From wort to beer, the evolution of hoppy aroma


ABSTRACT
A team of researchers took a deeper look into the evoluation of hoppy aroma of single hop beers according to brewing regime. They found that the level and composition of the floral and sesquiterpenoid hop oil fraction significantly changes through the brewing process. Fermentation and centrifugation were identified as the crucial process steps. They also found that methyl esters, branched esters, terpenoids as well as oxidized derivatives of alpha-humulene and beta-caryophyllene are characteristic for early and late kettle hopped wort. Highest concentrations of geraniol and linalool are found in the late hopped wort. Although dry-hopping has a predominantly quantitative influence on the volatiles, high concentrations of compounds like β-citronellol were found to be characteristic for dry hopping, which partly explains the often more intense fruity and citrusy characters of dry hopped beers.

Brewery news Portugal: Government to raise beer taxes next year
Portugal’s government has decided to increase the taxes on alcoholic beverages, including beer, next year aiming at receiving more than EUR 11.9 mln as returns from the increase, Destak reported on October 15.

All beer categories, from low- to high-strength beers, will see an increase in excise duties, it is reported.


Brewery news Zimbabwe: SABMiller’s Delta Corp. reports 5% rise in H1 revenue
Delta Corp., the Zimbabwean brewer that’s the nation’s biggest company by market value, said first-half revenue climbed 5 percent as an increase in sales of sorghum-based beer offset a decline in lager volumes, Bloomberg reported on October 16.

Revenue from sorghum brews, which comprised 60 percent of sales in Delta’s beer category in the year ended March, rose 9 percent in the six months ended Sept. 30 from a year earlier, the Harare-based company said in a statement on its website. Lager sales fell 10 percent, it said.

“Consumer demand has remained generally soft, a trend that has been evident since the beginning of the calendar year,” Delta said.

Lager-beer sales in Zimbabwe have been curbed after an excise duty increase in December 2012 and a lack of small coinage in a multi-currency economy. Delta is an affiliate of SABMiller Plc, the world’s second-largest brewer, which holds a stake of 25 percent, according to the London-based company’s annual report for the year through March.

Sales of sparkling beverages climbed 8 percent in the first half, Delta said. The company didn’t provide figures in its trading update. Delta will publish the results on Nov. 14.

In 2014, the Brewers Association (BA) will host the tenth edition of the World Beer Cup® (established in 1996). The BA is inviting breweries from around the globe to enter the competition.

The mission of the World Beer Cup is to create greater consumer awareness around the world about the quality and diversity of beers brewed around the world.

Breweries from dozens of countries and every continent have won awards at the World Beer Cup. They proudly use their prestigious awards to promote their beer and to grow a following of enthusiastic beer lovers.

Entries for the 2014 World Beer Cup will be accepted online starting November, 2013. More information will be found at WorldBeerCup.org. The competition is predicted to be completely full again in 2014, so please plan to register early.

Judging will take place April 7 and 8, 2014. Awards will be presented at the World Beer Cup Gala Awards Ceremony on April 11, 2014, during the Craft Brewers Conference in Denver, Colorado.

Brewery news EU: VLB to investigate the problem of gushing in beer
"Gushing", where the contents of a beer bottle or can empty when the top or ring pull is removed, can be caused by many factors. Several of these are well understood, and can be controlled by the brewer, but there is a contribution to gushing that correlates with the malt and the barley used, HGCA reports.

It is highly likely that there is an interaction between the malt and other factors, as malt which is associated with gushing in one brewery does not cause it in another. Suspicion rests with fusarium infection of the barley and there is a hypothesis that proteins produced by the mould – called hydrophobins – are a cause of gushing.

To test this hypothesis, and to conduct a wider investigation, the maltsters and brewers of Europe have banded together to fund a research project at the Berlin School of Brewing (VLB).


Brewery news Africa: Dutch Bavaria brewery to launch new dark beer in Africa
The Bavaria brewery from the Netherlands is to launch 8.6 Black, a dark version of its classic Bavaria 8.6 beer on the African market, PackagingEurope reported on October 14.

8.6 Black is the latest addition to the 8.6 range from tradition-steeped Dutch brewers Bavaria. The newcomer, a dark beer, comes in alongside Bavaria’s existing Original, Red and Gold beers. The new beer is brewed on the basis of the classic 8.6 Original. Likewise featuring an alcohol content of 7.9 percent, 8.6 Black hits the shelves first in Africa and Asia, where the stout beers segment is currently seeing enormous growth.

8.6 Black will be launched to start with in Tanzania, Kenya, Mali and Burkina Faso. Thailand, Asia, Canada and the USA will follow, the company said.

Since its foundation in 1680, Bavaria has always used all-natural ingredients. The family-owned Dutch brewery in Lieshout solely uses top-quality water, hand-selected hops and malt from its own malt house.
