Identification and Quantification of the Oxidation Products Derived from Alpha-Acids and Beta-Acids During Storage of Hops (Humulus lupulus L.)


ABSTRACT
We have a general idea about what is happening during hops storage in terms of degredation of bitter acids. But until now, it was not clear what the exact degredation products were and how these can be analysed. This Japanese research team extensively investigated the reaction patterns during hop storage at different temperatures and came to the following conclusion: The temperature for storage affects the oxidative reaction speed, but does not change the composition of generated hydrophilic oxidation products (humulinones, 4-hydroxyallohumulinones, and hulupones). At 60 C, the observed compositional change curves resembled those at 40 C, while the reaction speed was about 10 times faster. Also the HPLC conditions to analyse these products are described. However, sensory experiments are needed to show what these findings mean in regard to beer quality.

Brewery news USA: Beer volume sold during the month to May 11 drops 0.6%
Despite a tough few months for the beer business, overall sales in dollar terms inched up in May, due in part to the new upmarket Budweiser Black Crown's introduction to consumers, the Wall Street Journal said on May, 24.

According to Nielsen data, volume of beer sold in the four weeks to May 11 dropped 0.6 percent, but sales in dollar terms were up 1.5 percent, boosted by Black Crown sales.

Anheuser-Busch and MillersCoors both reported a bad month. However, Boston Beer Co., which produces the Samuel Adams brand, reported its overall sales were up 43 percent.


Brewery news Italy & Serbia: Italy’s Tramite Holding agrees on partnership with Serbian brewery
The owner of the brewery chain Tramite Holding SpA in north Italy, Giantonino Tramet, and Jagodina brewery, Serbia, agreed on a partnership at a meeting on May, 27, ANSAmed reported.

Jagodina mayor Dragan Markovic said it was agreed that the owner of Tramite, Gianantonio Tramet, will visit the Jagodinska brewery on June 10, and the start of business was expected in September at the latest.

“We are expecting Tramet to buy Jagodinska brewery or make investments in the production and marketing,” he explained.

Tramet pointed out that he was ready to make business with Jagodinska brewery and that he was hoping that on June 10 he would sign a concrete contract on cooperation and agree on concrete beer amounts that would be distributed to the Serbian and foreign market.


Brewery news Turkey: Government moves to restrict alcohol sales and ban advertising
The government in Turkey is making a move to restrict alcohol sales and ban advertisements, which has alcohol producers worried and secular Turks concerned that the government has an Islamist agenda, the Wall Street Journal reported on May, 28.

Last Friday, May, 24, Parliament passed a bill that would ban retail alcohol sales between the hours of 10 am and 6 pm, as well as completely ban alcohol advertising and promotions of alcohol-related products.

Prime Minister Recep Tayyip Erdogan said the new regulations are intended to bring Turkey in line with other “advanced economies” such as the United States.

Meanwhile, secular Turks are criticizing the new regulations, saying the legislative package “builds on a series of restrictions” introduced by Erdogan’s “Islamist-leaning Justice and Development Party, which swept to power in 2002, ending the staunchly secularist military's decades long hold over civilian politics,” writes the newspaper.

Some also say that the government's curb on alcohol follows a pattern — such as failed attempts at more conservative uniforms and a ban on red lipstick at Turkish Airlines — which could jeopardize its broad support over the past five years.

Brewery news Tanzania: Rising disposable income and expanding population laying the foundation for growh in the beer industry
No longer is beer just a social lubricant – it has become big business in Tanzania, Ventures reported on May, 26.

It was not long ago that low consumption of alcohol, particularly beer, in the country jaded investors on the potential of the sector. Tanzania currently ranks as the 6th biggest beer market in Africa, according to a report by Deutsche Bank. This ranking is an optimistic change but does not speak to the increasing potential in the country.

Tanzania’s rising spending power (or disposable income) and expanding population lay the foundation for the growth. The country lacks the stringent laws on distribution and sale of alcohol beverages vastly associated with Kenya. Popular beers such Tanzabeer can be found in the United Kingdom. Still some hurdles remain.

A large Muslim population, for example, helps to explain the lower alcohol consumption as compared to Kenya. Capacity expansion is often myriad of problems that extend beyond simple capital injection. Absent large commercial farming, sourcing barley requires building a strong and reliable network of smallholder farmers. Developing a local management team exposes the challenges the country faces in building a sufficiently skilled labor force.
