Let the yeast decide on flavour !

ABSTRACT
Imagine you brew the same beer with the same hopping procedure (same variety, same times of addition) and you just take a different yeast strain for fermentation. How significant would the difference be? We tried it using an American ale yeast (05) in comparison to an Abbaye yeast. For the hopping, we used Tradition in comparison to Citra. We found that depending on the hop variety, beers can show a similar (using Tradition) or also a completely different flavor profile (using Citra) caused by the yeast. Also, different effects on bitterness and mouthfeel were observed. This is an exciting topic for further sensory research!

Hops news Canada, BC: Craft beer industry boom drives B.C.’s hop-growing revival
Harvest time is here in British Columbia for a revitalized local growth industry, The Province reported on September 7. September 1 marks the first day of the B.C. Hop Company’s three-week harvest, which will be aided by a brand-new arrival from Germany: a Wolf WHE 513 hop-harvesting machine.

“The machine, housed in a barn on a family farm in Abbotsford, is the first new Wolf harvester owned by a Canadian producer, and represents a cost of about C$500,000,” said Diane Stewart, co-owner of the B.C. Hop Company.

“We’re all in,” Stewart said about the investment. “We’re serious.”

The shiny metal behemoth is a symbol, Stewart said, of the continued revival of B.C. hop-growing.

Hops, a principal ingredient in beer, were historically a major local agri-business in B.C., but the local industry completely fizzled out in the 1990s.

Hop farming in B.C. dates back to the 1860s and peaked in the 1940s, when the province’s 2,000 acres of cultivation represented the largest hop-growing region in the British Commonwealth. But the industry completely dried up over the second half of the 20th century amid market consolidation led by major brewing conglomerates.

Brewery news USA, OR: Bend-based North Rim Brewing to increase production
His associates like to say Bruce Stevens blasted his way into brewing, Bend Bulletin reported on September 8.

Stevens, owner of Apex Explosives, a drilling and blasting contractor, two years ago teamed up with his neighbour Shane Neilsen to create North Rim Brewing.

Neilsen, a homebrewer at the time and a painting and drywall contractor, provided the know-how; Stevens pitched in some money. Two years later, the company sports three 30-barrel fermentation tanks, three go-to beer varieties and seasonal varieties and a freshly inked distribution agreement with Bigfoot Beverages.

“Neilsen recently stepped away from the business,” said Stevens, who has taken over. Previously, “I came in when I could; I had zero involvement,” he said. “I checked in, drank beer and left.”

Now Stevens and his sister Sharla Shields run the operation. Shields is the full-time office manager and a part-time blasting contractor. Neilsen provides brewer support.

Stevens said he knows now how complex beer and business are together.

Neilsen said brewing drew the short straw when he had to make some choices in life. He has no concerns that Stevens, who is in the process of buying out his partner, will not keep up the North Rim Brewing quality.

Brewery news USA, LA: Lafayette’s craft brewing industry to add two new breweries
Cajun Brewing, the first microbrewery in the Lafayette city’s limits, is opening soon, Washington Times reported on Septemeber 7.

Cajun Brewing is only a permit and few days away from operating as a legal brewery while Hub City Beerworks is still at least a year away. “Getting the opportunity to be involved in something like this on the ground floor is huge,” said James Lutgring of Cajun Brewing. “I think we have an amazing chance to do something and be a big part of the community.”

There were 3,464 craft breweries in America in 2014, according to the Brewers Association. That’s the highest number since 1873.

Louisiana is a bit behind on the trend, ranking 49th in the nation for craft breweries per capita, according to the Brewers Association’s statistics.

Cajun Brewing was born out of friendships formed in the local beer group, Dead Yeast Society.

Oilfield engineer Zeke Bossley led the effort, surprising his friends in 2010 when he purchased an auto shop at 206 Rayburn St. to house the brewery business he’d talked about opening for years.

The brewery has been more than 10 years in the making, which involved everything from perfecting 100 home-brewed recipes to building out a space suitable for brewing.

Brewery news USA, SD: Dakota Shivers Brewing opens in Lead earlier this year
After sweeping across the nation over the past 20 years or so, the craft beer boom finally has come to the western South Dakota’s city of Lead, Washington Times reported on September 6.

Linda and Steve Shivers opened Dakota Shivers Brewing earlier this year in the city of 3,000-plus residents. The brewery has five craft beers on tap: 5280 Pale Ale, Old English Hood ESB, Vertical Mile IPA, Dark Matter RyePA, and Whistle Blowin’ Stout. And they’re brewed by Linda Shivers below the taproom.

Steve Shivers has homebrewed beer on and off for roughly 30 years. He said he learned from that and from a childhood friend, Hal Tippens, who owned Raven’s Ridge Brewery in Fairbanks, Alaska, in the 1990s.

“When we first thought about opening our own brewery we called him and said, ‘Hal, talk us out of it’ - and he did try,” Steve said with a laugh. “Once he failed, he became a great mentor.”

Tippens has such an impact on the Shivers that they decided to name one of their fermenters after him.

Brewery news USA, LA: Flying Tiger Brewery moves into downtown building in Monroe
Two years ago the Flying Tiger Brewery was just an idea thought up by three guys who wanted to bring a craft brewery to Monroe, Knoe 8 News reported on September 4.

"Finally today we are at the point where we are taking over this location and we have two big buildings. It’s a four thousand square foot warehouse with a two thousand square foot warehouse, which will serve as our tap room," says co-founder Robert Brewer.

"In the brew house you are going to see what you might expect to see in a brewery, you're going to see all these big stainless steel fermenters, the brew equipment and some of our storage equipment on this side," says Brewer.

"We are going to try to create something unique, different then other taprooms that we've seen around the country, expect something different when you come here, hoping to have something nice," says Brewer.

Co-founder James Simpson say they are using a test batch system to create new recipes and perfect existing ones.

Brewery news USA, KY & OH: Old Firehouse Brewery expands its distribution area to Cincinnati
Old Firehouse Brewery of Williamsburg, OH, recently announced an expansion of its distribution area. Old Firehouse Brewery can now offer its beer throughout Ohio, Soapbox Cincinnati reported on September 8. As of September 1, Williamsburg-based brewery Old Firehouse Brewery, which opened less than a year ago, started selling its beer throughout the state of Ohio.

The brewery’s core beers (Pin-Up Girl (an American blonde ale); Code 3 (a red ale); Flash Point (an East Coast-style IPA); Probie Porter (a chocolate and coffee porter); and Hoser Gose (a wheat gose) are now widely available, as will seasonal and limited-edition beers as production allows. Old Firehouse Brewery is expanding its brewery, located at 237 Main St. in Williamsburg. Husband-and-wife owners Adam Cowan and Lori Ward are in the process of purchasing buildings adjacent to the current space in order to expand production and meet demand. Also in the works is the brewery’s one-year anniversary party, scheduled for September 26.


Brewery news USA, VA: Bull Island Brewing Company plans to open in Phoebus by the end of spring
The brewing industry in Phoebus might add a new brewery in 2016. Owner Doug Reier wants to enter Hampton Roads with Bull Island Brewing, a brewpub that he envisions on 34 E. Mellen St., Daily Press reported on September 5.

"Virginia has been lagging behind" in attracting craft breweries, Reier said. “The Peninsula in particular is sorely lacking when compared even to South Hampton Roads,” he added.

Reier has been brewing for a decade at his home in Poquoson, hence the name of the brewery. Bull Island is an old nickname for the small city. He said he's excited to unleash his brews on the public, including a heavy Belgian-style beer, a hoppy India Pale Ale and a vanilla bean stout. Reier plans to offer other, more experimental options after he gets things up and running.

Reier has been planning to open a brewery for more than a year and happened on the space when driving with a friend through Phoebus looking for antiques. Reier said he has an affinity for the old parts of town and brick buildings, and fell in love when he saw the old Benthall Brothers storefront.

Brewery news USA, IL: Construction of a new brewery could begin in Springfield later this month
A $2.5 million downtown brewery project could begin construction this month after receiving a property tax abatement from the city of Springfield, Springfield News Sun reported on September 5.

The 10-year, 60-percent tax abatement for the property at 109 W. North St. was approved by city commissioners at September 2’s meeting.

“The tax abatement will help the project get off the ground,” said local developer Tom Loftis, the agent for 109 W. North Street Realty, LLC. Developers will spend $1.3 million on building improvements and $800,000 on equipment, according to public documents.

“It’s got a considerable amount of risk — any start-up does today,” Loftis said. “We’re hoping that overall it helps redevelop that entire area and continue what’s already been done. Sometimes when you start one of these things you need all the help you can get.”

The tax abatement is estimated at about $214,000 over a 10-year period, based on projected improvements. The real value of the abatement will be determined by the Clark County Auditor’s Office once it’s completed.

Brewery news USA: Gavin Hattersley named permanent CEO at MillerCoors
Gavin Hattersley, the chief financial officer at Molson Coors Brewing Co. who has been filling in as interim CEO at MillerCoors LLC, is getting the job permanently, the Denver Business Journal reported on September 8.

MillerCoors — the Chicago-based joint venture of Denver-based Molson Coors and London-based SABMiller plc that sells their products in the U.S. — made the announcement on September 8.

Hattersley, 52, took the interim CEO job after Tom Long retired June 30 while retaining his Molson Coors executive post. At the time, MillerCoors said it had launched a search for a permanent successor to Long.

Shortly after assuming the interim post, Hattersley replaced MillerCoors' chief marketing officer and president of sales.

The MillerCoors board — led by its chairman, Pete Coors — approved Hattersley as permanent CEO.

“Gavin is the right person to lead MillerCoors forward,” said Pete Coors, who is also vice chairman of Molson Coors. “Gavin has a great handle on what needs to be done to achieve growth at MillerCoors and he has the complete confidence of the Board, the employees and the distributor network to achieve this aspiration.”

Brewery news Israel: Ministry of Finances reduces taxes on beer and other alcoholic beverages
Israel’s Finance Minister Moshe Kahlon on September 8 signed a decree reducing taxes on beer by about 46 percent, and other alcoholic beverages by 21 percent, Ynetnews reported. In 2012 the tax on beer was doubled, and it was determined that the tax would be NIS 4.33 per litre of beer with a concentration of over 3.8 percent – a significantly higher tax level than it is customary in the OECD. Starting September 8 night, the tax rate for this beer will be 2.33 shekels per litre. Beer in reusable bottles with an alcohol content of 3.8 percent will remain exempt from purchase tax. The Finance Ministry said that examination of the results of the previous tax increase on beer showed that despite the doubling of the tax, it barely affected the consumption levels of beer. This means that the imposition of the tax in 2012 fell almost entirely on consumers without any real benefit with regard to reducing harmful drinking.

"We will continue to lower the cost of living in Israel and relieve the consumer wherever possible," Kahlon said. "We intend to continue the trend and will not hesitate to correct distortions in the tax system as required ...More info on site


Brewery news Japan: Suntory releasing The Malt’s regular beer to challenge Asahi Super Dry’s nearly 50% market share
The battle over regular beer sales are expected to become more competitive in Japan with the release of The Malt’s by Suntory Beer Ltd. on September 8, a direct challenge to Super Dry — the market leader — made by Asahi Breweries, Ltd, The Japan News reported.

Major breweries have been focusing on new beer products, with prices around ¥220 for a 350-milliliter can, and eyeing possible future cuts in the tax rate for beer.

“Is it fun, living a dry life?” a combative TV advertisement for The Malt’s asks in a clear sign that the new product is aimed at Super Dry’s share of nearly 50 percent of the beer market. The Malt’s features a rich and subtle mellow flavor, according to Suntory.

Suntory ended production of its Malt’s beer last month. Its successor, The Malt’s, is the first major product developed for the regular beer market in 29 years — since the release of Malt’s in 1986. During the 2000s, the company has focused on its high-end The Premium Malt’s and Kinmugi, a so-called third-segment quasi-beer.
