Scientific Digest

My pleasure to measure..

ABSTRACT
A few more insights into understanding hop aroma were gained by these Belgian researchers who took 15 different hop varieties and carried out a set of comprehensive analyses. Not only were the hops analyzed, they were also used to produce different types of single hop variety beers with early hopping, late hopping and dry hopping. The hop varieties chosen were Cascade, Centenntial, Citra, Challenger, Cluster, Columbus, Galena, Magnum, Nugget, Palisade, Saaz, Simcoe, Sorachi Ace, Tettnanger and Warrior. The components measured were alcohols, saturated esters, unsaturated esters, monoterpene hydrocarbons, monoterpene alcohols, sesquiterpene hydrocarbons and oxygenated sesquiterpenes. Within these groups of compounds varietal differences were obvious. The total concentration of esters before fermentation is variety dependent, but fermentation changes the picture. Transfer rates were calculated for linalool and geraniol, and in the case of gerianol, it was discovered that it is formed from other compounds during the course of brewing. Missing are the tasting results that could connect the analysis results with sensory impressions, but perhaps there is more to follow.

Barley news USA: Corn prices tumble on news of larger-than-expected domestic stockpiles and spring plantings
U.S. corn prices tumbled on March 31 after federal analysts estimated larger-than-expected domestic stockpiles and spring plantings of the grain, The Wall Street Journal reported.

The U.S. Agriculture Department report also helped drive down wheat-futures prices, while soybeans climbed as storage and planting estimates for the oilseed came in below analysts’ forecasts.

The USDA said domestic corn stockpiles on March 1 totaled 7.75 billion bushels, surpassing analysts’ expectations for 7.63 billion bushels. That figure was 11% higher than stockpiles last March, due in part to record corn production last year.

Growers in 2014 harvested 14.22 billion bushels of corn after favorable weather conditions during the growing season boosted yields. Analysts said the report suggested that use of the grain by domestic livestock farmers in the last quarter also may have been lower than expected as producers substituted products like dried distillers’ grains—a co-product of corn ethanol—into feed for cattle and pigs.

The USDA’s projection for planted acres of corn “was a bit of a surprise,” said John Kleist, director of research with brokerage firm EBOT Trading LLC.

Corn for May delivery declined 18.25 cents, or 4.6%, to $3.7625 a bushel at the Chicago Board of Trade.

U.S. farmers increasingly have been planting more soybeans in recent ...More info on site

Brewery news USA, OR: Session IPAs – a bridge into a new market
After years of battling middle-of-the-road light lager, craft beer is drifting toward the center one Session IPA at a time, MarketWatch reported on March 27.

There’s a lot at stake, as the top four beers in the U.S. are light lagers. Bud Light is No. 1, with 38 million barrels and 18% of the U.S. beer market, Coors Light is second (18.2 million, 8.6%), Budweiser third (16 million, 7.6%) and fourth is Miller Lite (13.7 million, 6.5%). But those barrels of beer are falling as the post-recession beer market shrinks.

In contrast, craft beer grew 18% by volume in 2014, taking an 11% share of the U.S. beer market. So how did craft brewers manage that? A big part of the answer is bitter, hoppy India Pale Ale. The style accounts for 21% of all craft beer sales by volume. Sales soared 47% last year. To some drinkers, though, beer with alcohol by volume (ABV) as high as 7.5% is too strong. Bud Light registers only 4.2%.

So Session IPA provides a bridge. The beer is a low-alcohol pale ale, ranging between 3% and 5%, that’s heavily dry hopped for aroma, flavor and muted bitterness.

Session IPAs were initially seasonal offerings such as All ...More info on site

Brewery news USA, CO & MI: Oskar Blues purchases Michigan-based Perrin Brewing Co
Longmont-based Oskar Blues has continued its expansion in the craft brew world with its purchase of the Perrin Brewing Co. in Michigan, Times-Call Business reported on March 30.

The two breweries began their relationship in 2014 with a collaboration lager. That brew has developed into a partnership bringing together the experience and resources of Oskar Blues with the opportunities of Perrin's strong local brand to help both breweries strengthen their position in a time of increasing competition.

West Side Beer Distributing owner and Michigan native Keith Klopcic helped orchestrate the partnership and will now serve as president of Perrin Brewing.

Perrin Brewing is in Comstock, just east of Kalamazoo and south of Grand Rapids. In just two years, the brewery has made its way into more than 700 locations in the state, helping the company reach nearly 14,000 barrels in 2014.

"Challenging the craft collaboration concept and taking it to the next level with Keith and the Perrin crew is exciting," Oskar Blues founder Dale Katechis said. "Growing Oskar Blues and engaging new communities across the country has been a ton of fun and has given us the experience we can bring to a partner like Perrin to hit the next gear."

Brewery news USA & Mexico: Heineken USA CEO leaving his post to become chief executive of Heineken Mexico
White Plains-based Heineken USA announced on March 31 that Dolf van den Brink, president and CEO, will become the chief executive of Heineken Mexico on July 1. Ronald den Elzen, managing director of Heineken Portugal, will succeed van den Brink in the U.S. post, Westfair Online reported.

As CEO of Cuauhtémoc Moctezuma/Heineken Mexico, a subsidiary of Dutch brewing company Heineken International with brands such as Tecate and Dos Equis, van den Brink will lead more than 16,000 employees. Heineken officials said in the announcement he will aim to help the company achieve its vision of becoming the leading brewer in Mexico.

Van den Brink has been with Heineken for 17 years. He came to the White Plains headquarters in 2009 after working at Bralima, Heineken’s operating company in the Democratic Republic of Congo. According to the announcement, van den Brink improved the American business by restoring top line growth and driving consistent market share gains. Van den Brink, who is Dutch, was named one of Fortune’s “40 under 40” in 2012 for turning around the business and changing company culture.

In an interview with the Business Journal in April 2013, van den Brink said he replaced the CEO office’s walls with glass ones, ...More info on site

Brewery news USA, MA: Jack's Abby Brewing to expand by the end of 2015
Craft brewery Jack's Abby Brewing is opening a restaurant and taproom in its hometown of Framingham, an expansion that will allow for increased production of its signature lager, Boston Business reported on March 26.

Brothers Jack, Eric and Sam Hendler founded Jack's Abby in 2011. The brewery has quickly grown in popularity, attracting 25,000 visitors last year to its 17,000-square-foot site at 81 Morton St. in Framingham and being named one of the top 100 breweries in the world by RateBeer.

The brewery has plans to move to a 67,000-square-foot brewery at 100 Clinton St. and open a restaurant and taproom on site. The expansion will require a $6 million investment in equipment and site improvements, Jack's Abby said. The brewery, which currently employs 19 workers, will create 35 full-time jobs as a result of the expansion. Completion is slated for late this year.

In mid-March, the town of Framingham voted to approve a tax increment financing plan for the expansion. A TIF plan allows municipalities to provide flexible targeted incentives to stimulate job-creating development, according to the Massachusetts Office of Housing and Economic Development. As part of the Jack's Abby TIF, Framingham will provide commercial property tax exemptions.

"The company’s strategic move demonstrates ...More info on site

Brewery news USA, NC: Hi-Wire Brewing to open a production facility in Biltmore Village
This July, Hi-Wire Brewing will open a 26,000 square foot production facility in Biltmore Village, Asheville, North Carolina. Now that the arrival of their new 30 barrel brewhouse is imminent, Hi-Wire Brewing is pleased to announce that their new facility is located in Biltmore Village, directly behind Appalachian Vintner at Two Huntsman Place. Previous to this announcement though, the one and a half year old brewery decided to remain tight-lipped about the exact location of their new building, reported Brewbound on March 26.

“We were super excited, back in late 2014, when we placed an order for our sparkling new dream brewhouse from Europe,” stated Adam Charnack, co-owner of Hi-Wire Brewing. “We didn’t want to jump the gun, though, on announcing too many details about our future operation at that time…simply because we didn’t have all the answers. Now that our real estate is secured, loan closed, construction underway, and brewhouse ready to ship, it’s time to tell the world about our latest pride and joy!”

The new facility, which will be warmly referred to as the Biltmore “Big Top”, most recently housed Asheville-based ISM, an industrial metal machining shop.

“Finding 26,000+ square feet of existing industrial space in Asheville that is ...More info on site

Brewery news Canada, AB: Big Rock Brewery blindsided by announcement of new production markups in Alberta
Big Rock Brewery is feeling blindsided by an announcement of production markups from the Alberta Gaming and Liquor Commission, Calgary Herald reported on March 27.

Changes in tax rates introduced on the 26th of March’s provincial budget mean mid-size breweries — those producing between 2 million and 20 million litres annually — like Big Rock Brewery and Minhas Brewery will be asked to pay an additional 11 cents on each litre they produce.

Big Rock, which produced about 16.8 million litres in 2014, had paid a markup of 40 cents per litre.

“This tax hike strategy was not expected and has hit us hard. The government is asking for three times our prior year’s income in additional taxes,” said Susanne Fox, communications manager at Big Rock Brewery. “As a result, we are reviewing all of our operational costs.”

Big Rock’s 2014 financial results show the brewery reported net income of C$624,000 for the year ended Dec. 30. With the newly announced markup on production — the province’s take of liquor revenue — it expects to pay a total of C$10.5 million in annual tax going forward.

“As an Alberta producer, we have no qualms helping to shoulder the burden of easing the province’s deficit,” ...More info on site

Brewery news USA, PA: Victory Brewing Co. to open this month
Victory Brewing Co. will open in Kennett Square will open sometime in April, a little more than two years after local officials created an ordinance specifically permitting brew pubs in town, Daily Local News reported on March 27.

“It’s been a very, very long time coming,” said Matt Krueger, vice president of operations at Victory Brewing Co. “We anticipate opening in the month of April.”

The seven-barrel system will feature rotating selections of Kennett-brewed beer — beer that is not offered elsewhere. Also offered will be wines, signature Victory root beer and homemade lemonade and iced tea.

Called Victory at Magnolia, it is located at West Cypress Street and Mill Road. Victory will occupy all 8,138 square feet of the bottom floor of a four-story, 33-unit luxury apartment building in Kennett Realty Group’s latest upscale residential community. Just behind the building, 79 townhomes are being constructed.

Beer will be brewed on site.

“It really looks great,” Krueger said.

There will be about 30 different varieties of beer on tap at the Kennett Square location. Some of the custom craft beer offered will be Hop Devil, Headwaters Pale Ale, Golden Monkey, Victory Lager, Storm King Stout, V Twelve, Helios Saison, Baltic Thunder, Victory Festbier, Hop Wallon, ...More info on site

Brewery news USA, MI: Tibbs Brewing Company Inc. to double its production capacity this year
A new expansion by Kalamazoo-based Tibbs Brewing Company Inc. promises to double its production capacity and streamline the company’s operations, MiBiz reported on March 30.

The brewery recently announced plans to expand into the downstairs area below its current production and taproom space.

“We’ve thought about the expansion from the get-go,” said Kevin Tibbs, the brewery’s general manager.

Tibbs's wife, Cindee, owns the brewery.

Tibbs is based at the State Theatre Shoppes at 402 South Burdick Street Kalamazoo in a facility owned by Roger Hinman and managed by the Hinman Company.

Because of the limited space prior to the expansion, Tibbs used the taproom area during off hours to brew – reducing the company’s production capacity because regulatory requirements mandate that brewing only occur in a separate room from customers.

“It’ll be a big upgrade for me to have a dedicated brewing area,” Tibbs said. “I never knew how important floor drains were until I started brewing. Now I’ll have those and a lot of room.”

Tibbs Brewing produced 150 barrels in its first year after opening in December 2013 and plans to increase that to 250 barrels in 2015 with the new expansion.

The expansion also includes a bar area that will add approximately 65 more ...More info on site

Whisky news USA, NV: George Racz – the story of a successful distillery owner in the Las Vegas Valley
Ten years ago, George Racz couldn’t speak a word of English; today, he owns and operates the Las Vegas Distillery, the first in the state, Las Vegas Review Journal reported on March 26.

Coming a long way since the first legal distillation in 2011, Racz plans to open a whiskey and spirits bar Friday and Saturday evenings starting in April at the distillery, 7330 Eastgate Road, Suite 110.

The distillery produces whiskey, vodka, gin, rum and moonshine in its two pot stills, dubbed the Las Vegas Copper Angels for Racz’s grandfather’s “not so legal” Transylvanian distillery. Despite the unusualness of aging spirits in a dry climate, Racz believes it adds to the products’ uniqueness.

In January 2009, Racz and his wife moved west to pursue their American dream of starting the state’s first distillery in the Las Vegas Valley.

“In many places, like where I was born, people do not get the opportunity or possibility. Life is just flying away,” he said. “In America, you will not just get one chance but many, and you create your own opportunities. That is wonderful and unbelievably unique to the rest of the world.”

Starting a business is generally difficult, but in Racz’s case, being the ...More info on site

Brewery news Ethiopia: International brewers helping transform Ethiopia’s business landscape
International brewers are helping transform Ethiopia's business landscape as it slowly sells the assets of the former communist state and opens up to foreigners drawn to one of Africa's fastest growing economies, Reuters reported on April 1.

Heineken, Diageo, and privately-owned Dutch brewer Bavaria have snapped up state breweries or built new ones in the past four years, introducing new beverages and increasing competition for St George, Ethiopia's oldest beer brand, that was itself bought by France's Castel Group in 1998.

The east African nation that once could not feed itself now draws investors keen to profit from the increasing prosperity of its 96 million people.

"We recognise the huge potential in Ethiopia," Diageo said in a statement e-mailed to Reuters. It bought state-owned Meta Abo brewery for $225 million in 2012 and has doubled brewing capacity and invested in new brands. It launched Zemen Beer in December and non-alcoholic Malta Guiness in August 2013.

Heineken bought state-owned Bedele and Harar Breweries for a combined $163 million in 2011, introducing the Walia beer, which bar staff in Addis Ababa say is catching up St George.

A few years ago, small bars struggled to get hold of crates of St George as they were bought up ...More info on site

Brewery news Kenya: Keroche Breweries commission new 5.5 bln shillings brewing plant
Keroche Breweries has commissioned a 5.5 billion shillings brewing plant as it seeks to boost its presence in the market, The Standard Digital News reported on March 31.

The Naivasha based brewer will now have a production capacity of 600 thousand bottles a day as it sets out to shake up the country’s beer market.

The fresh investment in the plant has seen Keroche cast its eyes on the East African market as fresh hunting ground for consumers.

Brewery news Greece: The Macedonian Thrace Brewery criticizes approval of Carlsberg’s Mythos Brewery and Olympic Brewery merger
A deal that will see Carlsberg’s local unit pick up a major Greek brewer has come under attack from another local group, Namnews reported on March 31.

The Macedonian Thrace Brewery has criticized the Hellenic Competition Commission’s decision to approve the merger of Mythos Brewery (Carlsberg) and Olympic Brewery (Fix). MTB claims the unconditional approval means that at least 85% of the Greek beer market is controlled by Carlsberg and Heineken, both of whom are foreign-owned groups.

In criticising the decision, MTB said the move is to “the detriment of locally owned breweries or new entrants”, adding that “the HCC has saddled the Greek consumer with the prospect of continuing high prices and less choice.”

Brewery news Indonesia: New regulation to prohibit sale of beer at convenience stores and small shops as from this month
Alcohol can be a hard sell in Indonesia, which has more Muslims than any other country. It is about to get a whole lot tougher, Today Online reported on March 28.

A regulation supported by Islamic groups that is scheduled to come into effect in April will prohibit the sale of beer at convenience stores and other small shops in the world’s fourth-most-populous country.

The ban adds to a growing list of measures by President Joko Widodo’s administration that run counter to the pro-business messages he presented while campaigning for office last year. At stake are beer sales in South-east Asia’s largest economy, where domestic consumption makes up more than half of gross domestic product and the government is trying to spur growth, foreign investment and tourism.

“Losing this channel will mean a big decline in sales for leading beer manufacturers,” said Ms Yulia Fransisca, a senior analyst at Euromonitor International. “The government will continue to be pressurised to create more restrictions on alcoholic drinks by Islamic groups in the country.”

Beer sales climbed 11 per cent last year, Euromonitor research showed. Beer producers in the country include PT Multi Bintang Indonesia and Diageo, which brews and distributes Guinness through a third-party arrangement with ...More info on site

Brewery news Australia: Beer marketed as being 100% Australian owned fined after found out to be actually produced in China
A beer marketed as being 100% Australian owned has been fined after it emerged the brew was actually made in China, The Drinks Business reported on March 30.

Aussie Beer was sold by Australia’s Independent Liquor Group (ILG) between March and August 2014 and was packaged with a map of Australia and the words “100% owned” and “made from Australia’s finest malt” on the label. It also featured green and gold colours, which are closely associated with Australian sporting teams.

When the Australian Competition and Consumer Commission (ACCC) discovered the beer was actually brewed in China, it ruled that the label could mislead consumers and ordered the ILG, an Australian owned co-operative set up to increase the buying power of small independent liquor retailers, to pay fines of AUS$10,200.

“Country of origin representations, particularly those designed to grab the eye of the consumer by using well known symbols, colours, or slogans, must be truthful,” ACCC chairman Rod Sims said. “Consumers will often place a premium on the provenance of a product, but are unable to check the accuracy of those claims.

“This is particularly the case with Australian made products which encourage consumers to support local industries. Consumers are entitled to expect that prominent ...More info on site
