How alcohol boosts aroma perception


ABSTRACT
While the influence on alcohol content on bitterness perception has been studied, it has remained unclear what increasing levels of ethanol do to hop aroma perception. Researchers studied the effect with the compounds betadamascenone, carophyllene, citronellol, geraniol, geranyl acetate, humulene, linalool, myrcene, and nerol in alcoholic solutions of 5, 10, and 15 percent. Results indicate that Beta-damascenone, carophyllene, and humulene aroma thresholds are significantly affected by ethanol content, while other compounds are not! Just like with anything else in hop research, results show that contexts are never simple!

Brewery news Canada: Brick Brewing Co. releases financial results for Q2 of 2015
Brick Brewing Co. Limited, the largest Canadian-owned and Canadian-based publicly held brewery in Ontario, released its financial results for the second quarter of its 2015 fiscal year, newswire.ca reported on September, 11.

Net Revenues for the second quarter of fiscal 2015 were C$10.4 mln compared to C$11.4 mln in the second quarter of fiscal 2014. Gross profit for the quarter improved to 31.4% in the second quarter of fiscal 2015, compared to 21.4% in Q2 of the prior year. The improved margins are driven by the non-repeat of promotional costs to support Laker 12 pack bottles in the prior year, coupled with lower operating costs, improving premium product mix and favorable pricing. EBITDA for the second quarter of fiscal 2015 came in at C$1.6 mln compared to EBITDA of C$0.4 mln in the second quarter of fiscal 2014.

Brewery news USA: Miller Lite may be able to overcome sliding sales thanks to new “old” packaging
U.S. sales of Miller Lite had been sliding since 2009, trailing Bud Light, Coors Light, and Budweiser. Revenue dropped 7 percent in just 2013, according to Beer Marketer’s Insights. So in January, in an effort to create some buzz, MillerCoors released a limited-edition version of its original 1975 white Miller Lite can, promoted with an Anchorman 2 movie tie-in. Sales of the cans rose so quickly that the company has decided to expand the white label to bottles and taps permanently, Businessweek reported on September 11.

Miller Lite tried numerous bottle redesigns. “All our package innovation tested terrible,” says Ryan Reis, senior director for Miller’s family of brands. But when it returned to the brand’s original graphics, people loved it. In 2012, the company decided to rerelease the beer in the 1975 packaging. “But we needed a reason to do it, otherwise it’d feel too out of the blue,” Reis adds.

Miller Lite’s sports and entertainment marketing department hooked Reis up with Paramount Pictures (VIA), which needed a beer sponsor for Anchorman 2. “We said, ‘Wait, it’s set in 1979? Brewery news USA: Court denies AB InBev’s motion to dismiss advertising suit over Beck’s beer
In his courtroom, after close examination of bottles and cans of Beck’s Beer, and the cartons that held them, a federal judge said one thing was very clear: The labels declaring the brand was actually made in the USA were difficult to read, The National Law Journal reported on September 10.

That observation in U.S. District Court for the Southern District of Florida apparently formed the core of U.S. Magistrate Judge John O’Sullivan’s order denying Anheuser-Busch Cos., LLC’s motion to dismiss a proposed class action accusing the company of misleading consumers into thinking the brews are imported from Germany.

Florida resident Francisco Reny Marty and two other plaintiffs allege AB engaged in unfair and deceptive practices to obscure the fact that, since 2012, Beck’s has been made in Missouri, more than a continent away from the German breweries where the brand reigned for 225 years.

According to the plaintiffs’ complaint in Marty v. Anheuser-Busch, Marty was influenced to buy Beck’s by its labels and marketing, which prominently cited the beer’s “German Quality” and that it was “Brewed Under the German Purity Law of 1516,” in an alleged attempt to obscure its Missouri roots. Brewery news USA, NC: Check 6 Brewery to open in Southport this autumn
Southport will be the home of Check 6 Brewing Company, slated to open later this fall, wilmingtonbiz.com reported on September, 10.

Owners are currently working on brewing as well as final inspections for the new facility. The owners said they anticipate a mid-October opening and a grand opening celebration in early to mid-November.

The Check 6 founders have a long history of brewing beer. Noah Goldman and Norm Weiss’ grandfather owned a brewery in the 1920s, and both cousins have spent many years home brewing. They won’t be following any of their grandfather’s recipes, however.

“Fortunately, the ingredients we have available to us today are so much better than what was available during Prohibition. A lot of the beer brewed at that time really wasn’t any good,” Goldman said.

Goldman and his friend Tim Hassel have been brewing together since 2006, developing recipes and sharing their beer with family and friends, many of whom encouraged them to start their own brewery.

Brewery news USA, OH: Land-Grant Brewing to open in Franklinton
Brewing at Land-Grant Brewing Co. could begin next week with an official opening and its own beers on tap in early October, bizjournals.com reported on September, 10.

Land-Grant hopes to preview its 3,000-square-foot tasting room and bar, with a few beers from others on tap, at the Sept. 19-21 Independents' Day event.

The tasting room and bar seat around 99. It will have 18 taps – 12 with Land-Grant’s own beer and six from others.

The brewery takes up 9,000 square feet and has a 20-barrel brewhouse and four 45-barrel ferment tanks. Land-Grant will be adding a canning line of its own as well.

Benner said the opening lineup of beer will include a lower-alcohol session IPA, a brown ale and a kolsch made with American hops. Brewmaster is Jamie Feihel, formerly of Columbus Brewing Co.

It’s been a long journey for Benner and co-owners Walt Keys and Quintin Jessee, who have been working on the brewery since 2012. They planned to operate as Oval Brewing. An Austrian vodka company already had that name, so it became Land-Grant.

“We wanted to be in an urban setting,” Benner said. “That’s where breweries were. They were meeting places for the neighborhood.”


Brewery news USA, TX: Rogness Brewing expands Houston distribution
Bluebonnet Distributing, LLC announced on September, 10 it has partnered with Rogness Brewing Company, LLC, an Austin-based craft brewer, to build a large-scale distribution territory in the Houston market.

This partnership will greatly enhance the ability for craft beer fans to access their favorite Rogness beers beginning in October of 2014.

“We are excited and proud to announce this partnership. With 10 regular offerings in bottles and on draft, we are eager to enter the Houston market with an array of beers that is as diverse as the city’s population,” stated Forrest Rogness, co-founder of Rogness Brewing.

Brewery news USA, CA: Stone Brewing delays decision on new brewery
The Escondido, California-based Stone Brewing in August narrowed its list of finalists to Columbus and two other cities for the $60 mln expansion project, and said a decision could come within 60 days, bizjournals.com reported on September, 11.

Now, 27 days later, the company is backing off that timeline.

“While we were hoping to announce our decision by the end of the summer, it seems that the process will take a bit longer,” spokeswoman Sabrina LoPiccolo said. “As you can imagine, there are a lot of moving parts and we are working diligently towards a conclusion. We do not have a specific date as to when our decision will be made.”

She declined to provide any additional details, but said the company is working on a decision “as expeditiously as possible.”

The hotly contested project is for Stone’s first brewery east of the Mississippi River. Plans also include a restaurant, retail store and an outdoor beer garden.

Barley news UK: Winter and spring barley yield above 10-year average this year
UK’s winter barley harvest started in early July and was complete by mid-August. The start of harvest 2014 was two weeks ahead of 2013 and one week ahead of the five-year average, HGCA reports.

The estimated national average yield of winter barley is 7.2-7.4 t/ha, which is above the 10-year average of 6.4 t/ha. Yields range from 3.2-11.0 t/ha, with the lower yields from areas that have suffered from waterlogging or compaction or crops grown on lighter soils. Higher yields have tended to come from feed, as opposed to malting barley varieties. Yields from hybrid varieties have been variable, with poor yields from hybrid varieties in the North East, but decent yields reported on the same varieties in Scotland and the Eastern region. In the North West, conventional varieties typically yielded 6.2-7.4 t/ha, whilst the hybrids were closer to 7.4-8.6 t/ha. Quality

Specific weights this year have averaged 65 kg/hl in England and Wales and slightly lower in Scotland. Grain nitrogen contents are estimated to average 1.6-1.7%. Screenings (2.25 mm) have been variable across the country, ranging from an average of 2% in the Eastern region to 6% in Yorkshire and Humber, with occasional higher reports in parts of Scotland.
