USA, MI: Next Quest Brewing one step closer to opening its doors in Bay City

The Bay City commission approved a manufacturer license this week for Next Quest Brewing, bringing the medieval-themed business one step closer to opening its doors at 900 6th St., MLive.com reported on February 19.

Zeke Carlyon, who owns the business with his wife Stephanie, has also applied for a liquor license for the planned restaurant and microbrewery, according to city records. The property currently carries residential zoning, where bars, restaurants, and lounges are typically prohibited. However, Carlyon previously secured a use variance from the city to move forward with the project.

Outdoor service will not be permitted despite being included in Carlyon’s liquor license application. The city determined this feature cannot be approved because it was not part of his original variance request.

The Carlyons are converting a former First Congregational Church building into their brewing operation. Zeke Carlyon previously said the church structure offers practical advantages for their concept.

The owners intend to transform the space away from its religious origins, creating a castle-like atmosphere with painted stone walls. Plans include placing medieval video games on the balcony and potentially installing an escape room on either floor of the building.

Next Quest Brewing is also considering programming beyond typical brewery offerings, including yoga sessions paired with drinks and daytime activities designed for children.
