ABSTRACT
By now this phenomenon is known by many craft brewers.
Dry hopping leads to over-attenuation, but why?
Over-attenuation of dry-hopped cask ales was already
reported by Dr. Horace Brown over 100 years ago, citing
that "dry-hopping induces an earlier and more persistent
cask fermentation in beer". However the small percentage
of endogenous sugars in hops was reported to be
insufficient for the extent of refermentation. Already
back then, observations led researchers to conclude that
hops contain a "diastase" able to break down residual,
nonfermentable beer dextrins as seen by the production
of reducing sugars in dry-hopped beers. Now 100 years
later the team of Prof Shellhammer invested time and resources
to demystify the hop creep in detail. They found
that the total activity of alpha- and beta-amylase in hops is well
below that of malted barley, but within the range of plant
amylase activities reported in literature. To investigate
factors that may influence the rate and extent of refermentation
as a result of dry-hopping with Cascade hops,
a set of conditions were explored including dry-hopping
rate, temperature, duration, and separately, exposure
time to hop material. Glucose concentrations correlated
with hop dosing amounts and rose steadily throughout
the 15 days of dry-hopping. There was no change in
the carbohydrate composition of beer dry-hopped with
hops that had been autoclaved at 121 degrees Celcius. The results
suggest the effect of enzyme activity was dependent
upon exposure of beer to hop material and that shorter
dry-hopping time with hop removal, for example through
filtration, may significantly reduce continued enzyme activity
in finished. In this regard the collaboration of hops
and yeast can turn into a diabolic pack!

India’s spirits and beer segment growth slowed in the peak summer months this year, as restrictions around general elections disrupted demand for liquor in the legal market, the Economic Times reported on July 18.
Sales of beer grew 5% while those of spirits expanded 2% during the April-June quarter, according to GlobalData, a UK-based research firm. A year earlier, the beer segment had grown by 7% and spirits by 3%. While curbs on liquor sales around voting days affected demand, this also coincided with the label registration cycle this time — companies need to get approval for and register changes in packaging, warnings, etc., every year — something that directly impacted operations and supply chain.
"Elections, contrary to popular belief, are not good for the industry and because it happened in the peak summer season, it is particularly bad for the beer segment," Shekhar Ramamurthy, the managing director at United BreweriesNSE 0.41 % told ET last month. “This is because of restrictions on us in terms of number of hours allowed to operate breweries and closure of outlets,” he said, adding that some states even had directives that dispatches and purchase of liquor should not be more during election months

The Czech Republic: Molson Coors buys Czech brewer Pardubicky Pivovar
|
Molson Coors has bought Pardubicky Pivovar in the Czech Republic for an undisclosed sum, the Drinks Insight Network reported on July 18.
The acquisition, along with that of the London-based Hop Stuff Brewery, form part of the company’s strategy to expand its beer portfolio.
Molson Coors acquired an 89% stake in 148-year-old brewer Pardubicky Pivovar through its subsidiary Staropramen.
The Pardubicky brewery, which produces brands such as Pernštejn, Taxis and Porter, will continue to operate as a different business entity.
The deal with Pardubicky also includes its Slovakian distribution company.
In a recent note to employees, Molson Coors Europe CEO Simon Cox and Molson Coors Europe Czech Republic, Slovakia and Hungary managing director Petr Kovarik said: “Our goal is to layer on a strong craft portfolio to our current portfolio of traditional brands such as Staropramen, giving us a scaled operation with an enriched portfolio of regional and new-wave craft brands and new capabilities built into our current business.”
Cox and Kovarik further explained that the company is planning to invest millions into the brewery to double production within a decade.

The Philippines: San Miguel Brewery holds groundbreaking ceremony for new brewery in Luzon

San Miguel Brewery Inc. (SMB) on July 17 broke ground for a new brewery in Barangays Bolasi and Mabilao, its second in Northern Luzon, pna.gov.ph reported.
"The completion of this brewery in less than two years will also allow us to move our products to our Northern Luzon customers at a more efficient pace. We are not just a company of expert brewers and producers of quality products and services, but we are your dependable partner towards progress," SMB President Roberto Huang said during the groundbreaking ceremony.
Huang said the new brewery will have a full capacity of two million hectolitres.
“This move also signifies that we at SMB believe that as our business grows, so is our contribution to countryside development, and in this case, the development of the municipality of San Fabian,” he noted.
Huang said the demand for San Miguel products for the last three years has been remarkable as indicated by their record-breaking sales volume.
"Management firmly believes that putting up a brewery strategically located here in San Fabian is instrumental to the attainment of our vision as we lead the growth of the beverage industry,” he added.

A record-breaking lack of sunshine is causing changes in Japan’s spending habits that are hurting sales of beer, air conditioners and other summer items but bringing cheer to dehumidifier makers and indoor leisure facility operators, The Japan News reported on July 18.
With the consumption tax rate set to increase to 10 percent in October, some analysts are warning the lingering overcast weather could also have a gloomy impact on the domestic economy.
At major appliance retailer Biccamera Inc.’s store near the west exit of Shinjuku Station in Tokyo, the section set aside for seasonal appliances would normally be displaying products such as electric fans at this time of year. However, this year, dehumidifiers and futon bedding driers still line the shelves. The store has delayed switching over to summer products because of the bad weather. “Many customers tell us they want to dry their laundry,” a store official said.

USA: Diageo breaks ground on new Kentucky distillery
|
Diageo has broken ground on its new $130 million distillery in Lebanon, Kentucky, and revealed more details on the project, the Shanken News Daily reported on July 18.
To be known as the Diageo Lebanon Distillery, plans call for a 72,000-square-foot distillery and dry house, as well as 12 barrel warehouses. The facility is expected to be fully operational in 2021.
Originally announced in December, the distillery will sit on a 144-acre site property at “100 Bourbon Drive” and produce a variety of Diageo Bourbon and American whiskey brands, with annual capacity of approximately 10 million proof gallons. The facility will supplement the company’s other Kentucky operations: Stitzel-Weller in Louisville, and The Bulleit Distilling Company and Visitor Experience in Shelbyville.
Overall, Diageo has invested more than $300 million in its Kentucky operations since 2014, as it looks to meet soaring demand for American whiskies. The company’s flagship Bulleit brand has continued to expand markedly, with U.S. volume up 10% to 1.34 million cases last year (including rye), according to Impact Databank.

UK: First single malt whisky distillery in Edinburgh in 100 years to open by the end of July

It marks almost a century apart. Now the first single malt whisky distillery in the centre of Edinburgh for nearly 100 years will open at the end of this month, the Herald Scotland reported on July 18.
It also a marks another point of progress in the whisky and whisky tourism industries, as well as the wider drinks and craft drinks sectors.
Hundreds of millions of pounds are being invested in distilleries, breweries and accompanying visitor centres across the UK, with Eden Mill, the gin and whisky distiller, submitting plans for a major £3.1 million development of new production facilities at a site in St Andrews.
The Isle of Arran Distillery has also opened a second premises with a visitor centre, and Diageo is investing £185 mln in a pan-Scotland whisky tourism plan, including £150 mln in Edinburgh and revamping distilleries such as Cardhu and Clynelish, and £35 mln in reopening sites at Port Ellen and Brora.
Both the Port Ellen and Brora distilleries were closed in 1983, and Diageo aims to bring them back into production by 2021.
It is also to open a Johnnie Walker visitor experience in Princes Street.
