Discoveries in the bitter reception world

ABSTRACT
Flavonoids and Isoflavonoids, not only from hops but also from other plants, are in the focus of several health related investigations and potent candidates for nutraceuticals. However they have a relatively strong bitter taste. These researchers discovered the relevant bitter taste receptors for these compounds namely hTAS2R14, a recepter that has been regarded as a more broadly tuned receptor (also know to interact with isohumulones), and hTAS2R39 a less "famous" bitter receptor. These Dutch researchers were able to identify many different flavonoids as intrinsically bitter and elucidated the structural requirements for bitterness of (iso)flavonoids. However their objective is not to take advantage of the bitterness these compounds cause but rather to prevent the introduction of bitter taste in the design of functional foods enriched with (iso)flavonoid bioactives. Isn't this bitter?

Brewery news USA: AB InBev starts selling Bud Light in screw-top aluminum bottles
Anheuser-Busch InBev NV is rolling out Bud Light in screw-top aluminum bottles as the world’s biggest brewer seeks to stabilize the waning brand in the U.S., where consumers are turning to craft beers and other beverages, according to Bloomberg.

AB InBev has invested $150 million to create the new packaging, a 16-ounce (473 milliliters) resealable light metal bottle, Luiz Edmond, the brewer’s North American president, said on November 15 at a meeting with journalists in New York. The company will back up the new look with Super Bowl advertising early next year.

Consumers think the bottle is “more premium, more refreshing,” Paul Chibe, vice president U.S. marketing for AB InBev, said at the meeting. “We need to continue to evolve what Bud Light stands for,” he said. “We’re taking our time. It’s not an easy job.”

Leuven, Belgium-based AB InBev, which gets 37 percent of earnings before interest, taxation, depreciation and amortization from the U.S., was created in 2008 when InBev NV bought Anheuser-Busch Cos. in a $52 billion acquisition. Since then, it’s been seeking to revitalize the U.S.-based Anheuser Busch’s Budweiser and Bud Light brands in the country as well as to sell more “premium” -- or expensive -- labels to support ...More info on site

Brewery news USA, CO: Brewers Association acquires new property in Boulder
The Brewers Association (BA) announced on November 15 it will be relocating its headquarters in 2014 to a larger office in Boulder, CO. The not-for-profit trade association, which represents the majority of US breweries, has been growing steadily—along with the booming craft beer industry—necessitating the move to a bigger space.

The BA has been at its current location, 736 Pearl Street, for nearly three decades. The new office, 1327 Spruce Street, is almost double the size, covering 11,600 square feet, and will accommodate the BA’s need for additional work space. The transaction has an expected close date of April 1 and a purchase price of $4 million.

“With this move, the Brewers Association remains committed to being part of the downtown Boulder business community,” said Bob Pease, chief operating officer, Brewers Association. “The BA is proud to be part of the growing community that is craft brewing. This move will allow our staff to better serve our members in the months and years ahead.”

The Brewers Association, a member of the Boulder Chamber of Commerce, has its roots in the 1978 founding of the American Homebrewers Association in Boulder.

Brewery news USA, MN: Duluth-based Bent Paddle Brewing Company expands, extends distribution
Bent Paddle Brewing Company is expanding with the addition of more brewing tanks. And that’s allowing the Duluth microbrewery to extend its distribution to the Twin Cities, Duluth News Tribune reported on November 18.

The 30-barrel production brewery last week began delivering six-pack cans of its flagship beers — Bent Paddle Black ale, Venture Pils pilsener lager and Bent Hop, a golden India pale ale — to five craft beer liquor stores in the Twin Cities.

The small production brewery opened in a warehouse at 1912 W. Michigan St. in May with the city’s first bona fide taproom. Its beers are sold on-site by the glass and growler.

“We started with six tanks, and we are adding four larger tanks for a total of 10 tanks,” said Laura Salyards-Fryberger Mullen, one of the owners. “And that doubles our brewing capacity from 4,500 to 8,000-plus barrels of beer a year.”

The owners are experienced brewmasters Colin Mullen and Bryon Tonnis and their wives. The two 30-something couples from the Twin Cities chose Duluth to start their brewery because they saw more room for potential for growth in the Duluth area and because they say Lake Superior water is good for brewing.

They launched their business with ...More info on site

Brewery news USA, CO: Great Divide Brewing Company to release Lasso IPA in early 2014
In early 2014, to kick off its 20th anniversary year, Great Divide Brewing Company will release Lasso IPA, a beer the brewery deems “the new frontier of India Pale Ale.” While Lasso makes its debut at 5% ABV, the lowest in the Great Divide portfolio, this Wild West-inspired beer is anything but mild. Brewed with a robust, aromatic roundup of hops, Lasso boasts the same bold character that IPA enthusiasts expect, according to Brewbound.

The company sees the beer as the perfect addition to its year-round lineup.

“We’ve certainly developed an outstanding reputation for our big, high-ABV beers,” says brewery Founder and President Brian Dunn, “but we really take pride in our entire collection of balanced beers, regardless of alcohol content. Lasso gives our fans, especially the ‘Hop Disciples’, as we call them, another great option.”

Lasso joins Titan IPA, Hercules Double IPA, and the seasonal Rumble Oak Aged IPA in Great Divide’s highly respected family of India Pale Ales.

Available in 6-packs and draft starting in early January, Lasso will land in all 25 states where Great Divide distributes.

Brewery news USA, IA: Madhouse Brewing Company moving to Des Moines early next year
Madhouse Brewing Company, a local craft brewery that has called Newton, IA home for the past three years, announced on November 15 on its Facebook page it will be moving to Des Moines early next year, Newton Daily News reports.

To facilitate the move, a number of shares in the company previously held by Iowa Telecom and bought back after Iowa Telecom's purchase by Windstream, are being sold to other investors. Each unit of shares will be sold for $6,000 until all are sold or the end of the year.

The brewery’s new facility is located south of the East Village in downtown Des Moines.

Madhouse Brewing Company has been operating as a production-only brewery since its launch in 2010. Its revenue comes from off-site distribution sales at grocery stores, liquor shops and restaurants in Iowa, Nebraska, South Dakota, North Dakota and Illinois.

Brewery news USA, OH: Star City Brewing Company opens in Miamisburg
Star City Brewing Company, a new production brewery and tasting room in Miamisburg, opened on November 15 in a historical building along the Miami River, according to Akron Beacon Journal.

Partners Brian Yavorsky and Brian and Justin Kohnen - three homebrewers with computer programming backgrounds - have converted the former Peerless Pantry/Peerless Mill Inn restaurant into their brewery. The 14,000-square-foot building, which had served as a saw mill in the 1800s, features five stone fire places and seating for nearly 400.

The brewery, which has a 3 1/2-barrel brewing system, will launch with four beers: a blonde ale, a hefeweizen, India pale ale and oatmeal stout.

"The area we’re in is a lot of light beer drinkers. Not a lot of craft enthusiasts around here," Yavorsky said. "We want to convert them so we started with a lot of light fare."

Star City will sell only draft beer at first, including offering growlers. There are plans to self-distribute to bars and restaurants. And eventually the partners would like to bottle their beer.

The former Peerless Pantry building had sat vacant for years and had been vandalized so the partners had to invest a lot of money into fixing up the structure itself. That meant ...More info on site

Brewery news USA, CO: Odell Brewing Company announces Friek return
On November 23, 2013, Odell Brewing will celebrate the return of Friek, the brewery’s beloved Lambic-style Kriek-Framboise hybrid, according to the company’s press release. Now in its fourth season, Friek has become one of the brewery’s most highly anticipated releases.

Brewed with Colorado grown cherries and aged in oak barrels for months, Friek is blended with fresh raspberries just prior to packaging. The subtle raspberry sweetness balances the cherry tartness. A crisp and bubbly body creates a delicate and refreshing finish.

“This time of year is the perfect season for Friek,” said Tap Room manager, Kailey Schumacher. “It pairs so well with many holiday dishes and adds unique character to traditional recipes when cooking with it.”

About Odell Brewing:

Founded in 1989, Odell Brewing was started by Doug Odell, his wife Wynne, and his sister Corkie. Twenty-four years later, the culture of family and collaboration still thrives fostering a brewery full of beer-centric people. It is this passion for beer that inspires Odell Brewing to create quality, hand-crafted, innovative brews. As a regional craft brewery, Odell Brewing is committed to serving the communities in which it distributes by minimizing its environmental impact, sourcing local raw materials, and through its charitable giving program.

Brewery news USA, OH: Sideswipe Brewing Company joins Columbus craft beer scene
Sideswipe Brewing Co., a new nanobrewery in Columbus, hopes to release its beer at bars, restaurants and retail stores over the next month. Craig O'Herron, a former homebrewer who taught English in Korea and Thailand for several years, has started brewing and it's a matter of time before his first three beers, available in 22-ounce bottles, hit the market, Akron Beacon Journal reported on November 19.

"I’m just excited to be creating beers for Columbus," he said. "It’s been quite a bit of work getting here."

Sideswipe - which operates with a three-barrel Psycho Brew system - will launch with bottles and then offer kegs later.

The first three beers are: Elegant Hoodlum Smoke Stout, Fisticuffs IPA and and Coop Looter Saision -- all featuring artsy, paint-splashed-looking labels. Eventually, the brewery will introduce seasonal and specialty beers as well.

O'Herron, a Worthington resident, also has plans to open a tasting room and offer homebrew classes at the brewery over the next few months.

The Sideswipe name stems from O'Herron's love of martial arts, which he took up as a kid. He now enjoys kickboxing.

"Sideswipe means for me an unexpected hit," he said. "We say we do palate-punching beers and it was kind of the ...More info on site

Brewery news USA, FL: Shipyard Brewing Company plans to come to Tampa Bay
Shipyard Brewing Co., one of the largest microbreweries in the country, wants to join the Tampa Bay craft beer revolution, according to Creative Loafing Tampa.

So plans are underway to open its first production facility outside of Maine in the existing brewpub at Clearwater's Sea Dog Brewing Co., which opened last year. (Sea Dog is owned by parent company Shipyard.)

The company owns several Sea Dog brewpubs in Maine and New Hampshire, but the Clearwater location was its first in Florida to brew on-site.

"It's such a great market for us," said Shipyard's Dan Bolduc. "Our beer is really popular here and we want to be part of the beer scene. We want to be considered local."

The company has been brewing a monthly beer at the Clearwater Sea Dog location, 26200 U.S. 19, on a 1.5-barrel system. Within the next three weeks Shipyard begins work on a 20-barrel system and hopes to open by February. It will be draft-only at first, but eventually bottling and canning lines will be added, Bolduc said. Sea Dog Blueberry Wheat is its best seller in Florida, he said.

Brewery news USA, WA & Canada: No-Li to start distribution in Canada
No-Li Brewhouse crosses the border with Modern Malt Distributing in Canada, forging an international partnership. No-Li will start selling 22 oz bombers of Born and Raised IPA, Silent Treatment Pale Ale, and Crystal Bitter ESB in Canada. In response to international customers loading up cars with No-Li beers in border towns across the Pacific N.W., and correspondingly strong sales, No-Li decided it was time to take beer to their Canadian friends and neighbors that have a thirst for Spokane-Style beers, Brewbound reported on November 19.

No-Li National & International Sales Manager, Dylan McDonald, comments: “Canadians have been bootlegging our beer across the border like ‘Smokey & The Bandit’ for awhile now. It’s time to legally bring Spokane-Style brews to Canadian beer lovers!“

After bringing home nine international awards in their freshman year, No-Li continues to push innovation and growth. The brewery’s new 12 oz bottle, Imperial Series 4-packs, which includes Jet Star Imperial IPA and Wrecking Ball Imperial Stout, seasonal 22 oz bomber Expo Series, and small-batch, draft-only, “No Boundaries” pilot series, appeals to the customer’s demand for fresh, new products.

The brewery’s innovation has boosted No-Li’s already fast-paced growth. As a result, the brewery added two new 60-barrel fermentation ...More info on site

Brewery news USA, CA: La Quinta Brewing Company opens in Palm Desert
La Quinta Brewing Co., one of the Coachella valley’s first breweries dedicated to solely brewing announced on November 19 the opening of their new brewery and onsite taproom in Palm Desert. To commemorate the event, the La Quinta Chamber of Commerce will be performing a ribbon cutting on November 21 at the brewery, according to Mydesert.com.

Scott Stokes, the founder, is a home brewer, who for a long time worked in real estate. Green Flash brewer of four-plus years Ryan Pearson joined the company as head brewer.

Brewery news USA & Canada: 2X4 Brewing & Imports to distribute Canadian brews in 9 additional states
California-based 2X4 Brewing & Imports has introduced its Canada’s Select Brews portfolio into 10 new markets, Shanken News Daily reported on November 18.

Starting in January, 2X4’s Canadian beers and ciders will be available in Alabama via United-Johnson Bros.; Georgia via Quality Wines & Spirits; Illinois via Stoller Wholesale; North Carolina via Fine Wine Trading Co.; Maryland, Virginia and the District of Columbia via Hop & Wine Beverage; Maine via Pine State Trading Co.; Tennessee via Lipman Brothers and Vermont via Capital Candy Co./Granite City Beverage.

The brewer’s Canada’s Select Brews stable currently includes offerings from British Columbia’s Howe Sound Brewing and Vancouver’s Parallel 49 Brewing Co., with contract negotiations now in the works for seven additional breweries.

Along with the new markets, 2X4 recently brought its lineup to California via Young’s Market Co., and says it’s set to finalize partnerships in Arizona, Florida and New York by the end of January.

Brewery news USA, MA: Night Shift Brewing plans to double production capacity in Everett
Less than a year after building a large addition to its facility, the Night Shift Brewing Company is moving to a new space in order to meet an increasing demand for its unconventional brews. Since its first batch of beer in February 2012, Night Shift has grown from producing 350 barrels a year to 750 – and they aim to double that in the new location, Boston.com reported on November 18.

The 16,000 square-foot warehouse space at 87 Santilli Highway in Everett is a substantial upgrade from the 3,000 square-feet at the brewery’s present 3 Charlton Street location.

“We’re out of space once again and need to grow,” said Rob Burns, Night Shift co-owner and brewer. “The demand for our beer exceeds what we can produce here.”

Night Shift Brewing Company is a local craft brewery founded in 2011 by three friends from Somerville: Michael Oxton, Rob Burns and Michael O’Mara. The brewery has since become known around Boston for its non-traditional beer flavors – created by brewing with ingredients such as Habanero peppers, pink peppercorns, green tea and lemon grass.

“So many breweries are doing standard beers,” said Geoff Thompson, manager and beer buyer at The Foundry in Davis Square, one ...More info on site

Brewery news The Czech Republic: More and more small breweries entering the Czech market
A phenomenon brewing in the Czech beer industry, particularly around Prague, has upstart small breweries carving out their own niches in the local marketplace. Much like the microbrew craze that began expanding across the United States starting in the 1980s, new beers are making headway in a country long dominated by much larger brands, according to Prague Post.

In the past few years, Břevnovský Pivovar in Prague and Únětický Pivovar just outside the city have revamped old breweries left empty following the Communist takeover of Czechoslovakia, creating some of the best Czech lagers in the country. Other small and mid-size breweries are also making their mark.

Although tiny in comparison to the larger breweries like Pilsner Urquell and Staropramen, these startups are brewing at full capacity, just to keep up with the constantly increasing demand.

While the fuss around the new beers is more of a complement to than competition for the big brewers — there are already 90 styles of beer in a country that relishes its reputation as the top consumer of beer per capita in the world — it does breathe new life into the local beer scene, say bar owners and customers.

Despite being new to present-day imbibers, most of ...More info on site

Brewery news Zimbabwe: Delta Corporation plans to invest in new line for sorghum beer
Delta Corporation says it will invest in the new line for sorghum beer and expand its portfolio of alternative beverages to “capture consumer spend” in the wake of declining lager beer consumption, The Zimbabwe Standard reported on November 17.

Lager beer volumes dipped 10% in the wake of a review in excise duty that saw some retailers increasing prices by over 30%.

The company is pushing for excise duty reduction to drive lager beer growth.

However sales were down 4% to US$164 million driven by premium lagers which mitigated some of the losses despite a decline in volume.

Sparkling beverages and Chibuku grew by 9% and 8% respectively.

Announcing the group’s financial results for the half year ended September 30, Delta’s executive director in charge of finance, Matts Valela said the first half of the year had been tough and challenging.

He said the consumer was stretched and spending was generally soft across the market. “Consumers are looking for value. We are seeing some trending down as they search for value packs,” Valela said.

Brewery news India: More consumers prefer premium beer in Tamil Nadu
Premiumisation seems to be the overriding trend in the liquor business in Tamil Nadu. The development is perhaps most clearly illustrated in the beer segment, where demand for premium brands is growing faster than their regular counterparts, The Hindu Businessline reported on November 17.

Consumers, even in tier-III markets, prefer premium brands, say industry sources.

This is clearly evident from the fact that premium brands such as British Empire, Kingfisher Superior, Vorion 12000, Max 11000 and Maxkool sell faster than regular brands from the respective manufacturers. For example, Max 11000 and Maxkool from the Empee stable, account for over 60 per cent of the company’s beer sales. Similarly, British Empire accounts for more than 40 per cent of SNJ Breweries’, which produces two regular beers under the brands SNJ 10000 and High Voltage.

Industry sources say, irrespective of alcohol strength, consumers prefer premium beer for its improved quality and taste.

According to sources in the State-owned TASMAC (Tamil Nadu State Marketing Corporation), the monopoly wholesaler and retailer of liquor, on average 29 lakh cases (12 bottles of 650 ml each) of beer are sold in the State every month. Premium brands alone account for close to 40 per cent of sales. The retail price ...More info on site
