IS THIS CATTY IN MY BEER... OR BLACKCURRANT?

ABSTRACT
The latest issue of the Barth Innovation Newsletter is dedicated to a very specific compound that receives a lot of attention both scientifically, and by brewers: 4MMP (4-mercapto-4- methyl-2-pentanone). Depending on concentration and matrix, 4MMP can exhibit different flavours but is typically described as ribes, black currant, box tree, muscat grape, fuel and catty (cat urine). Black currant was the flavour described by Steinhaus when it was found as one of the most odor active volatiles in Cascade hops in 2006. In this work and the work of Kishimoto it became clear that this compound is present in much higher concentrations in U.S. bred varieties than European varieties. 4MMP is probably a factor in the complicated start of Cascade. Originally desired by big U.S. breweries as an aroma hop to replace European varieties, its "strange" flavour was not at first well appreciated – but that view has certainly changed!

Threshold values published for 4MMP are between 0.0015 and 1.5 ppb. Noticeable concentrations are reported by Steinhaus with 0.0017 ppb and reported transfer rates from hops into beer are reported with about 60% in a late-hopped beer. Gros et al reported on 4MMP in 2012, but using the different name of 4-sulfanyl-4-methylpentan-2-one (4S4MP). Beers latehopped with Tomahawk and Nelson Sauvin (from New Zealand) had concentrations of 0.023 ppb 0.127ppb respectively, much higher than in previous brewing trials. Also mentioned was 4MMP's presence as S-cystein conjugates in hops. The same team showed that 0.2 ppb of 4 MMP can be reached by bottle refermentation.

It is also clear that some fruity thiols such as 3MH and 3MHA (described as rhubarb and grapefruit) are also present in malt, often in conjugated forms. Though the concentration of free 4MMP and its precursors is higher in U.S. hop varieties like Citra, Cascade, Chinook, as well as some New Zealand and Australian varieties, the precursor form of 4MMP was also found to be present in Saaz, Strisselspalt and Mandarina Bavaria!

It has been shown that 4MMP degrades during beer storage. These fruity thiols are know to vanish rather quickly and it will be important to understand the exact mechanism behind this degradation behaviour. Another compound delivering a grapefruit like flavour is 3-mercapto-4-methylpentan-1-ol (3M4MP). Here the amount of the precursors are also much higher than the free form. So to get more of these fruity thiols, brewers might utilize yeasts that have the right enzymes to release these compounds, keeping in mind that the compounds' flavours may change (from pleasant fruity to unpleasant catty/fuel/burnt rubber) at certain concentrations... beer drinkers have very individual perceptions!

Though the term "catty" is used by many U.S. brewers and beer drinkers in a positive way... it is unappealing for Europeans, who are hesitant to use it and prefer an alternative such as black currant. The Barth experts admit that catty is a well established descriptor for many, but in establishing a universal language of hops, perhaps we should look for term that is equally understood and can be interpreted positively by everyone.

Brewery news Canada, ON: Brick Brewing Co. releases Q2 and H1 financial results
Brick Brewing Co. Limited, Ontario’s largest Canadian-owned brewery, on September 8 released financial results for the second quarter ended July 30, 2017. Brick reported EBITDA, excluding one-time costs, of C$3.0 million on net revenue of C$15.9 million.

“Recent months have been characterized by cool, wet weather, which served to push total Ontario beer volume 8% lower vs. prior year. Against that backdrop, our ability to grow our branded volume is noteworthy. Laker achieved 8% volume growth in the quarter, while Waterloo was up 16%. The LandShark® and Margaritaville® family grew 29%, with the Margaritaville® cooler launch in the LCBO very well received by consumers,” noted George Croft, Brick’s President and Chief Executive Officer.

Margins were pressured in the quarter due to increases in fees at The Beer Store, federal excise and Ontario beer tax, as well as product mix, with a shift in mix towards co-pack volumes. “Co-pack is a key part of our business model,” commented Russell Tabata, Brick’s Chief Operating Officer. “Co-pack volume allows us to utilize available capacity to generate incremental returns, as well as serving to diversify the business model.” Co-pack revenue in the quarter grew by 24%, to C$3.2 million.

Brewery news Canada, ON: Brick Brewing completes sale of Formosa Brewery
Brick Brewing Co. Limited, Ontario’s largest Canadian-owned brewery, confirmed on September 7 the completion of the Formosa sale. A definitive agreement for sale of Formosa was announced on September 1st, and Brick confirms that the sale transaction closed on Wednesday, September 6, 2017.

George Croft, President and Chief Executive Officer of Brick commented: ”We congratulate the new owners on the completion of this transaction and wish them great success in their new venture. In addition, we extend our thanks and appreciation to the Formosa employees for their valuable contributions over many years.”

Brick intends to utilize sale proceeds to fund capital projects, pay down debt, and for other general corporate purposes.


Brewery news USA, IL: MyGrain Brewing opens its doors to change Joliet’s beer history
Joliet's beer history underwent a dramatic shift on September 6 thanks to the hard opening of MyGrain Brewing Company inside Joliet's Union Station. MyGrain's addition to downtown Joliet marks the first time in 59 years that a brewery has operated within Joliet, according to local beer historian John Bittermann. He was on hand for the opening celebration, Patch.com reported.

"Joliet was one of the most populous cities in America without a brewery operating in city limits, and today it finally changed," Bittermann told Patch. "It's a great addition to downtown and their attempt to revitalize it. I only see bright things in the future for downtown Joliet and the brewery."

Dozens of people visited MyGrain Brewing around lunch time including employees at the Will County Sheriff's Department and the Joliet Police Department. Unlike many microbreweries, MyGrain employs a chef and offers a full restaurant menu. MyGrain is operated by Vince Turrise and Grzegorz Lesiak. The pair worked out a lease agreement with Joliet to turn their vision of opening a craft beer pub into reality. Building contractors spent the past several months renovating the lower level of Joliet's Union Station.

"I love it. It's fantastic. It's a dream come true," Turrise said Wednesday.

Brewery news USA, MI: MI Local Hops to launch its own brewery
Visitors to Acme Township’s MI Local Hops farm will soon be able to taste as well as tour the fragrant products grown on the 200-acre agricultural property in Williamsburg, the Traverse City Ticker reported on September 7.

MI Local Hops is planning to open a brewery in the former clubhouse on the M-72 farm site, previously home to High Pointe Golf Club. Acme Township trustees on September 5 signed off on the company’s application to the Michigan Liquor Control Commission (MLCC) for a license to produce craft beer. The property is already zoned for brewing, so MI Local Hops can proceed by right with opening a brewery on the premises pending final MLCC and site plan approval.

“There has been tremendous interest by the public to learn about the hops farm,” says Mark Johnson, who co-owns MI Local Hops as part of an investment group with partners Jason Warren, Mark Johnson, and Keith Stelter. “In addition to supplying hops to domestic and international craft breweries, it makes sense for us to brew beer for consumption on site in Williamsburg with local ingredients for people interested in an authentic agricultural experience.”

Brewery news Canada, ON: Badlands Brewing releases its first beers
Ontario Beverage Network reports that a new farm-based brewery in Caledon has released its first beers.

Founded by two friends who aim to “focus on the hoppy and the sour but dabble in anything/everything that strikes our fancy,” Badlands Brewing launched in early August and has three inaugural beers available: Batch 3 Bootleg (6.1% abv), a Norwegian farmhouse ale dry-hopped with Cascade and El Dorado; Not Exactly the Shangri-La (4.2% abv), a session IPA with “big notes of navel orange, citrus and pine”; and Distorted Re-Ale-Ity (5.3% abv), a pale ale described as having “notes of peach, berry, and citrus from a heavy dosing of Citra and Mosaic”.

While the brewery is not yet open to the public, Badlands beers can be found at several local licensed establishments, including The Barley Vine Rail in Orangeville, Bistro Riviere in Erin, and The Copper Kettle in Georgetown.


Brewery news USA: AB InBev to lay off 380 employees of its High End division
Anheuser-Busch InBev has laid off 380 employees from its High End division, which oversees craft brewery acquisitions and super-premium imports.

As first reported by BeerStreetJournal.com on September 7, the layoffs have wiped out at least 90% of The High End’s nationwide sales force but do not include employees who report directly to any of the 10 breweries within its portfolio.

A spokesperson for the company says that The High End still employs thousands and that the cuts affect only 2% of AB InBev’s 18,000 North American workers.

BeerStreetJournal.com owner Reid Ramsay writes, “Per Mike Seabaugh, High End Sales Rep, AB’s explanation centered around brewery acquisitions. ‘Basically, they’ve bought quite a few breweries and with those purchases came a bunch of employees. They don’t have room for us anymore.’”

The report states that in meetings and phone calls held with employees all morning and afternoon, Vice President of Sales for AB InBev North America Alex Medicis explained that the biggest beermaker in the world is “rethinking the business model surrounding the High End, centering more on efficiency.” The High End sales force essentially proved redundant.

Brewery news USA: MillerCoors trying new Two Hats light beer to lure young adult drinkers
Up against tough competition from liquor and craft brews, MillerCoors is trying yet another new brand in hopes of luring young adult drinkers. A new fruity light beer brand called Two Hats will hit the market early next year in 16-ounce cans, AdAge.com reported on September 7.

The brewer, which announced the launch on September 7 on its corporate blog, describes Two Hats as "line of clean-finishing light beers brewed with a hint of natural fruit flavor" that is aimed at 21-to 24-year olds. The first varieties will come in lime and pineapple. The brand contains 4.2% alcohol-by-volume, which matches the content found in most light beers.

While big brewers once could rely on a core lineup of regular light beers - like Miller Lite, Coors Light and Bud Light - to lure younger drinkers, the approach has become less effective in recent years. As a result, they have flooded the market with a variety of new brands with mixed results. Fruit-flavored beers and malt beverages are now commonplace.

Brewery news USA, NY: Irish Mafia Brewing to launch in Bloomfield in late September
The name is a certainly an attention-grabber (or maybe even a bit of a head-scratcher). Mark Mansfield's new craft brewery is full of blarney.

Irish Mafia Brewing opens in late September in Bloomfield, Ontario County. And the first question Mansfield always gets is: Where did that name come from, Rochester Democrat and Chronicle reported on September 6.

"That’s what everyone is asking, and I wish I had a better story," Mansfield said of Irish Mafia Brewing, 2971 Whalen Road (near the intersection of Route 5 & 20), which will become Ontario County's 14th craft brewery.

"My stock answer is, I’m really proud of my Irish heritage and I wanted to bring that out," he added. "I’m not saying I have relatives in the Irish Mafia, but I’m really proud of being Irish. That’s why it says, 'you know who you are' on the label and in my logo."

Mansfield struggled with a name. (He even considered "Suburban Mafia.")

"My whole theory on the planet and life itself, 'everything happens for a reason,' " he said. "I’m a big karma guy."

He wanted the name to be welcoming and he wanted it to be a bit edgy, he said.

Brewery news USA, NY: Fort Orange Brewing on track to serve its first beer in October
Fort Orange Brewing, being developed at 450 N. Pearl St. in Albany’s warehouse district, is on track to serve its first beer in mid- to late October, pending final permits and other last-minute details, the Albany Times Union reported on September 6.

Co-founder Jim Eaton, who is opening Fort Orange Brewing with two homebrew pals, Craig Johnson and John Westcott, says the building, a former warehouse that was vacant when they took it over early this year, will house a seven-barrel brew system and a 2,100-square-foot tasting room. The tasting room, tentatively planned to be open Thursday to Sunday, will serve a rotating roster of four to six of Fort Orange’s beers on draft and likely will offer a tap for Nine Pin Cider, made nearby. All of Fort Orange’s production will go into kegs, though bottles or cans could be added if business booms, Eaton says. The brewery will make several varieties of beer, with a New England-style IPA to be among its specialties, he said.

Brewery news Canada, MB: Stone Angel Brewing now brewing at its own bricks-and-mortar location
A Winnipeg brewery that launched earlier this year with a contract-brewed version of its first beer has announced that production has started as its own bricks-and-mortar location, Canadian Beer News reported on September 6.

Stone Angel Brewing made its debut at the Flatlander’s Beer Festival with Luther’s Folly, a 5.25% abv and 22 IBU “kolsch-ist blond ale” that was brewed at Brazen Hall.

According to Stone Angel’s President and Director of Operations Paul McMullan, the Stone Angel brewhouse at 1875 Pembina Highway received its license last week, and is now producing beer for a mid-September opening of its taproom and patio.

“We plan to open with three or four different beers which we hope will become some of our core pours,” says McMullan. “We’re planning on adding numerous small batches and seasonal beers to our taps shortly.”

Houston's newest brewery, Baileson Brewing, opens on September 8 after its original opening party was scuttled due to Hurricane Harvey recovery efforts over Labor Day weekend, Chron.com reported.

The Rice Village area beer station is located inside a former auto service center. Old gas stations being converted into bars and clubs is a very common theme in the Houston area, after all.

Brewery co-owners Adam Cryer and his wife Sarah Pope are happy to finally swing the doors open to the public. The brewery was first announced in late 2016.

Brewery news Canada, ON: Compass Brewing to open its doors in Timmins in late autumn
Two years after it was first announced as being in the works, Compass Brewing has reported that it has secured a location and is planning to open later this year in Timmins, Ontario, Canadian Beer News said on August 31.

Located at 1300 Riverside Drive, the facility is expected to open in late autumn.

Hitchhiker Brewing Co.’s new brewery and tap room officially opens Saturday, September 9 in the former machine shop and boiler room of the old Fort Pitt Brewing Co. in Sharpsburg, Pittsburg Post-Gazette reported.

“Now the work will begin,” said owner Gary Olden, who last week was elated but exhausted that the new space had passed all of its inspections. He and his crew have been working on the place since February. They have been having soft openings this week to prepare for the launch.

The original location that started in Mt. Lebanon a little more than three years ago remains open, but all the beer is being brewed in Sharpsburg. The gleaming new 15-barrel brewhouse fills only a portion of the three-story power plant, which is still topped with a smokestack.

The spacious tap room is in the adjacent machine shop, which Mr. Olden and his crew have transformed with a 35-foot-long, steel-topped, arch-shaped bar made by Sharpsburg neighbor Gilgamesh Forge. At the pleasantly busy private party at the place on September 7, blacksmith Steve Shepherd joked about how he’ll never again make such a big steel bar, because it was so much work to finish the acid-finished surface just right.

Brewery news UK: Diageo buying back its GBP1.5 bln shares
Diageo PLC said it will commence its GBP1.5 billion share buy-back programme, first detailed in July, on Friday, September 8, Alliance News reported.

The alcohol beverage firm will buy back GBP1.5 billion shares from September 8 in a programme expected to end no later than the end of March 2018, as part of an effort to reduce its share capital.

Diageo intends to cancel all shares purchased.

It enabled Morgan Stanley & Co International PLC to buy back the shares, pursuant to its existing general authority to repurchase a maximum of 251.8 million shares.

Shares in Diageo were up 0.2% at 2,585.50 pence on September 8.

With consumers across the world developing a taste for craft beers, Japan's leading player, Yo-ho Brewing, has revamped its mainstay ale for the first time in 20 years as it treads a delicate line between competing with the big brands that dominate the Japanese market and maintaining its distinct identity, Nikkei Asian Review reported on September 8.

"We were after the more classic flavor that is popular in the U.S.," President Naoyuki Ide said at a launch event on September 7. This is the first change in Yona Yona Ale since it hit the shelves in 1997.

Yo-ho spent a decade trying to replicate the stronger hoppy aroma and other flavors commonly found in American craft beers. The new Yona Yona Ale is priced at 248 yen ($2.28) plus tax, slightly above the big-brand products.

Many consumers are attracted to the variety of flavors and branding that often characterize craft beers. Even beverage titan Kirin Holdings is making serious inroads in the field.

Craft beers are said to account for only around 1% of the Japanese beer market now, but are expected to hit 3% in 2021. "The market share will definitely reach 10% over the medium to long term," Ide said.
