WHAT IS THE ROLE OF YEAST FOR DRY HOP AROMAS

ABSTRACT
This is a complex question but worth being explored. In a study, German researchers tested two different yeast strains (German ale yeast vs US ale yeast) using an identical hopping regime for late and dry hopping (during primary fermentation) with varieties US Cascade and German Hallertau Mittelfrueh. Comprehensive sensory evaluation and aroma analytics showed that the sum of terpenols was independent from the sensory intensity for floral and citrus. The sum of esters correlated well with the intensity of sweet fruit flavours, and higher amounts of 4MMP correlated well with red berry flavor intensity. The final analysis found that the yeast strain can have a significant influence on dry hop aroma.

Brewery news USA: Beer remains the preferred alcoholic beverage in Gallup’s trend
Americans who drink alcohol continue to say they most often choose beer (40%) over wine (30%) and liquor (26%). Beer has typically been the preferred alcoholic beverage in Gallup's trend, Gallup reported on July 19.

The latest results are from a July 5-9 update of Gallup's annual Consumption Habits poll. Gallup has found that beer is most popular among men; this year, 62% of male drinkers say they prefer beer, compared with 19% of female drinkers. Less-educated and middle-income Americans also tend to choose beer.

For the past two decades, at least three in 10 drinkers have said they prefer wine, peaking at 39% in 2005. Wine was slightly less popular in the early to mid-1990s. Women are significantly more likely than men to prefer wine, at 50% vs. 11%, respectively. This beverage is also preferred more among college-educated adults.

The 26% of drinkers who name liquor as their beverage of choice is the highest in Gallup's 25-year trend, but similar to the 24% recorded in 2004. The percentage naming liquor has typically been closer to 20%. Future measurements will help determine whether the current figure marks the beginning of a trend toward an increased preference for liquor.

Brewery news USA, CA: Coronado Brewing buying Monkey Paw Brewing to strengthen its position in the industry
Moving to strengthen its position in the turbulent craft beer industry, Coronado Brewing is buying Monkey Paw Brewing, The San Diego Union-Tribune reported on July 18.

“They do a lot of different, unique beers that we don’t usually do,” Coronado chief operating officer Brandon Richards said of Monkey Paw, a brewpub in San Diego’s East Village. “And I think their brand reaches younger, millennial drinkers.”

No price was revealed for the sale, announced on July 18. Scot Blair will continue to supervise brewing operations at Monkey Paw, which he founded and owns. The deal is expected to close Sept. 1.

Last year, Monkey Paw made 650 barrels of beer, while Coronado made 39,000 barrels. Both are dwarfed by Stone, the county’s largest independent brewery, which in 2016 sold 345,000 barrels of beer. (Each barrel is 31 gallons.) But Coronado’s robust marketing and distribution networks, plus its brewing facilities, are expected to speed the growth of its smaller acquisition.

“I anticipate Monkey Paw will be able to make up to 3,000 or 4,000 barrels in a year,” Richard said. “We’ll be able to quadruple their business.”

Brewery news USA, NY: Slate Town Brewing Co. under construction in Granville
For the last several years, Susan Knapp and Glenn Wetherell have had their eyes on a micro-brewery, and in recent months, things have finally started to come together, the Glens Falls Post-Star reported on July 18.

"It's something I have wanted to do on and off over the last few years," said Knapp, who previously was involved with Slyboro Cider House, where Wetherell is the head brewer. "Glenn tried it, but it was too hard to do."

Things got easier when Argyle Brewing Co. put out the word that its old brewing system was available because of expansion, and Knapp also found a building for the brewery at 31 Main St. in downtown Granville.

"Glenn was interested, and I said, 'Let's do the thing,' and it just started happening," Knapp said. "Here we are, a year closer in a lot of ways."

The plan got a real boost when the Argyle brewers offered to sell their brewing system because they were getting new equipment.

"They told us the equipment was available, and that was a good surprise," Knapp said.

Brewery news USA, CO: Timnath Beerwerks aiming at November opening
Timnath will be joining the craft beer party this fall, The Coloradoan reported on July 14.

Craig Miller, a resident of the growing town just east of Fort Collins, is planning to open Timnath Beerwerks in November out of the Colorado Feed & Grain Building at 4138 Main St. It will be the 135-year-old town's first brewery.

"To have the first brewery in any town in Northern Colorado is kind of amazing," Miller said. "There's a lot of thirsty people on this side of the highway."

Miller, who grew up near Atlanta, moved to Fort Collins in 2001. He began homebrewing and fell in love with the town's brewery culture.

He moved to Timnath with his wife and two daughters in 2015. Miller has been planning the brewery with business partner Pete Meyer ever since.

"With the way this area is growing, we felt Timnath was pretty under-served," said Meyer, a developer for Brinkman Partners.

While Miller will oversee brewery operations, Matt Smith, accomplished area homebrewer and Liquid Poet Society homebrew club board member, will serve as head brewer.

Timnath Beerwerks doesn't plan to distribute its beer outside of the taproom. The brewery will use a new seven-barrel brewhouse.

Brewery news USA, FL: Hop Life Brewing Company now pouring pints in St. Lucie
Hop Life Brewing Company, located just north of First Data Field in in St. Lucie West, is now pouring pints, TCPalm reported on July 14.

Before opening Hop Life, Rob Tearle and Jim Kelly worked as firefighters in St. Lucie County for 28 years and have been brewing together for six years.

The third managing partner, Jeff Blitman, although not a firefighter, also was instrumental in seeing the project through to completion.

Tearle and Kelly began their journey as home brewers. Their love of the craft, along with the ability to put together unique and flavorful taste profiles, helped them gain popularity among friends and family.

They began brewing small batches and participated in local brew festivals. When Kelly retired from the St. Lucie County Fire District, he and Tearle partnered to make their dream a reality.

Tearle, who still is employed with the St. Lucie County Fire Department, has been working double duty for months, and Kelly has been on site daily.

“It’s been a true labor of love,” Kelly said. “We have so much support from the community and our fellow firefighters. We are looking forward to spending time with old friends, meeting new ones and creating great memories.”

The craft beer industry in Ohio has increased by $2 billion over the past two years, but a Springfield brewery owner says the market might be becoming too crowded to continue the massive growth, Springfield News Sun reported on July 15.

Springfield-based Mother Stewart’s Brewing Co. mark its one-year anniversary during the weekend of July15-16 in a renovated factory.

The number of breweries in the region, including many in Columbus, Cincinnati and Dayton, have led to great Ohio-produced beers, Mother Stewart’s co-owner and Brewmaster Kevin Loftis said, but he’s not sure if its sustainable.

While off-site sales haven’t been as high as he would’ve hoped in its first year, the brewery has more than made up for it through sales at its taproom, 109 W. North St. He estimates it brewed between 600 and 700 barrels since it opened.

“It helps being the only one here (in Springfield),” Loftis said. “There’s a lot of great beer from Ohio that you can get anywhere you go. In that respect, it’s a good thing, but I don’t know if it’s sustainable or not.”

Brewery news USA, CA: Alta Brewing Company coming to San Diego’s Barrio Logan hub
Bread & Salt, the dynamic art gallery and community hub in Barrio Logan, San Diego, will soon share space with a new brewery, Alta Brewing Company. It seems only fitting, as the 40,000-square-foot site was formerly a bread factory and beer has been referred to as “liquid bread”, Eater San Diego reported on July 14.

Alta Brewing is the first ownership venture for longtime local brewer Brett Stampf, who worked with Stone, Green Flash and Rough Draft and was the original head brewer at La Jolla Brewing Company; through the La Jolla Brewing project, Stampf met local contractor John Bull, who became one of Alta Brewing’s main partners.

The brewery was initially going to take up a larger footprint but Stampf and his partners have decided to focus on retail sales through a tasting room model versus a more resource-heavy production facility. Alta Brewing Company’s 2,000-square-foot space contains as a five barrel brewhouse, with room for more fermenters, and an indoor/outdoor tasting room, decorated with a mural by artist Gloria Muriel, that will hold 60 guests.

Brewery news USA: Many brewers who used to contract-brew their beers now open their own facilities
Chris Lohring surveyed America’s beer scene in 2010 and decided to play the contrarian. Rather than mimic the popular and potent stouts and India pale ales, he would specialize in low-alcohol, high-taste “session beers,” as he called them, the New York Times reported on July 17.

To lenders, though, the business plan held as much appeal as flat beer. So Mr. Lohring kept costs low by using established breweries in Maine, Massachusetts and Connecticut to produce and package crisp pilsners and rustic farmhouse ales under his Notch Brewing label.

Contract brewing, as it is known, was perfect for a start-up like his, requiring no expensive infrastructure. “There’s nothing riskier than building a plant before the brand and the beers have been proven,” said Mr. Lohring, who in 1993 helped found Tremont Brewery in Boston.

Craft brewing’s decade-long global surge has been partly fueled by contract, or “gypsy,” brewers, rootless beer makers whose recipes are realized on other breweries’ equipment. Early trendsetters like Evil Twin Brewing and Mikkeller of Copenhagen and Stillwater Artisanal of Baltimore built themselves into international brands through sales in bars, supermarkets and beer stores.

Brewery news USA, TX: ‘Supernatural’ star Jensen Ackles building Family Business Beer Co. in Texas
One of the stars in the long-running CW show ‘Supernatural,’ Jensen Ackles, likes to keep it in the family: teaming up with his on-screen brother to battle monsters — and with his real-life brother-in-law to open a brewery in the Texas Hill Country. He is one of the partners behind Family Business Beer Co., an upcoming brewery at 19510 Hamilton Pool Rd. in Dripping Springs, austin360 reported on July 14.

The eight-acre Family Business Beer Co., slated to open later this summer, aims to be a destination brewery offering a range of beers, from session IPAs to barrel-aged stouts, as well as live music, outdoor games and food trucks. Built from the ground up, the brick-red brewery facility will have interior windows allowing visitors in the tasting room to watch the brewing process in action.

Brewery news USA: Heineken partners with U.S. Beverage to expand offer of specialty brands to the US market
Beer importer U.S. Beverage will now serve as the U.S. importer of certain specialty brands owned by Heineken N.V. via a new deal the two companies announced July 19, CSPDailyNews,com reported.

"After an extensive review of our U.S. importation organizations and as a result of the evolution of the U.S. market, we are excited to partner with U.S. Beverage in our strategy to build our extensive portfolio of specialty international brands," said Jose Luis Lopez Portillo, export director of Heineken Americas Export.

Initially, U.S. Beverage will bring eight beers from around the world to the United States. They include: Dragon Stout (Jamaica) Krusovice (Czech Republic) Zagorka (Bulgaria) Gosser (Austria) Bintang (Bali, Indonesia) Zajecarsko (Serbia) Cruzcampo (Spain) Alfa (Greece)

Other brands may be added over time and “may include brands from Europe, Latin America, South America and [Southeast] Asia.” The deal does not include brands that are handled by Heineken USA or its affiliate Five Points Trading Co.

Brewery news India: Diageo to withhold payment of remaining $35 mln to Vijay Mallya
British liquor giant Diageo has decided to withhold remaining $35 million due to Vijay Mallya as part of the $75 million (Rs 515 crore) sweetheart deal for his exit from United Spirits Ltd, Times of India reported on July 17 citing a source familiar with the development.

Also, Diageo is looking to recover dues from the fugitive businessman, who is wanted in India with regard to cases of loan default and diversion of funds.

Diageo had last year paid $40 million to Mallya as part of its payout package.

"They have decided not to pay the remaining $35 million as there was violation of terms of agreement by the other side," a source said on the condition of anonymity.

The British liquor giant was supposed to pay the remaining $35 million in two equal amounts.

The source, however, refused to share the conditions of their "terms of agreement", which were violated by Vijay Mallya.

In July 2016, United Spirits disclosed Rs 1,225.3 crore worth fund diversion and improper transactions with entities associated with Mallya including Kingfisher Airlines and his Formula One team.

Brewery news Spain: Mahou San Miguel invests EUR2.8 mln in its Beteta facility last year
Spanish brewing company Mahou San Miguel has announced that it invested €2.8 million in its Beteta facility in 2016, ESM reported on July 17.

The plant, which is located in the Cuenca province, was subject to 31 different projects last year, aimed at modernising the production facility to boost reliability, performance and sustainability.

These projects included remodelling one of its PET packaging lines for Solán de Cabras water, and the installation of a real-time industrial software programme.

Since its opening in 2011, over €17.8 million has been invested in the plant, which has reduced its water consumption by 39%, energy by 26%, and CO2 emissions by 47% in the last six years.

In 2016, its efforts in this area focused on the development of products and packaging to make them more sustainable and reduce their environmental impact.

"Every year we strive to equip our facilities with the latest technology available to help us ensure that the excellent properties and purity of our product arrive intact to our consumers," said José Manuel Paniagua, director of Betata plant.

The Bulgarian unit of Danish brewer Carlsberg said on July 18 its market share in terms of volume grew by 4.6 percentage points year-on-year to 30.3% in the first half of 2017, SeeNews reported.

The company’s sales in terms of volume increased by an annual 18% in the January-June period, Carlsberg Bulgaria said in a statement.

Carlsberg’s leading local brand – Pirinsko - increased its sales volume by an annual 14% during the review period. Pirinsko’s market share rose by 2.3 percentage points to 18.3% in the first half of 2017.

The sales volume of Carlsberg’s other big local brand – Shumensko - rose 31% year-on-year, giving it a market share of 10.1%.

Carlsberg's main competitors on the Bulgarian market are Heineken, through its local unit Zagorka, and Molson Coors which owns the Kamenitsa brewery.

Carlsberg operates two breweries in Bulgaria - in Blagoevgrad and Shumen.

Carlsberg acquired a majority stake in the Shumen brewery, in northeastern Bulgaria in 2002. Later that same year Carlsberg became the majority owner of the brewery in Blagoevgrad, in southwestern Bulgaria. The two breweries were merged into Carlsberg Bulgaria in 2004. Brewery news India: AB InBev banking on Budweiser to extend reach to smaller Indian cities
Anheuser-Busch InBev, the world’s largest brewer, is banking on its popular Budweiser brand of beer to extend its reach to smaller Indian cities in the second phase of expansion, Livemint reported on July 17.

“Budweiser is the brand that helps us lead our overall play here in India,” AB InBev marketing director Kartikeya Sharma said in an interview. “I think I can say Budweiser will continue to be a big bet. India has started to become one of the biggest markets for Budweiser globally.”

AB InBev, which operates as Crown Beers India Ltd, began selling Budweiser in India in 2007, positioning the beer as a premium American pale lager, in contrast to its college-student popular image in the US.

The firm, which started manufacturing Budweiser in India in 2010, reported a revenue of Rs238 crore in FY15, according to data from the Registrar of Companies (RoC). This is a long way from its initial revenue of Rs3.49 lakh in FY08, as per its first reported set of financials according to data from the RoC.

Brewery news Russia & the Democratic Republic of the Congo: Baltika Breweries starts exporting its non-alcoholic beverage brand to the Democratic Republic of the Congo
Russia’s Baltika Breweries (part of the Carlsberg Group) has started exports to the Democratic Republic of the Congo, the company reported on July 17.

"It was decided to launch the market rollout with the capital of the country - Kinshasa - with the population of about 15 million people. The non-alcoholic beverage ‘Baltika 0’ Grain will soon be available in popular retail chains Shoprite, Extra Plus and Kin Mart, in small retail at petrol stations and special wholesale sites. The first 10,000 litre batch has been recently shipped from St. Petersburg port," the report said.

Baltika Breweries has been shipping its products to Africa since 2007. Africa’s share reaches 10% in the company’s sales in terms of volume to non-CIS countries. To date, the largest African export market for Baltika is Tanzania.
