From wort to beer, the evolution of hoppy aroma
ABSTRACT
A team of researchers took a deeper look
into the evoluation of hoppy aroma of single hop
beers according to brewing regime. They found
that the level and composition of the floral and
sesquiterpenoid hop oil fraction significantly
changes through the brewing process. Fermentation and centrifugation were identified as
the crucial process steps. They also found that
methyl esters, branched esters, terpenoids as well
as oxidized derivatives of alpha-humulene and
beta-caryophyllene are characteristic for early and
late kettle hopped wort. Highest concentrations of
geraniol and linalool are found in the late hopped
wort. Although dry-hopping has a predominantly
quantitative influence on the volatiles, high
concentrations of compounds like β-citronellol
were found to be characteristic for dry hopping,
which partly explains the often more intense fruity
and citrusy characters of dry hopped beers.

USA, MT: Bozeman Brewing Company introduces three new beers
|
Bozeman Brewing Company has released Bozone Hefeweizen, Hopzone IPA and Bozone Plum St Porter in 12-ounce aluminium cans. These beers join the award-winning Bozone Select Amber Ale on store shelves across Southwest Montana, Brewbound reported on October 14. The six-packs are also available at the brewery and flow on tap alongside of other seasonal varieties at the local Tasting Room.
This summer the Brewery installed four new 40 bbl. fermenters to increase production and support canned beer demand. The installation, which took place via a crane and a hole through the building’s ceiling, will facilitate producing up to 10,000 barrels of beer a year.
The release is an important event as Montana gains momentum in the craft brewing industry. Nationally, Montana ranks second behind Vermont with the most breweries per capita. The state is home to 38 breweries. Craft beer is harnessing national attention and Montana is doing its part.

USA, CO & OH: New Belgium Brewing announces distribution network in Ohio
|
New Belgium Brewing, the third largest craft brewery in the USA announced on October 14 that it has signed deals with nine wholesale partners in Ohio to start distributing its beer across the state, reported Brewbound. The Ohio partners -- a mix of Anheuser-Busch and MillerCoors distributors -- are:

•Heidelberg Dist. (Dayton, Toledo, Lorain and a portion of Columbus)
•Stagnaro Distributing Co.
•Bonbright Dist. Co
•Classic Brands of Ohio
•Choice Beverage

Like previous launches in Alaska, Florida, Louisiana and Delaware this year, New Belgium will take a phased rollout approach, leading with 22 oz. bottles of its core brands – Fat Tire, Ranger IPA – as well as seasonal release Accumulation White IPA and various Lips of Faith series beers.
Ohio is now the 35th state where New Belgium products are sold. The brewery said it is also planning to release its portfolio-wide packaging refresh in the state this December, pending TTB final approval. The new look will enter all other markets in January of 2014.

USA, FL: Green Bench Brewing to open in St. Petersburg
|
1920s-era warehouse in St. Petersburg is now home to a large-scale craft microbrewery, as reported by Tampa Bay Business Journal on October 14.
Green Bench Brewing Co. is scheduled to host an opening party on Oct. 19.
The brew house at 1133 Baum Ave. N. features a 1,500-square-foot tasting room and a 6,000-square-foot beer garden.
Owners Steven Duffy and Nathan Stonecipher named the brewery after the green benches that were once common along Central Avenue.
Two additional breweries, St. Pete Brew on First Avenue North and Three Daughters Brewery on 22nd Street South are under construction in St. Petersburg.

USA, NY: A limited edition Box of Hops to be released in Ithaca
|
Ithaca, New York’s Ithaca Beer Co. is introducing a limited release of a Box of Hops—a new, limited edition variety pack, reports Shanken News Daily.
Billed as a “Special Collection of Extra Hoppy Beers,” the 12-pack offering will feature Ithaca’s core Flower Power IPA plus three entries brewed exclusively for the collection, including Dark Vine Black IPA, Double Zilla Double Red IPA and The Creeker Double IPA.
Only 10,000 Box of Hops packs will be available across select Northeast markets. Dark Vine, Double Zilla and The Creeker will also make limited draft appearances throughout the region.
Ithaca Beer’s Box of Hops marks the first in a new series of variety packs set to launch over the next year. They will be followed by a Belgian beer pack in spring and a five-barrel, draft-only collection in summer, before returning in October 2014.

USA, FL: First Craft Brewery in Miami, Wynwood Brewing Co. opened on October 11
|
Wynwood Brewing Co officially opened on October 11 even though its logo says “Established 2011.” This year, its father-son owners received a $420,000 government loan to help build their 15-barrel brewery. The seven-year, interest-free loan, which requires no payments for the first two years, comes from funds from the federal government’s Community Development Block Grants but is administered by the city.
The brewery is situated just east of Interstate 95 on a street lined with single-level warehouses, many tagged with graffiti art. It is a few blocks over from the busier Northwest Second Avenue, home to several of the Wynwood Arts District’s galleries and restaurants.
Wynwood’s current lineup of beers, which have been available at a few local bars and restaurants for the past month, includes Lupulado, a pale ale brewed with citrusy Cascade hops, and Oscura, a stout brewed with coffee from Wynwood roaster Panther Coffee.
The brewery is set up to crank out about 1,200 barrels of beer in the next year. Wynwood doesn’t have a bottling line in place, but Brown Distributing will send kegs of Wynwood brews around South Florida.

USA, MI: Bell's Brewery to open a new Location
|
Escanaba located in the Upper Peninsula held a groundbreaking ceremony on October 11 to welcome a new brewery and bottling facility. Bell's Brewery's 11,500-square-foot facility is expected to employ five or six people, will cost about $1.6 million, and will sit on a five acre site in the "Renaissance Zone" of the Delta County Airport.
The first three beers that will be made inside the brewery will be called Upper Hand Lager, Upper Peninsula Ale, and Escanaba Black Beer.
Among those in attendance for the groundbreaking ceremony were members of the Bay de Noc Brewers Club who said having a top selling company will be a great addition to the area.

USA, WA: Airways Brewing Company offers Maylani’s Coconut Stout
|
Airways Brewing Company is releasing a tropical treat for craft beer lovers throughout the Puget Sound area. A long-time favorite in the Airways Tap Room, Maylani’s Coconut Stout will be now be available from October to April in 4-packs of 16 oz. cans and on draught beginning Thursday, October 10, Brewbound reported on October 8.
Maylani’s Coconut Stout (5.3 percent ABV) is an easy drinking beer with the subtle aromas of chocolate and coconut, thanks to the 10 pounds of locally sourced cocoa nibs and fifty pounds of toasted coconut added to each batch.

USA, ME: Rock Harbor Brewing Co. becomes the first craft brewer in Rockland
|
It’s been two years since Rock Harbor, a restaurant and pub on Main Street, sprung up. But working pretty much seven days a week to get the new restaurant up to speed wasn’t the only priority for owner Dan Pease. He had a vision all along to add a brewery to the restaurant and after several months of construction and brewing, he introduced three new Rock Harbor beers to the public this past weekend, October 12-13, just in time for football season, Penobscot Bay Pilot reported on October 8.
A home brewer himself, Pease said he wanted to put a brewery in when they opened the restaurant, but held off until he could first research the best type of commercial system to purchase.
The copper and stainless steel system is encased in a glass room that has taken up some restaurant space, but affords patrons and passersby on Main Street an attractive view of the brewery’s inner workings.

USA, MA: Boston Beer makes its first West Coast IPA
|
The Boston Beer owner, Jim Koch has played with hops over the years, rolling out offerings like Latitude 48, Whitewater IPA, Third Voyage Double IPA, even a mixed-IPA variety pack.
But the industry has changed in the 30 years since Koch founded Boston Beer, and rather than remaining just another style for brewers to play with, the IPA category now dominates the craft beer scene, Brewbound reported on October 11.
“We have been making IPAs for a long time but never really done a straight ahead, West Coast IPA, which is what everyone else has been doing,” Koch said.
Until now. Boston Beer opened the taps on a new, year-round West Coast style IPA called Rebel at this year’s GABF. The company has already tested the new beer in markets like Dallas. Brewed with Chinook, Centennial, Cascade, Simcoe and Amarillo hop varieties, the beer checks in at 6.5 percent ABV and is scheduled to rollout nationally next February.
The company plans to make Rebel a primary focus in 2014, alongside its flagship Boston Lager and various seasonal offerings.
To help catch the consumer eye, Boston Beer has departed from its familiar, traditional look. The Rebel label features an edgy and chaotic graffiti design.

Canada, ON: Ontario Beer Company to launch with two brews made entirely from Ontario ingredients
|
In what is believed to be first in Ontario’s modern brewing scene, beer drinkers will soon be able to enjoy a pair of widely released brews made using 100% Ontario ingredients, all thanks to a unique partnership between two brewers and several of the province’s hop growers as reported by CBN on October 15.
Ontario Beer Company is an initiative from brewers Michael Duggan (Duggan’s Brewery) and Brad Clifford (Get Well Bar), a duo who have previously collaborated on smaller scale all-Ontario beers that have been available exclusively at Get Well. For this new project, the pair have teamed up with hop growers Hugh Brown (Heritage Hill Organics, Barrie, ON), Daniel Sabourin (Nation Hops, St-Bernadin, ON) and Hugo Desrochers (Tribal Hops, Iroquois, ON).
Using freshly harvested hops from these three farms along with select Ontario-grown malted barley, Duggan and Clifford have crafted two beers – 100 Mile Lager and 100 Mile Ale.
Both 100 Mile brands will be released in November, and will be available in 473 ml cans at LCBO outlets throughout Ontario.

Canada, BC: Storm Brewing gets new retail license two days after original license removal
|
Two days after its license to sell beer to private individuals was revoked due to a mix-up between two provincial government agencies, Vancouver’s Storm Brewing announced on October 9 that a new license has been issued, allowing the brewery to once again sell kegs and growlers to non-licensees as reported on CBN.
The original license removal was triggered by an inspection by Liquor Control and Licensing Branch (LCLB) representatives who informed Storm owner and brewer James Walton that the brewery lacked the proper license to sell directly to the public – this despite the fact that another government agency, the Liquor Distribution Branch (LDB), had approved the sales and issued valid SKUs to Storm for all of the products it was selling.
While Walton gave no details of the reasons behind the turnaround on the part of the LCLB, it’s likely that coverage of the situation by various blogs and media outlets played some part in the quick resolution.

Canada, BC and USA, WA: Central City intends to build its brand on the US market
|
Central City Brewers and Great Artisan Beverage Company have announced a new partnership that will see select Central City beers distributed in four new states in the US, CBN reported on October 9.
Set to be available under the brand name Red Betty rather than the usual Red Racer due to a 2012 legal settlement, the beers will be distributed by Great Artisan into Washington, Oregon, Idaho and Alaska.
“We look forward to our partnership with Great Artisan Beverage Company and the opportunities it provides Central City to build our brand in the United States,” noted Tim Barnes, Central City’s VP of Marketing & Sales, in a statement.
Nick Gagliardi, President of Great Artisan Beverage Company, added that his company is “proud to partner with such high quality organization of Central City Brewers whose product quality and craftsmanship fits perfectly into the portfolio of Great Artisan Beverage. We look forward to selling and marketing these craft products throughout our geography.”

Canada, BC: Canada’s brews to be distributed in California
|

USA, PA: Manayunk Brewing Company is expanding its brewery
|
One of Philadelphia’s breweries is expanding. In addition to announcing a new fall menu that includes several gluten-free options, Manayunk Brewing Co. revealed it will be shutting its doors soon for a large-scale expansion. The Main Street brewery, which celebrates its 17th anniversary this month, says the renovations will allow it to increase its beer production from 1,800 barrels annually to an estimated 4,000 barrels by 2015.

USA, CA: Anchor Brewing from San Francisco releases No.5 in the Zymaster brewing series
|
Anchor Brewing has been revolutionizing beer production since 1965. It originated today’s craft beer movement and produced America’s first craft-brewed, dry-hopped ale in 1975.
Over the years, Anchor Brewing experimented with many different hops from around the world. For Zymaster Series No. 5: Harvest One American Pale Ale, Anchor Brewing decided to feature an experimental new hop variety. This yet unnamed aroma hop provides a uniquely Anchor twist to Zymaster 5.

Zimbabwe: SABMiller’s Delta Corp. reports 5% rise in H1 revenue
|
Delta Corp., the Zimbabwean brewer that’s the nation’s biggest company by market value, said first-half revenue climbed 5 percent as an increase in sales of sorghum-based beer offset a decline in lager volumes, Bloomberg reported on October 16.
Revenue from sorghum brews, which comprised 60 percent of sales in Delta’s beer category in the year ended March, rose 9 percent in the six months ended Sept. 30 from a year earlier, the Harare-based company said in a statement on its website. Lager sales fell 10 percent, it said.
“Consumer demand has remained generally soft, a trend that has been evident since the beginning of the calendar year,” Delta said.
Lager-beer sales in Zimbabwe have been curbed after an excise duty increase in December 2012 and a lack of small coinage in a multi-currency economy. Delta is an affiliate of SABMiller Plc, the world’s second-largest brewer, which holds a stake of 25 percent, according to the London-based company’s annual report for the year through March.
Sales of sparkling beverages climbed 8 percent in the first half, Delta said. The company didn’t provide figures in its trading update. Delta will publish the results on Nov. 14.

Portugal’s government has decided to increase the taxes on alcoholic beverages, including beer, next year aiming at receiving more than EUR 11.9 mln as returns from the increase, Destak reported on October 15.
All beer categories, from low- to high-strength beers, will see an increase in excise duties, it is reported.

In 2014, the Brewers Association (BA) will host the tenth edition of the World Beer Cup® (established in 1996). The BA is inviting breweries from around the globe to enter the competition.
The mission of the World Beer Cup is to create greater consumer awareness around the world about the quality and diversity of beers brewed around the world.
Breweries from dozens of countries and every continent have won awards at the World Beer Cup. They proudly use their prestigious awards to promote their beer and to grow a following of enthusiastic beer lovers.

EU: VLB to investigate the problem of gushing in beer
|
"Gushing", where the contents of a beer bottle or can empty when the top or ring pull is removed, can be caused by many factors. Several of these are well understood, and can be controlled by the brewer, but there is a contribution to gushing that correlates with the malt and the barley used, HGCA reports.
It is highly likely that there is an interaction between the malt and other factors, as malt which is associated with gushing in one brewery does not cause it in another. Suspicion rests with fusarium infection of the barley and there is a hypothesis that proteins produced by the mould – called hydrophobins – are a cause of gushing.
To test this hypothesis, and to conduct a wider investigation, the maltsters and brewers of Europe have banded together to fund a research project at the Berlin School of Brewing (VLB).

Africa: Dutch Bavaria brewery to launch new dark beer in Africa
|
The Bavaria brewery from the Netherlands is to launch 8.6 Black, a dark version of its classic Bavaria 8.6 beer on the African market, PackagingEurope reported on October 14.
8.6 Black is the latest addition to the 8.6 range from tradition-steeped Dutch brewers Bavaria. The newcomer, a dark beer, comes in alongside Bavaria’s existing Original, Red and Gold beers. The new beer is brewed on the basis of the classic 8.6 Original. Likewise featuring an alcohol content of 7.9 percent, 8.6 Black hits the shelves first in Africa and Asia, where the stout beers segment is currently seeing enormous growth.
8.6 Black will be launched to start with in Tanzania, Kenya, Mali and Burkina Faso. Thailand, Asia, Canada and the USA will follow, the company said.
Since its foundation in 1680, Bavaria has always used all-natural ingredients. The family-owned Dutch brewery in Lieshout solely uses top-quality water, hand-selected hops and malt from its own malt house.
