Scientific Digest

Come on, let's dip hop!

ABSTRACT
Japanese researchers introduced this hopping technology already 2013 at the EBC. Dip hopping means the addition of hop after wort cooling before start of fermentation. With this hopping technology they found the following results: hop enzymes do not contribute to main fermentation, myrcene levels in finished beers are very low, which was found favourable in this case. Also, the production of 2M3MB an onion type of flavour (derived from iso-alpha acid) is supressed due to a lower H2S content in the beer.

Brewery news USA: Constellation Brands’ sales up in Q4 thanks to stronger beer sales
Constellation Brands Inc. said sales rose in the latest quarter as stronger beer sales helped offset weakness in its lower-priced wine brands, MarketWatch reported on April 4.

Net sales for the Victor, N.Y., company, which produces Casa Noble Tequila, Cook's California Champagne and Svedka vodka, rose 2% from a year earlier to $1.8 billion. Analysts polled by FactSet expected $1.73 billion.

Beer sales in the fourth quarter rose 9.3% to $1.09 billion, driven by the Modelo and Corona brands.

Net sales in the wine and spirits segment declined 7.6% to $707.1 million. However, several high-end wine and spirits brands performed well, including Kim Crawford, Meiomi, Ruffino, the Prisoner portfolio and High West, Constellation said Thursday.

Profit rose to $1.24 billion, or $6.37 a share, up from $910.5 million, or $4.56 a share, a year earlier. Adjusted earnings totaled $1.84 a share, higher than the $1.72 a share expected by analysts polled by FactSet.

Constellation's stock rose 2.4% to $183.96 in early trading on April 4. Shares are down 19% in the last 12 months.

For fiscal 2020, the company guided adjusted earnings per share of $8.50 to $8.80. It also expects net sales of beer to grow 7% to 9% for fiscal 2020, while wine and ...More info on site

Brewery news Germany & USA & UK: Stone Brewing Berlin sold to Brewdog
Stone Brewing Berlin, Stone’s international production facility and bistro that opened in 2016, has been sold to Brewdog. The last operation day as Stone’s brewery is April 30th, the Beer Street Journal reported on April 5.

In 2010, Stone’s co-founder walked thorough the gasworks property and instantly wanted it to be the international home for America’s fiercely independent brewery. It took a few years, but Koch and team turned the historic building into Stone Brewing World Bistro & Gardens Berlin.

According to Koch, German beer prices are the cheapest in Western Europe, and the more expensive craft beers aren’t getting the foothold in the country as they planned.

Besides Germans’ reluctance to pay premium craft beer prices, Koch explains in a blog post that issues run a bit deeper than per-ounce prices. Disregarding the advice of his professional council, Koch outlines issues with his German contractors. Stone Berlin was a big project, and his Berlin contractors apparently didn’t adjust to unforeseen build-out challenges, construction questions, or slight changes in build scope. When these issues arose, construction was immediately halted. These shut-downs hurt the Stone Berlin project greatly.

“It cost us dearly. After talking with fellow business owners in Berlin, seems we’re not alone in ...More info on site

Brewery news Canada, ON: Calabogie Brewing opens second location in Kanata
Calabogie Brewing has announced the opening of its second location in Kanata, approximately 80 km east of its original location in the town of Calabogie, the Canadian Beer News reported on April 2.

Originally announced last September, the off-shoot is situated in a 7000-square-foot facility and features a 20-barrel brewhouse, retail store, and tap room and patio with a food menu that includes sandwiches, pizza, and other selections.

The new Calabogie is located at 105 Schneider Road in Kanata, and is open Monday to Friday from 11:30 AM to 7:00, and Saturday from 12:00 noon to 5:00 PM.

Brewery news USA, NJ: Ghost Hawk Brewing to open its doors on April 20
Ghost Hawk Brewing in Clifton will have its grand opening at 1 p.m. on April 20, NorthJersey.com reported on April 2.

Brewmaster Chris Sheehan began brewing Ghost Hawk’s first batch in early March, and was hoping to have a selection of beers ready by early May. Turns out, craft beer lovers will get to experience the new brewery a bit sooner.

The beers available on opening day will include:

Apex Predator: New England style IPA Daedalion: American Wheat Ghost Hawk Lager: Continental Europena style lager Cherry Daedalion: American wheat with tart cherry Ravendark: Foreign style stout Trouble IPA: Double dry-hopped imperial IPA

Owners Tom Rachelski and Steve Bauer are both craft beer enthusiasts who grew up in Clifton. Ghost Hawk will be Passaic County’s first microbrewery.

The 3,500-square-foot brewery with a walk-up bar and seating area, is located next door to Silk City Distillers and across the street from Rutt’s Hut. There's no parking on site, so Rachelski and Bauer suggest getting an Uber or Lyft to the brewery on opening day.

In the future, Ghost Hawk will host events with entertainment by local artists.

Ghost Hawk is located at 321 River Road, Clifton.

Brewery news USA, NY: Secatogue Brewing Company weeks away from opening in West Islip
West Islip’s new craft brewery is weeks away from opening, GreaterBayShore reported on April 2.

After hitting a series of delays, Secatogue Brewing Company owner Ken Srubinski told GreaterBayShore he will be swinging the doors open the first weekend in May (hours are still to be determined.)

“It has been a long time coming,” said Srubinski, who is opening the brewery in his hometown. “We’ve heard everyone’s enthusiasm, and we can’t wait to open.”

The West Islip beer lover will be running his first brewery with family, including his wife and West Islip High School sweetheart.

For the opening weekend, Secatogue will have between six to eight of their own beers on tap.

The brewery, located at 375 Union Boulevard, is 4,300 square feet and could hold about 100 people, according to Srubinski.

Brewery news USA, KY: Gallant Fox Brewing Company close to opening in Louisville
The Frankfort Avenue corridor in Louisville is close to getting a brewery, the Insider Louisville reported on April 2.

And when Gallant Fox Brewing Company opens, it will be a bit unlike most breweries in Louisville — it will be a nanobrewery inspired by those owners Roger Huff and Patrick Workman came to love during a visit to Asheville, N.C.

The pair will employ a one-barrel brewing system, pieces of which were collected from various places around the region, with a couple of two-barrel fermenters for double batches, which means a lot of turnover.

“We’ll be brewing a lot,” Workman says.

Gallant Fox is targeting June 1 as an opening date at 2132 Frankfort Ave., in a small strip center behind Varanese (the official address is actually 2132 New Main St.). Huff and Workman signed the lease on the space in February 2018, so the project has been in the works for more than a year.

The brewery will be a bit on the quirky side, with a few taxidermy foxes as part of the décor, not to mention a custom-made, chainsaw-carved wood statue that mimics the brewery’s logo of a fox in a top hat.

Wallpaper is being added that gives the illusion of thin ...More info on site

Brewery news USA, MI: Pavlov’s Brewing Co. already open in Temperance
There’s a reason Joan Groll calls her husband a “mad mule.”

After getting a homebrewing kit for Christmas six years ago, John Groll’s new hobby rapidly took on a life of its own, the Toledo Blade reported on April 4.

“He went kinda crazy,” Mrs. Groll said. “When he started brewing beers, he just went all in. He learned as many techniques, styles, flavor choices, different hop flavorings as he could. Research, research, research. He just dove in.”

The Temperance couple just opened Bedford Township’s first brewery, Pavlov’s Brewing Co., in a renovated former bank building on Lewis Avenue.

Mr. Groll is a Temperance native and graduate of Bedford High School, for which the mule is the mascot. He was a forklift mechanic for 31 years and said he never imagined himself a master brewer or business owner until he was eyeballs deep in making his own craft beer.

“You get to the point where you start making some pretty good beers and start comparing yours to everybody else’s,” Mr. Groll said. “I never would have guessed that I’d be here a few years later.”

The Grolls enjoyed visiting other breweries in Michigan, northwest Ohio, and anywhere they traveled. They joined the Frogtown Hoppers and Glass ...More info on site

Brewery news USA, PA: Axemann Brewery hoping for September 1 opening in Bellefonte
Licensing applications, rezoning requests and renovations are under way for a proposed new brewery on Axemann Road in Bellefonte, the State College News reported on April 4.

Axemann Brewery is owned by Rodney Stahl, of Boalsburg, and will occupy over 20,000-square-feet of the former Cerro Metal Plant. Now called Titan Park, the site is owned by Navitus LLC, a corporate partnership between Shaner Capital and G.M. McCrossin, Inc. Currently zoned for heavy industrial use and housing several manufacturing tenants, site manager Joe Leahey hopes that a proposed designation of highway mixed use zoning will allow the brewery to serve as an anchor in revitalizing the site.

“The newer designation will allow manufacturing, but will also allow things like this microbrewery, and potentially things like coffee roasters, restaurants and office spaces,” Leahey said.

Stahl has been home brewing as a hobby for many years.

“I’ve always had the idea that if the right opportunity and situation came along, I wouldn’t mind doing this more commercially,” he said. “So I kept my eyes and ears open and looked around occasionally.”

Reasonable rent in an idyllic setting along the Logan Branch stream and a change to Pennsylvania laws seemed to offer just the opportunity and situation he ...More info on site

Brewery news USA, DE: Thompson Island Brewing Co. to be built in Rehoboth Beach soon
SoDel Concepts announced plans to build Thompson Island Brewing Co., a 250-seat brewpub on the pad site to the south of Bluecoast, which opened in 2017 in the Rehoboth Gateway shopping center, the Milford Beach reported on April 1.

“We’ve experienced phenomenal success in this location,” said Scott Kammerer, president of SoDel Concepts. “Our guests appreciate the easy access, the parking and our dedication to service and beautiful, simple food. It made sense to bring another concept to the same site.”

Thompson Island Brewing Co. is named for a nearby island. The brewpub’s ambiance will pay homage to area attractions and activities like bonfires, kayaking, paddle-boarding, fishing and relaxing on the sand. In addition to the bays and beaches, local farms will play a prominent part of the theme.

Thompson Island will have a beer garden that will seat about 100. Guests can play ping-pong and bocce ball in the garden.

John Trogner, of Tröegs Independent Brewing, will be the consultant on the brewing side of the new restaurant. John and brother Chris founded Tröegs in Harrisburg, Pennsylvania, in 1996. The brewery is in Hershey, Pennsylvania. John spent time in Colorado working in a brewery before he and his brother started their own company. ...More info on site

Brewery news USA, ON: Collective Arts Brewing signs lease for its first facility in Gowanus
An Ontario-based brewery will open its first stateside facility at 519-529 3rd Avenue (between 12th & 13th Streets) in Gowanus, BKYLINER reported on April 3.

Collective Arts Brewing has signed a 15-year lease for the 16,000-square-foot space, Commercial Observer first reported. The new brewery will be part of a three building renovation project by property owner Serabjit Singh which will include more than 7,000 square feet of rooftop greenhouses overlooking 3rd Avenue.

The “urban brewery” will feature a microbrewery, a two-story taproom, a 100-seat restaurant, a 40-seat cocktail lounge, a retail shop, and a backyard area—perfect for the venue’s anticipated mid to late summer debut.

Collective Arts Brewing was founded in 2013 by Matt Johnston and Bob Russell who plan to “collaborate with local and international artists, musicians, and brewers to create a collaborative space and authentic contribution to the Gowanus neighbourhood,” a release announcing the new venue states.

“We want to make space that becomes an incubator for us to create new beers but also a creative hub for the community we’re in, and the artists and musicians we collaborate with,” Johnston said in the release.

The Gowanus location will also feature two, mixed-use spaces for community events and for showcasing artists. “This space ...More info on site

Brewery news USA, VA: Deschutes Brewery halts plans for Roanoke production facility
Deschutes Brewery won’t be building its second production facility in Roanoke, Virginia, by 2021, as previously agreed, the Bend Bulletin reported on April 2.

In a letter dated March 28, the brewery told Roanoke officials that it is not on track to complete design plans and drawings before the Aug. 31, 2020, deadline, nor be able to begin construction on the facility by June 30, 2021. The first time the brewery pulled back its plans was in April 2018. Then the brewery told city officials that it couldn’t move forward and would waive tax incentives.

“We’re considering the alternatives based on our growth rate and the craft beer market,” said Michael LaLonde, Deschutes Brewery CEO, in an interview. “We’re not going to do anything right now. If we do build something, it will be in Roanoke.”

Roanoke officials would not comment on the latest communication.

Deschutes had a Sunday performance deadline in which to notify the city of its plans. In 2016, Deschutes said it would build a $95 million facility employing 100 people on a 49-acre site. Deschutes planned to break ground by June, start brewing test batches in 2020 and begin shipping from the facility by 2021. But in April 2018, Deschutes ...More info on site

Brewery news UK: Boom in gin sales and new lager boost Diageo’s Northern Ireland profits
A boom in gin sales and the launch of Rockshore lager helped drive turnover of over £194 mln at one of Diageo's Northern Ireland businesses last year, the Belfast Telegraph reported on April 5.

The drinks giant behind brands such as Guinness, Baileys, Smirnoff and Gordon's gin saw pre-tax profits rise 9.7% to £6.1 mln for its two Northern Ireland entities, Diageo NI Ltd and Diageo Global Supply IBC Ltd.

Diageo's presence here includes a £44 mln facility in Mallusk, where it produces Baileys for the global market. It also operates a bottling and packaging plant in east Belfast and runs a sales and marketing division.

Its turnover in Northern Ireland slipped from £195.2 mln to £194.7 mln in the 12 months to June 30, 2018, but the drinks company said that was largely down to new accounting practices within its Belfast-based global supply subsidiary, where revenues appeared to be down by £11.5 mln.

But turnover within Diageo NI Ltd rose 9% to £133.4 mln last year, driven by a growing market share for beers and spirits.

Last year saw Diageo successfully launch its new Rockshore brand, which quickly secured a considerable market share.

"Rockshore Irish Lager launched in Northern Ireland February 2018. It is now ...More info on site

Brewery news The Czech Republic: Major brewers planning dozens of new branded pubs this year
Major Czech brewing companies are planning to open dozens of new branded pubs this year, Hospodářské noviny reported on April 4. The move builds on a trend seen in recent years and is aimed at stemming a decline in consumption.
