How to assess hop aroma ?


ABSTRACT
With the increased scientific interest in hop aroma, different sensory approaches for the evaluation have been published. This talk gave an overview of the history of aroma categorization and presented a class of 12 descriptors established specifically to assess hop varieties and hoppy beers in comparison to other tasting schemes currently available. Examples of hop varieties were given to show how this tasting form is able to characterize the uniqueness of hop varieties. Also the differences of a trained and an untrained taste panels were pointed out.

Hops news USA: Hop acreage increases to record-high levels
As craft breweries expand in Idaho and across the U.S., the hop-growing regions of Idaho, Oregon and Washington are expanding, too — to record-high levels of acreage, Idaho Press-Tribune reported on July 7.

Demand is up for hops, which are used in the beer-making process for bittering and adding flavours and aroma.

“It’s craft beer-driven,” said Diane Gooding, vice president of operations at Gooding Farms, a six-generation hop farm in Wilder. “U.S. craft beer has just totally revolutionized the hop industry in terms of the diversity of varieties, and the demand has greatly increased.”

In response to that demand, Idaho and Washington are expected to have record-high levels of hop acreage this year. Idaho hop farmers added about 1,000 acres of hops in 2015, bringing the total acreage of hops strung for harvest to nearly 5,000, according to a June report from the U.S. Department of Agriculture.

Idaho is the third-largest hop-growing state and produces about 11 percent of the hops grown in the United States. Washington grows the most at more than 40,000 acres, and Oregon is second with nearly 7,000 acres, according to the USDA.

Brewery news USA, MD: Oliver Brewing Co. is transitioning to a production brewery
Steve Jones can finally stand up straight. Oliver Brewing Co.'s head brewer this week started transitioning from the low-ceiled basement brewery at Pratt Street Ale House, Baltimore, to a 12,000-square-foot Claremont-Freedom production brewery, situated in an old ice factory, Baltimore City Paper reported on July 3.

The new digs will enable Oliver Brewing to not only supply beer to its three bustling restaurants, but also send more beer out for distribution. Oliver Brewing just hired a second sales representative to peddle its beer in Maryland, Washington, D.C., and Northern Virginia.

The company is upgrading from its seven-barrel, three-vessel brewhouse to a 20-barrel, four-vessel brewhouse. There are eight fermenting tanks (four open, four closed), and Jones says that Oliver Brewing wants to add its own canning line eventually.

"We have to start selling some beer before we can spend more money," Jones says, "because this stuff ain't cheap."

Oliver Brewing’s co-owner Justin Dvorkin says that the production brewery has cost about $1.3 million so far. But the price tag was worth it to keep pumping beer to Oliver Brewing's restaurants.

Brewery news USA, CO: Durango Brewing sold a majority interest in January to increase operations in Denver
Durango Brewing Co. has sold a majority interest to a private Denver investor with hopes of expanding production and markets. The current facility is producing at maximum capacity.

Andrea Allison, spokeswoman for Durango Brewing, said the sale took place in January, though expansion plans still have not yet been finalized. She did not disclose the name of the private investor, or how much the sale was for, The Durango Herald reported on July 7.

“Durango Brewing Co. has been a staple in the Durango community as well as the Colorado craft beer community for 25 years, and we are excited about what our growth means for the local community as far as an increase in jobs, driving in more tourism and being able to interact and give back to our community more,” Allison said.

“Day-to-day business operations have continued much the same at the brewery, with all of the beer still made at the 3000 Main Avenue location in Durango. There are no plans to change the company’s name,” Allison said.

New ownership has not yet established a timeline for expansion plans, and Allison did not elaborate on what those specific plans might look like. She said the decision to sell the brewery’s majority ...More info on site


Brewery news USA, NC: Sanctuary Brewing Company to open in Hendersonville in August
Joe Dinan’s busy getting Sanctuary Brewing Company ready to brew after the Hendersonville City Council amended an ordinance that would allow breweries in downtown Hendersonville, WLOS reported on July 6.

“We’re kind of paving the way I guess,” Dinan said.

Dinan and his partner plan to open the brewery on First Avenue East, Hendersonville, in August.

“We can’t blow it,” Dinan said. “That’s not an option. We’re just going to put out the best beer that we absolutely can and I think people will come. It’s like our field of dreams, but for beer.”

Dinan says that city employees have been extremely supportive of the project with the dream extending beyond the walls of the building.

“fWe're known sort of as a retirement community but we're trying to attract the younger generation as well,” said Henderson County Tourism Development Authority Executive Director Beth Carden.

She says the microbreweries coming to the area will help attract that younger audience.

“You add us to the mix, and there’s another new place with a roof deck coming in, I think it’s going to be fantastic,” said Dinan.


Brewery news USA, CA: Local Brewing Co. opened in San Francisco on June 2
After 12 years of effort, Sarah Fenson and Regan Long, the co-founders of Local Brewing Co., have finally opened their first brewery and beer bar. The new bar debuted on June 2 at Fourth and Bluxome streets, San Francisco, next to the Bluxome Street Winery and a block from the SoMa Caltrain station, Hoodline reported on July 3.

As Giants’ fans drifted in after a game at nearby AT&T Park, Long chatted with a pair of out-of-town beer enthusiasts and offered up a sample of LBC's newest creation, a Belgian beer.

For Long and Fenson, creating an intimate experience for the San Francisco community was the first priority. "We wanted to do something that was more of a destination experience, where you could sit in the brewery and be connected to where the product is produced. You can literally have a pint 15 feet away from the tank," Long says.

Long and Fenson began homebrewing in Glen Park in San Francisco over a decade ago, deciding to establish themselves as Local Brewing Co. in 2010.

"We wanted to make sure that what we were doing really aligned with the San Francisco community,” Long said.

Brewery news Canada, ON: Elora Brewing Company to enter the Ontario craft beer industry by the end of July
At the end of the month, there will be one more reason for visitors to climb the hill toward the centre of town in Elora, Ontario, Guelph Mercury reported on July 7.

The Elora Brewing Company and Gastro Pub is scheduled to open its doors at the end of July, making it the newest craft brewery to enter the burgeoning local beer scene in southern Ontario.

The primary focus of the business will be the beer, said Matt Lawson, one of the founders of the company. In a phone interview on July 6, the 38-year-old said he and his neighbour had been doing their own homebrew for years and talking about how great it would be to have a brewery in town to call their own.

After nearly two years of planning, the pair teamed up with three others and are now set to open later this month. Alex Nichols has been named the head brewer of the business.

"We're just one more piece of the creative puzzle that is the Town of Elora," he said, adding he hopes the Elora Brewing Company can become a central pillar the community can rally around.

Brewery news USA, TX: Blackwater Draw to open a new brewery in Bryan this fall
Since it first opened its doors in November 2013, Blackwater Draw Brewing has become a popular venue for locals to eat and enjoy house-brewed craft beer. Now a new venue for families and students to get food and drinks will be available as a new Blackwater Draw Brewing is planned to open in downtown Bryan, The Battalion reported on July 6.

“When we opened the brewpub we always intended to expand,” co-founder Chris Steele said. “Initially we had projected that happening after at least five years.”

Steele said Blackwater Draw Brewing’s Bryan location will not only include another brewpub, but will also house a complete brewery located in an attached warehouse.

Steele said he and fellow co-founder Chris Weingart were long time friends before they started their own brewing company and due to their rapid success, they are able to expand their business less than two years later, with plans to distribute beer through local stores.

“I started to feel like I was doing a lot of work for other people that I could be doing myself,” Weingart said.

Brewery news USA, NC: Lazy Hiker Brewery to expand in Franklin
Summer is always a busy time for the beer business. So the timing is perfect for the new Lazy Hiker Brewery in downtown Franklin — the Macon County town's first craft brewer, Asheville Citizen-Times reported on July 3.

Lazy Hiker Brewery is already winning over fans in Franklin, and also has landed accounts in nearby Highlands, and is "pushing into Cullowhee, Sylva and Bryson City," said brewer Noah McIntee. “Eventually, Lazy Hiker Brewing wants to get its beer into the highly competitive Asheville market,” McIntee said. "We're in a nice position, 15 miles from Georgia and Atlanta is not far away. It's a good stopping off point."

The downtown location, 188 West Main St. in a former Franklin town hall building, means easy access to that town's restaurants.

Being the first brewery in Franklin gives Lazy Hiker Brewing an edge, but many of the town's residents and visitors are sophisticated craft beer drinkers, he said. "People come here from Atlanta and Florida and we're into the season for that," he said. Brewery news USA, NM: Bosque Brewing Co. to double its beer production
Bosque Brewing Co. is expanding operations at its original location and possibly doubling its output in the coming year, Albuquerque Business First reported on July 7.

Bosque Brewing’s Director of Operations, Gabe Jensen, said Bosque Brewing will move its wholesaling operation into a suite nearby its home base and original taproom at 8900 San Mateo in Albuquerque, just north of Alameda. That means Bosque will have room to grow its brewing operations and make up to 8,000 barrels of beer in 2016, double the 4,000 it is brewing this year.

“Right now, if you brew it, you can sell it,” Jensen said.

Business is booming for Bosque Brewing. Its taproom near the University of New Mexico was an immediate success when it opened at the beginning of the year. The brewery plans to triple the size of its operation.


Brewery news USA, NC: Blue Blaze Brewing Co. to open a new brewery in northwest Charlotte
Blue Blaze Brewing Co. is planning to open a microbrewery in Charlotte’s northwest side, Charlotte Observer reported on July 7.

Property records show the beer-makers are eyeing the lower portion of the historic building at 528 S. Turner, right off State Street in Charlotte.

Blue Blaze Brewing is headed by co-founders and brewers Craig Nunn and Sven Giersmann. Its head brewer is Steve Turner, an instructor of fermentation science and technology at Colorado State University.

“…they’ve created this environment where people can interact where they might not have otherwise,” Nunn said in the interview.

The brewery will be in a part of town near Johnson C. Smith University that has experienced a slowdown of business activity over the years. But revitalization efforts, like a recent grant from the Knight Foundation, aim to turn the Charlotte’s northwest side into a bustling residential and commercial district that connects directly to uptown Charlotte.

Brewery news Brazil: Ambev announces acquisition of craft brewer Colorado
Ambev SA, Brazil's largest drinks company, said on July 7 it had bought craft brewer Colorado for an undisclosed sum, continuing its new strategy of buying premium brands amid stagnant sales volumes in South America's biggest beer market.

Ambev, the Brazilian unit of Anheuser-Busch InBev SA, snatched up Brazilian craft brewer Wäls in February, folding it into its higher-end Bohemia division. In May, Ambev bought Colombia's largest craft brewer, the Bogotá Beer Company.

Shares of Ambev retreated 0.2 percent to 19.10 reais on July 7. The stock is up 23 percent this year.

Colorado is based in the interior of Brazil's Sao Paulo state and exports its beers, often flavored with coffee, honey or nuts, to France and the United States. The brewer, which was founded in 1996 by businessman Marcelo Carneiro, had revenue of about 19 million reais ($5.96 million) last year, according to analysts.


Brewery news Venezuela: Beer supplies may dry up by August because of labour dispute at Polar Industries
Polar Industries, one of the biggest breweries in Venezuela, has recently been facing problems due to shortages of grain and other raw materials essential to keep its production flowing. As if that wasn’t enough to deal with, the company is also now saddled with a serious labor dispute, which has slowed down bottling and distribution of the country’s most popular beers, El Pais reported on July 6.

Since July 1, a small pro-government union, Sintraterricentro, has been calling work stoppages at Polar bottling plants in Caracas and Barcelona – a city in Anzoátegui state on Venezuela’s eastern coast – as well as at distribution points across the country after company officials refused to negotiate with its members.

Polar beer is considered a staple for many Venezuelans – it is the most common brand found at bars and in restaurants throughout the country. But there is growing concern that their favorite beverage could disappear altogether in the coming months if the dispute isn’t resolved.

Brewery news New Zealand: Demand moves away from mainstream to craft beer
Marlborough could be at the heart of a boom in New Zealand’s craft beer industry as a generational shift in drinking habits sees demand moving away from mainstream beer, Staff.co.nz reported on July 6.

Both award-winning craft brewery Renaissance Brewing and one of the country's largest craft brewing brands Moa Brewing Company are based in Marlborough.

According to Natasha D'Costa, researcher for multinational consultancy firm Frost & Sullivan, the New Zealand craft beer market could perform in much the same way as Marlborough sauvignon blanc did for exports in the 1990s.

According to D'Costa's report, compiled for New Zealand Trade and Enterprise, the global consumption of beer was changing. While there was a drop in beer drinking in North America, Europe, Australia and New Zealand, there was an increased demand for craft beer.

Brewery news India: Premium mild beer segment growing fast even though Indians have always preferred strong beer
Indian consumers are known to look for the biggest bang for their buck, and when it comes to beer it's no different — some 85% of the country's drinkers liked their lager strong in 2014 (alcohol content between 5% and 8% as against under 5% in mild beers), according to a study by the All India Brewers Association.

Yet, when it comes to beer versus liquor, Indians still seem to prefer the latter, with Indian-made foreign liquor (IMFL) and hooch consumption estimated to be two times that of beer in volumes. In contrast, in developed markets like the US and the UK and even in emerging ones like Brazil and China, beer accounts for almost three-fourths of all sales.

That, though, may be good news for brewers of premium mild beers in India, who although operating in what's still a very niche market can only expect rapid growth from hereon.

According to Glenn Cooper, Coopers Brewing chairman and great, great, great grandson of founder Thomas Cooper, it’s the secondary fermentation they use that makes the company’s iconic brew so popular, Food Magazine reported on July 8.

“We are one of the few brewing companies in the world that use secondary fermentation – there are a few brewers in Belgium that use it but in Australia, we are certainly the only traditional beer brewer that use this secondary fermentation process.”

Diageo Korea has shifted its focus to lower-alcohol drinks to meet growing consumer demand for mild liquor since CEO Cho Kil-soo took the helm two years ago, The Korea Times reported on July 5.

Sales of Windsor, Johnnie Walker and other hard-liquor brands have been declining as Koreans increasingly prefer low-alcohol drinks amid the well-being trend. The continued economic downturn and the growing number of price-sensitive female drinkers have also made it more difficult for Diageo and other whisky makers to sell relatively high-priced premium liquor.

To cope with rapidly changing consumer tastes, Diageo has diversified its product lineup, introducing a wide range of lower-alcohol spirit drinks and more actively promoting its premium beer brand, Guinness.

Over the past four months, the Korean unit of the British premium whisky maker has written a success story with "W Ice by Windsor (W Ice)," a low-alcohol spirit that has an alcohol content of 35 percent, compared with the 40 percent of conventional Scotch whisky. Brewery news New Zealand: New Zealand’s craft brewers now brewing overseas to reduce shipping costs
New Zealand's craft brewers are not letting the tyranny of distance stop them from delivering fresh beer to the world, Stuff.co.nz reported on July 7.

Wellington breweries Yeastie Boys, Panhead and ParrotDog have all started brewing overseas as a way to reduce shipping costs, overcome capacity constraints and deliver fresh beer to international customers.

Kapiti Coast brewer Tuatara has already revealed plans to brew in two other countries before the end of the year, which were being kept secret.

New Zealand Trade and Enterprise research found craft beer exports could increase by up to 300 per cent in the next decade, while New Zealand consumption was expected to increase 80 per cent by 2019.

Many breweries are already stretched to capacity and brewery expansions require significant investment, which has led some to look overseas.

Yeastie Boys "headboy" Stu McKinlay said he moved to Britain in April to oversee brewing of the company's biggest selling beers, Pot Kettle Black and Gunnamatta, at the brewery of Scottish craft beer producer BrewDog in Aberdeen.
