Clark will succeed Graham Mackay as chief executive officer earlier than planned after the man who led the company to become the world’s second-biggest brewer was diagnosed with a brain tumor.

Clark, who has worked at the business for more than two decades, will become CEO with immediate effect, London-based SABMiller said on April, 23. The 53-year-old had been due to take over in July, a year after being appointed chief operating officer.

Mackay, 63, underwent surgery April 22, and his role will be kept “under review pending the outcome of his treatment,” SABMiller said. He had been due to take the position of chairman in July, at the company’s annual general meeting. SABMiller announced the leadership change in April last year.

Mackay has led the brewer since it listed in London in 1999, overseeing a slew of acquisitions including the A$10.5 billion ($10.8 billion) takeover of Foster’s Group Ltd. in 2011, which gave it control of about half the Australian beer market. In that time, the share price has risen about eightfold, while sales have increased more than six times to $16.7 billion.

Brewery news Germany: Beer industry experiencing a dry spell on waning consumers’ interest
For the moment, 1,340 breweries remain throughout Germany. But with increased consolidation in the beer industry and a German populace drinking less and less beer, smaller breweries are feeling the multinational squeeze, Deutsche Welle reported earlier this week.

With revenues of 7.6 billion euros ($9.9 billion), the German brewing industry isn't exactly scraping the bottom of the barrel. But it can be said that they're experiencing something of a dry spell.

Current capacities would theoretically allow German breweries to produce 1.5 billion litres of beer per year. Last year, however, just 980 million were produced.

For years, German brewers have had to reckon with lower sales figures. The culprit? A waning German palate for the national beverage. In 1976, the average German consumed 151 litres of beer per year - or three large kegs. Today that number has dropped to 107 litres, or just over two kegs.

In total, approximately 1,340 breweries dot the German landscape. With 60 employees and a yearly production of 14 million litres, the Moritz Fiege private brewery in the German city of Bochum is one of the "healthy" ones. Brewery news Australia: Brewers urging Government to freeze beer tax in next month’s Budget
Brewers in Australia are urging the Government to follow the UK's lead by taking action on beer duty, according to local reports.

The industry has called on the country's Treasurer, Wayne Swan, to freeze beer tax in next month's Budget, The Australian on April, 21. Brewers say they are suffering from one of the highest duty rates in the world.

In its submission to the Treasury, Carlton & United Breweries, the brewing arm of SABMiller subsidiary Foster's Group, says that the beer industry is "no longer recession proof" and has been hit by drinkers spending less, it was reported.

Under the Australian system, beer tax is raised twice a year, linked to inflation, similar to the UK's duty escalator system. The model was introduced in Australia 30 years ago by then-Prime Minister Bob Hawke.

Last month, the UK Government removed beer from its duty escalator system, but kept it in place for wine, spirits and cider. Chancellor George Osborne also cut duty on a pint of beer by GBP0.01.

Brewery news India: High Court of Karnataka approves United Breweries amalgamation scheme with Scottish & Newcastle India
United Breweries has received an approval from High Court of Karnataka for scheme of amalgamation between Scottish & Newcastle India and with itself, Indian Commodity reported on April, 20.

The certified true copy of the Court Order has been filed with the Registrar of Companies, Karnataka and the Scheme has become effective.

The company shall in due course allot equity shares to the eligible shareholders in terms of the Scheme.

United Breweries is maker of Kingfisher beer and Heineken beer in India. Kingfisher is largest selling beer in India that commands 29% of market share. The company has presence in 52 countries.


Brewery news Asia: Head of Carlsberg’s Asia division is stepping down
The head of Danish brewer Carlsberg's growth region Asia is stepping down to take up a similar position at fashion group Levi Strauss & Company, Carlsberg said on April, 24.

Carlsberg, which like bigger rivals AB InBev, SABMiller and Heineken, is looking increasingly to Asia for growth to offset a weaker performance in Europe, said it was already seeking a replacement.

Roy Bagattini, who has headed Carlsberg's Asia division since 2009, will leave his position in June.

The world's biggest brewers are battling to acquire smaller rivals and capacity in the Asia region.

As part of its quest to grow in Asia, Carlsberg last month launched a partial takeover bid worth 2.65 billion Danish crowns ($461.49 million) for 30.31 percent of the shares in Chongqing Brewery Company.

If successful, that will give Carlsberg control of the company and a stake of up to 60 percent.

In February, the brewer also said it was returning to Myanmar following the easing of international sanctions which forced it out of the country in the mid-1990s.


Barley news Ukraine & Russia: Wheat prices lower on news Ukraine could lift cap on wheat exports
Wheat prices in Western Europe were lower on Tuesday, April, 23 after Ukraine confirmed it could lift its cap on wheat exports for the remainder of the season, providing additional competition for EU supplies in coming months, Reuters reported.

Front-month May milling wheat in Paris was down 0.6 percent at 242.25 euros a tonne by 1140 GMT. New-crop benchmark November was down 1.1 percent at 210.50 euros.

Ukrainian Agriculture Minister Mykola Prysyazhnyuk told reporters Kiev was "ready to make the market free" and that the decision could be taken this week, allowing traders to ship abroad about 500,000 tonnes of the commodity. Prysyazhnyuk had said last month that the issue would be discussed in April but that a decision would depend on the condition of the winter wheat crop, which accounts for more than 95 percent of Ukraine's total wheat output.

Russia had already revived exports of wheat from the Black Sea last week after sales from government grain stocks led to a price slide of about 18 percent since February, analysts said. Brewery news UK: Government announces plans to break ‘beer ties’
Britain's government said on April, 22 that it would introduce new rules to clamp down on the 'beer tie' by which tenanted pubs are forced to buy their beer from the companies who run their leases, Reuters reported.

Under the new code of practise, which ministers say will be backed by a "powerful" adjudicator, pub tenants will be able to complain if they are unfairly treated by landlords.

It could also mean tied pubs having the option of a 'guest beer' to try to ensure that they are no worse off than those who are not tied.

Many pubs have been under pressure in recent years as they struggle to survive on small margins and compete against much cheaper supermarkets.

Business Secretary Vince Cable said that pressure also comes from powerful pub companies who lease property to tenants with the condition that they also buy beer from them, often at high prices.

The plans will only apply to firms that own over 500 pubs, which includes British names like Enterprise Inns and Punch Taverns, though the government said it will review this threshold in a consultation.

Cable said that the plans would save pub tenants 100 million pounds ($153 million) a year.

Brewery news India & UK: Heineken to start brewing Kingfisher beer for the UK market
Heineken is to start brewing Kingfisher Beer for the UK market from October, taking over from Shepherd Neame.

Heineken will also handle UK sales and distribution for the brand, Kingfisher Beer Europe said on April, 19. The deal brings to an end Kingfisher's current deal with Kent brewer Shepherd Neame.

Kingfisher CEO Damon Swarbrick said the company will continue to market Kingfisher and support its UK clients. “We are looking forward to working with Heineken to develop the significant opportunity that exists in the UK market,” Swarbrick said.

Heineken said the deal will help boost its world beer portfolio in the UK. Financial details of the new tie-up were not disclosed.


Brewery news China: Zhejiang-based beer company ordered by court to pay Harbin Brewery Group for confusing packaging
A city court has ordered a Zhejiang-based beer company to pay Harbin Brewery Group Ltd 400,000 yuan ($64,717) for employing packaging that bore too much of a resemblance to its competitor's, Shanghai No.1 Intermediate People's Court announced on April, 22.

The court ruled that the defendant, Xiyingmen Beer Co Ltd, had infringed on Harbin Brewery's well-known trademark and caused the plaintiff to lose money due to customer confusion, according to a court press release.

China's Anti-Unfair Competition Law bars companies from using packaging similar to that of their competitors without authorization.

"An important part of the case was determining whether Harbin Brewery Group's beer could be considered a famous product, because the value of the trademark lies in how well consumers recognize it," said Judge Hu Zhenyuan, who presided over the case.

According to the China Alcoholic Drinks Association, Harbin Brewery ranked in the top 10 of the industry in terms of production volume and sales from 2004 to 2011.

In a previous dispute, Changsha Intermediate People's Court in Hunan Province recognized Harbin Brewery's trademark as a famous trademark in China, according to a court press release.

The court favored the argument that the beer maker's trademark was well-known among the public.
