Not all chemicals are bad. Without chemicals such as hydrogen and oxygen, for example, there would be no way to make water, a vital ingredient in beer.

USA, NC: Durty Bull Brewing Co. aims to open soon in Durham
Brewery news

Durham’s Durty Bull Brewing Co. plans on opening a 15-barrel craft brewery and tasting room at the corner of Broadway and North streets by April. Located at 206 Broadway St., Durty Bull will specialize in barrel-aged and sour beers, while using two 30-barrel oak foeders, Triangle Business Journal reported on October 29.

Matt Pennisi, the face of this four-man operation, who’s previously worked for pharmaceutical giant Merck, explains that if he could help create a cure for chickenpox, he can definitely take a stab at crafting beer.

With the equipment ordered and construction going on at the 6,000-square-foot brewhouse, Durty Bull plans on serving up a Brett IPA, Baltic Porter and many sours beers alongside the barrel-aged program.

“We are focusing heavily on blending beers much like wine makers do,” says Pennisi. “We are brewing everything from a 30-day kettle sour with a brettanomyces primary fermentation to starting a three-year Durham Gueuze project, blending 1-, 2- and 3-year-old lambics.”
