THE TRUE BITTERNESS OF HUMULINONES

ABSTRACT
A couple of recent studies revealed that the increased bitterness in dry hopped beers is greatly influenced by the formation of humulinones (oxidized hop alpha-acids). Using previously established synthesis methods and preparative liquid chromatography, high-purity extracts of humulinones and hulupones were prepared for sensory testing. A trained flavour descriptive panel found humulinones to be 66% as bitter as iso-alpha-acids, and hulupones to be 84% as bitter as iso-alpha-acids. This study also found that the bitterness intensity of humulinones and hulupones are substantially higher than previous estimates of 35% and 50%, respectively. Whereas iso-alpha-acids were confirmed to be more bitter than oxidized alpha-acids and beta-acids, both hulupones and humulinones were bitter enough to potentially have a significant impact in beer, especially in dry hopped beers. The threshold value of humulinones was found to be around 8 mg/L in unhopped beer.

Brewery news Canada, ON: Hogtown Brewers sold to East End Brewing currently under construction in Toronto
Ontario Beverage Network reports that contract brewing operation Hogtown Brewers has been sold to a new brewery that is currently under construction in Toronto.

East End Brewing has purchased the Hogtown Ale brand and other company assets, and has also announced that it is hiring a “Managing Partner/Brewer/Advocate/Alchemist” to oversee the brand going forward.

Hogtown Brewers was launched in early 2012, with the Kölsch-style Hogtown Ale as its flagship brand at the LCBO and select licencees.

East End Brewing is being established at 262 Carlaw Avenue an Leslieville, a Toronto neighbourhood that is already home to Left Field Brewery, Radical Road Brewing, the recently opened Rorschach Brewing, and the soon to open Godspeed Brewery.


Brewery news USA, KS: Augustino Brewing Company finds future home in Wichita
Augustino Brewing Company has found its future home.

Longtime home brewer Augustine Iacopelli, who announced in in February 2016 that he planned to open his own brewery on the west side, has since then added partners and chosen a space, the Wichita Eagle reported on April 27.

The brewery will open in the former Kababs and Panna Bread spaces at 756 N. Tyler Road, Wichita.

The brewery, which will also include a restaurant and a coffee shop, should be open by the end of the year, Iacopelli said.

“We’re hoping sometime during the fall,” he said. “Thought we realize it’s a possibility that we’re going to hit snags we can’t see right now.”

Since announcing his plan, Iacopelli and his wife, Bianca, have taken on Geoff and Kara Finn as partners. Geoff is another longtime home brewer who has brewed specialty beers for Walnut River Brewing in El Dorado.

Geoff always wanted to open a brewery too, he said, and almost did a few years back. But the deal fell through at the last minute. He met Iacopelli in a local home brewer’s group and the two decided to go it together.

Brewery news USA, CT: Skygazer Brewing Co. signs lease for Southington location
Skygazer Brewing Co. plans to open on Triano Drive, Southington, making it the town’s third brewery, the Meriden Record-Journal reported on April 28.

Owners Taylor Pilewski of Wallingford and Erik Tynik of Bristol signed a lease on April 27 with Andrew and John Meade, the father-son owners of industrial land at 36 Triano Drive.

Andrew Meade said he’s been approved by the town to build a 6,000 square foot building. Once he receives a building permit, he’ll start construction and hopes to finish it late summer.

Andrew Meade said his son, owner of John Meade Lawn Maintenance, is looking to expand and will use a portion of building. The brewer will use another portion and there’s room for other tenants.

“We’ve got other people interested so I imagine it will fill up before long,” Andrew Meade said.

Rather than refit an existing building as the town’s two existing breweries have done, a new building will be constructed with the plumbing and necessary infrastructure for a brewery. The opportunity to move into a new, purpose-built space attracted the brewery owners.

“It’ll be a huge advantage for us, plus the fact that we can work with the builder up front,” Pilewski said.

Brewery news USA, MI: Ludington Bay Brewing set to open in mid-May
Ludington Bay Brewing will be worth the wait, MLive.com reported on April 28.

The downtown Ludington brewery will open during mid-May, after previously planning a March opening. The open date slid back due to construction and licensing delays, said Ted Gedra, owner.

"If you came into today, you'd think we could open pretty quick," he said. "We want everything to be right when we open because you only get one chance at that."

Training of kitchen and wait staff is underway. In all, there will be about 40-45 employees at the brewery this summer.

Twenty-four taps will be positioned behind the 16-stool bar in the main dining area, which will seat about 82.

About 12 taps will serve beer at the opening.

"We've got a range of beer for craft lovers to come in and try," said Gedra, who acquired a taste for craft beer while traveling the country and world for Wolverine Worldwide. "We have a very nice selection right now that's getting broader."

Gedra retired for an executive position at Wolverine Worldwide during July 2016.

Brewery news Canada, NS: Chill St. Fresh Beer & Cider Market to be launched as Canada’s first brewery in a grocery store
Canada’s first brewery to be located inside a grocery store is getting set to open in in the small community of Elmdale, Nova Scotia.

According to Maritime Beer Report, Chill St. Fresh Beer & Cider Market is being established by Barry MacLeod inside the Sobey’s at the Elmsdale Shopping Centre, a location that MacLeod chose in order to “bring the brewery to the traffic as opposed to trying to bring traffic to a brewery”.

MacLeod tends to produce a core line-up that includes Blueberry Wheat, Pilsner, Pale Ale, Honey Brown Ale, White IPA, and Apple Cider on a SmartBrew system with four 10-barrel tanks. Several seasonals will also be offered, along with beer education, pairing tips, and merchandise.

Chill St. is expected to open in June.


Brewery news USA, AL: Foley’s first microbrewery launches crowdfunding campaign
Low Brim Brewing will soon be the first microbrewery in Foley, and the company needs your help. Low Brim is the only equity crowdfunding campaign in Baldwin County; those that give as little as $100, can receive an expected 17.4 percent annual return on investment after the first year, the Gulf Coast News Today reported on April 27.

So, how does this all work and what does it mean?

In 2012, President Obama signed into law the Jobs Act, which is a law intended to encourage funding of U.S. small businesses by easing various securities regulations. The act requires the Securities and Exchange Commission to adopt rules to implement a new exemption that will allow for equity crowdfunding, which means that those who invest will then hold shares or securities of the proposing business. The initial time frame was for 270 days for review. Issuers that generate any offers or sales of securities purporting to rely on the crowdfunding exemption would be unlawful under the federal securities laws until such date as the regulatory groups have deemed it appropriate. Brewery news USA, AZ: State 48 Brewery expanding to downtown Phoenix
State 48 Brewery is expanding and bringing its beer to downtown Phoenix, abc15.com reported.

In a Facebook post on April 27, the brewery said, "The City of Surprise has been so supportive of us that we need more brewing capacity."

The brewery will occupy nearly 10,000-square-feet of space within the historic Welnic Building near 4th Avenue and Van Buren Street. They will be the first tenants of the recently-revitalized building, said Mario Rana, owner of State 48 Brewery.

"It's going to be a perfect spot for the next brewery," said Rana. "We want everything to feel like going out to the brewery is a whole experience. It's not just trying out different flights; we want it to be a good experience."

Rana said the building itself has a lot of special character, from the exposed wooden trusses, to the windows and flooring.

"It's going to be perfect for us," he said.

The brewery will have large open garage doors that connect the outdoor patio to the indoor dining room and brewery, as well as a mezzanine and a catwalk that overlooks the brewery.

Rana hopes to open in early 2018.

Brewery news USA, NY: Labatt USA to open pilot brewery in Buffalo
Labatt USA is strengthening its ties to the city of Buffalo, Brewbound reported on April 27.

Rochester, N.Y.-based North American Breweries (NAB), which owns the exclusive import rights to the Labatt brand in the United States, announced on April 26 plans to open a Labatt-branded pilot brewery and restaurant in partnership with Pegula Sports and Entertainment (PSE) — the parent company of the NFL’s Bills and the NHL’s Sabres.

PSE purchased a 79,030 sq. ft., 98-year-old former manufacturing plant in the city’s Cobblestone District for $7 million in February. Plans call for the project, dubbed 79 Perry, to feature mixed-use retail, commercial and residential space.

Labatt USA will become the anchor tenant, and relocate its headquarters and 56 employees to the new space in July, 2018. The pilot brewery and restaurant, known as the John Labatt Project, is slated to open on the building’s ground floor a couple of months later.

The estimated cost of the project as well as the size of the pilot brewing system are still unknown, a Labatt USA official told Brewbound.

“It’s early in the process,” said Glen Tibbits, the general manager of Labatt USA. “It’s going to take us some time to figure that side of it out.”

Barley news France: Barley condition declines sharply in farm office’s weekly report
The condition of French wheat and barley crops declined sharply last week, marking a third successive weekly fall, farm office FranceAgriMer said, suggesting a dry spell was affecting crops in the European Union's biggest cereal producer.

Warm, dry weather in the past month has raised concern about low moisture levels in France after a very dry winter.

In its weekly crop report on April 28, FranceAgriMer estimated that 78 percent of soft wheat crops were in good or excellent condition as of April 24, compared with 85 a week earlier.

Winter barley was rated 71 percent good or excellent, down from 78 percent a week earlier, while spring barley was rated 80 percent good/excellent against 85 percent the prior week.

Belarus has reduced beer imports five times in the past two years, Chairman of Belgospishcheprom Concern Alexander Zabello said in an interview to Respublika newspaper, BelTA has learned.

“I cannot say that the domestic brewing industry makes no headway. Yes, the sales are shrinking a bit, but we do not have a 10-15% slump as the neighboring countries are registering. Beer exports have reduced five times in the past two years. Dozens of beer varieties that were imported before are now produced in Belarus. The domestic breweries have reached a surplus in foreign trade, selling more beer than buying from abroad,” Alexander Zabello said.

Last year all the Belarusian breweries posted net profit, including even those who operated in the red for a long time: Brestskoye Pivo, Krinitsa, Heineken. “The concern has developed good business-like relations with the market participants. An agreement on cooperation was signed between Belgospishcheprom and the brewing companies. This document does not envisage any strict liabilities. Brewery news India: United Breweries betting on its new Kingfisher Storm to wean away consumers from Carlsberg
India’s largest beermaker United Breweries (UB) is betting on its latest strong brew, Kingfisher Storm, to wean away customers from rival Carlsberg that has steadily gained 15% market share over the past five years, the Economic Times reported on April 27.

Storm will directly compete with Carlsberg Elephant, Tuborg Strong, and the recently introduced Tuborg Classic. The product will be rolled out across India in the next 18 months. This is the most aggressive launch by UB in over eight years, said acompany official, requesting anonymity.

“There is a movement toward a smoother drinking experience — typically falling between 5% and 7% alcohol content," he said.

To ride out a prolonged slump in the beer industry that fell 2% in FY17, UB is banking on youngsters to spend more on a strong beer with a smooth taste.

According to experts, India’s beer market has traditionally been driven by strong beer, which accounts for about 80% of the country’s overall sales volume of 300 million cases. Persha Pryvatna Brovarnia, an independent brewery based in Lviv, Ukraine, has received a license form Heineken Concern to produce Czech beer Krušovice and will start its production in early June, Interfax-Ukraine reported on April 27.

"This year we received a license from Heineken Concern to produce Krušovice and in a month will start producing this famous Czech beer," the co-owner of Persha Pryvatna Brovarnia Andriy Matsola said in an interview with Interfax-Ukraine.

He said that usually it takes three or five years to receive the beer production license from Heineken. Persha Pryvatna Brovarnia started negotiations with Heineken in 2012 and at the end of 2015 and early 2016 the brewery launched Heineken beer production in Ukraine under the license.

"The vice president of Heineken personally flew [to Ukraine] to inspect. The whole structure was inspected: from the head office, retail staff, atmosphere and policy of the company to tests of production facilities. In 2015, Persha Pryvatna Brovarnia was the fourth company in the world that received this license from Heineken, not being in ownership of the concern," Matsola said.

He said that Heineken does not plant to enter the Ukrainian market.
