STABILITY OF HOP AROMA COMPOUNDS IN BEER

ABSTRACT
Using the U.S. hop variety Lemondrop, a German research team investigated how beer type influences the concentrations of hop aroma compounds and how these concentrations change over time. With the GC-method described they were able to determine not only monoterpene alcohols and some sesquiterpenes, but also various esters in the late and dry hopped beers. The results showed significantly higher concentrations of the mono- and sesquiterpenes myrcene, beta-caryophyllene, alpha-humulene, beta-farnesene and beta-limonene in the pale ale style beer when compared to pilsner type beer (maybe filtration has an effect). No significant differences in these two beers styles were found for the more polar terpene alcohols linalool, geraniol, and alpha-terpineol. Only the amount of beta-citronellol differed, which was lower in the pale ale. The behavior of esters among themselves was different. A significantly higher amount of isoamyl acetate was detectable in the pale ale, and little difference was seen in 2-methylbutyl isobutanoate between the two beers types. Ethyl dodecanoate was detectable in a higher amount in the pilsner as compared to the pale ale. It was thought that perhaps the differences for esters were influenced by the types of yeast used in fermentation. A higher concentration of 2-undecanone was seen in the pale ale but no significant differences were detected for 2-nonanone and 2-decanone. With regard to stability of the aroma compounds, all showed a decrease in concentration over the storage time of 12 months except for alpha-terpineol.

Brewery news USA, KY: Alltech to more than double projected brewing capacity
Alltech, whose Lexington Brewing Co. is Kentucky’s largest craft brewer, is in the midst of a $24.4 million expansion in three cities that is designed to more than double its projected brewing capacity and add taprooms, Lexington Herald Leader reported on March 17.

The brewery is already too big to qualify for a taproom under existing statutes. A bill now in the state House could allow it, but not if Alltech continues to grow.

Mark Coffman, Alltech’s master distiller, said March 17 that in addition to the 40,000-barrel brewhouse in Lexington, Alltech has begun brewing at a 7,000-barrel plant in Bowling Green in conjunction with Western Kentucky University’s brewing program.

Next year, Alltech will open another 40,000-barrel brewhouse and another distillery in Pikeville.

“Right now we’re going up to 87,000 barrels,” Coffman said, “And we’ve purchased a 110,000-barrel brewhouse, and we’re looking at where to put it.”

This would be an additional $15 million investment by the company.

In Kentucky, only microbreweries that produce less than 25,000 barrels a year may have a taproom to serve customers directly.

Senate Bill 11, an omnibus alcohol bill, would raise the cap to 50,000 barrels a year. The bill was approved by the Senate in January and has been sent ...More info on site


Brewery news USA, MI: The Watermark Brewing Co. gets financial boost to open in May this year
The Watermark Brewing Co. in Stevensville plans to open in May, 2016 and it just got a financial boost for the processing portion of its brewing facility, Second Wave reported on March 17.

Watermark Brewing Co. plans to brew and serve craft beers, including IPAs, sour barrel-aged beers, Belgian-style brew, and others. Its initial investment for the business is $530,000 and will create 15 jobs.

Construction is now underway on Watermark's 5,200-square-foot building, which will house the brewing area as well as the tasting section where patrons can enjoy crafted beers.

The Stevensville Village Council recently approved a 12-year tax abatement of the brewery's $205,500 investment in the processing portion of their brewery at 5781 St. Joseph Ave.

"This approval from the Stevensville Village Council puts us that much closer to opening the Watermark Brewing Company," says Chris Mason, CEO of Watermark Brewing Company.

Cathy Tilley, Business Development Manager from Cornerstone Alliance, says her organization has been working with Watermark Brewing Co. since 2015 on the new brewery. "It’s great to see their plans come to fruition."


Brewery news USA, MI & TX: Atwater Brewery and Flemish Fox Brewery & Craftworks to open collaborative brewery in Austin, TX
Detroit’s largest beer maker Atwater Brewery has teamed up with Flemish Fox Brewery & Craftworks to open a collaborative brewery in Austin, Texas, Detroit News reported on March 17.

This will be Atwater’s first project outside of Michigan. The brewery distributes products to 21 states and Canada and has two locations in Metro Detroit – the original in the Rivertown-Warehouse District and a restaurant in Grosse Pointe. A third location is planned for Grand Rapids.

“We’ve been very careful when it comes to growing our production footprint, but this opportunity was too good to pass,” said Atwater owner Mark Rieth in a press release. His brewery has seen “double digit growth” over the past five years, largely due to the success of Atwater products including Vanilla Java Porter and Dirty Blonde.

“As a city that shares our passion for the craft beer culture, Austin is the type of vibrant community we sought for our first brewing operation outside of Michigan.”

The 27,000-square-foot facility on a three-acre property will have the capacity to brew more than 60,000 barrels a year. It’s expected to open in early 2017. The space will have a tasting room, beer garden, brewing museum and concert venue.

Brewery news USA, MO: Senn Bierwerks scheduled to open in St. Louis next year
Former brewers at Morgan Street Brewery are investing $2 million to open their own St. Louis brewery in 2017, St. Louis Business Journal reported on March 17.

Senn Bierwerks will consist of a 20-barrel production facility, tasting room and beer garden, and will distribute ales and lagers in four-packs of 16 ounce cans, according to President Dustin Chalfant, who founded the brewery with his wife, Kristen Chalfant, and James Hellmuth. They’re investing “a little north of $2 million,” Dustin Chalfant said, to get Senn up and running.

No location has been announced yet, but Chalfant said he’s confident the company has a location where it will lease and possibly partly own. Senn expects to announce its location in six weeks, he said. Senn Bierwerks will have a staff of seven or eight.

Hellmuth and Chalfant are Morgan Street Brewery alums. Chalfant worked there for four years, serving as head brewmaster and director of operations. He left Morgan Street in April to start a consulting firm, working with Six Mile Bridge Beer and local distributor Artisans Celler. Hellmuth left Sun King Brewing in Indianapolis to start Senn Bierwerks with the Chalfants.

Brewery news Canada, YK: Winterlong Brewing planning to triple brewing capacity
Less than a year after opening, Whitehorse–based Winterlong Brewing has announced plans for an expansion this summer that will significantly increase its brewing capacity, Canadian Beer News reported on March 9.

In a blog post on the Winterlong website, owners Marko and Meghan Marjanovic explain that they have taken advantage of an opportunity to take on the lease for the entry building where the brewery is located, and have ordered five new fermentation tanks to fill the space.

Winterlong will be taking over the lease on June 1st, and the new tanks are expected to arrive in July. Once installed, brewing capacity will be tripled, allowing the brewery to keep up to and surpass demand for its beers.


Hops news USA, FL: University of Florida professor trying to grow hops in Florida
University of Florida professor Brian Pearson tasted craft beer in England about five years ago, and it changed his life, Orlando Sentinel reported on March 16.

Pearson, 35, was so impressed he came home and used his own money to try to grow hops, the plant that gives beer its flavor. His experiment led to four years of research and a new grant-funded project to determine which varieties may thrive in the Sunshine State.

If he is successful, it could be the beginning of a Florida hops industry. That potentially would provide the state's burgeoning craft-beer industry with a local source of the plant, boost the economy and give farmers beleaguered by citrus greening an alternative crop.

"I have no doubt that it can be done," said Pearson, an assistant professor of environmental horticulture who works at the university's Mid-Florida Research & Education Center. "As far as the economics of it ... that has to be determined."

On a recent tour of a hops-filled greenhouse at the center, Pearson said he's hopeful that he and his team will find a way to get the non-native plants to grow in the state's heat, humidity and light conditions. They prefer temperatures of between 42 and 70 ...More info on site


Brewery news USA: MillerCoors to keep its name and headquarters in Chicago
MillerCoors will keep its headquarters in Chicago after Molson Coors purchases the 58 percent of the joint venture that it doesn't already own, The Denver Post reported on March 17.

MillerCoors will also keep its name, according to a letter that Molson Coors CEO Mark Hunter sent to employees on March 17. The business will be called "MillerCoors, a Molson Coors company," the letter said.

And Molson Coors will keep its corporate operational headquarters in Denver, the letter said.

Molson Coors announced in November that it was buying the rest of MillerCoors, a deal valued at $12 billion.

The purchase is part of Anheuser-Busch InBev's $107 billion proposed tie-up with SABMiller, which currently owns a majority share of MillerCoors. SABMiller is divesting its half of MillerCoors to ease anti-trust concerns.

InBev's takeover of SABMiller is subject to review by government regulators. The transaction is expected to close in the second half of this year.

The announcement on March 17 ends months of uncertainty, especially for MillerCoors employees in Chicago.

Hunter wrote in the letter that the company wants to ease any anxieties over the acquisition "as quickly as possible as decisions are made."

Brewery news Canada, NS: Bad Apple Brewhouse to operate outside Nova Scotia under the Mosaic Brewing name
Bad Apple Brewhouse has announced that due to a trademark dispute with a similarly named brew-on-premise operation in Ontario, it will now be doing business outside of Nova Scotia under the Mosaic Brewing name, Canadian Beer News reported.

As explained by owner Jeff Saunders, while Ontario’s Bad Apple Brewing was launched two years after the Nova Scotia brewery, its owners trademarked the Bad Apple name and threatened Saunders with a lawsuit unless he paid a substantial fee to continue using it.

Saunders attempted to reach a more reasonable agreement with the Ontario company, but when that failed, he decided to use the Mosaic Brewing brand on any products sold outside of his home province, while continuing to use the Bad Apple brand in Nova Scotia where his business registration allows him to do so.

The Mosaic name and logo come from a charity beer that Bad Apple has been brewing since 2014 in support of Saunders’ son and others who are afflicted with Mosaic Down Syndrome.

Following a test launch in the Pacific Northwest last year, MillerCoors is expanding its naturally gluten-free Coors Peak beer offering with a second style, Golden Lager, GSPnet.com reported on March 16.

Like its predecessor Copper Lager, Coors Peak Golden Lager is brewed with 100% all-natural, gluten-free ingredients, including California brown rice and Pacific Northwest hops. While Copper Lager is a rich copper color with a slight caramel profile, Golden Lager is bright and balanced, with a toasted-malt backbone and hints of citrusy hops.

“We spent nearly five years experimenting with different grains to develop a great tasting beer that is 100% naturally gluten-free,” said Troy Rysewyk, MillerCoors manager of brewing technology and innovation. “We wanted to highlight the versatility of our signature brewing process and ingredients by developing additional styles. After considering multiple grain options, including sorghum, amaranth and quinoa, we are proud to be the only major brewer crafting a great-tasting, naturally gluten-free beer brewed from brown rice.”

Brewery news India: Heineken likely to ask Vijay Mallya to step down from board of United Breweries - sources
Heineken is likely to ask Vijay Mallya, who owes creditor banks more than $1 billion, to step down from the board of United Breweries, India's largest brewer, three people with direct knowledge of the plan told Reuters.

They said such a move would likely be a prelude to the Dutch drinks firm raising its stake in the maker of Kingfisher beer to above 50 percent, betting on a small but fast-growing beer market.

Heineken acquired a 37.5 percent stake in United Breweries in 2008 through its takeover of Scottish & Newcastle and has since increased its holding to 42.4 percent. With Mallya distracted by debts from a collapsed airline venture, this could be a timely grab by Heineken in a market that is growing much faster than the global average.

Two-thirds of Indians don't drink alcohol, often for religious or cultural reasons, but rapid urbanization and a rising middle class are changing consumer habits. India accounts for 13 percent of world beer consumption, and annual volume growth is expected to outpace the global average, and major markets like China, through 2019, according to ratings agency Moody's.

Brewery news Vietnam: Vietnam brewers calling for government to rethink new luxury tax policy
Many brewers in Vietnam, one of the largest beer markets in Asia, are calling for the government to rethink its new luxury tax policy, saying higher taxes will push prices up and hurt sales, Thanh Nien News reported on March 18.

According to local media reports, the companies said at a meeting on March 16 that they are very concerned about their business.

On January 1, the special consumption tax rate on beer was increased from 50 percent to 55 percent.

On top of that, new regulations also changed how the tax is calculated. Brewers are now required to work out the average retail price of a product, then add 7 percent to that number to come up with the final taxable price.

Speaking at the meeting, Le Hong Xanh, deputy CEO of the country's biggest beer maker Sabeco, said the government should suspend the new rules for at least one year, or brewers will have to increase their prices to make up for the tax hike.

Nguyen Hong Linh, CEO of Habeco, another major brewer, agreed. He said businesses need more time to prepare for the changes and reduce business risks.
