How much creep do I get?

ABSTRACT
Dry-hopping brewers are aware of "hop creep". Dry hop creep is a gradual reduction in beer gravity after dry-hopping in the presence of yeast due to generation of fermentable sugars from nonfermentable dextrins by hop-associated enzymes. However, it is very important for brewers to know what hop creep will do to their beer in terms of alcohol content, degree of fermentation and generation of CO2. A new paper proposes a method adapted from ASBC Method of Analysis Wort-5 whereby a benchtop, forced fermentation is performed using a consistent dosage rate for dry-hopping and assessing the apparent extract and apparent degree of fermentation after 72 hours. This approach offers brewers the potential of estimating the enzymatic power, or hop creep potential, of the hops being evaluated. The researchers discovered challenges with changing the form of yeast (dried vs wet). Results indicated that a small-scale dry-hopped forced fermentation is a promising tool for assessing the potential magnitude of hop creep in a given lot of hops, and that differences in apparent extract and/or apparent degree of fermentation of forced fermentations can be used to estimate the terminal gravity post-hop creep of full-scale fermentations.

Brewery news USA: Off-premise beer sales up 15.7% year-to-date through January 23
Off-premise beer category dollar sales increased 15.7% year-to-date through January 23, compared to the same period last year, Brewbound reported on February 3 citing market research firm NielsenIQ.

For the four weeks ending January 23 (which includes December 28-31, 2020), off-premise dollars sales of the beer category — which includes core beer, flavored malt beverages, hard seltzers, ciders and malt liquor — increased 14.2%, indicating slight acceleration after January 1.


Brewery news USA, OH: Crafted Culture Brewing Company to become central Ohio’s first Black-owned brewery
Anthony Perry didn’t set out to be the first Black brewery owner in Central Ohio, but it’s a title he now holds as Crafted Culture Brewing Company opens its doors in Gahanna, the Columbus Underground reported on February 2.

Perry has been a part of Columbus craft brewery industry for several years, and found himself to be one of a few Black individuals in the space.

When he first searched for statistics on diversity in the industry, of the 7,300 plus craft breweries in the U.S., less than 60 were Black-owned, but Black dollars accounted for 12% of the industry’s $27 billion in revenue. Perry found himself asking why Black individuals owned less than 1% of the profit, but made up over 10% of the revenue.

The lopsided math inspired Crafted Culture’s tagline.

“Let’s beer the change we want to see in the community,” Perry says.

After the brewery for which he’d been sales manager closed, Perry had been working on plans for his own operation. At the encouragement of friends, he decided to take the leap and make things happen, tapping brewer Zac Baaske to turn his beer dreams into beer reality.

Brewery news USA, VA: Bunnyman Brewing aiming for a summer opening in Fairfax
Locals in Northern Virginia might be familiar with the urban legend of the Bunny Man. Now a new brewery centered around the urban legend is coming to the Burke and Fairfax area, Patch.com reported on February 1.

Fairfax County natives Sam Gray and Eric Barrett plan to open Bunnyman Brewing at 5583 Guinea Road, Fairfax. On February 1, the owners indicated they're aiming for a summer 2021 opening. The owners said the buildout for the brewery is starting this week.

The owners got to know each other through their children's sporting events, and they shared conversation on the need for more breweries in Fairfax County, particularly in the underserved area they hail from.

According to its website, Bunnyman Brewing is envisioned as a place for sharing local stories. Perhaps there's no better local story to tell in the Burke area than the urban legend of the Bunny Man. The legend has different versions involving a person in a bunny suit with a hatchet or axe, but a common version claims an escaped asylum patient mutilated animals and killed two children and hung their bodies from a bridge.

Barley news Mexico & Australia: Heineken to start turning Aussie barley into Mexican beer
Global brewer Heineken will start turning Aussie barley into beer as part of an export deal to Mexico, the Yahoo News Australia reported on February 5.

The new market opens at a crucial time for Australia, which in December lodged an official complaint with the World Trade Organisation over China's hiked barley tariffs.

The nation's biggest grains exporter, CBH Group, signed a deal to ship 30,000 tonnes of malting barley to Heineken Mexico, Agriculture Minister David Littleproud said on February 5.

"Latin America presents considerable and exciting opportunities for Australian grains, meat and produce," he said.

"Australian farmers and businesses are also set to benefit from better export opportunities with the signing of the Regional Comprehensive Economic Partnership Agreement between Australia and 14 other Indo-Pacific countries."

Heineken Mexico is part of the worldwide network of the Dutch brewing company and employs thousands of people.

"Mexico has a population of 127 million people, and a strong appetite for the kind of high-quality food and beverages that Australia produces," Mr Littleproud said.

Australia has been working to spread its export market since its most valuable trading partner China launched a series of strikes against products including grain, meat, timber, seafood, wine and coal.

Brewery news USA, MN: Two veterans preparing to open Warrior Brewing Company in Lincoln Park
Two veterans are preparing to open up a new brewery in Lincoln Park this spring, FOX 21 Online reported on February 4.

Veterans Matt Caple and Ben Gipson met in 2019 when Matt was setting up a fundraising collaboration between his nonprofit and one of the local breweries.

Through the Lake Superior Warriors Disabled Veteran Hockey Program, the two developed a strong bond and decided to pursue brewing full-time.

Warrior Brewing Company will be located in the Lincoln Park neighborhood on West Superior Street, which is where Lake Superior Brewing Company used to be.

The business is set to be brewing by April and will probably release its first batches of brews in May.

“It’s really exciting,” said Matt, the co-owner of the brewery. “There’s obviously some anxiety associated with opening your first business on your own but I have a great professional brewer at my side, award-winning recipes that he’s had at his disposal, and it’s his resume is impeccable and myself, I’m more of a business-minded person so I think together we’re going to accomplish great things.”

Brewery news USA, PA: Pittsburgh Brewing Co. to build its brewery in Creighton
A former glass plant that was once the cornerstone of East Deer’s economy will soon be the new home of Iron City Beer, according to Pittsburgh Brewing Co., TribLIVE reported on February 3.

The company plans to move its production to a new brewery on the site by next year.

Almost 200 people lost their jobs in 2018 when Pittsburgh Glass Works closed the plant at 150 Ferry St. in East Deer’s Creighton neighborhood.

Cliff Forrest, owner of the Kittanning-based Rosebud Mining Co., bought the shuttered plant in 2019. Forrest also has owned Pittsburgh Brewing since 2018.

The maker of Pittsburgh’s iconic Iron City Beer had faced financial hardships under a string of owners for more than a decade. Its original brewery in Pittsburgh’s Lawrenceville neighborhood closed in 2009 after 148 years.

Its beers have been brewed by a third party ever since — at a Latrobe facility owned by Wisconsin-based City Brewing Co.

Moving operations back to a facility owned and operated by Pittsburgh Brewing is a major step in rebuilding the brand, company spokesman Ben Butler said.

“From a brewing perspective, you definitely want it all under one roof if you can,” he said.

Brewery news USA, OR: Base Camp Brewing now permanently closed and looking for buyers
Like countless other breweries, Base Camp Brewing has struggled through the pandemic. But for this brewery, there is also a bigger and more personal angle to the story. According to a recent report in the Oregonian, the brewery is now permanently closed and the owner is hoping an interested buyer will step forward.

In 2012 Justin Fay opened Base Camp Brewing in Southeast Portland’s Buckman neighborhood. It represented a combination of two of his passions, the great outdoors and great beer. The taproom is renowned for its sporty vibe and its roomy patio.

“It was very difficult to come to the decision that I’d rather not reopen,” Justin Fay told the Oregonian. “It’s been extremely emotional. Lots of ups and downs over the last year.”

Justin Fay has not yet set a sale price or a lease price but says Base Camp is available as a turn-key business. The Oregonian reports that he is being flexible and is offering the brewery’s assets in various forms, which might include selling and/or leasing the brand, equipment, building, and intellectual property rights.

Brewery news USA, CA: Zack's Brewing Company to close its doors because of COVID-19 pandemic
A downtown Fresno business is shutting down after struggling for months during the pandemic, KFSN-TV reported on February 2.

Zack's Brewing Company will close its doors on Fulton Street, the owners confirmed in a social media post on February 1.

The brewery opened on Fulton and Mono in 2018, taking over a historic building.

It will be open for to-go orders this Thursday, February 4 through Saturday, February, 6 from 12:00 pm to 7:00 pm if you want to make your final orders. Shipping within the state will be available through the week.

Brewery news UK: Budweiser Brewing Group UK&I forecasts stellar year for off-trade beer sales
Budweiser Brewing Group UK&I, part of AB InBev, is forecasting a stellar year for beer sales in 2021 in the Off-Trade, following stand-out performance of the category in 2020, the Retail Times reported on February 4.

Beer sales grew 28.9% in grocery, and 37.5% in impulse last year, as customers shopped for an additional 20 million at-home alcohol occasions each month in 2020. Even as restrictions lift, Budweiser Brewing Group predicts the at-home occasion will remain popular this year as consumers celebrate the return of the summer of sport and spend quality time with loved ones. The brewer forecasts a significant 12-15%growth for the total beer category, with impulse and convenience growing 3-4% ahead of the market, compared to the last year of regular trading in 2019.

Neil Baker, head of category management at Budweiser Brewing Group says: “It may be the Year of the Ox in the Chinese Zodiac but in the Off-Trade, 2021 will be the year for beer. We saw a once-in-a-generation shift in consumer behaviour last year – lockdowns led more of us to shop locally, as well as to a rise in at-home occasions. Barley news Russia: Russia to introduce formula-based wheat export tax on June 2
Russia is accelerating plans to switch to a formula-based tax on wheat exports, the economy minister said on February 4, as Moscow strives to curb food inflation in the COVID-19 pandemic, Reuters reported.

The switch to a formula, which will now take place on June 2, a month earlier than previously planned, will mean the tax will automatically rise in response to any increase in prices.

The move to combat domestic food inflation in Russia comes alongside measures taken by some other governments, as global prices rise. An index issued by the United Nations Food and Agriculture Organization hit a 6-1/2 year high earlier on February 4.

Russia previously imposed a series of fixed tariffs on exports, which will start from Feb. 15 and will be in place until the flexible formula is implemented.

The tax is designed to cut domestic prices as it curbs exports and therefore increases the amount of wheat available within the country.

“We expect these measures to be sufficient to stabilise, to contain the rise in wheat prices,” Economy Minister Maxim Reshetnikov told reporters.

The formula will be set at 70% of the difference between a base price of wheat per tonne and $200, he said.

Brewery news UK: Scotland’s convenience retailers can expect a strong 2021 for beer
Last year was a big year for beer sales in the Scottish off trade, as consumers sought to replicate the on-trade experience at home, the Scottish Grocer and Convenience Retailer reported on February 1.

Current beer category trends suggest Scotland’s convenience retailers can also expect a strong 2021, as the Covid-19 pandemic continues to affect consumer behaviour – including their approach to beer.

Hannah Dawson, head of category development for the off trade at Diageo – the firm behind Guinness – said that beer “remains a very versatile category”, that successfully taps into “a number of key trends.

“Beer is ranked as the number one category within beers, wines and spirits in the UK and the category is up 26% in value across the Scottish off trade.

“The ongoing popularity of the liquid makes it a must-stock for retailers this year. Ensuring your range of beers remains updated and relevant will be the best way to continue driving sales this year,” she said.

According to Dawson, big brands are the way to go in convenience, as consumers continue to seek out names they know and trust.
