USA, NY: Ghost Brewing Company eyeing mid-June opening in Bay Shore
The longtime and well-known brewmaster at BrickHouse Brewery, Paul Komsic, is leaving Patchogue for Bay Shore for the startup Ghost Brewing Company, GreaterBayShore reported on May 19.
He will serve as head brewer at Ghost, which is setting up shop within the massive Great South Brewery on Drexel Drive, where the now-defunct Fire Island Beer was to open.
“I get to have full control and will be focusing on a lot of barrel aged stuff, with an eventual blending program,” Komsic told GreaterBayShore, “as well as lots of Belgian influenced work in the mix of the malty wood beers, and hop-forward beers.
“For the hop side of things I plan on doing a lot of mix fermented IPAs, and Belgian IPAs throughout the hop-forward portfolio.”
Ghost is setting up a 15-barrel brew house and a tasting room.
The ownership team is hoping for a mid-June opening.
“We’re looking forward to sourcing a lot of local ingredients when possible, and creating a long lasting relationship with local farmers moving forward,” Komsic said.
The team also plans to play on the Ghost moniker in naming its beers in the realm of the super natural and other wordly. Think Ghost Witte, Vanishing Point, and Afterlife.
“In general a dark, ethereal, type of vibe,” said Komsic.
