Should we try to dry hops in a more gentle way?

ABSTRACT
US researchers tried this. They took fresh Cascade hops dried traditionally in a kiln and compared them to hops dried in a freeze drier. The analyses showed that the freeze dried hops were higher in myrcene, while all other important hop aroma components were higher in the kilned dried hops. However the differences were relatively small. Nevertheless when applied in dry hopping the tasters were able to significantly detect the differences between the beers. The flavor and aroma in the beer with freeze dried hops were much more herbal and grassy, while the beer with the kiln dried hops had a more fruitiness expressed.

Brewery news USA, AL: Old Black Bear Brewing readying for opening on November 17
Everything is in order for the grand opening of Old Black Bear Brewing's first brick-and-mortar brewhouse, taproom and coffee bar in downtown Madison, Al.com reported on October 26.

The 7,000-square-foot facility on 212 Main St. will open to the public Nov. 17 in the former Western Auto/Bandito Burrito buildings. Owner Todd Seaton, who runs the business with his wife, Dawn, said the event will also mark Old Black Bear's fifth year in the craft beer business.

The nearly $1 million project has been a labor of love for the Seatons, who launched Old Black Bear as a contract brewery with Back Forty Beer in Gadsden. Despite a few hiccups during the buildout, Seaton is eager to show off the finished product to beer and coffee drinkers alike.

"I don't think there's anybody else that offers everything that we offer here with the coffee and the food and even the outdoor space all put together in one place," he said. "That mixed in with our focus in hospitality. We want this to feel like you're sitting in your living room when you come here."

Seaton said the 15-barrel brewhouse will be run by brewmaster Stephen Tate and assistant brewer Taylor Smith, who both graduated from ...More info on site

Brewery news USA, CA: Dunbar Brewing Company opening an expanded location
Dunbar Brewing Company’s owner and brewmaster Chris Chambers has been making frosty libation since 1997 in Santa Margarita and putting the little town on the beer map in the process, Paso Robles Press reported on October 23.

Now he is expanding, opening a separate 6,000-square foot, 10-barrel brew house at 22815 El Camino Real. He will still be serving beer down the street at the original location, 2200 El Camino Real.

As far as hops go, he uses the older more traditional varieties. He plays around with some of the newer ones, but primarily sticks to older world hops those used in Scottish, English and Irish ales.

Brewery news USA, CO: McClellan’s Brewing Co. to open before the end of October in Fort Collins
McClellan’s Brewing Co. is the latest brewer who sees opportunity in going west, The Coloradoan reported on October 26.

The Fort Collins company plans to open before the end of the month in the Campus West area. The 2,500-square-foot brewery is slated for the King Soopers shopping center near South Taft Hill Road and West Elizabeth Street.

“We looked around, and Old Town felt saturated,” said Tomi Landi, a financial backer of McClellan’s and father of one of the co-owners.

“We came over here because there was a great neighborhood location,” Landi said. “We can hopefully fill a void on this side of town.”

In coming weeks, the Three Four Beer Co. anticipates opening about a mile away from McClellan’s at 829 S. Shields Street. Other craft brewers in the area include Pitchers Sports Restaurant and C.B. & Potts.

McClellan’s plans to distinguish itself by focusing on “creamier, smoother” European cask-style ales. The non-carbonated ales are “similar to nitrogen fed beer” like Guinness.

Eighteen taps and a seven-barrel brewing system will be on site. McClellan’s also plans to offer artisan sandwiches and appetizers.

“Our mission is to have a friendly, safe and comfortable environment where everyone feels as if they’re sitting in their own living room with ...More info on site

Brewery news USA, CA: SLO Brew to expand and relocate in San Luis Obispo
Downtown San Luis Obispo’s longest running brew pub since prohibition, SLO Brew, recently announced plans to expand and relocate. SLO Brew is debuting in its new location on Higuera Street early 2016 and will feature an upgraded brewery, restaurant, bar and music venue, Brewbound reported on October 27.

Careful consideration has been taken by the entire team to ensure the new location will keep its authentic local spirit, paying special attention to handcraft the SLO Brew experience for its loyal clientele. When doors open next year, SLO Brew fans can expect the venue to be enhanced and booked to the brim with local and world famous performers and bands.

SLO Brew would not be complete without the original copper brewing kettle and brewing tanks that have been cooking up SLO Brew beer since 1988. The iconic kettle and tanks will be transferred to the new location, and as a new signature amenity, several innovative self-serve taps have been added, offering up a variety of fresh SLO Brew beers.

The expansion of the SLO Brew experience includes the addition of a Whiskey Lounge, located on the mezzanine level and overlooking the stage area. The Whiskey Lounge features comfortable amber-colored tufted leather seating, solid wood ...More info on site

Brewery news USA, MA: Somerville’s Winter Hill Brewing Company starts crowdfunding campaign to finish its construction
Somerville's newest brewery wants help with its final push to complete construction. Winter Hill Brewing Company has started a GoFundMe campaign to raise $40,000 to finish the buildout of its space at 328 Broadway in Somerville, Boston Eater reported on October 27.

Within the 2,800-square-foot space, friends Jeff Rowe (head brewer) and Bert Holdredge (general manager) will turn their five-year plan for a brewery into a multi-functional space. They have plans for a morning coffee bar, serving "high-end, ethically sourced coffee and espresso," plus on-the-go items for commuters and space to sit down and stay.

For the afternoon switch from coffee to beer, WHBC will offer five year-round tap options and some seasonal rotations, along with an "array of sandwiches, wraps, salads, cheese and charcuterie." There will be 58 seats inside the brewery with another 30 patio seats, dependent on weather.

According to a recent update, the WHBC team is mid-buildout, with space marked out for the bar and the patio. With plumbing, electrical, and HVAC work ongoing, Rowe and Holdredge are asking for some more support.

"We've racked our brains and tried to come up with rewards to entice our neighbors, friends, family and future customers to help us get over the final ...More info on site

Brewery news USA: MillerCoors tables plans to release new summer seasonal ale
MillerCoors has tabled plans to release a new summer seasonal ale after some wholesalers — including those on the company’s distributor council — criticized the new introduction, Brewbound reported on October 26.

The company will instead release “Blue Moon Belgian Table Belgian Pils,” it told distributors on October 26.

Blue Moon Havana Summer Ale, first unveiled at MillerCoors’ annual distributor meeting held earlier this month in Las Vegas, will be replaced by the all-malt craft pils, which is brewed with two-row Moravian barley and a combination of Mandarina hops and mandarin orange peel.

“We listen to distributor feedback on various issues all the time and after hearing mixed reviews on this product at our meeting reception, we decided to go in a different direction,” company spokesman Jonathan Stern said.

In a note to wholesales, MillerCoors described Blue Moon Belgian Table Pils as a “balanced, easy-drinking pilsner with hints of citrus.”

Blue Moon brewmaster Keith Villa and his brewing team had already created Belgian Pils, which checks in a t 4.2 percent ABV, the company said, but MillerCoors only planned to feature it in next year’s summer variety pack. That pack will still feature Belgian Pils and well as the original Blue Moon Belgian White, Blue ...More info on site

Brewery news USA: Court throws out case against Miller Coors and its labelling of Blue Moon as craft beer
A California court threw out a case filed earlier this year in which a self-described beer aficionado and home brewer sued MillerCoors for allegedly deceptive labeling of Blue Moon as a craft beer, The Milwaukee Business Journal reported on October 27.

In the original complaint, Evan Parent alleged that MillerCoors and Blue Moon Brewing Co. deceived customers into paying more for Blue Moon by implying the brand is a craft beer by calling it 'Artfully Crafted.'

Parent also said that he was under the impression that the famous Belgian White Ale was brewed in a small brewery inside Coors Field in Denver, when the beer is actually made in large breweries in Golden, Colo., and Eden, N.C.

The California judge dismissed the case saying “no reasonable consumer could have been misled by MillerCoors’ use of ‘craft beer’ and ‘Artfully Crafted,’ because there is no standard definition of ‘craft beer.’”

In his suit, Parent cites the Brewers Association definition of a craft brewer: one that produces fewer than 6 million barrels of beer annually, is less than 25 percent owned or controlled by a non-craft brewer and makes beer using only traditional or innovative brewing ingredients.

Chicago-based MillerCoors produces 62 million barrels of beer annually, and ...More info on site

Brewery news USA, MI: New Holland Brewing Company’s expansion clears another hurdle
The expansion of New Holland Brewing Company LLC to Grand Rapids’ west side cleared another hurdle, MiBiz.com reported on October 27.

At a meeting of the Michigan Strategic Fund board on October 27 in Lansing, the proposed $25 million mixed-use project received approval for a $2.5 million Michigan Community Revitalization Program (CRP) loan to assist in bridging a finance gap.

The majority of the project’s financing, which is being developed by Grand Rapids-based Rockford Development with the New Holland as an anchor tenant, comes from an $18.84 million loan from Mercantile Bank with $3.66 million in private equity, according to documents from the Michigan Economic Development Corp. (MEDC).

The need for the CRP loan comes from excessive contamination at the site along Bridge Street NW in the city’s burgeoning west side neighborhood.

In addition to the brewery, distillery and restaurant operated by New Holland, the project will consist of 45,000 square feet of residential apartments, 36,500 square feet of commercial office space and 5,000 square feet of ground-floor retail.

Demolition of the buildings that formerly sat on the site occurred earlier this year. New Holland is slated for completion in late fall of 2016. Completion on Barley Flats is expected shortly after.

Brewery news USA, TN: Bearded Iris Brewing eyeing late November opening
Two Murfreesboro natives and longtime friends are preparing to open a brewery and taproom in Germantown, The Tennessean reported on October 27.

Bearded Iris Brewing founders Paul Vaughn and Kavon Togrye, both 26 years old, want to help elevate Nashville’s growing craft beer industry with unique brews that are new to the market.

Bearded Iris — named after the Tennessee state flower — released its first brew, an IPA called Habit, in April and it’s available at about a dozen places around town. Construction is underway at the brewery and taproom at 101 Van Buren St. and the owners are eyeing a late November opening.

The 10,000-square-foot space gives Bearded Iris room to grow. Planted inside the brewery is a roughly 1,500-square-foot taproom with bar stools, antique furniture, chandeliers and a bar partially covered in embossed velvet fabric.

“It’s kind of like a speakeasy almost because you’re coming into this factory and find a cool brewery,” Vaughn said.

Launching Bearded Iris fulfils a longtime goal for Vaughn and Togrye, who have been friends since elementary school. Vaughn attended Middle Tennessee State University and Togrye got his law degree from the University of Tennessee. Both homebrewers, Vaughn also worked at SweetWater Brewing Company in Georgia.

Brewery news USA, CA & OH: Helm’s Brewing Company expanding distribution to Ohio in November
Helm’s Brewing Company is bringing their award winning San Diego craft beer to the Midwest when they launch in Ohio starting this month. This continues the expansion outside of California in recent months for Helm’s Brewing after announcing debuts in Denver and North Carolina, TheFullPint.com reported on October 27.

Tramonte Distributing Company, based out of Akron, Ohio, will be the exclusive distributor of Helm’s Brewing products in the state of Ohio effective immediately.

Tramonte Distributing will be selling 22-ounce bottles and kegs of Captain’s Pale Ale, Batten Down Brown, Wicked as Sin IPA, Beeruccino and Hop the RIPA. Seasonal offerings such as Samuin Harvest Pumpkin Ale, Chocolate Night Stout, En Garde and O.G Wheat will be available in the future.

“Partnering with Tramonte Distributing Company is a great opportunity for us to continue our expansion in select markets outside of California,” said Matt Johnson, General Manager at Helm’s Brewing Company. “We are excited to share our beer with the great people of the Midwest and hope to have a long partnership with Tramonte.”

Brewery news USA, HI & FL: Maui Brewing to share its Hawaiian beer with Floridians
Maui Brewing on October 27 announced plans to expand distribution to Florida, signing with Cavalier Distributing for coverage throughout the state, Brewbound reported.

“We’ve always seen Florida as a great fit for our beers with our shared beach culture, palm trees, and surf,” Pete Scheider, Maui Brewing’s national sales manager, said in a press statement. “Maui Brewing has long received many requests from East Coast markets, and we are happy to be able to share our Hawaiian beer with Floridians.”

Maui’s flagship offerings — including Bikini Blonde Lager, Coconut Porter, Mana Wheat and Big Swell IPA — as well as seasonal and limited releases will hit the market on Nov. 2. A launch event featuring 11 Maui beers is schedule for Nov. 6 at Orlando’s Tap & Grind restaurant.

Earlier this year Maui expanded its presence in California, signing with four new wholesalers. It also realigned its network in Nevada, moving from Cepage Selections to Southern Wine & Spirits.

In August, brewery founder Garrett Marrero said the company was also examining new distribution opportunities in New York and Massachusetts. The company has yet to reveal concrete expansion plans in those markets.

Following last year’s new brewery buildout in Kihei, Hawaii, Maui Brewing was able to ...More info on site

Brewery news USA, NC & TN: Hi-Wire Brewing launches its beers in Tennessee
In the last 6 months, Asheville based Hi-Wire Brewing, which was named Best New North Carolina Brewery of 2013 by RateBeer, underwent an extensive expansion and brought on line their 27,000 square foot Big Top production facility (2 Huntmans Place, Asheville, NC), Brewbound reported on October 26.

The increased brewing capacity allowed the two year old brewery to not only make a larger amount of their well known flagship beers but also introduce new ones to the lineup, including a series of lager seasonals. The expansion also gave the brewery the opportunity to launch new markets, including South Carolina in September and, in the month of October, Tennessee.

Hi-Wire Brewing will partner with the distributor Lipman Brothers to bring their beer into Tennessee. To celebrate the launch of the state, co-owners Adam Charnack and Chris Frosaker will join Hi-Wire salesmen to put on specialty pint nights, in the Nashville area the week of October 26th and Chattanooga and Knoxville areas the week of November 1st.

In addition to its core beers, Hi-Wire will celebrate the launch of Tennessee by bringing rare beers from their specialty brewery. These beers include the Farmhouse Series Volume 2: Peach Rye Saison, a Pumpkin Vienna Lager ...More info on site

Brewery news USA, CT & MA: Overshores Brewing adds fourth market to its distribution list
Overshores Brewing Co. of East Haven, CT recently expanded the availability of their premium award-winning Belgian inspired beer by entering their fourth market in less than 18 months of operation. Massachusetts residents now have access to four of Overshores’ signature beers, Brewbound reported on October 26.

Available statewide is Overshores’ flagship “Tripel Brun,” a rich and complex Belgian strong dark. A limited supply of “Belgique du Noire,” an imperial Belgian style porter as well as limited quantities of “Blanc de Blanche Wit” and “Belle Fermiere Saison” are also available in 4-packs. Draft offerings are slated to become available as early as late November.

“We are so excited that New England is becoming a hotbed of Belgian style beers. There’s a lot of people burning out on IPA’s and looking for something that is still rich and interesting and goes with food, but isn’t super malty or super hoppy. That’s what we do,” said Overshores Brewing Co. founder and CEO, Christian Amport. “It’s all about the yeast.”

In addition to Massachusetts, Overshores beer is currently available in Connecticut, Rhode Island and Washington, DC. Partnering with Overshores in Massachusetts is Revolution Beverage (RevBev), a joint venture by Horizon Beverage Co. of Norton, MA, Quality Beverage ...More info on site
