THE POTENTIAL IN DRY HOPPING

ABSTRACT
The different growing regions of hop production also use different techniques for hop drying after harvest. This US Team did a comparison of different kilning procedures. In the US the traditional hop method is to pile them 60-80 cm in large boxes and to run through the beds with air heated to 48-66 degrees C. This can result in uneven drying with bottom hops having 5% moisture and the hops at the top having up to 20% moisture. Overheating the hops can result in the formation of off flavours like onion/garlic. In comparison, drying hops with unheated and dehumidified air results in a less than 1% moisture difference between top and bottom of the bed. However this system is energy intensive and takes up to 48hrs in comparison to up to 13 hrs for the traditional method. The system in Germany/ Europe consists of using three drawers of hops with a height of 30 cm each that are dried and then dropped to the second tier as a new load of hops is loaded into the top tier. Again, after partial drying the middle tier is dropped to the lowest tier, the top tier to the middle, and the top once again reloaded. This system results in very homogenous moisture levels but in terms of energy consumption appears to be slightly above the US system. This study thoroughly compares all three systems in terms of energy consumption showing all pros and cons in terms of hops quality. Obviously for all systems there is still room for improvement.

Whisky news EU & USA: Scotch imports tariffs in the US will be “particularly damaging” for smaller producers
The 25% tariff on single malt Scotch imports to the US, effective from October 18, will be “particularly damaging” for smaller producers and will “diminish” consumer choice, The Spirits Business reported, citing the Scotch Whisky Association (SWA).

The SWA’s Karen Betts says that smaller producers will be hit the hardest by the 25% tariffs on single malt

On 2 October, the US government revealed its intentions to impose a 25% import tariff on EU goods, including single malt Scotch whisky, single malt whiskey from Northern Ireland, liqueurs and cordials from Germany, Italy, Spain, Ireland and the UK and wine.

The tariffs, which were formally given the go ahead by the World Trade Organization (WTO) earlier last week, came into force on October 18.

The US has been embroiled in an ongoing spat with the WTO over illegal subsidies for plane manufacturers Airbus and Boeing. The tariff has been launched in retaliation against EU subsidies given to aerospace company Airbus.

According to the SWA’s chief executive Karen Betts, the move means that Scotch “is now paying for over 60% of the UK’s tariff bill for the subsidies it provided to Airbus, eight times more than the next most valuable UK product on the tariff list”.

Brewery news USA, PA: Victory Brewing Company planning larger brewery in Downingtown
Downingtown-based Victory Brewing Company is heading into the city. The PA craft beer pioneer is opening a two-story, 14,000-square-foot brewery and taproom at the patriotic address of 1776 Ben Franklin Parkway in Logan Square. It’s slated to debut late 2020, Eater Philly reported on October 15.

Victory’s new Philadelphia location will include a production brewing system, a full kitchen, two indoor bars, one outdoor bar, outdoor seating on street level, and a rooftop patio with views of the Parkway.

Bill Covaleski and Ron Barchet opened the brewery, known for its Golden Monkey, Prima Pils, and seasonal Summer Love (a favorite at Philly beer gardens), in Downingtown in 1996. “We’ve been patiently looking for the perfect downtown Philadelphia location for years,” Covaleski said in a press release.

Victory also has locations in Kennett Square and Parkesburg in Chester County.


Brewery news USA, MA: Notch Brewing to launch second location in Brighton next year
Notch Brewing, the Salem brewery known for tight session beers and crisp lagers, is opening a second location in Brighton, The Boston Globe reported on October 15.

Brewery founder Chris Lohring confirmed to the Globe that Notch’s second brewery, taproom, and biergarten will anchor the Charles River Speedway headquarters, a plot at the intersection of Soldier’s Field Road and Western Avenue that was once home to the stables and offices of a mile-long horse track. The brewery is expected to open in summer 2020.

"It's got a unique feel, one that I feel matches Notch, from the style of beer that we brew to the way we serve the beer, all the European influences that we like," says Lohring. "I feel like this would be a good home for that, to bring the Salem experience that we've had here for three years to Boston."

At Notch's Salem location, visitors get an experience not unlike one they'd get in Germany or the Czech Republic. Session beers like The Standard, a Czech pilsner, or Zwickel, a German pale lager, are low in alcohol but not forced, adhering to traditional styles. Brewery news Canada, AB: Bearhill Brewing opens its newest location in Edmonton
The newest location in the Bearhill Brewing family of brewpubs is now open in Edmonton, the Canadian Beer News reported on October 15.

Campio Brewing officially opened its doors last week, and promises to offer a “beer program that ranges from the working man’s thirst quenching brews to a sour program that pushes the palate.”

In addition to the flagship Campio All Malt Lager (5.3% abv), beers on tap at opening included Climate Crisis Tropical Hazy IPA (7% abv), Albertasourous Fruit Ale (5% abv), Mandarin Crush Lager (4.8% abv), Decade of Darkness Oatmeal Stout (5.5% abv), Take A Risk Hopped Sour Ale (6% abv), Construction Saison (5.4% abv), I Am Groat Red Ale (3.8% abv), and Nondenominational Abbey Ale (6.9% abv).

Campio is the fourth location in the Bearhill group, joining Jasper Brewing in Jasper, Banff Avenue Brewing in Banff, and Last Best Brewing in Calgary.

Campio Brewing is located at 10257 105 St. NW in Edmonton, and is open for food and drink service 7 days a week.


Brewery news USA, OH: Fretboard Brewing expanding with new venture in Hamilton
Blue Ash's music-focused brewery Fretboard Brewing announced earlier this month that they will be expanding their business with a new venture in downtown Hamilton, the Cincinnati CityBeat reported on October 15.

Fretboard Brewing & Public House will take over the space formerly occupied by Quarter Barrel Brewery + Pub, which closed earlier this year. The new brewpub will feature a rooftop patio bar, scratch-made pub grub and house-brewed small-batch beers.

"We are so excited to be a part of the tight-knit, and growing, Hamilton community. Keep an eye open for our official opening date soon. Cheers to everyone who has been rocking with us these last two years!" a Facebook post by the brewery reads.

The brewing crew is partnering with Looking Glass Hospitality Group, the team behind Blue Ash's Tahona Kitchen + Bar and Mason's S.W. Clyborne Provision & Spirits, on their new endeavor.

Raise a glass with the Fretboard Brewing crew at their two-year anniversary celebration from 6:30-11:30 p.m. on Nov. 8 and 9 with live music and the release of Drummer Boy Winter Warmer beer. Brewery news USA, MI: Right Brain Brewery to stay fully independent craft brewery
Traverse City-based Right Brain Brewery announced on October 15 it would stay a fully independent craft brewery, the Traverse City Ticker reported.

The announcement comes more than a year after news broke about a merger between Right Brain and the Royal Oak-based craft brewery Roak Brewing Co. At the time, Roak Co-Owner and CEO Jeff Leone told The Ticker that Right Brain would “keep its own identity” but come under the Roak umbrella. Russell Springsteen, CEO and founder of Right Brain, would have become a co-owner of the Roak/Right Brain partnership along with Leone and two other Roak partners. Among other changes, the partnership would have enabled Right Brain to distribute its beers out of state for the first time, as part of Roak’s existing distribution footprint.

A new press release issued by Right Brain states that “the process of joining forces proved untenable” and that the brewery will not be merging with Roak. Springsteen declined to comment on the specifics of the deal or why it fell through, but told The Ticker that he is enthusiastic about remaining independent and looks forward to trying new things to meet the ever-shifting demands of the craft beer industry. Brewery news USA, VA: Starr Hill Brewery coming to Downtown Lynchburg
Starr Hill Brewery is coming to Downtown Lynchburg, WSET reported on October 16.

The Downtown Lynchburg Association announced on Instagram that Starr Hill will take over the former Grassroots Local Market at 1300 Main Street.

Starr Hill on Main will be just one block from the Community Market and easy access to the Bluffwalk.

The brewery and taproom will lease nearly 4,000 total square feet, housing a 5-barrel brewing system.

Beers brewed on-site will feature local collaborations as well as unique brews only available in the Lynchburg location.

The taproom area will have an open-concept seating layout that will incorporate a brewhouse lounge area and traditional bar seating. Starr Hill will also propose an outdoor seating area that will create a vibrant urban atmosphere, extending the comfortable indoor space.

"We believe in the vision for Downtown Lynchburg and that Main Street is the right location for our pilot brewery and taproom. This community’s enthusiasm to work together to create a vibrant and dynamic city is fantastic," says Brewmaster Robbie O’Cain. Co-Founder Dave Plate and Managing Partner Kyle Kensrue announce the Williamsburg reopening of their staple NYC brewpub Randolph Beer (104 S. 4th St.), unveiling 2,000 additional square feet with shuffleboard tables, old-school video games, new outdoor space and Williamsburg’s first-ever nanobrewery, Brewbound reported on October 16.

Led by Head Brewer Flint Whistler (formerly of Rockaway Brewing Co., an active member of the NYC Craft Brewers Guild and the founder of NYC Brewery Industry Night), the nanobrewery is an all-manual, single-barrel exploratory platform for irreverent, small-batch brews, slated to change out continually with very few varieties repeating. Using spices, barrel-aging, fruits, vegetables, rare hops and his own yeast concoctions, Flint creates obscure flavor combinations which run the gamut from forgotten, historical styles like a Lichtenhainer and a Gruit, to modern, easy-drinking brews with a twist.

Brewery news USA, ND: Fargo’s Kilstone Brewing announces closure, abandons plans to open new facility
Kilstone Brewing has announced it will close its brewery in north Fargo and abandon plans to establish a production facility and taproom in downtown Fargo, INFORUM reported.

The news came via a Facebook post Monday, Oct. 14:

"With heavy hearts we reluctantly announce our plans to shut down production at our brewery and abandon our move to the heart of downtown Fargo. We will be continuing our taproom operations through the weekend of October 26th and will be using that weekend to say farewell and thank you to those who have supported the brewery since we opened in the spring of 2015."

The post went on to say while there was no one factor that led to the closure, the proposed move downtown had a lot to do with it.

"While there is no single factor that has brought us to this decision, the projected investment of the downtown project along with the logistics of manufacturing downtown made the project untenable. Brewery news USA, NY: Empire Brewing Co. brewpub closed on defaulting on rent
The Empire Brewing Co. brewpub in Syracuse’s Armory Square closed abruptly on October 17, newyorkupstate.com reported.

A padlock was placed on the entry and both its web site and Facebook pages have removed hours of operation listings.

The brewpub was locked out because it defaulted on its rent, according to Jeffrey Appel, managing partner for Armory Boys LLC, which owns the building at 120 Walton St.

“Empire has not paid a dollar in rent for 3 months and was constantly behind in payments over the past year despite business as usual and substantial infrastructure investments made by the building owners to improve the establishment,” Appel wrote in an email to syracuse.com. “The default is immediate and irreversible without any rent payments made.”

Empire Brewing owner David Katleski said in a text message today that he is trying to “work out a resolution” with the landlords. He had previously told syracuse.com that the landlords, Armory Boys LLC, were attempting to raise the rent in negotiations on a new lease. Appel denied that: He said the lease terms handn’t changed.

Petaluma’s 101 North Brewing Co. is closing after seven years in business, ending its struggle to overcome a poor location in Petaluma and break into crowded retail markets outside Sonoma County, the Santa Rosa Press Democrat reported on October 16.

The brewery, known for its flagship Heroine India pale ale and edgy label art on its bottles akin to a heavy- metal album cover, had one last celebration on Saturday, October 18 before shutting.

“I have a big thank you for Sonoma County. It was the bread and butter of our business,” said John Lilienthal, the brewery’s regional sales manager and partner. “They were super supportive ... it was at least 80 percent of our revenue.”

The brewery was founded in September 2012 by a group of former Bear Republic employees, including brewmaster Joel Johnson.

Positive reviews helped the brand win slots in Safeway, Costco and about 80 local and regional pubs.

However, increased competition from local brewers throughout Northern California made it more difficult for the brewery to place its kegs in taprooms and its bottles on store shelves outside Sonoma County, Lilienthal said. Boatyard Brewing Co. announced on October 17 that they will be selling their brewing equipment through an online auction after closing its doors in Kalamazoo, WWMT-TV reported on October 17.

The company scheduled the one-day online auction for Tuesday, Oct. 22, 2019 via Orbitbid.com. The auction will start at 8 a.m. and will close at 6 p.m. Preview day is scheduled for Monday, Oct. 21 from 10 a.m. to 4 p.m., as well as sale day from 8 a.m. to 5 p.m.

Boatyard Brewing Co. first opened in 2014 and officially closed its doors at the end of August 2019.

Brewery news South Africa: Blossoming craft beer sector trying to get drinkers broaden their tastes
For more than a century, beer-making in South Africa has been dominated by South African Breweries (SAB), a subsidiary of multinational giant Anheuser-Busch InBev. But now a growing movement of craft brewers is trying to get the nation's drinkers to broaden their tastes, CNN reported on October 21.

"A blossoming craft beer sector enables startups to grow and gives the little guy a chance to help disrupt an industry that for decades has been controlled by one company," says Nick Smith, chairman of Craft Brewers Association South Africa (CBASA). "We compete against the Goliaths by focusing on making amazing, innovative beer."

Craft beer is brewed by small or independent breweries. It started to become popular in South Africa in 1983 with the opening of Mitchell's Brewery in Knysna, in the Western Cape, says Smith. It really began to gain traction in the mid- to late 2000s and has "come on in a big way in the last five years or so," says Smith, who is also founder of Soul Barrel Brewing Co.

There are now around 215 craft breweries, according to CBASA. Still, craft beer accounts for just under a 1% share of the beer market in South Africa, Smith estimates.

Brewery news Belgium: Medieval ‘super yeasts’ named factor of success for Belgian beers
Belgian beers such as Gueuze or Trappist partly owe their success to medieval hybrid “super yeasts,” according to new research by an international team of scientists led by professors from Leuven and Ghent, the Brussels Times reported on October 22.

The mix of the two completely different types of yeast makes the hybrid yeasts much stronger than the original types, according to the Flemish Institute for Biotechnology (VIB). “Compare it to lions and tigers making a super baby,” said Jan Steensels from the VIB-KU Leuven Centre for Microbiology, reports VRT NWS.

The “hybridisation” is rare, according to the researchers. “In this case, the hybrid yeasts combine important characteristics from both parent species: the fermentation capacity from traditional beer yeast and the ‘stress resistance’ and ability to form special aromas from old, natural yeasts,” said the VIB in a statement.

Professor Steven Maere, a bioinformatics expert at the VIB-UGent Centre for Plant System Biology, provided the necessary plant expertise to the team in Leuven. In turn, together with colleagues from Munich, they identified the yeasts in the production of, for example, wine, beer and bread.

Brewery news Australia: Craft beer drinkers positive about future of category - survey
Australian craft beer drinkers feel positive about the future of the category: with 93% believing the quality of brews is improving, while 87% would encourage family and friends to try craft beer, BeverageDaily.com reported on October 23.

More than 23,000 Australian craft beer drinkers from across the country took part in online craft beer retailer Beer Cartel’s annual survey, which is now in its fourth year.

“Craft beer is the only segment of the Australian beer market which is in continuous growth, with overall consumption of beer and alcohol in decline,” says Beer Cartel. “Most craft beer drinkers are positive about the direction craft beer is heading and are excited by the opportunity to try different beers.”

Key changes in the category over the last year have been a shift towards cans and an increase in online purchases, notes the survey.

The average Australian craft drinker is aged 38; has been interested in the category for 8 years; and spends A$56 a week on beer. The number of female craft drinkers has grown: but still only accounts for 23% of consumers, with 77% of drinkers being male.

Brewery news Myanmar: Lawsuit against senior employees of Myanmar Carlsberg to proceed despite attempts to settle out of court
A lawsuit filed against six senior employees of Myanmar Carlsberg Company, including its managing director, for cheating under section 420 of the Penal Code will proceed despite attempts to settle out of court, U Ye Tun, managing director of Myat Hmwei Trading Company, which filed the suit, told The Myanmar Times after an October 22 hearing.

Under a case management plan prescribed by the court, the plaintiff, defendants and their lawyers had met to discuss how to proceed with the suit in Thingangyun, Yangon.

"There's no plan to settle out of court because we filed the lawsuit based on principles of integrity," U Ye Tun said during an interview at his office.

He said the lawsuit came about as a result of a beer promotion campaign by Myanmar Carlsberg which took place in October 2018. As part of the campaign, a small carton of Yoma Beer would be given away for every purchase of three large cartons of the beer.

Myat Hmwei is accusing Myanmar Carlsberg for not giving them the correct amount of free cartons promised under the campaign. According to U Ye Tun, Myanmar Carlsberg still owes his company 22,615 cartons of Yoma Beer worth about K270 million.

Brewery news Myanmar: Myanmar’s first microbrewery inspired by Friday nights in Singapore in late 90s
Friday nights in the late 90s were a ritual for Htin Lin and his friends - finish work or study and then start drinking beer, CNA reported on October 19.

At Brewerkz, a well-known drinking institution, they had discovered something different: Craft beer with complexity and character, unlike the simple lagers they were used to.

“I was blown away,” Htin Lin said of that time some 20 years ago. “We were all single and we were on liquid diets on Fridays. Brewerkz was the place. You’d order a beer, you’d talk about work, the industry, sports and then politics and then girls and then retirement.”

The group of young people from Myanmar spent years in Singapore doing this. They started to joke and dream about having their own microbrewery “somewhere exotic”, like Bali or Phuket.
