USA, FL: Ology Brewing Co. to officially open its doors on June 23

Ology Brewing Co. — the new beer kid in Midtown — opens Friday, June 23, Tallahassee.com reported.

It's easy to spot with its slate gray facade and garage doors that reveal a quaint, hip interior. The five-barrel brewing company is next door to the Diva's and Devil's boutique on Sixth and Monroe streets.

Ology had a soft opening last weekend, making it the latest local brewing company to launch in Tallahassee. It's owned by Roger Hawkes, Brian Clark, Paul Woodward, Maxwell Arndt and Nick Walker.

Walker, 29, has been crafting beer out of his home for the past eight years. The name of the business is a nod to his family's research roots. His dad, Jim Walker, studied olfaction, the sense of smell, and his grandfather, Lloyd Beidler, did research on the sense of taste and taught at Florida State University.

Walker said Ology will experiment with different beers and flavors, all in the name of beer.

"It’s been a dream of mine for the past four years to make this happen,” said Walker, regarding the opening. "It’s incredible. I never actually thought it was going to happen."
