THIOL POTENCY IS 100! TRY IT!

ABSTRACT
An impressive theoretical approach is being undertaken by French researchers, whom are experts in analysing thiols and thiol precursors in beer, malt and hops. For a couple of years, brewing scientists show that these fruity thiols are key aroma compounds with extremely low flavour thresholds. However the free form of these thiols varies significantly among hop varieties and also in beer. The potential of the thiol aroma compounds is extremely high, however the majority of these compounds is linked to larger protein-type molecules and only released by specific enzyme activity. In this work, a calculation is proposed to determine the thiol potential for the three compounds 3MH, 3MHA, 4MMP. Hop varieties with a high free potential would be more suitable for dry hopping while hop varieties with a high bound potential are more suitable for an earlier addition. The hypothesis is very fascinating but needs to be further investigated with brewing trials. If a strong sensory correlation is established, the proposed "thiol potency values" could provide great value to brewers.

Brewery news USA: Craft beer sales estimated to have grown 6% last year
Sales of craft beer grew 6 percent in the U.S. last year, industry consultant Bump Williams shared during the Brewers Association Power Hour on March 1. And that growth, Williams said, is not coming from mainstream craft brands, but new local brewers as well as strong regional and national players like Bell’s Brewery, Stone Brewing, Dogfish Head Craft Brewery, and Allagash, among others, Brewbound reported on March 2.

“This long tail of craft is the growth engine right now with an awful lot of room to grow,” he said.

That was just one takeaway from Williams’ presentation, titled “Hard Times,” which provided an overview of 2017 data from market research firm IRI Worldwide.

“As rough and tough and challenging as I think it’s been in the past, my feeling is it’s going to get a whole lot harder,” he said, referencing data from IRI’s multi-outlet and convenience (MULC) universe of stores (grocery, drug, club, dollar, mass-merchandiser and military).

Here are four key takeaways from Williams’ talk.

Keeping with the “Hard Times” theme, Williams laid out several headwinds in 2018 for craft brewers, including tougher access to market via traditional distribution channels and lack of consumer brand loyalty. He added that craft brewers would have an ...More info on site

Brewery news USA, TX: Pedernales Brewing Co. purchased by Uncle Billy’s Brewery at the Celis Brewery in Austin
Since its founding in 2012, Fredericksburg-based Pedernales Brewing Co. has earned scores of loyal drinkers with a lineup of beers that range from classic German styles to a celebrity-endorsed brew bearing Robert Earl Keen’s name. And as of Feb. 28, those suds have officially moved to Austin, mySanAntonio.com reported.

Uncle Billy’s Brewery at the Celis Brewery in Austin has purchased the Pedernales brand and will continue to brew its Pedernales Classic, Lobo and Robert Earl Keen recipes in Austin. John West has helped shape many of those beers as head brewer at Pedernales, and he came along with the purchase, joining the Celis Brewery crew to ensure the flavors don’t stray.

“We are really proud of the business we built and the top-quality beers we brewed at Pedernales Brewing Co.,” Lee Hereford, founder of Pedernales Brewing Co., said in a news release. “It is time for the next chapter in our brewery’s story. We’re thrilled to find another like-minded brewery in Uncle Billy’s that will take the reins, continue our mission of brewing world-class beers and take production to the next level.”

Uncle Billy’s was founded in 2006 and came into new ownership itself last year. Beer production was moved from its original ...More info on site

Brewery news USA, VA: Eavesdrop Brewery expected to open on March 9
Eavesdrop Brewery is expected to open March 9 at 7223 Centreville Road, #115, in the Yorkshire area, Inside NoVa reported.

The brewery features a large tasting room and production facility in a former racing pigeon loft. The loft has been renovated with 20 taps, a rooftop bar and plenty of comfortable seating. On the grounds, you’ll find a hops garden, apple trees, berry bushes and more. These areas have been outfitted with family-style seating and fire pits.

Eavesdrop will produce a variety of beers on their 3-barrel system, with an emphasis on farmhouse styles, IPAs and barrel-aging. There will also be a focus on producing collaboration beers with local and foreign breweries.

There are plans to work with local chefs and restaurants to organize bespoke beer dinners and tasting events.

Brewery direction and operations are overseen by Chief Operating Officer Joe Rivera, who has worked at Old Ox Brewery and 3 Stars Brewing Company. The concept for a collaboration-focused brewery was conceived and funded by local entrepreneurs Jeb Carney and Frank Madden. Carney, Madden and Rivera are already planning the first expansion into an adjacent building to accommodate a larger production area, kitchen and additional seating.

Brewery news USA, NY: Resurgence Brewing Company to open primary location in Buffalo
Resurgence Brewing Company announced this week it will open a primary location in the Old First Ward, adding to a wave of development in one of Buffalo's most historic neighborhoods near the edge of downtown, WGRZ-TV reported on February 27.

Resurgence Brewing will join Ellicott Development's multi-use project at the site of the E. & B. Holmes Machinery Company complex on Chicago Street. The existing Resurgence location at Niagara Street will remain, but it will transition into a new pilot research role.

Ellicott Development, which purchased the Chicago Street land from a preservationist after his plans fell through, has decided to partially demolition the 19th-century structures. The company will build a new complex with Resurgence as a prime tenant, in addition to apartments, a rock climbing gym and other retail space.

Construction should start within the next few weeks, and the project could be completed by late summer or early fall, according to a company official.

Some preservationists may be sad to see part of the historic E. & B. Holmes complex go away.

But the redevelopment of the site is an exciting prospect for the Old First Ward Community Association.

Executive Director Tori Ferraina said she's hopeful the influx of customers will drive traffic toward ...More info on site

Brewery news USA, NY: Garrett's Brewing hopes to open later this year in Trumansburg
A new brewery is set to open in Trumansburg this year in the former Rongovian Embassy space on West Main Street, The Ithaca Voice reported on February 28.

Garrett's Brewing announced on its website that it is in the process of becoming a full-fledged brewery.

"Once we are done with our build-out, we will be located on Main St in Trumansburg, NY in the site of the former Rongovian Embassy!"

The "Rongo" storefront has been empty since late 2016, when the beloved restaurant, bar and music venue closed abruptly after seeking a change in ownership.

An opening date has not been confirmed, but it is expected to open later this year.

Brewery news USA, TX: Farmhouse brewery Roughhouse Brewing aiming at early next year opening in the Texas Hill Country
The Texas Hill Country is going to be the rugged site of a new farmhouse brewery, Roughhouse Brewing, early next year — when five acres of the owners’ family ranch will have transformed into a brewery and tasting room, austin360 reported on February 28.

Roughhouse is the vision of Davy Pasternak and his wife, Alex. After three years working behind the scenes at Blue Owl Brewing, where he ultimately became head brewer, Pasternak is forming his dream brewery that will focus on farmhouse-style beers fermented in large wooden barrels, called foeders.

Though Pasternak’s time at Blue Owl means he knows how to create sour beers, that’s not exactly what he’ll be producing at Roughhouse. Farmhouse ales tend to be a little funky, tart and dry, thanks to how they’re made, versus outright sour.

In this case, each of the beers will reflect the character of the wild Texas landscape around the ranch: dry, oaky and earthy, Pasternak said. These include the Treeform Farmhouse IPA, the Ona Farmhouse Amber, a table beer, and another style currently in development. Each one will ferment in the American oak foeders using Roughhouse’s house mixed culture.

Pasternak is also developing yeast harvested directly from the Pasternak Ranch. ...More info on site

Brewery news USA, DE: Mispillion River Brewpub headed to Milford
A new brewpub is headed to Milford with a familiar name: Mispillion River Brewpub, the Milford Chronicle reported on February 28.

“There’s a lot of changes coming to Milford and a lot of growth. The time is now; we’re ready to make a change,” Brewmaster Ryan Maloney of Mispillion River Brewing said.

The brand began five years ago as a brewery in a building off of Airport Road amidst construction and health-related businesses. The owners plan on continuing at this location and expanding the business to include the brewpub to be located on S. RT. 1 in Milford.

“We started in Milford. We named the brewery after the dividing river in Kent and Sussex Counties. And we plan on staying in Milford,” Mr. Maloney added.

It will take anywhere from 8–12 months to complete the brewpub which they hope will then become a destination where people can celebrate locally crafter beers and food.

With local chef Kevin Reading of Abbott’s Grill and Brickworks, a brewpub in Smyrna created through a similar collaboration between Mispillion River Brewing and Mr. Reading, the leadership behind the local brewery is confident Mispillion River Brewpub will succeed.

Eric Williams, el presidente, said,” We are excited to bring the Mispilion River Brewing ...More info on site

Brewery news USA, NC: Town Brewing Co planning to open in Charlotte this summer
A new brewery is planning to open this summer right next to Rhino Market, the Charlotte Agenda reported on February 28.

Called Town Brewing Co., the spot aims to be a community gathering place amid all of the new apartment construction going on just west of Uptown.

“We want to come in with respect and be a force of positive growth,” co-founder Allen West said.

West and fellow co-founders George Sistrunk, Mark Kutny and Richard Morton are all attorneys who have worked at the same firms over parts of their career. They also home-brewed together.

Over several years, the plans for Town Brewing Co. developed. They ultimately settled on the roughly 10,600-square-foot space at Morehead and Freedom Drive. The property is owned by Matt Browder, who also owns the Rhino Market and Wooden Robot buildings.

West and Sistrunk say their brewery will feel less like a warehouse and more like a living room. The 15-barrel system will have a set of year-round beers and rotating seasonal brews.

There will be both an indoor bar and outdoor bar, with big garage doors that will open up on nice days.

Town Brewing will have a limited kitchen to serve small plates and sandwiches. Expect some collaboration between Rhino Market ...More info on site

Brewery news USA, CA: Fieldwork Brewing adding another location in San Ramon
A new craft brewery will move into San Ramon. Berkeley-based Fieldwork Brewing is expanding and adding yet another location in City Center Bishop Ranch, the Patch.com reported on February 27.

"We are excited to open the Fieldwork Taproom and Beer Garden at City Center Bishop Ranch and bring our fresh, locally brewed beer to the Tri-Valley. I grew up in the valley and we have been searching for the ideal place to expand our presence in the East Bay. City Center is that place. It will be a fantastic destination and we are pleased to be joining so many complementary merchants," said Barry Braden, co-founder and owner of Fieldwork Brewing Company.

In addition to its Berkeley address, Fieldwork has locations in Monterey, Napa, Sacramento and San Mateo.

Fieldwork Brewing, which is under construction, will be located on the corner of Camino Ramon and will join other new shopping, dining and lifestyle tenants in Bishop Ranch. Roam Artisan Burgers, Williams Sonoma, West Elm, and Equinox will also open the city center development. THE LOT, a luxury cinema and dining destination, is the anchoring business in the sprawling development. Brewery news USA, MI: Couple wants to establish Hartland Brewing Company in Hartland Township
Ryan and Nikki McDonald are husband and wife. They're craft beer enthusiasts and foodies. And they're hatching an idea for a new microbrewery in Hartland Township that would serve beer, hard cider, wine and non-alcoholic craft brews, The Livingston Daily reported on February 23.

The couple wants to establish Hartland Brewing Company, a proposed 3½-barrel microbrewery in a space at the Hartland Town Center previously occupied by Kahuna Coffee.

“The craft-brew craze has come true, and it’s something I’ve always been interested in,” Ryan McDonald, 43, said.

While neither are beer brewers, they have a professional brewer lined up and plan to hire about 15 employees.

The microbrewery would serve food from 59 West, a banquet hall and restaurant his parents own in neighboring Oakland County community Highland Township. The couple met there, where they work as managers.

The menu will feature "comfort food that is well-rounded, not too out of the realm of normal, comfortable and inviting food," McDonald said.

"It's something we wanted to do in our community, because Hartland is in need of something like this," he said. "Breweries typically have a family-friendly, laid back atmosphere, and we want it to be a communal place where people know each other, their ...More info on site

Brewery news USA: AB InBev cautions President Trump against imposing tariffs on aluminium imports
Anheuser-Busch InBev, the world’s largest beer maker, cautioned U.S. President Donald Trump on March 1 against rushing into imposing tariffs on aluminum imports, Reuters reported.

Trump has vowed to take steps to crack down on imports of steel and aluminum and has been considering imposing hefty tariffs or quotas on imports of the metals from China and other countries under a national security law.

The U.S. brewing industry uses aluminum in about half of cans and bottles.

“So if you do something drastic in aluminum it could impact the industry,” AB InBev chief executive Carlos Brito told a news conference.

Brito said his company would welcome policies that encouraged people to invest in the United States and boost employment.

“We hope that whatever is done in aluminum is along those lines because if it’s not it’s going to be something that’s going to put jobs at risk and would be against the U.S. consumer,” Brito said.

Barley news France: Barley, wheat crop ratings fall from last week
The condition of winter crops in France deteriorated last week to hit a four-year low, ahead of a sharp drop in temperatures recorded this week in the bloc’s largest grain producer, Reuters reported on March 2.

Farm office FranceAgriMer said on March 2 that 83 percent of French soft wheat was in good or excellent condition by Feb. 26, down from 85 percent a week earlier and 93 percent a year ago.

That was the lowest level of good and excellent crop conditions at this point of the season since 2014.

A bitter cold snap worsened in Western Europe this week raising concerns of damage to crops although crop analysts had expected little impact in France and said it may even help diminish the threat from pests and diseases.

For winter barley, FranceAgriMer said 80 percent of the crop was in good or excellent condition by Feb. 26 versus 82 percent a week earlier and 90 percent at the same point last year, while 77 percent of the durum wheat was in good or excellent condition versus 79 percent a week earlier and 82 percent last year.

Winter barley and durum conditions also recorded the weakest conditions seen at this point of the season since ...More info on site

Brewing multinational Anheuser-Busch InBev (AB InBev) would in the next few weeks release a comprehensive report on the various public interest commitments agreed with the South African government, AB InBev Africa and SAB Zone President Ricardo Tadeu said on March 1.

The public interest commitments include a R1billion investment over five years in areas such as agriculture as well as enterprise and supplier development.

As part of the conditions for the deal, AB InBev also undertook that there would be no job losses as a result of the transaction.

The company and the Department of Economic Development agreed on the public interest conditions after Minister of Economic Development Ebrahim Patel intervened in the merger between AB InBev and SAB.

The report, the first of several in the next five years, will give indications of the initial social and economic benefits of the mega-transaction between the two major brewers.

Speaking to journalists in Johannesburg about the company’s first year of operating in Africa, Tadeu said that the company’s report on the public interest commitments was in final stages of approval.

Barley news Australia: Barley Australia announces successful accreditation of two new malting barley varieties
The Board of Barley Australia announces the successful accreditation of two new varieties: Spartacus CL IGB 1334T and Compass WI4593.

These two varieties are from InterGrain in Western Australia and The University of Adelaide, respectively. The varieties were accredited as Malting Barley following the evaluation trials conducted in association with the Malting and Brewing Industry Barley Technical Committee (MBIBTC) assessment under the malting barley evaluation process.

Spartacus barley processed in a similar manner to La Trobe and is mostly comparable in malt quality, with the agronomic advantage of imidazolinone herbicide tolerance. It is well suited to export markets requiring this style of barley where starch-adjunct brewing is undertaken.

Compass presented as a barley with improved agronomic characteristics over Commander, and with similar malt quality. It is most suited to producing malt for brewers with a medium fermentability and can be utilised in both sugar- and starch-adjunct brewing. Hence this variety is well suited for many domestic and export markets.

As with all previous accreditations, it is the market that will determine the success of these new varieties. The Barley Australia malting barley evaluation and accreditation process is recognized as the required standard for the determination of malting barley for all new Australian malting barley varieties.
