USA, TX: Cottonwood Creek Brewery & Smokehouse preparing for grand opening in April

Just off Hwy. 79 in Hutto, something exciting is brewing. Cottonwood Creek Brewery & Smokehouse is preparing for its grand opening this April, promising a brewery experience unlike any other, Storytelling reported on March 8.

“We’re not just about beer,” sales representative Zachary Delmonico said. “We’ve got a full cocktail menu, wine, mocktails and a craft kitchen that serves up great food. Sure, we specialize in smoked meats, but we’re bringing our own style to the table—literally.”

Cottonwood Creek’s journey began in February 2020 with the opening of its taproom. However, when the COVID-19 pandemic hit, the brewery quickly had to adapt.

“For us to keep going, we had to serve 51% food and 49% alcohol,” Delmonico said. “People loved our food. It took off.”

That shift led to the Cottonwood Creek concept seen today—a diverse menu that extends beyond smoked meats to include fresh salads, fried dishes and their unique twist on comfort food. However, the standout feature remains the homemade Reuben sandwich.

“That’s the one,” Delmonico said. “Our go-to.”

Cottonwood Creek offers more than just great beer and food—it’s designed for a welcoming, relaxed experience. With a play area for kids, plenty of TVs and a laid-back atmosphere, it’s a place where guests can unwind and enjoy.

“We want this to be the kind of place where people don’t want to leave,” Delmonico said. “There’s something for everybody.”

The Game Changer is a state-of-the-art smoker designed to keep every cut of meat fresh, juicy and perfectly smoked, ensuring it’s always ready to serve.

Cottonwood Creek is fine-tuning its three flagship brews as it prepares to compete in prestigious beer competitions across Texas, New York state and Colorado later this year.

“We want to be part of the daily routine,” Delmonico said. “The kind of beer you grab at H-E-B and keep stocked in your fridge.”

With brewing expertise from Jerry Coreas, formerly of Independence Brewing and Friends and Allies, alongside Director of Operations Ryan Peterson, who brings 30 years of restaurant experience, this team is well-equipped to succeed.

“We’re bringing something fresh, something different,” Delmonico said. “We can’t wait to share it with the community."
