Different Phenolic Compounds Activate Distinct Human Bitter Taste Receptors


ABSTRACT
In 2009, German researchers found that the responsible sensory bitter receptors for alpha, iso-alpha acids and beta acids are the receptors hTAS2R1, hTAS2R14 and hTAS2R40, reacting with the different bitter acids. Another German team of researchers were also able to determine the bitter receptors reacting with different plant polyphenols, namely the receptors hTAS2R4, hTAS2R5, hTAS2R7, hTAS2R39. With this they also discovered that some of the individual thresholds of the polyphenolic substances are extremely low. So maybe there are very bitter polyphenolic substances also in beer we have not discovered so far.

Brewery news USA: The prices of low-cost beers are rising
A recent study has found that the price of low- and mid-range beers has been climbing at U.S. bars and restaurants, Los Angeles Times reported on May, 24.

The study claims that this is due primarily to the popularity of such beers as Pabst Blue Ribbon.

“While all the attention has been on craft beers, the price of mainstay brands in the mid-price tier have risen more dramatically,” Chuck Ellis, President of Research Sciences, a Massachusetts-based research firm, said.

Pabst Blue Ribbon, a low-cost beer, which gained popularity, is a key reason the price of sub-premium beers has climbed 6.8% in the last seven months, Ellis said.

"I believe the single biggest driver in sub-premium beer price increases is indeed specifically PBR," Ellis said. "It has become quite fashionable."

Ellis reached that conclusion after his researchers tracked beer prices at 500 bars and restaurants. While the price of expensive craft beers also climbed, they did so at half the rate of beers like PBR, Research Sciences reported.

"Traditionally, lower-priced beers such as Pabst Blue Ribbon have seen sizable double-digit price increases in both restaurants and bars and nightclubs," Ellis said.


Brewery news USA, CO: Mountain Toad Brewing to open in Golden
Mountain Toad Brewing will hold a grand opening in Golden the upcoming weekend, becoming the town's third craft brewery, westword.com reported on May, 22.

The brewery and taproom features a large outdoor biergarten, along with a line up of traditionally-styled beers named for some of Golden's landmarks.

"We are not your sixteen-tap brewery, but we try to focus on what we know and on doing that well," says Kaylee Acuff, who owns Mountain Toad with three others. "Our goal is to have four flagships on tap and four seasonals at all times."

Mountain Toad has four taps going right now: Apex Amber, White Ranch Wit, Mt. Zion IPA and Ryrish Stout. A fifth beer, called Summer Hop, will be ready in a couple of weeks.

Another brewery, Canonball Creek, opened in Golden in January, joining Golden City Brewery, which had been the town’s only alternative to Coors since 1993.

"We're taking some of the great things from Golden City, like the patio, and some of the nice things from Cannonball, which has a beautiful inside space, and merging them," says Acuff. "We are a little bit of both."

Brewery news USA, WI: The New Glarus Brewing celebrates its 20th anniversary by expanding
New Glarus Brewing, after 20 years of activity, decides to expand, thedailypage.com reported on May, 21.

New Glarus is in the midst of a of major construction project totalling over $11 mln. The brewery recently broke ground on a 5,000-square-foot addition for storage and cellaring beer. Within three to five years, that expansion could push New Glarus to over 250,000 barrels of beer per year, nearly doubling its current production levels.

Since the beginning, New Glarus Brewing has produced iconic beers with whimsical names like Fat Squirrel, Totally Naked, Laughing Fox, Cabin Fever, Black Top, Moon Man and Spotted Cow which has become one of the most widely known Wisconsin beers. Over the past two decades, brewmaster and owner Dan Carey has developed a startling number of different beers. By his count, he has designed well over 100 different brews.

New Glarus Brewing broke ground on July 4, 1993. Three months later, Carey was making beer, with Edel Pils becoming the brewery's first release in November of that year.

Bellwoods Brewery launched two new beers over the Victoria Day long weekend – one continuing a popular series of single-hop IPAs, and the other, a collaboration with an award-winning homebrewer, canadianbeernews.com reported on May, 21.

The first, Monogamy (Simcoe) is the seventh beer in the Bellwoods Monogamy series, and the first to be released in custom labelled bottles. The 6.4% abv IPA is available in 500 ml bottles in the Bellwoods retail store.

Available exclusively on tap, meanwhile, is Samurai Sauvin Saison, a beer created by David Thompson for the last year’s Toronto Beer Week Homebrew Competition. As one of the winners, Thompson was given the opportunity to scale his beer up to a larger batch to be brewed at Bellwoods. Samurai Sauvin will be available on draught in the Bellwoods pub while supplies last.

Beachwood Brewing releases Still Life, a Smoked Double Stout, beerpulse.com reported on May, 21.

The stouts label features an original design by Beachwood regular and Still Life Tattoo owner, Tim Shelton. “Tim is an amazing artist with a penchant for stouts. He’s been coming to Beachwood since our doors opened,” says Beachwood BBQ Co-Founder Gabe Gordon.

The stout–originally brewed to commemorate the one year anniversary of Still Life Tattoo in Seal Beach, CA on September 22, 2011–truly embodies the friendship between Still Life Tattoo and Beachwood BBQ & Brewing. “We were thrilled when Tim asked us to brew a beer to celebrate the opening of his shop in Seal Beach; we are even more excited to release it in bottled form,” concludes Beachwood BBQ Co-Founder Gabe Gordon.

Russell Brewing and Mission Springs Brewing, two breweries from British Columbia are getting set to take advantage of the rapidly expanding Asian market, canadianbeernews.com reported on May, 21.

Russell Brewing announced plans last year to establish a presence in China, and those plans are now set to come to fruition with the opening this summer of a small brewery and adjacent brewpub in Hefei, a city of 5.7 mln people in Eastern China. The brewery will be operated by Russell Breweries China, a company formed by Russell in partnership with Vancouver private equity firm FVI Capital and its parent Anyi Capital Group in Shanghai.

Mission Springs Brewing has looked to South Korea for new opportunities, and has partnered with Indulge Korea to have its beer distributed in bottles and kegs in the country.


Brewery news USA, PA: The Brewery at Hershey to open in August
The Brewery at Hershey is preparing to fill its first bottle, pennlive.com reported on May, 18.

Partner Jason Reimer said that the business, which already includes The Vineyard at Hershey, has been approved by the Liquor Control Board. “We're looking at a grand opening of the brewery around the first weekend of August and we could be doing a soft opening in July. We'll be brewing beer within two to three weeks now," Reimer added. Reimer said the new building on the property outside Middletown, is almost completed. Winemaker L. Paul Vezzetti and brew master Ryan DeLutis will share the ground floor of that building. The brewpub will be located upstairs.

Beer and wine tastings will be permitted in the winery, but customers only will be permitted to buy the beer in the brewpub and brewery. The brewery is planning to start by producing four types of beer, including Watermelon Wheat.


Brewery news USA, CO: The American Homebrewers Association (AHA) announces that homebrewers are allowed to transport their brews
The American Homebrewers Association (AHA) announced on May, 22 that the Illinois and Missouri legislatures have passed bills that will allow their states’ homebrewers to transport their brews to share with friends and homebrew club members; to enter homebrew competitions; and for sampling at beer festivals. House Bill 630 passed through the Illinois House and Senate without receiving a single vote against it. The Missouri legislature passed Senate Bill 121, which included an amendment to the state’s homebrew law, expanding homebrewer rights in the state.

"Homebrewing is a hobby that brings people together through sharing. We’re excited that the homebrewers of Illinois and Missouri will soon be able to legally share their brews similarly to other homebrewers across the country," said Gary Glass, the director of the American Homebrewers Association. "We’re grateful for all the support involved in making these legislative changes a reality.”

Once signed, these bills will permit homebrewers to share their creations with friends, family and neighbours beyond the confines of their homes; enter their brews into competitions; serve their beers at festivals; and get feedback on their beer at homebrew club meetings. Brewery news UK: Microbrewing industry expanding to cater to Britain’s more discerning palate
Britain's love affair with quirkily named real ales and their demand for locally produced goods has led to a growing trend in microbreweries that cater to the more discerning palate, Reuters reported on May, 23.

More than 1,000 brewers now operate across the country compared to just over 800 in late 2011, some working out of little more than a large garage but competing for drinkers with giants such as SABMiller and Greene King in a $24.82 billion industry.

"We offer something different. We are not driven on a commercial bent to produce something that is universally popular," said Roland Kannor, managing director of the Brentwood Brewing Company, whose beers include Chockwork Orange and Marvellous Maple Mild.

"And it's nice to be selling something that people want to buy rather than have to buy."

With Britain only narrowly avoiding sinking into a triple-dip recession and wage growth failing to keep pace with inflation consumers have been careful about spending.

Still, campaigns supported by celebrity chefs such as Jamie Oliver and Nick Nairn have been launched to encourage people to shop locally while also getting something extra for their money.

Brewery news The Czech Republic: Czech brewery sues consumer magazine over mycotoxins tests
A Czech brewery is taking the country’s leading consumer magazine to court over tests which detected high levels of mould in one of its brews, Radio.cz reported on May, 23.

The Svijany brewery questions the accuracy of the findings, as additional testing did not find increased levels of mycotoxins in its beer. In an email leaked to the press, the brewery’s manager also says that government subsidies for the magazine should be cut.

In its latest edition, the magazine dTest published the results of tests of 50 Czech beer brands for the presence of mycotoxins which are toxic chemicals produced by moulds. Out of the 50 samples, 37 were found to contain high levels of the substance. Long-term consumption of mycotoxins can lead to health problems and negatively affect the immune system.

The highest levels – 85 micrograms per litre – were detected in Svijanská kněžna, a dark beer produced by the Svijany brewery. In a bid to defend its reputation, Svijany had this and its other brews tested and found that the levels of the substance were within norm. Barley news Germany: Barley exports jump fivefold in March 2013
German wheat exports, the European Union’s second-biggest after those of France, rose 4.7 percent in March from a year earlier. Barley shipments jumped fivefold, Bloomberg reported on May, 22.

Wheat deliveries advanced to 609,609 metric tons from 582,065 tons in March 2012, Germany’s statistics office reported on its website. The value of shipments climbed 30 percent to 164 million euros ($212 million).

Wheat exports in the first nine months of the marketing year begun in July were 5.31 million tons, against 4.1 million tons a year earlier, the figures showed.

Barley shipments jumped to 326,037 tons in March, the highest since April 2011, from 65,171 tons a year earlier. Nine-month exports of the grain rose to 1.53 million tons from 1 million tons.

Corn deliveries declined 6.9 percent to 69,179 tons from 74,273 tons in March last year, the data showed.

Imports of wheat into Germany rose to 308,597 tons in March from 294,491 tons a year earlier, while inbound corn shipments advanced to 189,154 tons from 165,445 tons.


Barley news UK: Growers urged to reconsider winter barley as second cereal
Strong wheat prices and fears over grassweed control have fuelled the growing of second wheats at the expense of winter barley in recent years in the UK, Farmers’ Weekly Interactive reported on May, 22.

But there are strong economic reasons to reconsider winter barley with one breeder urging growers to look again at the crop for the coming season.

Based on HGCA Recommended List (RL) data, over the past decade feed barley had yielded just 4.4% less than a second wheat, said commercial manager Julie Goult at a KWS press briefing held near Royston, Herts.

So using variable costs published by John Nix combined with DEFRA on-farm yield data, this equates to a gross margin of just £12/ha less than second wheat.

And on top of this, the extra value of barley straw over wheat adds another £30-40/ha and there are other benefits, such as an earlier entry for oilseed rape.

But as she pointed out, the HGCA RL data was for wheat and barley plots that are not grown in the same field. "So the figures are not directly comparable." Brewery news World: Molson Coors announces quarterly dividend of $0.32 per share
Molson Coors Brewing announced a quarterly dividend on May 22nd, AnalystRatingsNetwork.com reports. Investors of record on Friday, May 31st will be paid a dividend of $0.32 per share on Monday, June 17th. This represents a $1.28 annualized dividend and a dividend yield of 2.48%. The ex-dividend date is Wednesday, May 29th.

A number of research firms have also recently commented on Molson Coors. Analysts at Nomura reiterated a “buy” rating on shares of Molson Coors Brewing in a research note to investors on Thursday, May 16th. They now have a $61.00 price target on the stock.
