A METHOD FOR REALISTIC FLAVOUR EXPECTATIONS?

ABSTRACT
The question is familiar to all of us: By assessing cone hops or pellets, how do I know what to expect from this hop when used in late hopping in terms of flavour? Japanese researchers have developed a standardised method that is useful for this type of assessment. For this method, 0.5g of alpha acids per liter were added to distilled water and boiled at 105 degrees Celsius for 5 minutes. Bitter and aroma compounds were analysed and sensory flavour profiling conducted. Though a significant correlation between sensory and analytical data was not achieved, the flavour profiling gave reproducible insights in the flavour properties of the hop varieties studied.

Barley news Canada: The Canadian Malt Barley Technical Centre releases list of recommended barley varieties
The Canadian Malt Barley Technical Centre has released its annual list of recommended barley seed varieties for the 2017 planting season.

There are several two-row varieties on the CMBTC’s list (CDC Copeland, AC Metcalfe, AAC Synergy, Bentley, Newdale, CDC Polar Star, CDC Kindersley), but only three recommended varieties of six-row barley. FP Genetics distributes pedigreed seed for two of these varieties, Legacy and Tradition. Canterra Seeds distributes pedigreed seed for the third two-row variety, Celebration. The CMBTC notes that there is limited demand for each of these six-row varieties.

Two new two-row varieties will be in the seed propagation stage in 2017. AAC Connect is being propagated for the market by Canterra seeds; SeCan is growing out CDC Bow.


Brewery news USA, GA: Georgia craft brewers one step closer to selling their beer on site
Georgia craft brewers last week got one step closer to realizing their goal of being able to sell the beer they brew on site, Savannah Now reported.

The Georgia Senate voted 49-2 on February 2 to adopt Senate Bill 85, which would provide for the state’s breweries to sell up to 3,000 barrels of beer each year directly to their consumers. The legislation is now headed to the state House of Representatives for consideration.

If approved by the House, the legislation would be a major win for the state’s 45 active craft breweries, said Carly Wiggins, the marketing and sales director of Savannah’s Southbound Brewing Co. and current president and membership chair of the Georgia Craft Brewers Guild.

Representatives of Georgia’s craft breweries have attempted to broaden the legislation that governs their business for several years. The Peach State is now among the last in the union to limit direct sales to customers at local breweries, but it won’t be for long if the new legislation gets the governor’s signature this year.

If it’s signed by the governor, the bill would be effective Sept. 1.

Brewery news USA, MN: Utepils Brewing about to open its doors in Minneapolis
After a long wait, Utepils Brewing is about to have its moment, the Minneapolis Star Tribune reported on February 6.

The north Minneapolis brewery and taproom will celebrate its grand opening on Feb. 18 after penning the business plan in the summer of 2014. (There will be a series of soft openings leading up to the official opening date.)

“I’ll believe it when I hear the cash register ring,” founder Dan Justesen said with a grin.

Permit delays led to a later debut than expected for Utepils (its owners raised more than $1 million for the project), but the final result is striking. An oversized brewhouse – at 50 barrels, one of the state’s largest – and an advanced varioboil system will have the capacity to make as many as 50,000 or 60,000 barrels per year, Justesen said. Utepils is shooting to hit at least 3,500 the first year. For comparison, Surly Brewing is capable of making 100,000 barrels per year.

“We wanted to get the best technology we could,” said Justesen, who previously was the president and co-owner at Vine Park in St. Paul and worked with the Minnesota Craft Brewers Guild. “We put money into the things we couldn’t change.”

Brewery news USA, NE: Brewers fear new beer bill may stop expansion of craft sector in Nebraska
A beer bill in Lincoln is creating a buzz across the Nebraska craft industry. A woman who runs a brewing company in La Vista is sounding the alarm about a measure, she says, stops the expansion of breweries, kmtv.com reported on February 2. The bill introduced by Senator Tyson Larson in January, LB-632, would prevent craft brewers from opening retail or taprooms off site from where they brew. Those brewers say that would stop plans for expansion across the state. "A lot of concern from the craft brewers guild in particular about the amount of jobs this could kill, the tax base that's not going to happen, about the local growth in our community that is being impacted," said Kim Kavulak, general manager of Nebraska Brewing Company. When Nebraska Brewing Company opened about 10 years ago there were a handful of microbreweries across Nebraska. There are now more than 40 open or opening. "Nebraska has embraced the craft beer movement and we're making some really good beers,” Kavulak said. “Those breweries are all creating jobs in their local communities, creating local tax base and participating in local philanthropy." Brewery news Canada, ON: Lost Craft Beer purchases brands and assets of fellow contract brewer Sextant Craft Brewery
Lost Craft Beer has announced that it has purchased the brands and assets of fellow contract brewing operation Sextant Craft Brewery for an undisclosed amount, Canadian Beer News reported on February 3.

“The transaction adds a refreshing American-style Pale Ale that is complimentary to Lost Craft’s core year-round product portfolio,” said Lost Craft founder and CEO Shehan De Silva in a statement. “Sextant’s flagship beer, Why So Sirius?, is well balanced and sessionable, consistent with Lost Craft’s brewing philosophy.”

Why So Sirius? will continue to be brewed at the Common Good contract brewing facility in Scarborough alongside the Lost Craft brands, and will be relaunched under the Lost Craft banner this spring.


Brewery news USA, KY: Gravely Brewing Co. owners shooting for early May opening
When Gravely Brewing Co. opens later this year — owners Nathaniel Gravely and Corey Buenning are shooting for early May — it will mark the end of a long brewing drought in the Phoenix Hill neighbourhood, Insider Louisville reported on February 7.

The new brewery-meets-music-venue is situated in a spot that previously was part of Phoenix Brewery, a nationally revered brewery and beer garden that once was a cornerstone of Louisville as not just a brewery but also an event space.

In fact, before deciding to purchase the former home of Pride Tile Co. at 514 Baxter Ave., Gravely first looked at a building next door that originally was the horse stable for Phoenix Brewery — and the only part of the original brewery that remains.

For years, that building had housed Acme Auto Electric, and until recently bore hand-painted murals recalling Phoenix Brewery and its history.

“I wanted it because of the history,” Gravely says, noting that both he and Buenning, who are brothers-in-law, are of German descent. Brewery news Canada, PE: Copper Bottom Brewing aiming at opening in Montague later this year
CBC News PEI reports that the first brewery on the eastern end of Prince Edward Island is planning on opening later this year.

Copper Bottom Brewing is being founded by singer-songwriter Ashley Condon and her husband Ken Spears in the town of Montague, located approximately 45 km east of Charlottetown.

With funding assistance from several government loan and grant programs, the couple will be starting construction of the brewery this month in the Eastern Graphic building in downtown Montague, with an aim to have beer flowing by this summer. In addition to the brewery, Copper Bottom will also feature a taproom and live entertainment venue.



Brewery news Canada, NL: Bootleg Brew Co. getting ready to open in Corner Brook by summer
CBC News Newfoundland & Labrador reports that a two partners are hatching plans to open a small brewery in Corner Brook later this year.

Bootleg Brew Co. is being launched by Matt Tilley and Morgan Turner, co-workers at a sushi restaurant who have been working on the project since early 2016. After months of test batches, they’ve come up with three beers – Hoppy Roger IPA, El Diablo Rojo Rye Ale, and East Coast Pale Ale – that will form their core line-up once the brewery opens.

The pair have set up a crowdfunding campaign in Indiegogo with an aim to raise $5000 in start-up funds, and they hope to be open and brewing somewhere in Corner Brook by this summer.


Brewery news USA, CO: Mu Brewery to close its doors for good later this month
After just two and half years on Colfax Avenue, in the heart of Aurora's Cultural Arts District, Mu Brewery will close its doors for good later this month. It is one of just a very few Denver-area craft breweries to shutter in the past decade, but in all likelihood, it won't be last, Westword reported on February 7.

The brewery shared the news on February 6:

“It is with great sadness that we announce Mu Brewery’s last day of business will be February 18th, 2017. After several struggles through 2016 that unfortunately did not work the way we had hoped, we have decided that the best course of action is to close our doors. We cannot say enough how much we appreciate the support of all our fans and we would not have been able to accomplish what we had without your efforts. Mu Brewery will continue to be open during regular posted business hours and invites our community to come “Drink Mu Dry” on February 18th for one last “cheers”!

Brewery news Japan: Kirin’s operating profit likely rose more than 10% last year - report
Kirin Holdings' group operating profit likely rose more than 10% to around 140 billion yen ($1.24 billion) for the fiscal year ended Dec. 31 as beers lost fizz but soft-drink sales bubbled up beyond expectations, Nikkei Asian Review reported on February 8.

The brewer's standing forecast has operating profit growing 7% to 134 billion yen.

Sales apparently slipped 6% to around 2.07 trillion yen. Shipments are seen down 5% in beer. The Ichiban Shibori flagship beer sold briskly, thanks to limited-edition flavors for each Japanese prefecture. But the Tanrei low-malt brand and Nodogoshi no-malt beer suffered. The segment's profits improved overall, partly on lower ingredient costs.

Overseas, Kirin enjoyed strong earnings from operations in Myanmar, in whose largest brewer the company purchased a majority stake in 2015. But in the Oceania region, beer and soft-drink sales failed to flourish against a strong yen.

The company’s fiscal 2016 earnings come out on Monday, February 13. For fiscal 2017, the company expects its beverage business to keep growing and plans to add a new flavor to the Nodogoshi lineup, targeting a 2% boost to beer sales. Profits should also improve once Kirin finalizes the sale of a Brazilian beer business that continues to face operating losses.

Brewery news India: The Karnataka High Court orders closure of United Breweries (Holdings)
The Karnataka High Court on February 7 ordered the closure of United Breweries (Holdings) Limited, the parent company of UB Group, to recover dues payable to a US-based company by Vijay Mallya's now-defunct Kingfisher Airlines, the International Business Times reported.

IAE International Aero Engines is partly owned by United Technologies Corp's Pratt & Whitney and supplies engines for Airbus A320 jetliners.

In 2013, United Breweries (Holdings) Ltd had filed a lawsuit against International Aero Engines and its shareholders in a court in Bengaluru, alleging that the IAE V2500-A5 engines supplied to Kingfisher Airlines were "inherently defective, both in design and manufacture." United Breweries (Holdings) also sought $236 million in damages from International Aero Engines.

On Tuesday, February 7, Justice Vineet Kothari delivered the verdict while allowing a petition filed in 2012 by International Aero Engines. The Judge pronounced the order sitting at the Dharwad Bench of the High Court via video conference.

Kingfisher Airlines and United Breweries Holdings together owed Rs 153 crore to International Aero Engines in 2012 when the petition was filed. United Breweries Holdings was the guarantor for Kingfisher Airlines.

Whisky news India: Diageo may be forced to buy rest of shares in United Spirits Limited
India’s stock market regulators are mulling whether to force Diageo to offer to buy the 44% of the shares it does not own in United Spirits Limited (USL), the sub-continent’s largest spirits group, The Drinks Business reported on February 7.

The debate centres on last year’s controversial US$75 mln payment from Diageo to Vijay Mallya to secure his severing links with USL and standing down as the company’s non-executive chairman. Did that deal bring about a change of control at USL? If it did, then Diageo could be required to make an “open offer” to buyout other USL shareholders.

India’s Economic Times has quoted a senior official at the country’s Securities and Exchange Board (Sebi) as saying “Our view is that before the settlement agreement was entered into there was dual control of Mallya and Diageo in USL, but now there is a change of control.”

For its part Diageo is quoted as saying: “It is clear that Diageo has been in control of USL since we started fully consolidating USL results in July 2014. We are, therefore, very clear that there was no change of control in February 2016 [when the Mallya deal was concluded].”

Brewery news India: United Breweries board asks Vijay Mallya to step down as non-executive chairman
The board of United Breweries on February 8 asked Vijay Mallya to step down as its non-executive chairman following a Sebi order which barred the embattled businessman from holding directorship in any listed company, the Deccan Herald reported.

The decision was taken at the board's meeting in Mumbai on February 8.

In an e-mail to Mallya, United Breweries' Company Secretary Govind Iyengar said that in the absence of any stay or vacation of the Sebi order, the "board is compelled to request you to step down from the board" with immediate effect.

A copy of the e-mail along with extracts of the minutes of the board meeting has been submitted by the company to the BSE.

"The independent directors along with other directors present at the meeting held on February 6, 2017 had resolved not to send the notices and agenda relating to board meetings and/or other privileged information to Vijay Mallya till such time he obtains stay of the Sebi order," the company added.

The board deliberated on the matter and also reviewed the legal opinions obtained in this regard.

Brewery news Ethiopia: Habesha Breweries mulling launch of new zero- and low-alcohol beers
Ethiopia’s Habesha Breweries SC is contemplating to bottle new beverages, EthioSports reported on February 5.

Getaneh Asfaw, marketing manager, told The Reporter that his company is planning to produce sparkling and still water, non-alcoholic beer and a new beer with low alcohol content.

Habesha Beer, which joined the local market in July 2015, has become a popular beer brand. The beer has five percent alcohol content. The company is now planning to introduce beer with lower alcohol content.

“We will decide based on the market study. It is too early to talk about the details,” Getaneh said.

Asked if Habesha will build a new plant that will bottle the planned products or use the existing facility Getaneh said it will be decided based on the study. The study will be completed within three months. The company hopes to introduce the new products in 2018.

Habesha Breweries was established by 8,000 Ethiopian shareholders including traditional associations like equbs, idirs and Ethiopians in the diaspora who contributed 4,000 birr to 5 million birr. Habesha built its 650,000 hectolitres beer manufacturing plant in Debre Birhan city, 120 km north of Addis Ababa. The second largest brewery in the Netherlands, Bavaria, holds 40 percent stake in Habesha Breweries.

Brewery news Trinidad and Tobago: Recent beer tax hikes has no effect on consumption
Recent tax hikes on beer and cigarettes in Trinidad and Tobago have not affected consumption of these two items and have actually contributed to increased Government revenue from the two areas, Finance Minister Colm Imbert was quoted as saying by the Trinidad Guardian on February 7.

But there’s been no increased revenue following tax hikes on rum/spirits, he added during a Senate contribution.

Imbert spoke about the situation, in dealing with orders to finalise tax hikes on beer, cigarettes and rum/spirits. These had been announced last year in the 2017 Budget. The orders apply to customs import/excise duties on the products including from the Caricom area.

Among reasons was to curb excessive consumption of cigarettes particularly. Imbert noted it cost $500,000 to treat one lung cancer case.

Imbert said despite the increased taxes on beer, there was no apparent decrease in consumption, but rather, increased revenue from this area.

He said revenue from this item stood at $47 million over October/ December 2015, but rose to $55 million over the same period in 2016 following the tax hike.
