Is it all about the ratio?


ABSTRACT
Listening to the best recognized research team in flavour chemistry, that would be the correct conclusion. Summarising the results of 25 years of research on all kind of different foods, this German research team says that their meta-analysis demonstrates characteristic ratios of only about 3 to 40 genuine key odorants for each food (of more than 220 investigated), from a toolbox of ~230 out of ~10,000 food volatiles. They conclude that the foodborn stimulus space has co-evolved with, and roughly matched our ~400 olfactory receptors as best natural agonists. The key odorants can be classified into two groups of volatiles: 1) high-threshold volatiles reaching their odor impact by their high levels in foods, e.g. the high odor thresholds of 16 and 13 Mg/L for acetaldehyde and (R)-limonene respectively, are compensated by the high concentrations of 6150 and 2308 Mg/L found for these odorants in hand-squeezed grapefruit juice, and 2) trace level volatiles exceeded their low threshold concentrations at low concentrations, e.g. the grapefruit-like smelling 1-p-menthene-8-thiol (0.01 Mg/L) and the cooked apple-like (E)-B-damascenone (0.9 Mg/L) in grapefruit juice and red wine respectively, which easily exceed their extraordinarily low odor threshold of by a factor of 50 and 90. This is a comprehensive review and with having dry hopped beers in mind, it sounds that if you combine all key odorants of juices, wines and normal beers - there is your dry hopped IPA!

When four guys got together and decided to open a brewery, they looked to a part of the city where the beer business isn’t exactly booming, News & Observer reported on May 20.

Compass Rose Brewery, which opened this month off Gresham Lake Road, is the first brewery in northeast Raleigh.

“North Raleigh is wide open,” co-owner John Coulter said. “We felt like we could do something good.”

Compass Rose Brewery - owned by Coulter, Thomas Vincent, Jose Luis Martinez and Gary Kohake – wants to tap into the North Raleigh crowd, which might feel a bit left out of the brewery scene.

Vincent, a former brewer at Natty Greene’s Brewing Company in downtown Raleigh, said he knew customers were driving from north of the Beltline to get a taste of specialty brews.

Martinez, a native of Mexico, has lived in Raleigh for 15 years. Coulter lived in Raleigh briefly about 15 years ago.

It made sense to open a brewery here. But customers shouldn’t expect a Mexican atmosphere at Compass Rose Brewery.

“I just want it to be a space everyone wants to be,” Coulter said.

While the design features hints of Germany, the first brews at Compass Rose are telling of its Latin American roots.

Brewery news USA, NY: Queens Brewery rents space from Kalmon Dolgin Affiliates
Kalmon Dolgin Affiliates, Inc. (KDA) has arranged a 7,200 s/f lease for QB (Queens Brewery) Collective LLC, a New York state-based brewery, at 1539 Covert Street in the Ridgewood section of Queens, NY, Real Estate Weekly reported on May 20.

Neil Dolgin and Kalmon Dolgin, co-presidents of KDA, made the announcement.

KDA brokers Joel Kohn and Avrum Lieber represented the ownership, Covert Holdings LLC, while Jacques Wadler and Vincent Lopez, also of KDA, negotiated on behalf of the tenant, QB Collective LLC.

The brewing company will occupy 7,200 s/f of the 35,000 s/f, two-story building, which also features a 2,400 s/f lot of land.

Queens Brewery, whose products are available throughout the NYC area, has been operating out of a space upstate in Saratoga Springs, NY for the past year.

The company is relocating to a 4,800 s/f space at 1539 Covert Street, New York, and will occupy the 2,400 s/f of land, as they would like to have more of a presence in the county after which the beer is named.

The property at 1539 Covert Street, is between Irving and Wycoff avenues, situated right on the Queens-Brooklyn border.


Brewery news USA, NC: Four Saints Brewing – the newest addition to Triad's community
Four Saints Brewing Co. is the Triad's newest brewery, but it's steeped in the history of Asheboro and Randolph County, North Carolina, Triad Business Journal reported on May 20.

The South Fayetteville Road location in Asheboro originally opened as the E.L. Hedrick Buick Motor Car Co. in the early 1900s.

"We wanted people to walk in the door and feel like we had been here for 15 to 20 years," said Four Saints co-owner Joel McClosky. "We have something that has a link to Asheboro."

McClosky isn't a native of Asheboro or North Carolina, but moved to Randolph County after college to teach fourth grade. A love for home brewing connected him with his business partner, Andrew Deming, and they had a long road to this month's opening of Four Saints Brewing.

But it's clear that McClosky has adopted the community, not just from the tributes to the past, but what he's doing for the future.

Before opening to the public last week, Four Saints Brewing held events for its Kickstarter supporters, who McClosky said remained patient even as the brewery encountered all the challenges that come not just with opening a new business, but with renovating a historic building.

Brewery news USA, PA: Earth Bread + Brewery to open Bar Hygge brewpub in Philadelphia
Tom Baker and Peggy Zwerver of Mount Airy's Earth Bread + Brewery are planning to open a brewpub in the new 1720 Fairmount, a mixed-use building near the intersection of Francisville, Fairmount and Spring Garden in Philadelphia, Philly.com blog reported on May 19.

Baker says the pub's name will be Bar Hygge - pronounced "hYOO-guh" and taken from a Danish expression roughly translated as "cozy camaraderie."

The brewery will be branded separately as Brewery Techne (say it "TECH-nee").

Baker plans to shuttle between Mount Airy and the new place to handle the brewing for the first year.

The opening is scheduled roughly for October.

Adrian Grenier’s Churchkey Can Co. is now offering their unique craft pilsner in Los Angeles, and the most notable aspect of the brand is not the celebrity founder but the throwback packaging that requires more work than your typical pop-top, Los Angeles Times reported on May 19.

From wide-mouth cans to “vortex bottles,” how a beer is packaged is often more of a selling point than the quality of the beer itself. Recently brands like Coors and Miller have found success using throw-back designs in their bottles and cans.

Craft beer, while usually sold on basis of substance over style, has occasionally also used packaging techniques to stand out.

In 2011 former Nike designer Justin Hawkins and "Entourage" star Adrian Grenier were carousing in Portland when they got to talk about the beautiful designs featured on American beer cans during the middle part of the 20th century.

They assumed some brewery had already tried to market throw-back cans, but when they couldn’t find any modern examples, they decided to create Churchkey Can Co. to bring back the outmoded packaging.

Brewery news USA, WA: Salish Sea brewing expansion is finished
Salish Sea brewery first opened for business back in November of 2013. Salish Sea Brewing had everything: good beers, nice crowds, friendly regulars, great location in downtown Edmonds, Washington. One problem, though. Not enough room. That’s changed, seattlepi.com (blog) reported on May 20.

In December, the brewery said it planned to take over the neighbouring space for expansion. Now, the Salish Sea Brewing’s Facebook page announced that the expansion is complete.


Brewery news USA, IA: Cedar Falls brewery plans to expand in Waterloo, Iowa
Once a Wonder Bread bakery in its heyday, now, the Hostess factory in Waterloo sits empty. Perhaps not for much longer. "We love the building," said Dave Morgan, owner of SingleSpeed Brewing in Cedar Falls. "We love the location."

According to a report by KWWL.com on May 21, Morgan is pushing a proposal to expand his operation into the space. He said it seems poetic - because what is beer but liquid bread?

"We want to get beer all the way across the state of Iowa, and hopefully by 2020, across two or three states in the Midwest," Morgan said.

SingleSpeed would eventually add a bottling operation. Morgan estimates that would add about 50-60 jobs in their first year, and eventually, as many as 100.

"The last thing we want to do is move, and then move next year because we've outgrown the space," he said.

"I think we can be a nice piece down there," he continued. "Compliment what they've already done, and what they hope to do in the next few years."

If approved, Morgan said they would be up-and-running within a year.


Brewery news USA, TX: New brewery to open in Northern Houston, Texas
Houston craft beer lovers will soon have another local brewery to try out.

Spindle Tap Brewery LLC, which does business as SpindleTap Brewery, plans to open a new brewery in September, co-founder Cameron Banks told the Houston Business Journal on May 20.

“The brewery will be located on part of a 70,000-square-foot warehouse at 10622 Hirsch Road, Houston, which is also the headquarters of Houston-based Lightning Logistics, a trucking company that focuses on the oil and gas industry,” Banks said. “Initially, the brewery will use 10,000 square feet of the space but has the ability to expand as needed.”

Houston and Texas' craft beer scene has been on the rise since recent legislation was passed that made it easier for breweries to start and flourish. For SpindleTap, that's part of the reason it got started.

"In Houston, although there's a rapidly emerging (craft beer) scene, it's still relatively tiny," Banks said.


Brewery news USA, WA: Stones Throw Brewing Company to open in Bellingham, Washington
Bellingham is loaded with fantastic breweries. If a brewery was ever designed to fit right into the Fairhaven scene, Stones Throw Brewing Company is the one. The brewery’s residential-style setup and creative use of small space will make their patrons and neighbours alike feel right at home. Billing itself as “The Closest Pint to Adventure,” Stones Throw has the added advantage of being the only Bellingham brewery located in Fairhaven, WhatcomTalk reported on May 20.

Co-owner Tony Luciano is looking forward to their official opening in June or July. Like a lot of new breweries, they plan to start with the basics and the favourite.

Tony began brewing in 1998 after meeting the owner of what was then the Whatcom Brewery, on a ferry to Alaska. He joined him in brewing and learned rather quickly, brewing 10 kegs at a time. A few years ago Tony realized Fairhaven was his spot to make the dream a reality. “All the trails are here. It’s where I go crabbing, kayaking, and now, plan to run a brewery.”

Brewery news China: Of the top ten beer brands around the world, four are Chinese
If you live outside of China, you may never had heard of Snow, a pale ale made by SABMiller and China Resources Enterprise. But it has been the top selling beer brand in the world in terms of volume since 2008, when it overtook Bud Light. SABMiller likes to brag that in 2012 it sold enough Snow beer to fill 12 Olympic-sized swimming pools every day for a year, Quartz reported on May 22.

Snow’s primary advantage is that it is sold in the world’s largest beer market. As Quartz has pointed out, China is the biggest beer market in the world by volume, and overtook the US in 2002. (It is now twice as large, but the US still leads in terms of sales value.) Moreover, it’s cheap, as little as 3 renminbi ($0.49) for a 330 ml can, widely distributed, and according to SABMiller, works well with spicy Chinese meals.

Brewery news Jamaica: J. Wray & Nephew re-enters Jamaica’s beer market with European-style Stag beer
Jamaica’s beer market is now at least 50 per cent larger than it was when J. Wray & Nephew pulled out in 2010, The Gleaner reported on May 22.

This week the company, more known for its line of world-acclaimed rums, announced that it is re-entering the lager market with Stag - a European style of beer made by the makers of Carib Beer out of Trinidad.

Under its previous owners, Wray & Nephew - then the Lascelles de Mercado Group - had launched its own beer, Kingston 62, but retreated after disappointing sales. The company was controlled by Jamaicans then; now it is owned by Italians, who are taking another swig at the market as a distributor.

Back when the rum distiller suspended selling its four-year-old beer, the domestic market was in decline. Market leader Red Stripe reported a nine per cent fall in domestic sales in 2010, which was followed by a one per cent reduction in revenue from the local market in 2011.

Brewery news Denmark & Russia: Carlsberg cuts about 180 jobs to save money
Carlsberg cut about 180 office jobs as the Danish brewer seeks to save money and offset the challenge of a shrinking economy in Russia, where it’s the biggest brewer, Bloomberg reported on May 20.

About 20 percent of the staff at Copenhagen headquarters and regional offices have lost their jobs, the company said in an e-mailed statement on May 20. About 75 positions were eliminated in Denmark.

The measures are intended “to streamline our business and build a more agile organization,” spokesman Jim Daniell said by e-mail. The benefits of the measures will be reflected in 2016 financial targets, he added.

The maker of Kronenbourg promised a revamp to improve profit when it reported earnings earlier this month. Russia, once its crown jewel, has weighed on Carlsberg during the past few years, and the operating loss for its eastern European business widened in the first quarter.

“As we’ve grown as a company, we’ve become more complex and fragmented, and this needs to be addressed,” the brewer said in an internal memo distributed to employees and obtained by Bloomberg. “Global resources (people and money) will be focused on the top 15 markets which have the best chance of driving scale value today and tomorrow. Brewery news Poland: Beer and cigarettes export increases last year
Poland’s market share of agricultural products within the European Union is on the increase, thanks to a hike in exports of cigarettes and beer, Rzeczpospolita reported on May 20.

Latest estimates from the Polish Agriculture Ministry show that Poland exported cigarettes to the tune of EUR 432.2 million in the first quarter of 2015.

Exports of Polish beer are also gaining ground, with international sales amounting to EUR 135.7 million, up by 14.5 percent year-on-year.

“Taking into account Poland’s total beer production, it can be ascertained that beer exports remains a niche, although the figure is rising and there is a chance of further rapid development,” comments Danuta Gut, Director of the Management Board at the Union of the Brewing Industry Employers in Poland.
