How does yeast affect hop aroma components?


ABSTRACT
This question has been around for a couple of years, however it has not been well addressed to this point. These US researchers have now shown, in a small scale production trials, how the presence of yeast influences the concentration levels of various hop aroma components. Linalool, geraniol and citronellol levels decreased in the presence of yeast, and the concentrations of nerol, caryophyllene, humulene and myrcene were also found to be significantly lower. To clarify the different mechanisms of those losses, more research is needed.

Barley news USA: The American Malting Barley Association announces recommended malting barley varieties for 2015
The American Malting Barley Association, Inc. (AMBA) announced on December 12 the list of recommended malting barley varieties for the 2015 growing season.

AMBA is a nonprofit trade association of 70 U.S. malting, brewing and distilling companies that provide funding for the development of new barley varieties and evaluates new selections for their suitably in the U.S.

Endeavor, a winter two-row variety has been added for 2015 and Robust, a six-row variety on the list since 1984, has been dropped from the list.

Endeavor was selected from a cross made at the USDA Agricultural Research Service National Small Grains Germplasm Research Facility in Aberdeen, ID, from the variety Harrington and an Oregon State University line developed from European barleys.

As with other winter varieties like Charles and Wintmalt, Endeavor can provide a yield advantage over spring types in areas where climatic conditions allow for their winter survival.

The recommended two-rowed varieties for 2015 are ABI Voyager, AC Metcalfe, CDC Copeland, CDC Meredith, Charles, Conlon, Conrad, Endeavor, Expedition, Harrington, Hockett, Merit, Merit 57, Moravian 37, Moravian 69, Pinnacle, Scarlett, and Wintmalt.

Six-rowed varieties are Celebration, Innovation, Lacey, Legacy, Quest, Stellar-ND, and Tradition.

Brewery news USA: MillerCoors taking nuanced approach to countering decline in light beer sales
MillerCoors, the brewing group, is taking a nuanced approach to countering the decline in light beer sales, mixing big marketing initiatives with activities to maintain top-of-mind presence for its brands, WARC.com reported on December 15.

Brittnye Dougherty, director/brand and consumer insights at MillerCoors, discussed some of the challenges facing light beer at The Market Research Event, an event held by the Institute for International Research (IIR).

"It's a mature segment, it's the largest segment in beer and - unfortunately for us - it's declining," she said.

Figures from Impact Databank suggest light beer sales fell by 3.5% to 98.4 mln barrels in 2013. It also forecast a further decline of 4.9 mln barrels by the close of 2015, taking the segment to its lowest volumes in a decade.

Such unfavourable trends were largely replicated by the entire beer market, where demand - excluding non-alcoholic beers - dipped by 1.5% to 195 mln barrels, whereas wine and spirits both grew by more than 40%.

Within the beer sector itself, craft beers are posing an increasingly tough challenge to established brands, with sales rising by 18% over the period to July 2014, according to the Brewers' Association.

Brewery news USA, MI: Block Brewing Co. to open in Howell
Block Brewing Co. opens in Howell, freep.com reported on December, 12.

The brewery and restaurant has set up shop at the former Shark Club site on South Michigan Avenue but almost no traces, from pinball games to charity poker nights, will remain.

"This is a fresh approach," said Keith Koch, who joins his wife, Ebony, and Kirstie Magyari as the new ownership team.

For starters, the building has undergone a floor-to-ceiling renovation over the past six months. The approach extends to the beer, brewed up fresh in recently installed vats, as well as to the new menu.

"The menu will incorporate the beer we brew," Gonzales said.

For his part, brewer and namesake Tom Block will serve up a variety of brews, from pale ales to pilsners to stouts, along with seasonal and one-off items.

"I've been working with Teeko's (an area coffee shop) to come up with some specialty brews," Block said.

For Block, a brewer with 20 years of experience, the new venture is a welcome trip home. His career includes stops at microbreweries in Battle Creek, Jackson and Indianapolis.

"After all these years, I'm finally working in Howell," he said.

Brewery news Canada, BC: Local liquor rules don’t allow the opening of a gluten-free brewery in Delta
Plans to open a gluten-free brewery in Delta, BC have been abandoned due to stringent liquor rules in the province that would have made the business financially non-viable, Canadian Beer News reported on December, 10.

Maynestream Brewing was a long-planned project from Dennis and Peggy Maynes, who intended to launch with Grand Turk Islander Hard Ginger Beer, followed by various other beers brewed with sorghum, rice and other gluten-free grains and fermentables.

B.C. liquor legislation would have classified all of these products as “coolers” due to the lack of barley malt in the recipes, which would have forced mark-ups of 74% on kegs and 98% on bottles – tax rates that are much higher than standard beers.

The Maynes were informed of this rule by the British Columbia Liquor Distribution Branch this past summer, and after several months of attempting to negotiate an alternative tax structure for their products, they have decided to scrap their plans entirely, and have put the fully built brewery – including all licenses – up for sale.


Brewery news USA, NC: Hi-Wire Brewing to expand
In September, Hi-Wire announced it had grown 135 percent since opening its doors just over a year before. In order to keep pace, the company was planning to enter a contract brewing agreement with Lazy Magnolia Brewing Co. in Mississippi, mountain.com reported on December, 12.

The contract brewing arrangement meant that Hi-Wire would pay Lazy Magnolia and work with that company to brew and bottle some of Hi-Wire’s flagship beers. Owners Adam Charnack and Chris Frosaker both stressed that contract brewing was part of a larger plan, and that it’s frequently a strategy used by breweries as they grow.

Hi-Wire are keeping their primary location and adding a second production facility “right in the middle of town … though we’re not ready to let that cat out of the bag yet,” says Charnack. The new facility will reportedly give them about 20,000 square feet of additional space.

In conjunction with the Buncombe County Commission, Asheville City Council and the Economic Development Coalition for Asheville-Buncombe County, Hi-Wire announced it is investing $1.62 mln in a new brewing facility and equipment and will add approximately 15 jobs.

Brewery news USA, MO & OH: Boulevard Brewing Company expands distribution to Ohio
Over the past few months, Boulevard Brewing Company has added four states to its distribution territory. In January, Boulevard beers will be available on taps and retail shelves throughout Ohio, brewbound.com reported on December, 12.

“Ohio is a great beer market,” said Steve Mills, Boulevard’s vice president of sales. “With the ongoing expansion of our brewery, it’s time for us to get off the sidelines and into the game. We’re excited to partner with Cavalier Distributing to bring more variety and excitement to Ohio craft beer lovers.”

Brewery news USA, CA: Big Dawg Brewhaus expands with new name
The "Big Dawg" on Richmond's west side has a new name: Noble Order Brewing Company. The former Big Dawg Brewhaus at J&J Winery has experienced so much growth, the owners have changed its name to better reflect the type of beer brewed and to aid in product distribution, pal-item.com reported on December, 15.

"We're pretty excited about all the changes and we've got a great product to back that up," said Melody Haist, who owns J&J Winery with her husband, Jeff.

They share ownership of the brewery with Mike Miller. The winery opened in 2009, and the brewery was added in 2011. In 2013, they expanded the half-barrel brewery into a 15-barrel brewery.

"It was a big change," Miller said.

Under the guidance of brewmaster Richard Shroyer, they now produce about 2,000 barrels of beer a year, making Noble Order the biggest brewery in eastern Indiana.

"That puts us in the top 12 to 15 Indiana brewers," said Miller, who also is a brewer.

Brewery news USA, IL: Finch's Beer Company to expand
Beer brewing has become a very big business in Chicago, and one more local brewer, Finch's Beer Company, is looking to step up its game by building a new 80,000 square foot brewery along the North Branch of the Chicago River in Lincoln Park, chicago.curbed.com reported on December, 11.

Finch's Beer Company has recently announced its intentions to build a large new campus in two phases, which will include a brewing facility, tap room and shop.

According to the new plan, Finch's hopes to have the project completed and opened by late 2016/early 2017. Finch's joins Half Acre Beer Company, Revolution Brewing and Lagunitas Brewing Company who have all made major moves and expansions in the last few years.


Brewery news USA, CA & WI: Ballast Point partners with Wirtz Beverage in Wisconsin
Ballast Point and Wirtz Beverage announced plans to expand their partnership into Wisconsin, brewbound.com reported on December, 10.

The companies have distribution agreements in Minnesota, Nevada and Illinois. Wirtz Beverage will distribute the Ballast Point portfolio of craft spirits and beer beginning January 1.

“We’ve had great interest in our brands throughout the Midwest and people have been asking for years when we’d come to Wisconsin,” said Jack White, CEO & Founder, Ballast Point. “It’s really fantastic to have that kind of appeal and support and it’s even better to be doing it with an experienced partner we know and trust. Brewery news USA, NY: Threes Brewing launches brewpub in Gowanus
Threes Brewing opened their doors at the beginning of last week and brought more than just craft beer to the neighbourhood, blogs.villagevoice.com reported on December, 12.

Brooklyn's newest brewpub is also a sizable event space, offering live performances, a coffee bar, and a rotating pop-up eatery. Of course, beer will remain a central theme, and owner Andrew Unterberg - along with two partners, Joshua Stylman and Justin Israelson - express an interest in unique styles of suds. Sour beers, for example, will play a prominent role on the menu. Threes Brewing has a whole stash of funky beer sitting in barrels on the north fork of Long Island, slowly awaiting their introduction to the brewpub's two dozen tap line system.

Those 24 handles include four dedicated to kegged wine, and an enviable assortment of local guest brews. There's also a noteworthy collection of whiskey lined up behind the bar.


Brewery news USA, MN: Wabasha Brewing Co. to open in St. Paul
Wabasha Brewing Company, the first craft brewery to open on St. Paul's West Side, hopes to have its tiny taproom open in time for the new year, twincities.com reported on December, 14.

The upstairs taproom has a 33-person capacity, but it's temporary. Co-owner Chris Kolve said he and his two business partners will begin construction soon on a larger, downstairs taproom that will accommodate 90 people.

Kolve said he and buddies Josh Tischleder and Brett Erickson had been brewing on a one-barrel system in Erickson's garage when they decided to take the plunge and open their own brewery.

"Everybody had been telling us we brew great beers and we should open a brewery," Kolve said. "That talk turned into a few beers one night, and we decided to do it."

Wabasha Brewing will come out of the gate with a wide variety of beers, including a porter, a cream ale, an IPA, an imperial stout, a brown ale, an amber and some seasonals, Kolve said.



Brewery news USA, IN: Sun King Brewing Co. to put limits on distribution because of state law
Sun King Brewing Co. said it plans to quit distributing beer outside of the Indianapolis metropolitan area because it is close to hitting the state’s 30,000-barrel-a-year production limit at its downtown brewery, ibj.com reported on December, 12.

“Sun King is in the unfortunate position of being forced to terminate our distribution agreements, which currently allow individuals outside of the greater Indianapolis area and Bloomington to enjoy Sun King beer,” owner Clay Robinson said. “At our current rate of production, we cannot possibly sustain our shipments to distributors in 2015 without compromising our ability to operate our Tasting Room and self-distribute our beer in central Indiana.”

Sun King said in August that it was on pace to produce 28,500 barrels of beer this year, up from 5,000 in 2009, the year the company was founded.

Small breweries are allowed to produce more than 30,000 barrels, but only as long as any amount over 30,000 barrels is distributed out of state. Sun King does not distribute its products beyond Indiana’s borders.

Brewery news Vietnam: Excise tax rate on beer to increase to 55% as of January 2016
Vietnam’s excise tax rates on alcohol, beer and tobacco will begin to increase in a year’s time, under the revised Law on Special Consumption Tax, which will take effect on January 1, 2016, Tuoi Tre News reported on December 15.

The law is among the eight laws that were approved by legislators at the 13th National Assembly’s eighth session that closed on November 28.

The Law on Special Consumption Tax has been amended to ensure a stable revenue source for the State’s Budget on the basis of reasonable changes to the tax rates of a number of commodities,

Accordingly, the tax rate on tobacco will be increased from the current 65 percent to 70 percent as of January 1, 2016, and to 75 percent as of January 1, 2019.

Similarly, the tax rate levied on alcohol with 20 percent concentration or higher will be raised to 55 percent as of January 1, 2016, 60 percent as of January 1, 2017 and 65 percent as of January 1, 2018.

Meanwhile, beer will see a tax rate increase from the current 50 percent to 55 percent from January 1, 2016, 60 percent from January 1, 2016, and 65 percent from January 1, 2018.

Brewery news World: Carlsberg preparing major focus on no- and low-alcohol beer
Carlsberg is lining up a major focus on “healthy” no- and low-alcohol beer, starting with the launch of new radler-style beer Tourtel Twist in France next year.

The Danish brewer said it has identified a “very big opportunity” for so-called adult soft drinks and will roll out new products across Europe over the next few years. It will also increase the footprint of existing low-alcohol brands such as Nordic Blonde, with an abv of 0.5%, which was released in Denmark this year.

“It will be four-to-five years before it is making the same business impact as cider, craft beer and speciality, but over the medium-term we believe no-alcohol is going to be a much bigger part of the business,” said Graham Fewkes, Carlsberg's head of global sales, marketing & innovation. “It will be something that's genuinely incremental to our business.”

Speaking to journalists in Copenhagen last week, Fewkes said Tourtel Twist will be a “big launch” for the company next year. It will be part of Carlsberg's “natural refreshment” focus, which has already seen success with a range of low-alcohol radler-style releases such as Carlsberg Citrus in the UK.

Brewery news China & Cambodia: Khmer Brewery signs deal on distribution of its beer in China
Six pairs of Chinese and Cambodian firms signed off on a half-dozen business deals over the past two days in Phnom Penh worth more than $1.5 billion, the bulk of it for a five-year stone crushing project, The Cambodia Daily reported on December 16.

“Some Chinese companies signed business deals to buy products from Cambodian companies, while some signed deals to sell products to Cambodian companies,” Chheav Pha, who heads the Commerce Ministry’s marketing department, said Monday at the start of a four-day trade expo.

At a separate event in Phnom Penh on December 14, Khmer Brewery Limited, the maker of Cambodia beer, inked a deal that will see China’s Fuzhou Newgroup Industry distribute the beer across China.

Sok Chantha, business development manager for the Chip Mong Group, which owns Khmer Brewery, said on December 15 that the deal would last one year, but declined to say how much beer would be exported or reveal the value of the agreement.

Brewery news South Korea: Craft beer segment growing in volume and popularity
It's Friday night in Seoul's hip Kyungridan district and young drinkers are packing themselves into a labyrinth of pubs specialising in craft beer hoping to enjoy the robust flavours of stouts, ales, lagers, and IPAs, BBC reported.

Considering that all of South Korea was, at least in beer terms, something of a barren landscape less than a decade ago, it's a remarkable scene.

Then the market was over-run with offerings from South Korea's two massive industrial brewers: Hite-Jinro and Oriental Brewers.

The rise of craft brewing in Seoul is something of a David and Goliath story, with a passionate handful of craft entrepreneurs overturning decades of beer boredom by tapping into pent up consumer demand and thawing South Korean public policy on how beer is regulated.

Dan Vroon and Chul Park met each other five years ago, when they were both selling craft beer for boat tours and other events.

They bonded over beer.

"Chul initially brought in the first craft beer into Korea from my hometown, Edmonton, Alberta, Canada," Dan Vroon recalls. "That's what sort of inspired us to create more and better beers."

Amanuel Kiros, a purchasing manager at a private construction company, started drinking beer when he was a student at Gondar University five years ago. Around 6:00pm on Tuesday December 2, 2014, he was at Bama Bar and Restaurant, located at Megenagna, beside Zefmesh Grand Mall, on Kenenisa Street. The compound had several tents with tables that seated up to five people, and most were already occupied.

Amanuel had a tent all to himself, with two empty and one half full beer bottles in front of him. "I used to drink Dashen beer, until last September. I made a switch when Walia came," he said.
