Why do noble hops differ from flavor hops?


ABSTRACT
German researchers took the varieties Topaz (AUS), Citra (US) and Hallertau Mittefrueh for the production of identical beer with whirlpool aroma addition to see how the aroma and flavor of the beers would differ. They found that 2- and 3-methylbutyric acid, S-methyl 3-methylbutanethioate, myrcene, linalool and geraniol are important aroma compounds in hops and vary widely between varieties. Whirlpool hopping can contribute high levels of R-linalool and geraniol to beer. Interestingly, the high level of linalool for Mittelfrueh also yielded in the most intense floral impression, while high levels in geraniol, betacitronellol and methyl geranate correlated with strong citrus aroma. However the other fruity characters from sensory evaluation could not be connected to a single or a certain group of substances.

Brewery news USA: MillerCoors to continue brewing Pabst beers for a while
Oasis Beverages may own Pabst Brewing Co. beers and Pabst Brewing will have its headquarters remain in Los Angeles, but MillerCoors LLC will continue making the beer for a while, Milwaukee Business Journal reported on September 22.

Oasis Beverages, an eastern European and Asian brewer and beverage company, bought Pabst Brewing for $700 million to $750 million, according to a recent story in the New York Times.

Some of the beer is made in Milwaukee, and will continue to be, according to MillerCoors.

“We currently have a contract with Pabst that runs for several more years,” said Jonathan Stern, director of media relations for MillerCoors.

Stern deferred any further questions about the contract to Pabst. However, calls made to Pabst were not returned.

Los Angeles-based Metropoulos & Co. bought Pabst in 2010 for $250 million. In the latest Oasis deal, TSG Consumer Partners LLC, a private-equity firm, will also hold a minority stake in Pabst.

Founded in Milwaukee by Jacob Best in 1844, Pabst currently is based in Los Angeles and will remain there. Some of the beers the company makes include Pabst Blue Ribbon, Schlitz, Old Milwaukee and Colt 45.

Oasis Beverages produces beers, juice and energy drinks in Russia, Kazakhstan, Belarus and Ukraine.


Barley news Canada & South Korea: The Barley Council of Canada welcomes signing of Canada-Korea Free Trade Agreement
The Barley Council of Canada (BCC) is pleased with the announcement that the Canada-Korea Free Trade Agreement (CKFTA) has been signed, Marketwired reported on September 22.

The Council is now proposing quick implementation of the agreement to benefit the Canadian barley value chain.

"This is great news, as the signing of CKFTA will make Canada competitive in this gateway market," said BCC Chair Brian Otto. "We welcome the signing and are calling on the Canadian and Korean governments to move quickly and implement this agreement in early 2015."

The agreement will gradually remove historical high tariffs on Canada's agri-food exports. This will give malt exports a significant boost, as Canada already exports over 25,000 tonnes per year on average to South Korea.

"Bilateral trade agreements like this are the pillars of agriculture and our economy," said Otto. "The CKFTA will be revolutionary for Canada's barley industry-we can now expand our presence in Northeast Asia."

Upon implementation, the CKFTA is also expected to result in significant profits for the beef and pork industries.

"We're looking for sustainable results-the beef and pork industry's gains will benefit barley's feed exports as well," added Otto. "Over 80 per cent of our harvested barley goes towards feed production for livestock."

Barley news USA: The USDA Risk Management Agency announces projected wheat and barley prices for crop year 2015
The USDA Risk Management Agency has announced projected wheat and barley prices for the 2015 crop year. Farmers have until Sept. 30 to purchase crop insurance, Capital Press reported on September 22.

The USDA Risk Management Agency has announced the 2015 projected price for several grain crops in the Pacific Northwest.

Winter wheat is projected at $6.20 per bushel. Spring wheat is projected at $6.55 per bushel.

Winter malting barley is projected at $3.41 per bushel. Spring malting barley projected prices will be determined approximately March 1, 2015.

The projected prices help farmers determine the level of insurance coverage and know their price point protection for a specific crop, said Jo Lynne Seufer, risk management specialist for the agency office in Spokane.

If the price a farmer would receive falls below the projected price, farmers would receive a payment for loss of revenue, depending on the insurance policy level they choose, she said.

“If we’re going into a year of drought, maybe they’ll want to look at good production yield risk policy along with price risk protection,” Seufer said.

Barley news USA, MT: Montana becomes top producer of malt barley to supply local breweries
For the first time this year, Montana became the top producer of malt barley for making beer in terms of acreage in the country, with nearly 630,000 acres devoted to growing the grain while another 300,000 acres goes to feed barley for livestock, according to U.S. Department of Agriculture statistics, helenair.com reported on September, 21.

Idaho produces more malt barley due to irrigation on fewer acres, but production has increased steadily in Montana in recent years, said Lola Raska, executive vice president of the Montana Grain Growers Association.

“Contract offers have been good and getting better as growing areas become more concentrated,” she said.

While malt barley production has increased in Montana over the last two decades as North Dakota grows more corn and soy beans, the last two or three years have seen a big switch with lower wheat prices and major beer manufacturers shifting to Montana, Raska said.

“I think we’ll continue to see it as a trend as malt barley acres decrease in North Dakota and as long as prices expand,” she said.

Brewery news USA, OH: Ohio to pass a bill that would end the limit of 12% alcohol for beers
Fans of “big” beers, those with an alcohol content of more than 8 percent, hit a low ceiling in Ohio, dispatch.com reported on September, 21.

The state mandates that no beer made or sold in Ohio can be more than 12 percent alcohol.

That puts Ohio on uneven ground in the competition for craft-beer expansions, like the $31 mln East Coast brewery planned by Stone Brewing Co. Columbus is in the running, but up against two cities in Virginia — Norfolk and Richmond — that are in a state that has no cap on what a brewer can do with beer.

It should be mentioned that almost all beer falls below 12 percent. Budweiser checks in at 5 percent, Guinness Draught at 4 percent and Yuengling Lager at 4.4 percent. Craft beers trend higher but rarely flirt with double-digit alcohol content. Stone’s Double Bastard Ale hits 10 percent, but its renowned Arrogant Bastard Ale is 7.2 percent.

Yet brewers crave freedom.

To this end, Ohio House Bill 391 would end the limit of 12 percent, pushing the cap to 21 percent and slipping beer into the ether between wine and liquor.

Brewery news Canada, ON: Brick Brewing announces expansion of Kitchener facility
Brick Brewing Co. Ltd. said it will spend C$9 mln to expand its facility in west end Kitchener, Ont., as it looks to consolidate all operations in one location, canadianmanufacturing.com reported on September, 23.

According to the beer maker, it will invest in the expansion of its facility in Kitchener to build a fully integrated brewing, packaging and distribution site.

“This is a major step in the growth of our company, and clear evidence of our commitment to the Kitchener-Waterloo region and the province of Ontario, our most important market,” Brick president and CEO George Croft said.

“This investment will simplify our operation and enables a step-change in efficiency, productivity, quality and cost reduction for us. In order for Brick to remain competitive with the large brewers, this is a step we needed to take.”

The company estimates it will save more than C$1 mln annually by consolidating its operations.

The investment announced by Brick comes after it closed the sale of its historic brewery in Waterloo, Ont., this week.

Brewery news USA, CA & NY: Shmaltz Brewing Co. to expand Clifton Park brewery
Jeremy Cowan, founder of Shmaltz Brewing Co., built his brand of craft beer in San Francisco and New York City, but says his focus has shifted to marketing Shmaltz as a local brand in the Albany, New York area, bizjournals.com reported on September, 22.

"We’re kind of doing it backwards. Most people start local and grow to a larger market," Cowan says. "At the very beginning, I knew I didn't have enough market making a funny beer with a dancing rabbi on it. By its nature, it's going to be a niche within a niche. I knew I had to spread the beer all over the county."

Cowan opened a $4 mln brewery in Clifton Park last year. Now, Shmaltz plans to install two more fermentation tanks in the brewery, which will increase the annual capacity to between 35,000 and 40,000 barrels. Current capacity is between 20,000 and 25,000 barrels a year.

The installation will fuel growth, Cowan says. Revenue in 2013 was $3.2 mln and Cowan expects to hit $4 mln this year. Brewery news USA, CA & CO: Magnolia Brewing Company expands distribution to Colorado
Dave McLean, brewmaster and founder of San Francisco’s Magnolia Brewing Company, announced on September, 18 the launch of Magnolia beer in Denver and Boulder, Colorado.

From the brewery’s beginnings to its newly opened 10,000-square-foot facility, Magnolia has been producing some of San Francisco’s most beloved and sought-after beers for over 16 years. Its distribution in Colorado marks the first time the beer will be available outside of California. Magnolia has partnered with local brewery Crooked Stave Artisan Beers to distribute kegs within the Denver and Boulder markets.

To celebrate their Colorado distribution, Magnolia will host a multi-course beer brunch on Thursday, October 2nd. They’ll pour some favorite Magnolia beers to a Grateful Dead playlist.


Brewery news USA, NC: Triple C Brewing Co. to expand its South End operation
Triple C Brewing Co. is expanding the brewing capacity at its South End operation by 137 percent to meet growing demand for its beers, bizjournals.com reported on September, 23.

On tap is a $400,000 project that will add a range of equipment to Triple C’s 20,000-square-foot facility, says Chris Harker, one of the owners.

Harker and Triple C head brewer Scott Kimball opened the brewery and taproom in 2012. The operation is divided between the brewhouse and taproom, with excess space being used as a warehouse.

“We got a bigger building on purpose and always hoped to grow into it — we just never thought it would be so soon,” Harker says.

The brewery has a 15-barrel brewhouse. That gives it the capacity to brew 3,960 barrels per year, he adds.

This year, Triple C anticipates it will brew 3,200 barrels — each of which holds 31 gallons of beer.

“We’re pretty much maxed out with our current capacity, and want to keep all our obligations,” Harker says.

The upgrade will allow for 9,400 barrels to be brewed annually.

Equipment updates include a bigger walk-in cooler, additional fermentation pads to accommodate more tanks, as well as three, 30-barrel tanks to store beer during the carbonation and clarification process. ...More info on site


Brewery news USA, MI: Harsens Island Brewery to open in Marysville
The building that once housed Twinkies in Marysville will soon be home to a taproom and brewery, Times Herald reported on September, 22.

Father and son Spencer and Brian Phinney purchased the old Wonder Hostess Bakery Outlet building with plans to turn it into what they're calling the Harsens Island Brewery.

"We are focusing on making more traditional beers than the typical craft beers you see," said Brian Phinney, who will be head brewer.

The Phinneys plan to produce and distribute their own beer. They also plan to sell it in cans, a rarity among craft brewers.

"Cans have a longer shelf life, and you can taste the difference from a bottle to a can," said Spencer Phinney, who will be marketing and sales director. "Cans also protect beer from the sun."

But the father and son duo first have to tackle building renovations, starting with hiring a designer and building contractor.

"We also have to worry about licensing, which can take up to six months," Spencer Phinney said. "In late October we are planning to have our equipment delivered. We don't have a set opening date yet, but we are excited to open up as soon as possible."

Brewery news USA, MI: Oracle Brewing Co. to open in Old Town Saginaw by spring 2015
Oracle Brewing is coming to Old Town Saginaw early next year, mlive.com reported on September, 22.

Oracle Brewing Co. co-owners Cody Smith and Chris Younk are busy renovating the space.

When the renovations are done, the atmosphere inside Oracle Brewing will look like "something between clean, modern and still holding onto the original construction," Smith said.

Smith and Younk aim to open Oracle Brewing for business in March or April 2015.

"Brewing is something both of us were kind of passionate about," Smith said. "I had some professional brewing experience, and he's been homebrewing for a while."

Before pursuing their venture, Smith was the head brewer at Midland Brewing Co. for about three years.

Smith said he looked at a few possible locations for the microbrewery, but always wanted to open it in Saginaw "to help rebuild the community. Just be a part of that."

Smith said Oracle Brewing could attract a different crowd to Old Town.

"People travel to seek out a brewery, versus just the regular bar crowd," he said. "I think it will just help improve the image and maybe let other people see that it is a good area and that we can have more businesses down here."

Brewery news USA, MI: Eternity Brewing opened in Livingston County
Eternity Brewing, Livingston County's newest microbrewery, held its grand opening on September, 22.

The business joins Brewery Becker in Brighton and Howell's MainStreet Winery in the ranks of Livingston's microbreweries.

"It still doesn't really feel real," Eternity's Dayna Tran said.

The brewery, featuring a bar and tasting room, will offer nine craft beer selections at opening. Included are a brown stout, a pumpkin pie porter and a Michigan pale ale.

Township Supervisor Gary McCririe said the brewery's opening shows the local economy is picking up.

Barley news UK: Spring barley yields continue to perform above average
Spring barley yields in HGCA Recommended List trials continue to perform above average. Current average yields of the control varieties are 7.89 t/ha, 0.72 t/ha above the five-year average of 7.16, HGCA reported on September 23.

In 2014, the provisionally approved brewing varieties Sanette and KWS Irina top the yield with 109% of the control varieties. The five-year average values provide a better representation of variety performance over a range of seasons, where both varieties achieved a yield of 107% of the control varieties.

The popular brewing variety Propino achieved a five-year average yield of 102%, as did Odyssey which is fully approved for brewing and distilling. The popular brewing and distilling variety Concerto now yields 97%.

The feed variety Shada achieved the best yield over the five years (108%), whilst at the other end of the yields, Westminster, popular in the west due to its tall, stiff straw and good resistance to disease yielded 93%.

Candidate varieties have also performed well, in particular, the potential brewing variety RGT Planet 109% in 2014 (109% five-year average), the potential feed variety Dragoon 109% in 2014 (108% five-year average) and the potential feed variety Scholar 109% (108% in 2014 and the same for the five-year average).



Brewery news Ireland: Beer exports up to 50pc last year
Beer is still the Ireland's favourite alcoholic drink - and the nation is also exporting more of it too, Irish Independent reported on September 22.

Exports of Irish beer rose from 43pc in 2012 to 50pc last year, while at home, beer still enjoys a 47pc market share.

The Irish Brewers Association has claimed a 'beer renaissance' is on the horizon with an abundance of new brewers attempting to enter the market.

However, they warned that this potential growth is being put at risk because of the Government's actions in increasing excise on alcohol in the past two Budgets.

Tax now accounts for almost a third of the price of a pint.

The IBA has now called on the Government to reverse excise on alcohol so that emerging players in the market can reach their full growth potential.


Barley news Ukraine: Farmers harvested 39.6 mln tonnes of grain as of September 22
Ukrainian farmers harvested 39.6 million tonnes of grain from 10.7 million hectares up until Sept. 22, up 15 percent from the same time last year, the agriculture ministry said on September 22.

It said that farmers had harvested 72 percent of the sown area and that grain yield averaged 3.69 tonnes per hectare, around 14.6 percent higher than last year's level. Farmers had harvested 34.5 million tonnes of grain by the same date in 2013, the ministry said in a statement. The ministry said earlier this month that farms had completed the 2014 wheat and barley harvest, threshing 24.4 million tonnes of wheat and 9.3 million tonnes of barley. It also said that the share of milling wheat in the 2014 harvest would be 13 percent below the previous year's level, and stood at 56 percent. The ministry said farmers had so far harvested 3.4 million tonnes of maize from 794,000 hectares, or 17 percent of the area sown for the commodity. The maize yield fell to 4.32 tonnes per hectare this year from 4.95 tonne in 2013, it said. Ukraine plans to harvest no less than 63 million tonnes of grain in 2014, similar to last year's level.


Barley news UK: Growing whisky industry requires more barley plantings in Scotland
Scotland’s second largest export behind oil-and-gas is whisky, but to make enough whisky to account for all the ‘wee drams’ enjoyed around the world, barley is an essential ingredient, abc.net.au reported on September 23.

The whisky industry is Scotland is worth £4 billion per year, with around 40 bottles shipped overseas each second according to the Scottish Whisky Association.

The last decade has seen demand for whisky expand although more recently that demand has levelled off.

The increase in sales over the last 10 years has translated to changes in Scottish paddocks with farmers dedicating more land to growing barley.

Demand for the crop is so high that it has even been sourced from England.

In Scotland about 500,000 hectares of cereal crops are grown with more than half of that land dedicated to growing spring barley.

The region produces about 1.7 million tonnes of barley a year, compared to Australia's average annual production of around seven million tonnes.

Aberdeenshire farmer Richard Stephen, from Scotland's north east, says barley yields can be up around nine tonnes per hectare.

"Getting a good period of weather to get the crop in and out is the biggest problem," he said.

"We don't tend to get drought or floods or anything like that."
