How much creep do I get?

ABSTRACT
Dry-hopping brewers are aware of "hop creep". Dry hop creep is a gradual reduction in beer gravity after dry-hopping in the presence of yeast due to generation of fermentable sugars from nonfermentable dextrins by hop-associated enzymes. However, it is very important for brewers to know what hop creep will do to their beer in terms of alcohol content, degree of fermentation and generation of CO2. A new paper proposes a method adapted from ASBC Method of Analysis Wort-5 whereby a benchtop, forced fermentation is performed using a consistent dosage rate for dry-hopping and assessing the apparent extract and apparent degree of fermentation after 72 hours. This approach offers brewers the potential of estimating the enzymatic power, or hop creep potential, of the hops being evaluated. The researchers discovered challenges with changing the form of yeast (dried vs wet). Results indicated that a small-scale dry-hopped forced fermentation is a promising tool for assessing the potential magnitude of hop creep in a given lot of hops, and that differences in apparent extract and/or apparent degree of fermentation of forced fermentations can be used to estimate the terminal gravity post-hop creep of full-scale fermentations.

China's buying spree of French and Canadian barley is spilling into the 2021/22 crop with large forward purchases, due to its major feed grain needs and a prohibitive tariff on Australian barley, traders and analysts said.

China has been sweeping up huge volumes of foreign crops to help feed a pig herd being rebuilt after a disease epidemic. In barley, an 80.5% tariff slapped on Australian supplies last year, amid diplomatic tensions with Canberra, has focused demand on other suppliers, Reuters reported on February 3.

A large amount of Canada's 2021 barley crop has already been booked by Chinese buyers, traders said, with one citing at least one million tonnes.

That would be in line with at least one million tonnes of new-crop European barley thought to have been sold so far, traders said.

Some said France would supply the European volume, with one trader putting French sales at up to 2 million tonnes, although others said the sales were on an optional basis and could be sourced partly from Ukraine.

Shipment would be mainly over July-September, traders added.

Whisky news USA: Spirits sales rise in 2020 despite pandemic and higher tariffs
U.S. spirits sales rose in 2020 despite the double whammy of the pandemic and tariffs. In its 2020 Economic Briefing, the Distilled Spirits Council of the United States (DISCUS) credited a combination of consumers upgrading to super-premium spirits as "affordable luxuries" as they sheltered in place and creative approaches in states and cities to support the hospitality business, the Food Dive reported on February 1.

Supplier sales of spirits rose 7.7% in 2020 to $31.2 billion, with volumes up 5.3%, according to DISCUS. Total beverage alcohol sales by volume increased 3%. Spirits were able to gain 1.3 percentage points in market share over beer and wine in 2020, commanding 39.1% of total beverage alcohol sales. This marks the 11th consecutive year of market share gains for spirits, according to DISCUS. Each point in market share represents an additional $800 million in revenue for suppliers, the group said.

This growth came despite a series of retaliatory tariffs slapped on U.S. alcohol segments, including spirits, by the European Union that were triggered by an escalating trade dispute. Saucy Brew Works has announced the March 3, 2021 opening of its first location in Detroit, Michigan, located in one of the city’s most iconic neighborhoods, Brush Park. The exciting new brewpub and coffeehouse at 2671 John R. will be the first restaurant to open within Bedrock’s City Modern mixed-use community development, Brewbound reported on February 1.

Craft beer aficionados and novices alike will be able to enjoy the 5,700 square-feet space featuring both indoor and outdoor seating. Saucy Brew Works, owned and operated by Brent Zimmerman and Eric Anderson, utilized the expertise of Sachse Construction as the Construction Manager for this innovative project.

Brewery news USA, TN: Hampline Brewing Company launching in Memphis on January 31
Memphis is getting a new small-batch, craft brewery.

Hampline Brewing Company opens Saturday, January 31 at 584 Tillman St. in the Binghampton neighborhood, The Commerical Appeal reported.

The brewery is a collaboration between brewer Wes Osier and two of the partners at the Rec Room — Martha Hample and Richard Rhodes.

The 2,500-square-foot brewery gets its name from the Hampline Bike Path, and the brewing facility is in the building just behind the Rec Room.

A state-of-the-art brewing system was installed at the facility. Osier, who previously worked with Urban South and Abita Breweries (New Orleans), Terrapin Beer Co. (Athens, Georgia) and SweetWater Brewery (Atlanta), plans to produce 500 barrels in the brewery’s first year.

“My vision is to bring new beer styles such as New England IPAs and mixed culture sours along with Old World German, Belgian and British styles to Memphis beer lovers,” said Osier.

Hampline is opening with two signature brews both on draft and in cans, and a third on tap only.

Brewery news Canada, BC: Bad Dog Brewing Company now open in Sooke
After two years of hard work in renovating a 120-year-old former firehouse, Bad Dog Brewing Company has opened on 117 Water Street in Sooke, BC, The Winsted Phoenix reported on January 29.

The company is owned by the Tkac family of Bristol: Matt Tkac, his wife Michele, their son Chris, and their daughter Emily.

The business officially opened its doors on Saturday, Jan. 30. However, it previously had a soft opening the week before.

Matt Tkac was previously an engineer with his own company before he and his family started Bad Dog Brewing Company.

“We started brewing beer at home and we enjoyed it,” Tkac said in an interview with The Winsted Phoenix. “My son found his passion in brewing beer, and then we started talking about opening this up. We wanted a place with a feel of character, space, and history. This firehouse provides all of that.”

Tkac said that fixing up the old firehouse for two years was like “This Old House on steroids.”

Brewery news USA, PA: John Russell Brewing Co. opens its doors to guests in Erie
The long-awaited transformation of the UPick6 Beer Store at 7520 Peach St. in Erie to John Russell Brewing Co., is finally complete and the doors opened to guests Wednesday, January 27, GoErie.com reported.

"We didn't market the date," said co-owner John Melody Thursday. "We let the news get out into the community itself and by 7 p.m. (Wednesday)," they had a respectable number of customers, he said.

Melody and his partner, Russell Stachewicz, had no idea when they started this project that it would take more than a year to realize, but COVID-19 and subsequent restaurant restrictions made it a frustrating stop-and-go process. Finding staff was a challenge, too.

"It was a long road," Melody said.

But the brewery, which has been making beer for months to be sold in the partners' other bars in the UPick6 family — Harbor House, Public House and Tap House — is officially open now, at 50% capacity like other dine-in restaurants.

Melody said they'd expand their patio and outdoor seating in the spring, as he expects COVID-19 will still be an issue.

A new brewery has opened in West Columbia, WIS10 reported on January 30.

Savage Craft Ale Works is a veteran-owned beverage company. The staff also consists of military veterans.

The company states its mission is to “make quality beer, help make West Columbia and surrounding communities a great place to work and live, take care of our employees, and [support] veterans, law enforcement and first responders.”


Brewery news USA, AR: Native Dog Brewing holds soft opening in Camden
Native Dog Brewing held its long awaited soft opening Thursday, January 28 night with a packed house in attendance, the Camden News reported.

The dog-friendly microbrewery has been eagerly anticipated and owners Bobby and Lauren Glaze provided members of the Mug Club, a VIP membership package sold through nativedogbrewing.com, a sneak peak at what Camden’s only microbrewery has to offer.

Bobby Glaze learned the art of brewing from his uncle at an early age.

“Before I was able to legally buy beer, I started brewing beer,“ Glaze explained.

While he was in pharmacy school, he picked the hobby back up and applied the skills he was learning to perfect his craft.

“I started learning more about the chemistry, the microbiology. For someone who is science minded, brewing beer is just one big science project,” he said.

Also while in pharmacy school Bobby met his wife, Lauren, and while they were both completing an internship at a pharmacy in South Dakota, the name Native Dog came into their lives in the form of a scruffy puppy named Baxter.

Brewery news USA, WA: Salish Sea Brewing taking over former American Brewing Company’s location in Edmonds
Salish Sea Brewing, Edmonds’ beloved brewpub, is taking over American Brewing Company’s location, as well as the brewing equipment within it, the Washington Beer Blog reported on January 21.

Salish Sea Brewing will now have two locations in Edmonds, one in the heart of downtown and the other a half-mile down the street near the marina.

The company is not taking over the American Brewing brand.

Salish Sea Brewing opened its brewery and diminutive taproom in 2013 and then expanded in 2017. The brewpub, just a block off Main Street, a beloved beer and food destination, is a valued member of Edmonds’ tight-knit community. The brewery and pub will remain essentially unchanged, though taking over the American Brewing location will free up some space.

According to Jeff Barnett, the owner/brewer at Salish Sea Brewing, the exact plan is still coming together, and it is too early to project a realistic opening date. Jeff says the majority of the brewing will happen down the street at the new location, with the brewpub’s current brewing system getting replaced with a smaller, pilot system. Brewery news USA, SD: Sturgis Brewing Company looking to start manufacturing beer at its new facility by April
An 18 thousand square foot building right off of Interstate 90 in Sturgis will be home to the Sturgis Brewing Company with a gift shop, full kitchen, and craft beers, KotaTV reported on January 30.

This brewery is a spin-off of the Knuckle Brewing Company in downtown Sturgis, they say they can’t up demand so they built a larger building.

And with this new space, they will be able to expand their reach further east and into Nebraska.

But staying home, Owner Bryan Carter hopes it brings more people to the city of Sturgis.

“I just hope it gets more cars in town, more people stopping and shopping in Sturgis. It’s going to be a beautiful facility right off the exit and we just want to take the opportunity to capture some of the tourists that are coming off along I-90 and hopefully we can get them to continue on downtown to see famous Main Street and do some shopping,” says Carter.

Carter hopes to be manufacturing beer in the space by April and have the rest of the building open by Memorial Day weekend.

According to the Czech Statistical Office, an average Czech consumes 292 beers, 100 glasses of wine and 175 shots of hard alcohol annually. “The latest comparative study by the World Health Organization ranked us third in the world in terms of alcohol consumption per capita. According to this study, the average Czech drinks 14.4 litres of pure alcohol per year,” said Ladislav Csémy from the National Institute of Mental Health, as quoted by Brnensky Denik.

The study says that one reason for the heavy alcohol consumption in the Czech Republic is the low cost and easy accessibility of alcohol. An average Czech household spends nearly CZK 8,800 per year on beer alone. Brewery news UK: Heineken acquires full ownership of London’s Brixton Brewery
Heineken has acquired full ownership of London’s Brixton Brewery, following the acquisition of a minority stake in 2017, BeverageDaily.com reported on February 2. Brixton Brewery was founded in 2013 by two local couples who met in a Brixton bar and shared a passion for the emerging London beer scene.

Starting life with one employee and mainly making deliveries on foot around Brixton Market, the 2017 investment from Heineken funded a purpose-built brewery and kept the brewery’s original railway arches site as a tap room and experimental brewery.

The company now employs 25 people, and its brand is based on the Brixton community, such as naming beers after local landmarks.

Jez Galaun, founder of Brixton Brewery, said the business has built a strong relationship with Heineken over the last three years and benefited from the Dutch multinational company’s expertise.

Brewery news South Africa: Brewers welcome lifting of third blanket ban on alcohol but fear for future
A relieved Beer Association of South Africa (BASA) has welcomed the lifting of the third blanket ban on alcohol by President Cyril Ramaphosa in his address to the nation on February 1, but cautioned that the sector is still hamstrung by restrictions, the Independent Online reported.

This follows BASA’s multiple pleas to government for urgent intervention, in order to ensure both the survival of the industry, as well as the survival of small businesses and craft breweries, who find themselves on the brink of closure.

BASA indicated that with trading restrictions still in place, it will continue to limit the beer sector’s recovery, with there being no guarantee that craft brewers will recover.

“The President has offered small businesses a glimmer of hope - although it may be too little too late for some,” BASA said in a statement last night.

Trading may resume according to the following restrictions – the sale of alcohol for off-site consumption is to be permitted from Monday to Thursday, from 10:00 – 18:00, while micro-breweries will be allowed to sell alcohol for off-site consumption during their licensed operating hours.

Restaurants will be permitted to sell alcohol for on-site consumption from 10:00 – 22:00.

Brewery news Australia: Brewers Association slams latest excise hike
Beer drinkers and the hospitality sector have been hit with higher taxes from February 1 as government excise once again increased, the Brewers Association of Australia said in an official press-release.

With the hospitality sector still battling to recover from the economic impacts of Covid-19 and many households facing real economic uncertainty, this is a terrible time for a further tax increase on beer, the Association said.

Australians already pay the fourth highest beer tax in the industrialised world and these continued increases are damaging the brewing industry and the nation’s hospitality sector.

Australians have demonstrated consistently that they understand the importance of drinking in moderation with Australian alcohol consumption now at its lowest levels since the 1970s – local drinkers have earned some relief.

Many beer drinkers will feel the impact of the tax increase, especially at a time of real cost of living pressures.

Australia’s tax regime is out of step with many other similar countries. Early last year, in response to the Covid-19 pandemic Germany deferred its beer tax from the equivalent of 13 Australian cents to zero and Britain froze its beer tax at $1.52 (AUD).
