USA, VA: Spencer Devon Brewing nearing the finish line for April 1 opening

Spencer Devon Brewing’s owners are finally nearing the finish line in what has become a marathon effort to get the brewery and restaurant open, Fredericksburg.com reported on March 10.

Co-owner Shawn Phillips is hoping to be open by April 1—the anniversary of his retirement from the Marine Corps.

The 5,827-square-foot space at 106 George St. in Fredericksburg is starting to take shape. The brewing room is all set up, and Rappahannock River Water Brown, Rocko's Milk Stout and Olde Towne Ale are all ready for drinking.

Spencer Devon has more beers in the pipeline. There’s a pilsner that isn’t quite ready yet, and a dry-hopped IPA and a West Coast-inspired American Pale Ale that will be ready closer to the restaurant’s opening date to preserve their freshness.

With the brewing side ready to go, Spencer Devon’s restaurant is coming along. Much of the construction is already done.

Phillips is in the process of getting the remaining necessary permits, which will determine his exact opening date.

Last year, he hired a brewer and assistant brewer, as well as chef Justin Cunningham, who used to own Fizzlebottom's Café.

Now he’s ready to hire the rest of the staff for the brewery’s opening. He’s looking for five to eight people for the kitchen and 20 to 25 people for the front of the house.
