Hops as a regulator for the red coloration of beer
ABSTRACT
For a change, let's go back in history for a little bit. In the early Middle Ages, beer brewers in certain German regions converted from "red beer technology" to "white beer technology (Weissbiertechnologie)". But what does this mean? Though today "Weissbier" means the same as "Weizenbeer" (wheat beer) "Weiss" in this context
is not derived from "weizen" but probably relates to the color of the beers in the old days. But why "red beer technology"? To look into this question German Researchers used black barley from Syria (used in Bronze Age Brewing) for brewing trials. These beers, if unhopped, exhibited a distinctive red hue. However if the wort was hopped the finished beer was not red but pale! And, having said this with reference to the Middle Ages, may the description of this colour change relate to the
advent of the collective use of hops in brewing? This poses the intriguing question of whether individual hop fractions suppress red coloration stemming from barley. Taking the different hop fractions for brewing trials (alpha-acids, beta acids, polyphenols, oils, lipids) and possible mechanisms for colour development, the isoalpha acids were found to be the responsible fraction that inhibits the red colour development. Wouldn't it be nice to share these insights with our brewing colleagues of the middle age? This project was supported with a Barth Haas Grant!

USA, MN: Fulton Brewing Co. embarks on major expansion
|
Fulton Brewing Co., which began brewing beer in a one-car garage just seven years ago, has embarked on a major expansion with plans to open a new production facility in northeast Minneapolis, Star Tribune reported on September 6.
In a statement posted on its website, Fulton confirmed that it will begin brewing beer at a 51,000-square-foot facility at 2540 2nd Street NE. in late 2014.
The move means Fulton, known for its Sweet Child of Vine and Lonely Blonde varieties, can bring all of its production in-house with initial capacity of 20,000 barrels of annual production. It also permits the brewer to distribute beyond the Twin Cities and expand its seasonal and now-limited lineup of Garage Series beers.
The new site, however, will not feature a taproom — state law limits brewers to only one taproom license. Fulton said it will continue to operate its current taproom in the shadow of Target Field, where it will brew small batches of beer.

USA, OH: The Dayton Beer Co. ready to grow again
|
The Dayton Beer Co. is ready to grow again. The production brewery and tasting room in Kettering opened with a nano system in May 2012, but quickly upgraded to a seven-barrel brewhouse to keep up with demand, Ohio.com reported on September 4.
Now, owner/brewer Pete Hilgeman is making the leap to a 15-barrel brewhouse — and downtown Dayton. He says Dayton Beer will open a new production brewery with the larger system and a tasting room downtown.
He’s scouting possible locations and even talking with some restaurants about partnering to provide food at the new site.
“We really like the market that the downtown is going to provide,” Hilgeman said. “There’s a lot of foot traffic around it. It’ll be nice to have the Dayton Beer Co. based in downtown Dayton.”
The goal is to open in the first quarter of next year.
Dayton Beer won’t abandon its current suburban location, which is in a small strip mall. It will continue to use its pilot system there to test brews and offer a tasting room in Kettering. USA, MI: Big Lake Brewing owners satisfied by their progress
|
It was never the intention of craft-beer buddies Nic Winsemius, Greg Mackellar and Travis Prueter to start up their own little microbrewery and go up against an established operation such as New Holland Brewing Company right in the heart of downtown Holland.
Far from it.
The three friends, all from engineering backgrounds, just wanted to have a place where they'd be able to experiment with brewing up some suds, provide a relaxing atmosphere for like-minded folks to enjoy a mug of ale and, perhaps, turn that shared passion into a profitable business, according to The Holland Sentinel.
"It was sort of surreal when we first opened," said Winsemius, one of the co-founders of Big Lake Brewing LLC, which debuted July 5 in the Family Fare shopping center on Butternut Drive. "It's our dream to open our own place, but it still takes a little while for it to set in."
The initial success of Big Lake has been a pleasant surprise for the three equal partners.
In the first month, they did well enough to add a third fermenter, sticking to their strict plan of putting the modest profits from the sales of craft beer, hard cider and wine back into the business.

USA, CO: Boulder’s newest craft brewery launched last week
|
Boulder's newest craft brewery had its grand opening Friday, September 6, Daily Camera reports.
Sanitas Brewing Co. opened at 3550 Frontier Ave., in a 15,000-square-foot space that formerly housed the city's sole velodrome.
Michael Memsic and Chris Coyne, former employees of Boulder Beer Co., founded Sanitas Brewing. They brought Zach Nichols, a brewer and designer, on board to develop the brewery's brand.
When Sanitas Brewing leased the space earlier this year, the founders' initial plans called for the installation of a 15-barrel brewhouse, canning line and tasting room that, when combined, would fill a portion of the leased space.
The facility includes a three-season patio with McDevitt Taco Supply stationing a food cart on site, officials said.
Sanitas joins the ranks of nearly 20 craft brewing operations in the city of Boulder.

USA, MI: Bifferhaus Brewing Company hoping to launch soon in Jackson
|
After brewing beer for nearly two decades in his home for friends and family, Terry Howard has decided to invite the public to enjoy his brews, MLive reported on September 7.
Howard plans to open a microbrewery called the Bifferhaus Brewing Company, located at 900 Lansing Ave. in Jackson, MI. There is no set opening date, but Howard hopes to open soon. He said he is waiting on his license from the state of Michigan, and after he receives his license, he will begin the brewing process, which takes about three to four weeks.
Howard, from Albion, said he decided to open his own micro-brewery after friends and family told him how good his homemade craft beer was.
“In the last couple of years, some of my friends told me I should open a microbrewery,” Howard said. “I love brewing beer and love it when others enjoy drinking the beer I brew. So, I decided to open a microbrewery.”
The beers Howard will craft include Porters, Brown Ales, IPAs (Indian Pale Ales), Pale Ales, fruit beers and seasonal ales. He said he plans to have eight different brews on tap and is working on a Cask beer, which is a beer that is served

|
Jim Koch, the 64-year-old co-founder of Boston Beer Company, has a lot of reasons to raise a bottle of one of his trademark Samuel Adams Boston Lager's in a toast this week. Specifically, one billion reasons, The Huffington Post reported on September 10.
On Monday, September 9 the Bloomberg Billionaires Index estimated Koch's net worth above a billion dollars for the first time, making Koch the first person to make a billion dollars off craft beer.
Koch's ascension to the billionaire club is partially a testament to the continuing strength of the craft beer industry. American sales of craft beer have grown at least 10 percent a year for each of the past seven years, according to the Brewers Association. But it's also a testament to the particular success of Koch and his co-founders. Since founding Boston Beer Co. in 1984, they've expanded their beer variety, production capacity and distribution network relentlessly, showing that brewing high-quality beer can be a good business model if done right.

The first set of usage data for the 2013/14 season was published by Defra on September 5.
The UK’s brewers, distillers and maltsters (BDMs) used the biggest amount of barley for the month of July on records dating back to July 1991, as they used 156 thousand tonnes of the cereal in July 2013.
Maltsters used 13% more barley compared to the same time last year at 150 thousand tonnes while brewers and distillers used 28% more.
Overall wheat usage by the sector was also a July record at 58 thousand tonnes.

HGCA posted on September 3 an update on the harvest progress in the Northern Hemisphere.
As at 8 September 2013, 89% of barley was harvested in the US.
In France, soft wheat and spring barley harvest was complete by August 26.
In the UK, as at 3 September, the harvest of sinter barley area was complete and 70% of spring barley area was complete
In Canada, the state of Alberta as at August 27 harvested 14.4% of its barley area.
As at August 8, winter barley harvest was almost complete in the Czech Republic with a small improvement in yields compared to the five year average; 25% of spring barley had been harvested.
As at August 5, Spain harvested 90% of total barley area.

Pablo Flores has big dreams for his tiny craft brewery, which produces smooth golden and brown ales in bottles with dandy labels.
“We’d like to be all across the republic, in every state,” Flores says.
But for now, his brewery, Cerveceria Albur, has a more mundane challenge – getting a spot on the menus of restaurants and a place on supermarket shelves in Monterrey, northern Mexico’s industrial hub, Miami Herald reported on September 9.
Dozens of small craft brewers are popping up in Mexican cities with flashy bottles and catchy names like Atomica, Border Psycho and Primus. Together, however, they have less than 1 percent – 0.64 percent to be precise – of the market. That’s because two behemoths control 98 percent of the beer consumed in Mexico, employing tactics that lock out most newcomers.
As Mexico tries to bust open some of the monopolies and concentrated economic power that stifle its economy, attention has focused on the conglomerates that control television and fixed-line and cellular telephones. Yet beer is another area that has been sharply restricted for decades. The market only now is opening slightly, serving as a litmus test for whether anti-monopoly regulators under President Enrique Pena Nieto will act more aggressively.

UK: Hop growers benefiting from rise in craft brewing at home and abroad
|
British hops growers are benefiting from the rise in craft brewing at home and abroad, British Hop Association chair and hop grower Ali Capper was quoted as saying by Horticulture Week on September 9.
"Overall beer sales are flat or in decline, but that's at the commodity, price-driven end of the market, but the niche, craft end has seen exponential growth," she said.
"Then there are export opportunities to places like the US, where British hops tick the boxes."
But she added that this year's crop "is a little thin" as plants failed to put on lateral growth during the warm dry summer, following a late start to the growing season. "But the important thing is the
quality is there."
Britain's centre for hop breeding is well ahead of its competitors in other countries where hop production is much more significant, putting UK hop growing on a sound footing for the future, breeder Dr Peter Darby said in an interview on August 30.
"We are unique in the world in that we take just as much care over the male parent - and that's where most of the interesting characteristics have come from," he said.
Most significant of these has been dwarfing, allowing "hedgerow" growing formats.
