MORE SPECIFICS WHY HOPS ARE GOOD TO INCREASE FLAVOUR STABILITY

ABSTRACT
German brewing scientists have already been looking into this for a couple of years. The ability of hop constituents to suppress the formation of 3-methylbutanal and 2-furfural in wort-like model systems containing maltose, leucine, and Fe2+ was investigated. The functional principle by which hop alpha-acids and beta-acids diminish the formation of 3-methylbutanal and 2-furfural may be ascribed to their unique molecular structure and chemical properties. This allows them to perturb oxidative or nonoxidative formation of aldehydes. Findings from this study indicate that antioxidative potential may be explained through, but not necessarily limited to, two mechanisms. First, because of the hop alpha-acids' complexation functionality towards transition metal ions such as iron and copper, they can block or attenuate oxidative pathways of the Maillard reaction and suppress the generation of reactive oxygen species, thereby preventing oxidative degradation of leucine to 3-methylbutanal. Second, once hydroxyl radicals are formed, they can act directly as antioxidants and suppressing free radical reactions with leucine again, which can yield its corresponding aldehyde. Other aldehydes may show the same behavior and response to the presence to hop alpha-acids.

Brewery news USA, WA: Seattle’s best beer minds to launch Unified Brewing in 2018
Unified Brewing, a collaborative effort from some of Seattle’s best beer minds, is setting up shop in the former home of Big Al Brewing in White Center, with an opening scheduled for 2018, Eater Seattle reported on June 19.

The new brewery combines the talents of Kevin Watson, whose resume includes a run as lead innovation brewer at Elysian Brewing as well as time at Maine’s highly regarded Allagash Brewing Company; Mike Baker, who founded South Park’s Baron Brewing Company; Dean Hudgins and Ian Roberts, owners of the Pine Box and founders of Seattle Beer Week; and brewery partner Larry Solomon.

The plan is to produce a range of beer styles, with a strong barrel-aging component. Unified will usher in the latest boozy chapter at 9832 14th Ave SW, home to Pacific Rim Brewing before Big Al, which ended its eight-year run in January. The Unified team say they searched for two years before scoring this building.


Brewery news USA, KY & IN: Tin Man Brewing bought by Kentuckiana-based venture capital and real estate firm
A Kentuckiana-based venture capital and real estate firm has acquired Tin Man Brewing Company in Evansville, Tristatehomepage.com reported on June 16.

Neace Ventures will acquire Tin Man, a firm that already owns Old 502 Winery, Falls City Brewing Company, Over the Nine, and Brownies “The Shed” Bar and Grille.

“Neace Ventures is excited to announce the acquisition of Tin Man Brewing Company,” said Neace Ventures President Brad Estes. “The synergies that this fine company brings to our food and beverage portfolio are countless. We proudly welcome the Davidson family into the Neace Ventures family.”

Tin Man ceased its Tasting Room operations in March but continued brewery production for its distribution network while seeking new ownership.

“We’re very excited about this partnership,” said Tin Man Brewing President Nick Davidson. “We have always been a family business, and now we’re becoming a part of a bigger family.”

“Falls City couldn’t be happier to welcome a new sister company. Tin Man’s brand reputation speaks for itself and its people are a class act,” said Falls City President Shane Uttich. “Our entire team is excited.”


Brewery news USA, MI: Urbanrest Brewing Company to unveil its own operation on June 30
For years, Urbanrest Brewing Company co-owner and head brewer Zach Typinski honed his skills, developed his palate, and built a recipe repertoire in Michigan’s homebrewing circles, which essentially functions as the brewing industry's minor leagues, the Detroit Metro Times reported on June 16.

But over the last three years, it became evident that Typinksi is ready to make the leap and open his own operation. He regularly entered and placed in beer competitions, most notably earning a silver medal for his saison in the American Homebrewer’s Association 2016 National Homebrew Competition — the nation’s largest and most prestigious event of its kind.

In 2015, Typinksi won the Rochester Mills Beer Co. competition with his imperial IPA, which the company then kegged and distributed throughout the state. This year, while working on Urbanrest, he simultaneously learned to produce on a big system at Warren’s Kuhnhenn Brewing, which is considered one of the state’s top microbreweries.

Aside from that, Typinski previously worked as beer distributor and is one the state’s few brewers who is also a cicerone — the beer industry’s equivalent to a sommelier.

Brewery news USA, MT: Snow Hop Brewery slated to open in the Helena Valley at the end of this year
A new brewery is slated to open in the Helena Valley at the end of 2017, making it the fourth craft brewery in the Helena area, the Helena Independent Record reported on June 18.

Snow Hop Brewery is owned by Steve and Barbie Edwards, who developed an affinity for beer after spending their honeymoon in Germany and Austria almost 20 years ago.

“We drank a lot of beer,” Steve Edwards said.

When they returned, they bought a hefeweizen home brewing kit. It wasn’t up to German standards, but their product improved over time. Eventually, the Edwardses decided to take the next step.

With all three existing breweries full of people more often than not, the couple decided Helena would be a good place to set up shop and finally brew the hefeweizen they’d been missing.

During a ribbon-cutting ceremony for the Lewis and Clark Brewing expansion, Gov. Steve Bullock said there are 68 breweries in the state providing 700 jobs and $100 million in economic output.

After looking for a place to renovate or build a brewery for several years, the Edwardses found land to purchase in the Helena Valley off McHugh Drive.

Brewery news USA, NY: Young Lion Brewing scheduled to launch in Canandaigua on June 19
During the early days of the Erie Canal, Rochester became a boomtown. It was known as the "Young Lion of the West."

The Rochester region, like much of the country, is overflowing with craft beer.

A new Canandaigua brewery, the second largest to open in this area, nods to the past, appreciates the present, and keeps a keen eye on the future. Young Lion Brewing, 24 Lakeshore Dr., opens in the new Pinnacle North development on the north shore of Canandaigua Lake on June 29, the Rochester Democrat and Chronicle reported on June 19.

"We ended up here because of our shared passion," said Alicia Wolk, one of five Young Lion co-owners. "Rochester was known as a boomtown. It just felt so fitting for us. It was strong, it was impactful, we all identified with the name. It was a natural fit."

Young Lion, a multi-million dollar investment, is the shared vision of Jen Newman (who is overseeing the project as CEO), Wolk (responsible for branding and taproom design), Robyn, Kevin, and Todd Morgan. Wolk's husband Tyler is a partner with Joshua Miles at some of Rochester's best restaurants, including Branca (now with locations in Bushnell's Basin and Midtown) and The Revelry.

Brewery news USA, AZ: Copper Brothel Brewery to break ground on June 23
The Jesser family has toyed with craft brewing for a few years now.

Nothing big, just dabbling with a pretty fancy home-brewing set-up.

But when Robert and Cheryl Jesser came across Robert's father's bucket list after he passed away in 2015, they decided to cross off one of his biggest dreams: Open a business. And what better idea in the middle of Southern Arizona's wine country than a brewery, tapping into their passion for craft brewing, the Arizona Daily Star reported on June 19.

The Colorado transplants, along with their daughter Samantha, are breaking ground Friday, June 23, for Copper Brothel Brewery, a 5,000-square-foot restaurant/brewery near the Santa Cruz County Fairgrounds at 3112 Highway 83, just south of the crossroads of Highways 82 and 83.

Construction of the steel building should take about two months and they hope to open for business later this year, Cheryl Jesser said.

Daughter Samantha will be the brewmaster, crafting a half-dozen or so beers at a time. The initial lineup could include a blonde, IPA, pale ale, German-style Kölsch, oatmeal stout and a vanilla porter, which they test-ran over the holidays. Brewery news USA, WI: Modicum Brewing set to open its new taproom on July 7
Modicum Brewing, the Chippewa Valley’s newest brewery is set to open their new taproom to the public on July 7th at their Altoona location at 3732 Spooner Ave., Volume One reported on June 19.

The brewery, founded by former Brewing Projekt brewmaster Eric Rykal and Environmental Engineer Mike Blodgett, has been under construction for the last four months. The grand opening party will commence at 2 PM on the 7th of July and feature Modicum beers available on tap and limited availability 750ml bottles for take home.

The 3,500 square foot taproom also features an event space that is available for booking parties, meetings and gatherings of all types. The Modicum brewery is located right in the middle of the taproom and will allow for easy viewing of the brewing process as well as brewery tours and beer classes.


Brewery news USA, FL: Ology Brewing Co. to officially open its doors on June 23
Ology Brewing Co. — the new beer kid in Midtown — opens Friday, June 23, Tallahassee.com reported.

It's easy to spot with its slate gray facade and garage doors that reveal a quaint, hip interior. The five-barrel brewing company is next door to the Diva's and Devil's boutique on Sixth and Monroe streets.

Ology had a soft opening last weekend, making it the latest local brewing company to launch in Tallahassee. It's owned by Roger Hawkes, Brian Clark, Paul Woodward, Maxwell Arndt and Nick Walker.

Walker, 29, has been crafting beer out of his home for the past eight years. The name of the business is a nod to his family's research roots. His dad, Jim Walker, studied olfaction, the sense of smell, and his grandfather, Lloyd Beidler, did research on the sense of taste and taught at Florida State University.

Walker said Ology will experiment with different beers and flavors, all in the name of beer.

"It’s been a dream of mine for the past four years to make this happen,” said Walker, regarding the opening. "It’s incredible. I never actually thought it was going to happen."


Brewery news USA, NC: BearWaters Brewing Company relocates to Canton
The Town of Canton is celebrating the opening of BearWaters Brewing Company, WLOS reported on June 16.

After four successful years in Waynesville, the company relocated to Paper Town to be part of downtown Canton's revitalization.

The new place is located right along the Pigeon River. The co-owners say Bearwaters is unique and has a lot to offer, including craft beer expertise from all the employees.

"You can ... float down on the river, get out here at the brewery with the family, have lunch, have something to drink," Kevin Sandefur said.

"They (employees) can tell you a little bit more about the body, about the weight, and we think that's going to help you as a patron," Art O'Neil said.

The building where BearWaters Brewing Company is located sold Jeeps after World War II. Plans for the business include a dock overlooking the Pigeon River.

The Court of Tax Appeals’ (CTA) Second Division has ordered the Bureau of Internal Revenue (BIR) to return P761,063,826.70 in excise tax overpaid by beer maker San Miguel Brewery Inc. (SMB) in 2012, The Manila Times reported on June 19.

In a 33-page decision promulgated June 9, the tax court granted the petition for review filed by the brewery on December 19, 2013 seeking a tax credit certificate, if not a refund.

“In sum, petitioner has sufficiently proven that it had overpaid the excise taxes due on its removals of ‘San Mig Light’ for the period of January 1, 2012 to December 31, 2012 in the amount of P761,063,826.70,” the CTA noted.

The CTA en banc has held in several rulings that “San Mig Light” was a new brand and not a variant, thus, subject to a P15.49 per liter excise tax rate instead of P20.57 per liter.

“Consequently, there was an erroneous, excessive and/or illegal assessment and collection in the amount of P5.08 per litre removal of petitioner’s ‘San Mig Light,’” the decision said.

Brewery news Japan: Nonalcoholic beers conquering the market
With their nonalcoholic beers gaining popularity and sales of the real stuff declining, Japan's Kirin Brewery and Suntory Beer are switching gears, the Nikkei Asian Review reported on June 18.

Kirin plans to boost monthly production of its Zeroichi, which is selling beyond the company's expectations, to three times the initial target, while Suntory is increasing the June-July production of its All-Free by about 10% from a year ago. This will lift Suntory's full 2017 production target by 4%, to 7.2 million cases [one case equals 20 633ml bottles].

The industry says more Japanese are turning to these and similar products so they can feel as though they are out drinking while really at work or doing daytime chores.

Kirin sold 630,000 cases of Zeroichi - nearly 50% of its initial annual target - in just two months.

The brewery's president, Takayuki Fuse, said Zeroichi's unexpectedly strong sales are partly attributable to Japan's changing lifestyles.

"The [government's] work reform drive has expanded the breadth of lifestyles," Fuse said. "There are more people who finish work for the day and then still have to do child-rearing and household chores, and these people want something refreshing that does not get them drunk."

Heineken Brewery Share Company has introduced a new beer to Ethiopia’s market. The new beer is dubbed Walia Radler and has 2.5 percent alcohol content, 2merkato reported on June 19.

The launch came a week after BGI Ethiopia disclosed it intends to introduce Beaufort beer.

Walia’s new brand is a blend of lemon and regular beer giving it distinctive taste from other beers in the market. It is also the second brand Heineken introduced to the Ethiopian market this fiscal year, the first one being Heineken Beer.

The history of radler beer dates back to the early years of 20th century. It is believed to be first introduced in Germany.

“This fusion is made for the consumer who would like to experience the exploding taste of lemon in beer,” the manufacturers explained.

It was after acquiring Harar and Bedele breweries that Heineken established itself in the Ethiopian market. Currently there are 7 breweries operating in Ethiopia with an annual production capacity of 12 million hectolitres.

Back in 2013 the per capita beer consumption in Ethiopia stood at 5 litres while latest reports show it now has reached 10 litres.

Brewery news India: Study finds 47 percent Indian millennials prefer beer over any other liquor
Individuals living in Gurugram and Bengaluru consume the highest amount of beer with people of Mumbai preferring to get high on hard drinks, according to a survey.

Crownit, a consumer group marketing and data platform, conducted a survey across pubs in Gurugram, Delhi, Mumbai and Bengaluru to understand drinking patterns and alcohol preferences of young consumers and found that 47 percent Indian millennials prefer beer over any other liquor.

The survey that involved one lakh users, took place between March and April this year.

While 57 percent millennials in Bengaluru and Gurugram consume beer, the highest consumption of hard drinks is by individuals in Mumbai at 33 percent, closely followed by Delhi at 32 percent.

Wine is still catching up in comparison, with the average consumption in these cities ranging from 1-2 percent.

The data collected is based on the consumption of mainly four categories of alcoholic beverages - beer, hard drinks, cocktails and wine.

The study also highlights that the consumption of alcohol is highest among millennials on the weekends, most commonly between 8 p.m and 2 a.m.

Brewery news Uganda: Government changes the way of calculating beer tax
In order for Uganda Revenue Authority (URA) to collect the required Shs15 trillion tax revenue, Parliament approved 72 amendments on income tax, excise duty, Value Added Tax (VAT) and EAC Common External Tariff, AllAfrica.com reported on June 21.

The tax measures, according to Ms Doris Akol, the URA Commissioner General, will enable the government to collect Shs400 bln during the financial year 2017/18. URA's collection is up from the Shs13.1 trillion in 2016/17.

Despite the contestations from the beer industry players, the government has gone on to change the way it calculates the tax on beer. In the past, the government has been imposing a percentage rate depending on the local material content (excluding water) used in the manufacturing process. Any raw material used that is about 75 per cent of the ingredients attracted an excise duty rate of 30 per cent; whereas other malted beer (less than 25 per cent of locally sourced ingredients) attracted a 60 per cent excise duty rate. However, the amendment to the Excise Duty Act is for the government to charge 60 per cent or Shs1,860 per litre, whichever is higher on malted beer.
