From wort to beer, the evolution of hoppy aroma


ABSTRACT
A team of researchers took a deeper look into the evoluation of hoppy aroma of single hop beers according to brewing regime. They found that the level and composition of the floral and sesquiterpenoid hop oil fraction significantly changes through the brewing process. Fermentation and centrifugation were identified as the crucial process steps. They also found that methyl esters, branched esters, terpenoids as well as oxidized derivatives of alpha-humulene and beta-caryophyllene are characteristic for early and late kettle hopped wort. Highest concentrations of geraniol and linalool are found in the late hopped wort. Although dry-hopping has a predominantly quantitative influence on the volatiles, high concentrations of compounds like β-citronellol were found to be characteristic for dry hopping, which partly explains the often more intense fruity and citrusy characters of dry hopped beers.

Brewery news Australia: Victoria Bitter sales growth offset by decline in demand for Carlton Draught in the last six months - SABMiller
The continued resurgence of Victoria Bitter over the last six months was offset by a decline in Carlton Draught, SABMiller reported on October 17.

SABMiller said VB was up five per cent for the six months to September 30, “although this positive performance was offset by a decline in Carlton Draught”, while Crown Lager volumes grew by 10 per cent.

Peter Filipovic, director of sales at subsidiary Carlton & United Breweries (CUB), said the figures showed the rejigged Victoria Bitter and Crown Lager were resonating with drinkers, and in a tough beer market, the brewer had to keep the momentum going.

“There is no doubt that beer continues to be a very challenging category and we have invested significantly in developing strategies to grow the beer and cider categories for all of us,” he said.

“We’re committed to working with all our partners to keep raising the profile of beer and cider.”

SABMiller said Peroni Nastro Azzurro continued to grow strongly in Australia, up 25 per cent. Total domestic volumes, including discontinued brands, were down by seven per cent.

Brewery news USA: Consumer sues Anheuser-Busch for “misleading” Beck’s beer advertising and packaging
Missouri water isn’t the same as the water from German rivers, according to a Beck’s beer drinker who’s suing Anheuser-Busch, St. Louis Post Dispatch reported on October 18.

A Florida resident has filed a lawsuit against A-B, alleging that the brewer is leading customers to believe that Beck’s beer sold in the United States is brewed in Germany.

A-B denies the allegation, saying that Beck’s beer sold in the U.S. is clearly labeled as being made in America.

Francisco Rene Marty filed a federal lawsuit in the U.S. District Court, Southern District of Florida, on Oct. 9, claiming A-B’s advertising and packaging mislead customers to pay more for a beer they incorrectly believe is an import. The lawsuit seeks class action status on behalf of Beck’s beer drinkers.

St. Louis-based A-B is the North American headquarters of AB InBev, which owns the Beck’s brand. Beck’s, a pilsner style beer, was founded in Germany.

After Belgium-based InBev’s purchase of A-B in 2008, production of Beck’s sold in the U.S. shifted to A-B’s brewery in St. Louis, drawing the ire of some customers who say they can detect a difference.

Brewery news Malaysia: Malaysia losing huge revenues to beer smuggling
Malaysia is now losing huge revenues to cheap imported beer, much of it being smuggled in without taxes being paid.

Due to high import duties on beer, many smugglers have been smuggling beer in illegally. Current estimates conclude that Malaysia may be losing as much as RM 250 million to beer smuggling, Value Walk reported on October 17.

While Malaysia is a Muslim country, it is also a big drinking country. In fact, the World Health Organisation reports that Malaysia is the 10th highest beer consuming country in the world. Malaysia officially spent over 1.5 billion ringgit on beer in 2010, with about 11 litres of beer consumed per person. It should come as no surprise then that the government may be losing hundreds of millions of dollars in revenue to smugglers.

As Malaysia is a moderate Muslim country and home to millions of non-Muslim people, the government has generally taken a lax stance towards alcohol consumption. It does, however, charge high import duties on any alcohol imported into the country. Indeed, the mark up of beer and alcohol can be has high as 300% or more when compared to neighboring countries such as Thailand and Cambodia.

Brewery news EU: The Brewers of Europe welcome new report recognizing the job-generating potential of the beer sector
The Brewers of Europe have welcomed a new report adopted by the European Economic and Social Committee (EESC) that recognizes the potential of the beer sector to generate jobs and growth.

This new report calls on EU policymakers and member states to back the beer sector. It presents the important role of the brewing sector in providing jobs both as a direct employer and as part of the hospitality sector value chain.

According to the report, breweries in the EU provide over 128,800 direct jobs and that two million jobs can be attributed to the sale of beer, about 1% of all EU jobs.

The Brewers of Europe secretary general Pierre-Olivier Bergeron said that the new report shows that Europe's brewers remain global leaders and that they have adapted in the face of economic crisis.

"However, the report makes clear that there is untapped potential in our sector and that supportive taxation and trade policies, along with full recognition of the important role of the hospitality sector, can help us maintain our global standing and provide growth and jobs," Bergeron added.

Asia Pacific Breweries' (APB) top executive for Singapore is the latest senior manager to leave the Tiger Beer brewer, BT Premium reported on October 17.

Bennett Neo, regional director for Singapore, Indochina and Exports, will serve out his last day at the end of the year to pursue "new challenges" outside of the industry, according to him and APB spokesman Mark Campbell.
