About complete advanced hopping

ABSTRACT
We are currently facing a trend towards traditional hopping methods, especially with the increasing success for craft beers. However advanced hopping has various benefits that were investigated by a Belgian research team. The results indicate that fully advanced hopped beers prepared with isomerized hop extracts, hop polyphenol extracts, and specific hop aroma essences have a complete beer flavor that can compete with traditionally hopped beers. They were also able to show that next to their radical scavenging activity, polyphenolic extracts have high potential to improve beer sensory properties. Except for the proanthocyanidins, all polyphenolic preparations were highly flavor-active, with positive effects on mouthfeel. Also bitterness quality improved after the addition of total polyphenolic extract.

Malt news Canada: Horton Ridge Malt & Grain Co. Ltd plans to open small malt house in Nova Scotia
Horton Ridge Malt & Grain Co. Ltd has plans to open a malt house in Hortonville, Nova Scotia to produce organic malted grains for use in the region’s craft brewing and distilling industries. Currently there is no malt being produced in Nova Scotia, The Daily Business Buzz reported on November 29.

Horton Ridge Malt & Grain is seeking community investment to launch its business by establishing a Community Economic Development Investment Fund (or CEDIF).

On Dec. 11, 2014, at the Wolfville Farmers Market, Horton Ridge Malt & Grain Co. Ltd will be hosting “Horton Ridge Malt Comes Alive” at 7 p.m. This event will allow attendees to obtain more information on both the business goals of the company and the investment opportunities available.

“The Nova Scotian craft brewing and distilling sectors are having a measureable positive impact on our economy. The establishment of a craft malting business will amplify this by allowing the most important ingredient of beer and whisky to be produced here, instead of being imported from other regions of Canada or beyond”, says Alan Stewart, President of Horton Ridge Malt & Grain.

“Furthermore, a malting operation will channel beer dollars to rural Nova Scotia, into the hands of the ...More info on site

Brewery news India: United Bank of India identifies United Breweries Holdings as wilful defaulter
In fresh trouble for liquor baron Vijay Mallya, United Bank of India has identified United Breweries Holdings, the guarantor of grounded airline Kingfisher, as wilful defaulter, The Economic Times reported on December 2.

The bank has already declared Kingfisher Airlines and its four directors, including Mallya, as wilful defaulters.

"We have identified United Breweries (UB) Holdings as wilful defaulter because the company had the resources to repay the loan as guarantor of Kingfisher Airlines," United Bank of India (UBI) Executive Director Deepak Narang told PTI.

UB Holdings had additional resources available as per the balance sheet of 2013-14, he said, adding, these funds could have been used for paying loans given to Kingfisher.

The bank issued notice to the UB Holdings and got a reply which was not satisfactory.

"We would take further action after due deliberations on the issue," he added.

In September this year, UBI became the first lender to declare debt-ridden Kingfisher Airlines, its promoter Vijay Mallya and other directors wilful defaulters as the company allegedly indulged in diversion of funds by opening multiple accounts.

The other directors declared as wilful defaulters by the Grievance Redressal Committee (GRC) of the bank are Ravi Nedungadi, Anil Kumar Ganguly and Subash Gupte.

Kingfisher Airlines and directors declared ...More info on site

Brewery news Norway: Budějovický Budvar wins right to continue selling its beer in Norway under the Budweiser trademark
Czech brewery Budějovický Budvar has won a 21-year long dispute with Anheuser-Bush InBev over the registration of the Budweiser trademark in Norway, the brewery’s spokesman Petr Samec told the Czech News Agency on December 4.

Budvar applied for the trademark in December 1993, but the world biggest brewer filed an objection. The final ruling allows Budvar to continue selling its beer in Norway under the Budweiser trademark.

Legal disputes over the famous trademark have been going on since 1907.

Brewery news The Czech Republic: Study shows 90% of Czech men and more than 50% of Czech women sometimes drink beer
Ninety percent of Czech men and more than a half of Czech women sometimes drink beer, according to a survey conducted annually by the Institute of Sociology of the Academy of Sciences the results of which were released by the Czech Beer and Malt Association on December 2.

The share of beer drinkers among Czech men dropped one percentage point to 90 percent, while the share of women decreased four percentage points to 56 percent. Men between the ages of 45 and 59, and women between 30 and 44 years old drink beer the most often.

"Although the share of women drinking beer moderately declined last year, according to this year's results, the trend overall does not differ from the survey that has been conducted for 10 years already," said Jiří Vinopal, who headed the survey.

"A timeline shows us the share of women drinking beer is between 50 percent and 60 percent in the long term," Vinopal said.

The popularity of alcohol-free beer has been falling, while demand for beer-based mixed drinks has been increasing, the survey showed.

The share of people who drink nonalcoholic beer if they cannot drink beer with alcohol moderately dropped compared with the previous years. The share of men ...More info on site

Brewery news Ethiopia: Raya Brewery to test its new factory soon
In two weeks’ time, Raya Brewery S.C. is going to start testing its factory aiming to begin producing beer by the end of December, Fortune reported on December 3.

This was announced the company’s general manager Atakilti Kiros during a meeting held at Elily International Hotel.

It was among 58 shareholders the brewery was founded, which includes Ethiopia’s former army chief of staff Tsadkan Gebretinsae and Ambachew Abreha, former head of Ethiopian Shipping Lines (ESL). Nonetheless, the number of shareholders has now grown to 2,441.

According to Atakilty, it was back in 2013 that Raya started constructing the brewery in Bohera Mountains.

There are different competitions that will wait for Raya as it enters the Ethiopian market. Different international giants have recently joined. Diageo has bought Meta Abo brewery for USD 250 mln in 2013. Heineken on the other hand now owns Bedele and Harar Breweries, in addition to its newly launched brand Walya Beer.

There is also BGI Ethiopia producing St. George, Castle and Amber beers. It has a 52 percent share in the Ethiopian market. Habesha Brewery is going to join the market soon.

Raya is aiming to control and dominate the northern market, Yemane Kidane, shareholder of the company explained. The brewery’s current ...More info on site

Brewery news The Czech Republic: Budvar launches super strong beer
One of the Czech Republic’s biggest beer producers has just started distributing a new strong brew. Indeed, Budějovický Budvar’s B:Cryo is around four times stronger than normal beers. However, some wonder if the drink, meant to be sipped rather than consumed in large quantities, is not just a marketing gimmick, Radio.cz reported on November 13.

Budějovický Budvar’s new drink B:Cryo has an alcohol by volume level of 21 percent. While most Czech beers are 10, 11 or 12 degree, B:Cryo is a remarkable 40 degree. The new brew is served frozen, yet it can allegedly warm you up, just like a liquor. The producers say that it matures in cellars for 200 days before being poured into special bottles and shipped to restaurants, where it is subsequently frozen.

Petr Samec is the spokesman for the state-owned brewery:

“The beer is frozen at a temperature of -18 degrees Celsius for up to 48 hours. It is stored in a special bottle which doesn’t burst when frozen. The ice is not homogenous and it creates a porous structure with microscopic channels that contain a cryoconcentrate of beer, which is very strong.”

B:Cryo is served in 1.5 litre bottles with a special tap, from which consumers draw ...More info on site

Brewery news Australia: Coopers sees surge in sales of its alcohol-free beer
Australian brewer Coopers has seen a surge in sales of its alcohol-free beer, which is brewed according to the German purity law, and then the alcohol is extracted using a centrifuge, Foodmagazine reported on December 4.

Coopers has seen sales of the international premium quality beer Holsten 0.0% surge more than 20% in the past 12 months.

“The product’s brewed according to the German purity law, so all we’re allowed to put in it is malt, water, hops and yeast,” says Scott Harris, the marketing manager of brewing products, Coopers.

“It’s brewed like a normal beer, like a normal Pilsner and then they remove the alcohol with a centrifuge, and because alcohol stems from the water, they can pull the alcohol out.”

“The rest of the process is pretty much done like a normal beer…so we don’t actually do anything specific that you wouldn’t do to a normal beer, apart from remove the alcohol from the beer with a centrifuge.”

The process does change the taste of the beer, but only “slightly”, due to the process used.

“Alcohol does add flavour to a beer but I think what’s interesting about this particular beer, is that due to the way they take it out, you still get ...More info on site

Brewery news EU: The Brewers of Europe re-elect Demetrio Carceller as their President
The Brewers of Europe’s General Assembly has unanimously re-elected Spanish brewer Demetrio Carceller to represent the European association that federates 29 national brewers associations across Europe.

The EU has over 5500 breweries, which together brew 38 billion litres of beer annually. In Spain, the EU’s fourth largest beer market, beer represents 1.4% of national GDP.

As President of Europe’s brewing sector, Carceller will continue the work of promoting the sector's contribution to the European society, culture and economy.

Beer generates over 2 million direct and indirect jobs in Europe across the entire value chain, with one job in brewing creating one in agriculture, one in packaging and logistics, one in marketing and other services, one in retail and 11 in bars, pubs and restaurants. Breweries directly employ more than 125,000 people in Europe but also create a further 1.4 million jobs in the hospitality sector, according to the latest report by Ernst & Young.

While the European context has been very difficult in recent years, beer exports increased by 11% between 2010 and 2013. It is also worth noting that, in spite of a decline, a third of beer consumption in Europe is still taking place in bars and restaurants, generating 76 billion ...More info on site
