The mystery of glycosidically bound hop aroma compounds and their sensory contribution


ABSTRACT
Only a few studies so far have looked into the flavour potential of glycosidcally bound hop aroma compounds in the case of release of aglycones. These US researchers did an extensive study looking into the effect of enzyme hydrolysis, the use of different yeast strains, acid hydrolysis, as well as different sample preparation methods. Depending on the different treatments, the amount of Linalool, Terpineol, Citronellol, Geraniol, Damascenone, Nerol and also Eugenol increased and significantly influenced the sensory attributes of the beers (mainly herbal, tea, citrus, fruity, piney). In conclusion, CO2 extraction proved to be an effective sample preparation, ale yeast liberate more aroma than lager yeasts, enzymatic treatments depend on the relevant compounds, and acid hydrolisis is very effective.

With no sea in sight, one of the best counters to the broiling summer heat of the Jerusalem hills is a cold beer. Aram Dekel has perfected that antidote in the form of Touching Blade, an allspice beer with a bracing bite. He serves it in an airy, wood-framed restaurant surrounded by tall trees on the Zafririm moshav south of Beit Shemesh. Old pottery shards from the area prove that people have been crafting beer in the Holy Land for thousands of years. Dekel, with his long gray beard and a collection of fermenting honey, ginger, and banana liqueurs, looks like he could have been among those ancient brewers, TabletMag.com reported on July, 12.

Dekel is part of a growing crop of craft-beer brewers in Israel. Ten years ago, the only domestic beer options in Israel were Goldstar and Maccabee lagers. Now, in the Mateh Yehudah region—the triangle between Jerusalem, the Ella Valley, and the far outskirts of Tel Aviv—nearly every farming community has at least one warehouse filled with beer fermenting in stainless-steel kettles. Barley news UK: Barley exports in April higher than in March, malt exports the highest since September 2012
The UK’s barley exports in April were 19.8 thousand tonnes, considerably higher than March’s 5 thousand but still low, HGCA reported last week.

Season-to-date barley exports are 368 thousand tonnes, almost half the amount during the same period last year (764 thousand tonnes).

Malt exports in April were 16.1 thousand tonnes, the highest since September 2012. Total exports for the season at the end of April are 2.5 thousand tonnes (1.5%) behind progress at the same point last season.

The nations’ barley imports this season will be the highest on record since 1995/96. Season-to-date imports are 198 thousand tonnes, compared with a five- year average of season total imports of 123 thousand. One-third was imported from Ireland, with just under a further 25% from Denmark. Germany and Poland were also notable origins, it is reported.
