HUNTING THIOLS IN HOPS AND BEER

ABSTRACT
One difficulty about the research of fruity and also nasty thiols in hops and beer is the challengeof analyzing these compounds. These German Researchers are developing suitable methods to do so. Thiols occur in concentrations below most other beer volatiles. These low concentrations and the reactivity of their sulfhydryl group make their analysis particularly challenging. In order to understand their actual contribution to beer flavor, suitable analytical tools are required. In addition to a proper analytical performance (sensitivity, selectivity, robustness, etc.) factors such as analysis time, manual handling, costs, and solvent consumption have to meet today's requirements. An equipment consisting of HS-SPME-GC-MS/MS is necessary for the analysis of volatile thiols in hops and beer. All assays involve headspace extraction and derivatization of thiols (headspace solid phase microextraction with on-fiber derivatization using pentafluorobenzyl bromide) with GC separation, as well as mass selective detection using MRM mode. Brewery news USA & Mexico: Constellation Brands faces challenge to US$1.5 billion brewery in Mexico
Constellation Brands will have to keep fighting for a new US$1.5 billion brewery in Mexico, after a petition for a public vote on its construction was accepted for consideration by the Baja California State Senate, The Drinks Business reported on December 21.

The drinks company announced plans for the new brewery in Mexicali, Baja California, back in January 2016, which was hoped to have a brewing capacity of 10 million hectolitres by December 2019.

However this looks to be in jeopardy after a petition to have a public vote on whether locals actually want this brewery gained 18,595 signatures.

The petition is born out of a fear that the brewery will use up too much of the limited water available in the Mexicali valley, 80% of which is designated for agriculture and farming, with only 2% designated for industry.

Constellation Brands has filed a legal challenge with the state electoral authorities against the body’s decision and demand the vote be suspended.

The company, which brews popular beer brands Corona and Modelo for the US market, says they have already gained the necessary authorisation after it had been subject to a public vote two years ago, and has completed the requisite environmental checks for construction. It ...More info on site


Brewery news USA, TX: Southerleigh Fine Food & Brewery opening second brewery in San Antonio
After a three-year run inside the Pearl, the owner of Southerleigh Fine Food & Brewery has announced plans to expand beer operations, mySanAntonio.com reported on December 20.

Jeff Balfour is opening a second Southerleigh brewery at the Brooks complex, near the intersection of Sidney Brooks and South New Braunfels Avenue, on San Antonio’s Southeast Side. The new 6,000 square-foot facility, set to open in the summer, will partly occupy a space that was built in 1941 and operated as a church until 2016. Gomez Vazquez International Architects is leading the design of the building.

The brewery will include a 40-seat tap room with an outside seating area, with 10 taps that will rotate out according to the season. There also are plans to run regular tours of the brewing operations.

“We’re excited to continue to expand Southerleigh into this neighborhood and introduce our beer to an ever larger audience,” Balfour said in a statement.

According to a Southerleigh media representative, the beers at the two brewing operations are likely to vary, but that plan is still under discussion.

A new brewery has opened in Byron: Hairy Cow Brewing Company has a patio that overlooks the Rock River at 450 E. Blackhawk Drive, wrex.com reported on December 18.

The brewery opened its doors at 11 a.m. on Tuesday, December 18 with four beers on tap, two guest taps and artisan pizza.

“We’re really excited that we can finally open the doors and show the community, friends, family and people from outside the area what we’ve done,” said Owner Todd McLester. “We don’t want this to just be a local spot, although that’s our primary focus. We want it to be a destination.”

Hairy Cow is open from 11 a.m. to 11 p.m. weekdays, 11 a.m. to midnight Saturday and 11 a.m. to 8 p.m. Sunday.

Industrial Arts Brewing has announced plans to open a second brewery, taproom, and event space at 511 Fishkill Ave in Beacon, New York, TheFullPint.com reported on December 19.

Slated to open to the public in spring 2019, Industrial Arts will be the anchor tenant and co-owner of the 150,000 square foot facility overlooking Mount Beacon. Diamond Properties partnered on the purchase and is currently offering the remaining 73,400 square feet of warehouse for lease.

Immediate plans for the multi-level facility include a tasting room with ample outdoor seating and panoramic mountain views, a New York State focused beverage program, to- go beer, and food truck partners for the Spring 2019 opening.

“Beacon is a vibrant town with a booming art scene nestled in the Hudson Highlands with easy train access to the city,” explained General Manager Sofia Barbaresco. “The Beacon site will be an evolution of our aesthetic that originated from our unique site in Rockland and we are excited continue to help make the Hudson Valley the premier destination for beer tourism in New York State.”

Brewery news USA, VT: Whirligig Brewing looking to open in St. Johnsbury in spring 2019
Starting next spring, Whirligig Brewing will host visitors in a tasting room at 397 Railroad Street in downtown St. Johnsbury, CEO and head brewer Geoffrey Sewake told Seven Days earlier this week.

The one-barrel brewery will offer tastings, pints, and beer to go in crowlers and growlers. A brief menu of light snacks will complement the liquid offerings, which will include an array of sour and other wild-fermented ales, farmhouse styles and IPAs.

Sewake said working on a nano scale means Whirligig can keep its menu fresh with a constant rotation of new beers, since each batch yields just a few kegs. The brewery's size, he added, will also enable it to buy most of its grain, hops, and seasonal fruit, vegetable and herb additions from local growers. The goal? To make "beer [that] speaks to the place," the brewer said, using language often applied to wine and cider.

Sewake is originally from the West Coast, but he and his wife, Northeast Kingdom native Gillian Sewake, moved from New York City to Peacham four years ago to raise their family. An avid home cook and brewer, Geoffrey Sewake has long dreamed of opening a food-related business, he said.

Brewery news USA, MA: White Lion Brewing leases new location in Springfield
White Lion Brewing is moving into the former Spaghetti Freddy’s location in Tower Square, Springfield, having leased 10,000 square feet from the building’s new owners, MassLive.com reported on December 19.

And White Lion plans to move its brewing tanks in on December 20, having purchased used equipment from a brewery in Watkins Glen, New York.

The Spaghetti Freddy’s space was vacant for close to 15 years but will now house a full scale production and packaging facility with taproom, the company announced on December 19 . The new development will cost in the neighborhood of $1 million according to Demetrios Panteleakis of MacMillan Group Commercial Real Estate Services, which represents Tower Square’s owner.

Equipment arrives Thursday, at 9 a.m. and will force the temporary closure of streets in the area.

White Lion will offer light fare food in a brewpub setting.

“It will have open area seating in the foyer," said Panteleakis. “We expect the build-out to take a few months,” meaning that White Lion is expected to open in 2019.

Brewery news Malaysia: Malaysian brewers contributed 0.3% to GDP in 2016
Malaysian brewers chipped in RM3.7 billion or 0.3% to the gross domestic product in 2016, The Edge Markets MY reported on December 19.

In a statement on December 18, the Confederation of Malaysian Brewers Berhad (CMBB) which comprises Heineken Malaysia Bhd and Carlsberg Brewery Malaysia Bhd, said there was moderate growth in the local beer industry, despite operating in a challenging environment including high taxes and the prevalence of illicit alcohol among others.

According to international strategic consultancy firm, Steward Redqueen, CMBB has contributed significantly to the nation’s overall economic growth.

In 2016, CMBB contributed a direct input of RM2.1 billion in taxes and salaries while indirectly contributing RM1.6 billion through its supply chain, trade partners, and suppliers.

In other words, every litre of the CMBB beverage that is produced and sold in Malaysia generated RM13 to the local economy and RM10.50 in tax revenue for the government.

CMBB said the beer industry has employed almost 61,000 Malaysians or 0.4% of the nation’s total workforce, which generated close to RM800 million direct and indirect salaries across its value chain.

Brewery news Rwanda: Skol Brewery grows market share by 20% this year
Skol Brewery Rwanda Ltd grew its market share by 20 per cent in 2018 from 5 per cent in 2010, officials have said.

The development was announced on December 18 as the local beer manufacturer unveiled its brand new ‘SKOL Select’ beer on the market.

Ivan Wulffaert, the Skol Brewery General Manager said the growth in market share is largely due to Rwandan customer base development in appetite of the high quality beer and different varieties.

This, they say, resulted into the brewer’s increasing production and distribution to a widening consumer base.

“One of the key indications of Skol Brewery’s growing market share on Rwandan market is that the brewer’s distribution has grown by 30 times in the past seven years. Which shows that Rwandan consumers are really looking for different beers and express high desire to taste different quality products,”

“That is why we have Skol Select on the market because we want to diversify our brands to beer consumers,” said Wulffaert.

Hops news Australia: Hop Products Australia announces second trial of hop variety currently known as HPA-016
Hop Products Australia has announced the second trial of a new hop variety, currently known as HPA-016, Australian Brews News reported on December 19.

The as-yet-unnamed hop has been described by several brewers as a versatile hop with mandarin and pine characteristics. HPA sales and marketing manager Owen Johnston told Brews News that 016 is the result of the company’s extensive breeding program.

“HPA has an enormous bank of parent genetics,” he explained.

“We screen something like 3,000 new cultivars every year for suitability to progress through trialling.”

Johnston said that 016 will be available in pelletised trial quantities next year.

Head brewer at Tasmania’s Moo Brew Dave Macgill told Brews News that he finds 016 quite different to Galaxy and Enigma and said that it should prove quite versatile.

Having tasted a beer brewed with 016 at the HPA offices in Tasmania just last month, Macgill said that “it’s got some nice fleshy mandarin and citrus characteristics to it”.

“It would sit well in front of the new-world-style beers that have been coming out at the moment.”

Macgill said that he’d be interested in trialling 016 in a new-world-style lager next year.

Brewery news Uzbekistan: Craft Brewing Company imports ingredients from Belgium to guarantee quality of its finished products
Uzbekistan’s Craft Brewing Company imports ingredients (malt, hops, yeast) from Belgium and Germany, the Uzbek company told Trend on December 21.

The main supplier of ingredients for the company is the famous Belgian malt house Castle Malting.

“We chose the companies whose plants have been operating for dozens of years, who have improved their technologies over the years, thereby increasing the quality and efficiency of their products. Brewery news South Africa: AB InBev brings Leffe Blonde and Hoegaarden beers to South Africa
The world’s largest brewer, AB InBev, has brought two Belgian beers, Leffe Blonde which is the most popular beer style in the award winning Leffe beer range, and Hoegaarden, which is the most awarded wheat beer in the World Beer Cup history, to South Africa, the Independent Online reported on December 21.

Leffe Blonde is made using the finest natural ingredients and top fermentation brewing techniques.

High End Marketing Director, Vijay Govindsamy, said pronounced ‘Leff’ with a silent e, Leffe Blonde is an authentic blonde abbey which is full bodies and multi layered with hints of vanilla and clove, and a slight bitterness.

“Leffe Blonde has an alcohol content of 6.6%. It pairs well particularly well with red meat, vinegary dishes, ham and cheese. It was best served in the iconic chalice glass, “which allows the essence of this beer to unveil its true elegance”,” said Govindsamy.
