MECHANICS OF DRY HOPPING

ABSTRACT
A crucial part when talking about dry hopping is handling parameters, e.g. how much do hop particles swell during dry hopping, and is particle size distribution of importance? Does temperature affect process parameters, etc? This German team looked into various parameters and found that different methods for stirring and mixing, as well as different contact times have only little effect in regards to particle size distribution, but they found that wet density increased with increasing temperatures and permeability decreases with increasing temperatures.

Brewery news USA: History suggests there could be more room for craft industry growth - experts
There are more U.S. breweries than ever before. And they are opening at a record pace of two-a-day, SCTimes reported on December 17.

Yet history suggest there could be more room for growth.

“We are still way off the all-time per capita total," argues Bart Watson, economist for the Brewer's Association. "We have a long ways to catch the 1870s.

"People talk about bubble (burst) but they don't understand what it means. The key is to continuing to find a local demand."

By the end of 2013, there were 2,863 craft breweries, a growth of about 400 from 2012.

In 2015, the total number surpassed 4,000. And specifically at the end of November, the number of U.S. breweries surpassed the previous high total of 4,131 set in 1873.

Watson said the industry saw the biggest growth in IPA styles — he refers to it the 'IPA-fication' of beer. Also growing is lower-alcohol "sessionable" beers. Watson speculates the next style growth could come in lighter blonde ale and gose-style beers.

Much of the brewery growth is coming outside of communities like Denver and Seattle, cities known for their established craft beer scenes. Many are also setting up in smaller communities, often without an extensive previous brewing history.

Brewery news USA, FL: Brew Bus to open brewery in the current location of the closing Florida Avenue Brewing in Tampa
One of the mainstays of Seminole Heights' brewing scene is shutting its doors — but another big name in local beer is taking over its space and production, The New York Times reported on December 17.

Brew Bus, the Tampa-based brewery tour company, said December 15 that it would open a brewery and tasting room in Seminole Heights in the current location of Florida Avenue Brewing Co. in 2016.

Florida Avenue Brewing is shutting down immediately, said Anthony Derby, owner of Brew Bus. But, Derby said, he plans to continue producing Florida Avenue beers.

Brew Bus brand beers are currently produced at Brew Hub in Lakeland, and Derby said he plans to continue using Brew Hub to brew his beers. Eventually, he said, both Brew Bus and Florida Avenue beers will also be produced in Seminole Heights.

Brew Bus plans to renovate the space, keeping it as a brewpub and also using it as a hub for its brewery tours. Derby said he's budgeted about $200,000 to overhaul the space — a complete cosmetic transformation as well as a new draft system and cooler.

His goal, he said, is to be open by mid-February. The new brewpub will have other local beers on tap — ...More info on site

Brewery news USA, IL: Great Central Brewing Company starts building contract brewing facility in Chicago
Great Central Brewing Company (GCBC), a craft-dedicated contract brewing facility and taproom, has broken ground in Chicago’s Fulton Market District and is on schedule to begin its full-service operation in early summer 2016. The new 32,000+ square foot brewery was created to enable craft brewers and craft beer lovers alike to meet in this new beertopia, Brewbound reported on December 17.

With craft beer popularity booming and many of today’s top brewers at full production capacity, GCBC will provide a seamless and professionally managed solution to expand a brewer’s production capacity without having to expand their existing facility.

“Great Central Brewing Company has been several years in the making and we are excited to bring our unique brewing solution to downtown Chicago,” said David Avram, Founder and Partner of Great Central Brewing Company.

“The concept of GCBC was conceived after we observed a lack of modernized facilities who could offer craft brewers a quality focused, timely and dependable option for contract brewing services. Our approach is predicated on being ‘well considered’ on every level of the brewery supply chain, while striving to realize our principles of dependability, collaboration and innovation. Our concept will enable small to medium craft brewers to capture the benefits ...More info on site

Brewery news USA & South Korea: Northern United Brewing Company forms partnership with Playground Brewery in South Korea
Northern United Brewing Company (NUBC), the Dexter, MI-based makers of Jolly Pumpkin and North Peak brews, have formed a partnership with Playground, a brewery in Seoul, Korea, Traverse City Tracker reported on December 18.

NUBC has been working with and training partners Richard Kim and Soonbong Chun for more than a year.

“We’ve installed a 37BBL system that will allow Playground to brew beers that are currently unavailable in Korea," says Master Brewer and NUBC Partner Mike Hill, who is in Seoul right now to assist with the final phase of the brewery install. "This is an exciting moment for us and for the burgeoning craft beer movement that is occurring in Korea. Playground expects to have their systems in place and brew their inaugural batch this week."

According to NUBC, the craft beer industry is just beginning to take off in Korea and Playground Brewery is looking forward to introducing new varieties to a country used to light lagers.

Adds Chun, “We are sure we will brew great beers that don’t exist in Korea’s market today. Our partnership with NUBC enabled us to get here and we see them as more than just a partner."

Brewery news USA, NC: Trophy Brewing expands with a second location in Raleigh
Trophy Brewing will open a second location in Raleigh next week, wral.com reported on December 17.

Co-owner Chris Powers said doors will open on Monday at 3 p.m. at 656 Maywood Ave. in Raleigh.

Trophy's first location, Trophy Brewing and Pizza, 827 W. Morgan St., opened three years ago. It has become known for its great pizza and beer.

Trophy Brewing and Taproom on Maywood Avenue, close to its intersection with Lake Wheeler Road, will feature a 20-barrel brewhouse that will eventually allow Trophy to produce 5,000 barrels a year, opening the door to distribute the beer locally.

"We will be able to start small, satisfy the Raleigh market and eventually grow a little outside that," Powers said.

The 10,000 square-foot taproom and production facility is just the first phase in Trophy's growth plan. The building next door will be converted to a restaurant and space for more barrel aging. A third building will be turned into an event space.

The Maywood location will have all 12 of Trophy's beers on draft and feature food trucks Thursday through Sunday nights. The Maywood location will also feature a lot of barrel-aged beers, Powers said.

Selections at both Trophy locations will be different. The first location will also feature ...More info on site

Brewery news USA, CA & CT: Knee Deep Brewing Company to start selling its beers in Connecticut
Knee Deep Brewing Company of Auburn, CA. is licensed and will be selling beers in the state of Connecticut starting December 2015, Brewbound reported on December 17.

“We are pleased to announce that Knee Deep beers will now be distributed in Connecticut as a result of our recently signed agreement with Sarene Craft Beer Distributors Connecticut. The addition of Sarene to our network will make our beers available throughout the entire state,” said Andrew Moore, Sales Manager of Knee Deep.

“Sarene has been representing our brand since 2013 in the state of New York and we are more than pleased with their performance. We would love to continue this partnership and expand with them into the neighboring state,” said Moore.

“We are extremely excited to be continuing our partnership with Knee Deep,” said Joe Grabowski, Sales Manger/Owner of Sarene. “Our relationship and success with them in New York made this an easy decision for us. Their hop-forward portfolio continues to shine in a sea of IPA’s and we can’t wait to start getting it out to the eager craft drinkers here in Connecticut.”

Knee Deep Brewing Company began brewing in 2010, moved to their current brewery in Auburn in late 2013 and ...More info on site

Brewery news USA, AK: Bearpaw River Brewing Company ready to open its doors in Wasilla
It was a love of home brewing that prompted Jake Wade to open the Bearpaw River Brewing Company in Wasilla, KTVA.com reported on December 17.

“I shared that passion with my other brother, Jed, and we both started brewing about the same time,” Wade said. ”Started sharing ideas and all of us jumped on board with the brewery idea.”

Running the business is a family affair with all four Wade brothers pitching in.

“I’m the youngest, yeah. It’s Jack, James, Jed, Jake,” Wade listed.

The brewery has been three years in the making. On tap right now — a couple of IPAs and their Mat-Maid Milk Stout.

“It’s really creamy, rich, roasty, so it does all the things you want a stout to do,” described James Wade.

The brothers were born and raised in Wasilla. When it came time to build their brewery, they decided the Mat-Su Valley was the perfect place.

“Beer is great when you can drink it for yourself but it’s even better when you can share it. So we want to share it with our friends and family,” said James.

Bearpaw River Brewing’s grand opening is Saturday, Dec. 19 from noon to 8 p.m. The tasting room is located at 4605 E. Palmer-Wasilla Highway.

Brewery news Canada, NB: First City Brewery opens in Saint John
The Atlantic Canada Beer Blog reports that New Brunswick’s newest nano-brewery has released its first beers in Saint John.

Launched by friends and homebrewers Jeff Gibbons and Adam McQueen, First City Brewery is a small operation, producing 40 gallon batches that will rotate constantly through different styles and brands.

The brewery is initially focusing exclusively on keg sales, with its first beers – including an IPA (6.5% abv) brewed using Magnum, Amarillo, Centenntial, Citra and Galaxy hops, and an ESB (6% abv) brewed with Challenger and Willamette – going on tap late last week and over the weekend at several bars in Saint John.

Brewery news Canada, ON: Stalwart Brewing launching own facility in Ottawa
The newest brewery in Canada’s Capital Region is about to open to the public, although for vigilant craft beer drinkers in the area, its offerings won’t be completely new to them, Canadian Beer News reported on December 17.

Stalwart Brewing is being launched by several servers at the Wellington Gastropub who previously brewed out of the restaurant’s kitchen under the name Stockpot Ales.

Now set up in their own facility at 10 High St. in Carleton Place, the partners are opening with revived versions of three Stockpot favourites: Big PAPA Peach & Apricot Pale Ale, Bad Moon Rye Stout and Dr. Feelgood IPA.

Stalwart beers are on tap now at several bars in the area, and the brewery retail store will be opening tomorrow (Friday December 18th) with cans of all three brands available for purchase.

Brewery news USA, FL: Brew Hub to expand its Lakeland brewery
Brew Hub has announced the expansion of their Lakeland, Florida, brewery and the formation of new partnerships with JDub's Brewing Company of Sarasota, Florida, and M.I.A. Brewing Company of Miami, Benzinga reported on December 17.

The brewery expansion will allow Brew Hub to increase its incremental capacity by 60 percent, and the partnerships with JDub's and M.I.A. will enable both craft brewers to immediately expand distribution and grow volume.

Brew Hub's 64,000 square-foot Lakeland brewery opened September 2014. The brewery had an initial brewing capacity of 60,000 barrels, or nearly 1 million cases, annually. The expansion will increase the brewery's capacity to 100,000 barrels, or 1.4 million cases, annually. In addition to its home brands, Brew Hub brews beer for partners Cigar City, BJ's Restaurants, Toppling Goliath, Green Man, Orange Blossom, GolfBeer and Brew Bus.

"We designed the brewery with expansion in mind. We hoped this day would come – it just arrived sooner than we could have ever imagined," said Tim Schoen, CEO of Brew Hub. "The expansion proves the model we built to help craft brewers grow is working. We're excited to continue helping our partners grow as we expand, and we welcome the opportunity to add quality brewers like ...More info on site

Brewery news Philippines: Court of Tax Appeals decides to return erroneously collected excise tax to San Miguel Brewery
The Court of Tax Appeals has directed the Bureau of Internal Revenue to return over P699 million “erroneously” collected excise tax to San Miguel Brewery, a subsidiary of San Miguel Corp, The Standard reported on December 18.

In an 18-page order, the tax court en banc upheld the previous decision of the Third Division that San Miguel Light should not be subject to higher excise tax rate because it was a new product.

Contrary to BIR’s revised classification, the court said SML was not a variant of the old San Miguel Pale Pilsen that would subject it to a higher tax bracket.

San Miguel Brewery paid the tax in protest in 2010 to be able to withdraw from warehouses and distribute the product.

The tax court said San Miguel Light was different from San Miguel Pale Pilsen since it was labeled by the manufacturer as a new fermented liquor.

According to the CTA, the size, shape, and color of the two products were different.

It said San Miguel Light was introduced in the market between January 1997 to December 2003, the BIR classified it then as a new brand.

Pursuant to Section 143 of the Tax Code, the court said the classification by the BIR could not ...More info on site

Brewery news Bosnia & Herzegovina: Sarajevska Pivara starts brewing Oettinger beer
Sarajevo-based brewery Sarajevska Pivara has started production of best-selling German beer Oettinger for distribution in Bosnia and Herzegovina, as well as Croatia, Serbia, Montenegro, Kosovo and Albania, ESM reported on December 16.

According to the general director of Sarajevska Pivara, Haris Kuskunovic, the contract with Oettinger comes after significant financial investments in the latest equipment and employee training, as well as the implementation of the most modern processes, procedures and standards.

Initially, Sarajevska Pivara will produce Pils, a German Pilsener-style beer, but there are plans to introduce other Oettinger products in the long term.

The Oettinger brewery group is one of the largest in Germany and has been a market leader since 2004, and now sells its beer in more than 100 countries.

Sarajevska Pivara was founded in 1864 and is the leading producer of beer in Bosnia and Herzegovina, which it makes alongside carbonated and non-carbonated water, soft drinks and juices. The brewery works with all major supermarket chains in the country (Bingo, Amko, Konzum) and more than 1,000 small shops and over 500 restaurants.
