Where the aroma hides in hops and other fruits

If it is about sulfur containing aroma compounds in hops, this research group is leading the way. Several of their projects in the past years focused on polyfunctional thiols in beers. In 2012 the team reported the evidence of S-cysteine conjugates. Now they have subjected 4 different hop varieties, Saaz (CZ), Tomahawk (US), Cascade (US) and Nelson Sauvin (NZ) to an enzyme treatment (a β-lyase treatment, apotryptophanase) to see which free thiols would be detectable and to estimate the flavor potential of these hidden flavor compounds. Free thiols were then extracted and quantified by GC-PFPD. Polyfunctional thiols with sensory impact are known in the wine industry and were also identified in different fruits. Furthermore cysteine- and glutathione-S-conjugates have also been found in passion fruit juice, onions and bell peppers. The Cascade hop variety exhibited the highest potential, with 1641μg/kg of 3-Mercapto-hexan-1-ol (grapefruit) released. This value is 14 to 22 times the amount of free thiols previously found in this variety (73-117 μg/kg) By comparison, the treatment of Tomahawk, Nelson Sauvin and Saaz extracts released only 276, 261 and 316 μg/kg of this compound, respectively. Craft Brew Alliance, Inc. (CBA), a leading craft brewing company, on March 4 announced final financial results for the fourth quarter and full year ended December 31, 2014, in line with preliminary results released February 5, 2015. The company also reconfirmed previously reported guidance for 2015, with a continued focus on driving sustained top line growth and strengthening its bottom line.

Highlights for the full year 2014

Net sales increased 12% over 2013 and exceeded $200 million for the first time in CBA’s history, reflecting continued momentum across its core brand families.

Shipments grew 10%, compared to 4% in 2013, reflecting increasing consumer demand in key markets and ongoing efforts to maintain optimum wholesaler inventory levels.

Full year Kona shipments grew 17%, Widmer Brothers shipments grew 6%, and Redhook shipments grew 3% over 2013.

Depletions grew 7%, compared to 11% in 2013, despite an approximate 25% reduction in SKUs.

Gross margin expanded by 130 basis points to 29.4% in 2014, compared to 28.1% in 2013, which highlights the brewery’s continued achievements in driving operational efficiencies and balancing production capabilities across its expanded brewing footprint in the U.S. as the company steers towards its long-term gross margin target of 35% in 2017.

Brewery news USA, MD: Full Tilt Brewing looking to open own brewery in Baltimore
Born in a garage and maturing in the confines of a contract brewery, Full Tilt Brewing has come a long way in its short time in business.

Now the Baltimore brewery is preparing to branch out on its own, Baltimore Business Journal reported on March 4.

Full Tilt brews out of Peabody Heights Brewery in Waverly, but the company is on the hunt for space to launch its own brewing facility in Baltimore City.

"That was the goal the whole time from the start," co-owner Nick Fertig said. "We didn't plan on doing contract forever, but it was a good way to get into the industry."

Fertig said Full Tilt is searching for a 20,000- to 25,000-square-foot warehouse with space for a tap room. He expects it to take about six months from the time Full Tilt signs a lease to get the new brewery up and running, but he hopes to have the tap room open earlier so customers can watch the brewhouse's construction.

Brewery news USA, CA: Coronado Brewing’s revenue up 58% in 2014
Coronado’s Award-Winning ales have attributed to continued growth in 2014 including a 58 percent growth in total revenue year-over-year and brewing almost 30,000 barrels, a 36 percent increase from 2013, Brewbound reported on March 4.

Coronado Brewing has grown more than 50 percent year-over-year in revenue for the third consecutive year with no signs of slowing.

“We are coming off of a banner year with our recent World Beer Cup® awards and opening up our new location in Imperial Beach,” said Rick Chapman, co-founder and president of Coronado Brewing Company. “This is an exciting time to be in the San Diego craft beer community and we are looking forward to what 2015 has to offer.”

Speaking of 2015, Coronado Brewing has already started the year with numbers that will keep the brewery on track to make it four years in a row of significant growth.

Braxton Brewing Co. of Covington, KY has announced its much-anticipated opening date: March 27. The brewery has also revealed new details about its tap room and announced its first two flagship beers, Cincinnati.com reported on March 6.

Brothers Jake and Evan Rouse; their father, Greg, vice president for production at dunnhumbyUSA; and locally renowned brewmaster Richard Dubé, the former vice president of brewing and quality at Christian Moerlein, are behind the new brewery at 27 W. Seventh St.

They shared new details about their tap room, which they're calling the "tap room of the future."

"Everything about the tap room is themed to the garage," Jake said. "We wanted to pay homage to where we started."

That was in Greg's Union garage, where Evan began home brewing. He started six years ago, after a visit to Upland Brewing Company in Bloomington, where the family stopped after dropping Jake off at Indiana University to study entrepreneurship. Brewery news USA, TX: Fort Worth’s Collective Brewing Project reaches back to old Belgian farm tradition of saison brewing
The spirit of Fort Worth’s newest brewery, the Collective Brewing Project, reaches back to the old Belgian farm tradition of saison brewing, Dallas News reported on March 4.

The custom was for farm owners to brew beer in the fall or winter months for consumption in the summer by the farm workers. Typically, the larger farms had plenty of leftover grain to serve all of their workers, but the smaller farms would not. These farms would aggregate their grains in order to serve all of the workers in a gathering called a collective.

“It’s in that spirit that we have a cool place to gather here at the brewery,” Collective Brewing Project co-founder Ryan Deyo says.

The partnership between Deyo and co-founder Mike Goldfuss has been 18 years in the making, ever since the two were freshman at Carroll High School in Southlake, Texas. Despite Deyo’s role as head brewer, Goldfuss was actually the first of the two to begin homebrewing. In fact, Deyo wasn’t the biggest fan of his beer at first taste.

“That was back when I was still drinking stuff like Miller Lite,” Deyo says.

Whisky news USA, VA: Virginia state grant makes possible launch of malting facility and craft distillery in Petersburg
With help from a state grant, a malting facility and craft distillery will open in Petersburg and use large quantities of Virginia-grown feedstock in making alcohol, officials announced on March 4.

Gov. Terry McAuliffe and Petersburg Mayor W. Howard Myers joined the owners of Big Trouble Malting and Spirits at an event in Petersburg to make the announcement.

“The demand for malted barley is huge, and the market is vastly underdeveloped,” said Tony Kvasnicka, co-owner of Big Trouble. “Our goal is to support Virginia craft brewers and create an operation where growers can confidently raise barley and other alternative crops for the craft beer industry.”

McAuliffe approved a $50,000 grant from the Governor’s Agriculture and Forestry Industries Development Fund to assist the City of Petersburg with the project. Big Trouble has agreed to buy more than 40,000 bushels of barley, wheat, rye and fruit from local producers.

“Big Trouble brings together multiple aspects of economic development – agriculture, entrepreneurship, manufacturing, tourism, and community revitalization – in one operation and is another excellent example of leveraging some of the commonwealth’s greatest assets to build a new Virginia economy,” McAuliffe said in a press release.

Brewery news USA, MO: O’Fallon Brewery preparing for opening in west St. Louis County
Jim Gorczyca is getting used to curious neighbors popping their heads into the industrial building he’s transforming in Maryland Heights into a production facility and headquarters for O’Fallon Brewery, one of St. Louis’ largest craft brewers, St. Louis Post-Dispatch reported on March 6.

As people who work nearby at the Westport Plaza office and retail complex see deliveries of 18-feet-tall stainless steel fermentation tanks, curiosity prompts them to ask when the brewery will open, said Brian Owens, O’Fallon’s Brewery’s head brewer since 2002.

The brewery’s exterior signs aren’t installed yet, but several black awnings display the company’s tagline in large white text: “We love beer.”

Announced in February 2014, the $10 million project includes a restaurant with seating for 100 and a tasting room. Both are scheduled to open on May 1, with brewing to start on June 1.

Gorczyca, O’Fallon Brewery’s president and CEO, picked the site at 45 Progress Parkway in large part because of the large concentration of employers.

The 39,000-square-foot brewery building, which was formerly home to a medical equipment manufacturer, is located near Interstate 270 and Page Avenue, in an area with several large employers, including Edward Jones.

Brewery news USA, CA: Big Sexy Brewing expected to open in mid-August
A planned Sacramento brewery now has an address, in addition to a memorable name. Big Sexy Brewing Co. has signed a lease for a space at 5861 88th St., according to James Thompson, co-owner and director of sales and marketing.

The brewery will fill 8,400 square feet of warehouse space, in addition to a 600-square-foot outdoor beer garden. It will include elements such as a taproom featuring reclaimed wood, Thompson said. The brewery will not serve food, relying on food trucks instead, Sacramento Business Journal reported on March 5.

Big Sexy Brewing is expected to open in mid-August. It will be the culmination of a process that began almost three years ago. The brewery was once planned to open in Auburn. When those plans fell through, attention turned toward Sacramento.

Brewery news USA, KY: Lawmakers pass bill preventing brewers from distributing their beers in the state
Kentucky lawmakers passed a bill preventing brewers from distributing their own products in the state and the governor's office signals he will sign it, WCPO reported on March 4.

The bill was largely fought over a move by Anheuser-Busch to purchase another distributorship.

The bill would force Anheuser-Busch to sell its two Kentucky beer distributorships in Louisville and Owensboro. Anheuser-Busch condemns the bill as government overreach into the private market.

A clean version of the bill was passed on a 23-13 vote in the Kentucky Senate on March 4. An earlier attempted to allow Anheuser-Busch's two distributorships to be grandfathered in was removed.

The move also affects Cincinnati's Rhinegeist Brewing. The Over-the-Rhine-based brewery opened a new distributing company called Riverghost in December.

Earlier, the owners of the brewery said they'd have to shutter the facility if they can't find a buyer.

WCPO spoke with Rhinegeist co-founder and President Bob Bonder by phone after the vote.

Brewery news USA: MillerCoors expands Redd’s apple ale brand
Redd’s Wicked Mango started showing up on store shelves in the US this week as MillerCoors expands the apple ale brand, Sun Times reported on March 5.

Wicked Mango, which is 8 percent alcohol by volume, is available in 24- and 16-ounce single cans, as well as in 12 packs of 10-ounce cans.

The other addition to the Redd’s Apple Ale brand is Green Apple Ale (5 percent ABV). It comes in 16-ounce cans, or six and 12 packs of bottles.

“Last year, Redd’s Apple Ale and Redd’s Wicked Apple pushed boundaries by offering bold flavors and dialed up refreshment, to which our drinkers responded positively,” said David Kroll, MillerCoors vice president of marketing and insights. “The introduction of Redd’s Green Apple and Redd’s Wicked Mango flavors continues our commitment to innovation that exceeds our drinkers’ demands.”

The Redd’s brand, introduced in late 2012, is a flavored golden ale. The sweeter taste is designed to appeal to young adults and people who might not otherwise drink beer.

Chicago-based MillerCoors is a joint venture owned by London-based SABMiller PLC and Denver-based Molson Coors Brewing Co.

Brewery news Russia: Vodka loses share to beer in overall alcohol sales in January
If anything is emblematic of Russian cuisine, it’s vodka—sipped along with a meal or gulped down in a shot (or several). But the country’s iconic booze is losing ground to beer, according to government data released this week (link in Russian).

Despite efforts to revive vodka sales and a beer industry crippled by the ruble’s fall, Russians are buying less of the spirit compared to last year, while sales of wine and beer have risen.

According to Rosstat data, vodka’s share in overall acohol sales to the population in January 2015 dropped to 41.5% from 44.4% in January 2014, whereas beer’s share over the reporting period grew to 40% from 37.7% a year ago.

Overall, alcohol prices have been increasing in the country, with the government trying to curb excessive drinking through taxes and regulation. (Indeed, alcoholism is a plague in Russia: One in four men die before they are 55, and according to an extensive study, in large part because of “excess vodka use.”)

Brewery news Japan: Asahi’s beer sales down 5% in January-February this year
Japan’s Asahi Group saw its overall beer sales decline by 3% in February and by 5% over the first two months of this year, the company’s website shows.

Beer sales dropped by 5 and 6% respectively, sales of low-malt happoshu beer were flat in February and increased by 2% in January-February, while sales of malt-based new genre drinks grew 3% in February and declined by 5% in January–February.

CCU’s Board of Directors on its meeting held on March 3rd, approved to propose to the next Ordinary Shareholders’ Meeting the distribution, with charge to year 2014’s profits, of a final dividend, in the amount of CLP 98.78138 per share (CLP 197.56276 per ADR), totaling CLP 36,500,003,610.

The Dividend is proposed to be paid since April 23rd 2015, pursuant to the Shareholders’ Meeting approval, to all the shareholders of the record as of April 17th 2015.

Brewery news Australia: Heineken sales drop in Australia as consumers don’t like it being brewing locally
The Australian arm of global beer giant Heineken has suffered a drop in sales as more trendy inner-city types with beards spurn the local brew because it is made at Lion's commercial brewery in Sydney, and not imported like many other premium beer rivals, Brisbane Times reported on March 6.

Heineken's joint venture with food and beverages group Lion squeezed out a tiny increase in profit last year, even though sales went backwards by 9.2 per cent to A$65.8 million.

The joint venture brews Heineken under a licence for the Australian market at Lion's Lidcombe brewery in western Sydney.

The fact Heineken is brewed in Australia for the local market rather than being an "imported" beer seems to matter to discerning customers.

Pablo Theodoros, manager at East End Cellars in the trendy East End of Adelaide's CBD, says sales of Heineken and other more mainstream premium beers have fallen away and there are regular instances where customers will ask specifically if it is the imported Heineken being stocked or the one brewed in Australia.

"A lot of people do ask about that and they then tend to go for a locally brewed craft beer," he says.

The high wall that separates Amazon Beer’s brewery and bottling plant from the teeming jungle hardly holds back the snakes, monkeys and giant hairy spiders. But invasive animals are only one of the challenges faced by Arlindo Guimarães and his son Caio in developing the only craft brewery in the Amazon, Latinvex reported on March 4.

“A lot of people thought my dad was crazy,” says Caio, 27. Looking at the plant’s location in Belém, capital of Brazil’s vast northwestern state of Pará, it’s easy to see why they might think so. The jungle’s intense heat and humidity affect the fermentation process and suck flavor from beers. Moreover, the notoriously bad roads in one of Brazil’s poorest regions create a logistics nightmare. And perhaps even more off-putting: while Brazil ranks fourth worldwide in beer consumption, most Brazilians drink watery mass-market beers.

Brewery news Hong Kong: Hongkongers showing increasing interest in craft beer
Hongkongers have embraced the freshness and flavour of independently brewed beers, scmp.com reports. "You often see industrial beer kegs sitting on the side of a road in the sun or on the floor of a bar because they are pumped full of preservatives and can last in those conditions for a very long time," says James Matheson, manager of Craft Brew & Co, one of several bars specialising in craft beers that have opened recently.

By contrast, freshness is essential for artisanal, or craft, beers. "There are no preservatives in craft beer, so it is essential to treat them as perishable items, which deteriorate the longer they are exposed to heat or oxygen. This is why we store all our beers in our cold room to ensure maximum freshness and quality," says Matheson.

In Sweden, Carlsberg is getting more involved in organic beer and is now launching Carlsberg Hof Organic, the Danish brewer announced on its website on March 5.

In Sweden, organic products broke the sales record in 2014, with a particular increase in the beverage segment. The latest figures from Swedish alcohol retailer ‘Systembolaget’ illustrates that the sales volume of their organic products have increased by 83 percent over last year. The new Carlsberg Hof Organic is an organic variation of the classic light lager beer and hit the shelves in early March 2015.

“We see a growing demand for organic products. It is clear that we all, as individual consumers, have become more aware of how we can shape our world by making active choices.
