Efficient aroma extraction

ABSTRACT
We want too much from hops, but cannot get everything. If we use pellets or cones for bittering we lose some of the aroma, and as we try to save the aroma we more or less lose the bitter acids. These Japanese researchers propose a system to hop more efficiently. It is a system called PIE (Pre-isomeriser and evaporator) - an extra vessel where the hops are boiled with water. Its first application was to improve bitter utilization, but it can also be used for a more efficient late hop dosing with no detrimental effect on hop aroma!

Brewery news USA, OR: Pelican Brewing expands
There’s a difference between being coastal and being on the coast. That’s a difference that Pelican Brewing has long exploited, as visitors to its beachside pub and brewery in Pacific City, Ore. can dig their toes in the sand, pint in hand, without straying from the premises, brewbound.com reported on October, 28.

In a state that needs no help selling itself as a craft beer destination, Pelican’s immaculate location has for years given the company a leg to stand on that was uniquely its own. And since being founded in 1996, that leg kept the company up just fine. To newly-hired CEO Jim Prinzing’s knowledge, one would need to make a trip to Vietnam to find a similarly situated brewery.

But things are changing, as evidenced by Pelican’s recent facility expansion and hiring spree — it’s brought on 40 new employees, including Prinzing himself. For his part, Prinzing says there has been a significant “shift in thinking” at the company. No longer content to sell primarily traditional-style beers in a very limited area, Pelican is expanding its creative horizons and exploring new market opportunities for the very first time.

Pelican only started packaging beer for availability off-premise in Pacific City three years ago, ...More info on site

Brewery news USA, CA & VA: Council approves first pieces of Stone Brewing deal
After some pressure from Stone Brewing Co., the Richmond City Council voted unanimously to approve the first set of ordinances related to the California-based craft brewer's plans to open a new facility in Richmond's East End, timesdispatch.com reported on October, 27. Several council members voiced concern that the governing body didn't have enough details on a complex economic development deal that will ultimately require 15 pieces of legislation, but the administration of Mayor Dwight C. Jones stressed the need to show Stone the city is ready to get the project rolling. "I do believe very strongly it's important to them from a business perspective to get this one piece done as a show of faith and commitment on behalf of the city," said Grant Neely, chief of staff to Mayor Dwight C. Jones.

The two ordinances approved were a performance agreement laying out what Stone must do to qualify for roughly $2 mln in city incentives and a measure to reduce wastewater fees for breweries, cideries and distilleries. Officials have explained the latter ordinance by saying that the byproducts of breweries are beneficial to the wastewater system.

Stone representatives pressed the council to move fast, saying the company needs to get the ...More info on site

Brewery news USA, CA: Honey Wagon Brewing opens in Tehachapi
Beer poured plentifully as Tehachapi’s first microbrewery opened its doors to the anticipating public on Oct. 23, tehachapinews.com reported on October, 24.

Honey Wagon Brewing drew people in small droves, filling up tables, bar stools and sampling beers by the pints and samplers.

Steve and Nicol Roemer, the owners, called the turn out in the first hour of opening a good sign.

“It’s been a lot of work and we couldn’t have done it without a lot of friends,” said Nicol Roemer. “It’s all worth it to see people sitting at the bar smiling and having a good time.”

Steve Roemer said the work leading up to the opening had been hard.

“Everything before now has made this easy,” said Steve Roemer. Challenges included construction to obtaining a licence from the California Department of Alcoholic Beverage Control.

“Everybody seems to be happy and enjoying the beer,” Steve Roemer said.

The beer ranged from Roemer’s signature brown ale to a blonde ale, red ale and IPA, something one patron enjoyed.

“The IPA is awesome and hoppy,” said Stuart Etherton, one of the patrons. “I’m a big hophead so it ‘s a good choice.”

“This place has a nice, laid back atmosphere,” Etherton said. “The warehouse feel is nice and ...More info on site

Brewery news USA, TN: Johnson City Brewing Co. opens in Johnson City
Johnson City Brewing Company is pouring more than just brew into the community, it is boosting revitalization efforts as well, wjhl.com reported on October, 25.

One of the owners, Eric Latham, said the recent soft opening they held far exceeded their expectations.

The hope is to bring the community together, to try something new, and get people talking.

"What we have here with the microbrewery is, what we hope it is, is more than just a microbrewery, it's a place for people to come together, for people to come back downtown, the community to come together and talk about issues and enjoy a local craft beer," said Latham.

Brewery news USA, CA & NV: Pizza Port Brewing Company beers to be distributed in Nevada
For the first time, Pizza Port Brewing Company’s celebrated craft beer will be distributed outside of Southern California, as Southern Wine & Spirits of Nevada introduces it to the Las Vegas and Reno markets, vegasnews.com reported on October, 24.

Soon to be available at bars, restaurants, special events and retailers, Pizza Port Brewing Company will roll-out its Nevada distribution with three styles of the cult-followed beer, including Chronic Ale, Swami’s India Pale Ale and Ponto Sessionable India Pale Ale.

“The craft beer scene in Nevada is growing and we want Pizza Port to be a part of it,” said Gina Marsaglia, president and CEO of Pizza Port Brewing Company. “Our brand is committed to delivering a fun and unique drinking experience, which fits Las Vegas perfectly and aligns with the mission of Southern Wine & Spirits of Nevada.”

Ian Staller, Southern Wine & Spirits of Nevada’s executive vice president and general manager, said, “With the significant volume of Southern Californians travelling to Las Vegas, Southern Wine & Spirits of Nevada seeks to offer them a beer that they know and love. Additionally, partnering with Pizza Port provides an opportunity to introduce a world-class brewery to a global audience.”

Brewery news USA, WI: Octopi Brewing to build in Waunakee not Madison
A brewery that had been planned for Madison’s Southeast side is instead being proposed for Waunakee, Madison.com reported on October, 28.

Isaac Showaki, Octopi Brewing Co. founder, said flood plain issues forced him to look for other locations for his $5 mln, 20,000-square-foot production facility. Showaki said he looked at sites in Madison, Cottage Grove, Fitchburg and Sun Prairie before selecting a three-acre parcel in the 160-acre Waunakee Business Park.

“We want to break ground as soon as possible,” Showaki said. “We really like the (business park). It’s a nicer park than we had seen before, and there’s really good businesses around it. Waunakee has been really helpful in moving it along, and it’s made things a lot easier.”

The Waunakee Plan Commission reviewed the project and could approve the plan at its next meeting Nov. 24. The project would include an estimated $200,000 in tax incremental funding from the village but a final amount has not yet been finalized in a development agreement, said Todd Schmidt, the village’s administrator and economic development director.

Showaki helped co-found 5 Rabbit Cerveceria in Chicago in 2011. When he left the brewing company in 2013, he was overseeing contract brewing and was chief operations officer. In June, ...More info on site

Brewery news USA, VT: Trapp Lager Brewery expands
Though the new and improved Trapp Lager Brewery won't start rolling out new product until later this winter, this week marked a turning point for the project, sevendaysvt.com reported on October, 28.

This week, executive vice president Sam von Trapp — along with head brewer J.P. Williams and the rest of the Trapp brewing and construction teams — plans to open a hole in the new brewery's roof. Cranes will lower in a 50-barrel brewhouse boiler that, along with new fermenters and lagering tanks, will increase the brewery's production from 2,000 barrels annually to about 50,000 over the course of the next couple years.

Though the new brewhouse is crucial to amping up production, new storage and fermentation tanks are also crucial. German lagers ferment at cooler temperatures, often at half the speed of other beers, and they require weeks of rest in cold storage, called "lagering" (the word "lager" means "storage room" in German). So increasing production relies more on those tanks than on the initial brew itself. "It's a whole new brewery," von Trapp says. "A much larger, much more modern brewery with a much greater capacity."

"Right now we're focusing on getting the [beer] production going," von Trapp says. That ...More info on site

Brewery news Canada, BC: Cannery Brewing breaks ground at site of New Brewery
Following the announcement earlier this month that it will be moving to a new location in downtown Penticton, Cannery Brewing held a ceremonial groundbreaking at the new site late last week, Canadian Beer News reported on October, 28.

In front of a crowd of local dignitaries, media, suppliers and staff, Cannery co-owner Patt Dyck outlined the plans for the new facility, which will encompass a previously existing building as well as a new surrounding structure.

Patt said, “Our new space will allow us the opportunity to expand our beer production and our selection of unique, specialty and one-off beers to provide greater interest and variety for all of our customers who want to share in the fascinating world of craft beer. Our new brewery will be built to meet our current needs and to meet our needs as we grow in the future.”

Construction of the new building will begin immediately, and the brewery is expected to relocate in early 2015.

Brewery news Costa Rica: Craft beer industry enjoying great success and growth
Great success and growth has taken place for the craft beer brewing industry in Costa Rica. This is obvious through data received from craft beer festivals that have taken place in the country, The Costa Rica News reported on October 28.

For the first festival in 2012, only 350 tickets were sold and 500 people were left out of the event. In the second, participation increased to 750 entries. For the 2014 event, 1,100 tickets were sold, and the fairgrounds eventually hosted a total of 3,000 people that came.

The distribution companies are unable to cope with the new beer demand that’s growing faster than they can keep up with. Several are incorporated; among these are Costa Rica Craft, The Brotherhood, and Treintaycinco Meadery, to name a few. However, there are many others in the process of legalization as well as many bars or pubs that offer their own beer onsite, such as Volcano Brewing and Bribri Springs.

Costa Rica Craft pioneered the craft beer market in the country. It was created in 2010, but it was not until January 2011 that they began to market their beers. They currently produce 13,000 litres of beer per month but since this does not ...More info on site

Barley news Russia: Analysts warn of possible 15-20% decline in wheat output
Concerns over Russia's grain prospects deepened as SovEcon, foreseeing a fall of some 15-20% in wheat output, warned on October 24 that the depreciating rouble threatened hopes of strong spring sowings offsetting losses in the vulnerable winter crop.

The influential analysis group, in its first forecasts for Russia's 2015 grain harvest, warned that total grains output may fall below 90 mln tonnes, from the level of 103 mln – 105 mln tonnes achieved this year.

The wheat harvest, which this year hit 58 mln – 59 mln tonnes, may drop below 50 mln tonnes, SovEcon said.

The forecast reflected the "extremely weak condition" of autumn-sown grains, which the Moscow-based group rated at 62 points on an index drawn from NDVI (normalized difference vegetation index) data, and where 100 points is the long-term average.

That is by far the lowest figure on ratings going back five years – which had never before dropped below 80 – and well below that in 2009, preceding a 33% slump in wheat production at harvest the following year.

The poor condition rating reflects a dearth of moisture, which has left crops in a poor state heading into winter, raising the prospect of large rates of freeze damage.

"A lack of moisture ...More info on site

Brewery news Haiti: Heineken’s sustainability strategy benefiting farmers in Haiti and other countries
Heineken’s sustainability strategy is called "Brewing a Better Future," and local sourcing is an important part of it. To that end, Heineken has committed to buying locally sourced sorghum in Haiti, Justmeans.com reported on October 28.

In 2012, Heineken consolidated its majority ownership of Brasserie Nationale d’Haiti S.A. (BRANA). Heineken invested about $20 million in constructing a fifth production line that launched in December 2013 and allowed BRANA to double bottled beer output. Another $20 million will go towards expansion of the brew house that BRANA will inaugurate in December. In 2012, BRANA launched the Smallholders Alliance for Sorghum in Haiti (SMASH) at the Clinton Global Initiative Summit in New York. SMASH addresses issues like poor soil quality and efficient harvest yields. Last year, BRANA signed a Memorandum of Understanding with the US Agency for International Development (USAID). BRANA invested $3.4 million into SMASH and committed to sourcing locally produced sorghum to produce Malta H. Haitian farmers have increased sorghum yields by 100 percent and almost doubled their incomes as a result. Heineken has made commitments to obtaining raw materials from sustainable sources, which include:

•Sustainable sourcing of 20 percent of barley, 40 percent of hops, 60 ...More info on site

Barley news Australia: Average barley yields increase significantly since the 1970s
Average barley yields have increased significantly since the 1970s, according to University of Adelaide barley program leader Jason Eglington quoted by Stock Journal on October 25.

Speaking at the recent Hart Field Day, Dr Eglington said grain yield doubled in the period from 1970 to 2000 but average production was significantly affected by drought conditions in 2006, 2007 and 2008.

"The five-year average has now recovered back up to the long-term trend for productivity increases," he said.

This meant that the five-year average was now at 2.27 tonnes a hectare.

The area sown to barley in South Australia in the 2013-14 season was estimated at 925,000 ha, slightly above the five-year average which could possibly be attributed to limited early sowing opportunities in some districts.

"The area sown to barley varies year to year but is generally pretty stable at just under 1 million ha," Dr Eglington said.

Barley production for last season was estimated at 2.28 million tonnes, with a statewide average of 2.47 t/ha.

"Last year the top varieties were going about 5 t/ha," he said. "These varieties include Compass, Hindmarsh, Fathom and La Trobe."

Dr Eglington said the trends in variety adoption in the past few years continued in 2013, with Hindmarsh, Commander, Fleet and ...More info on site
