From wort to beer, the evolution of hoppy aroma


ABSTRACT
A team of researchers took a deeper look into the evoluation of hoppy aroma of single hop beers according to brewing regime. They found that the level and composition of the floral and sesquiterpenoid hop oil fraction significantly changes through the brewing process. Fermentation and centrifugation were identified as the crucial process steps. They also found that methyl esters, branched esters, terpenoids as well as oxidized derivatives of alpha-humulene and beta-caryophyllene are characteristic for early and late kettle hopped wort. Highest concentrations of geraniol and linalool are found in the late hopped wort. Although dry-hopping has a predominantly quantitative influence on the volatiles, high concentrations of compounds like β-citronellol were found to be characteristic for dry hopping, which partly explains the often more intense fruity and citrusy characters of dry hopped beers.

Brewery news USA, OH & MA: Boston Beer’s Samuel Adams Brewery expanding in Cincinnati
Boston Beer Co. Inc. is expanding its Samuel Adams Brewery in Cincinnati’s West End, as reported in the Cincinnati Business Courier’s exclusive. According to documents filed with the Cincinnati Department of Planning and Building, the brewer is planning a 6,700-square-foot expansion. The contractor is listed as Cincinnati-based Reece-Campbell Inc. The building permit application applied for but not yet issued is for a “beer storage building addition.”

Jessica Paar, senior public relations manager for Boston Beer Co., said the company is continuing to invest in its capability and capacity at the Samuel Adams Cincinnati Brewery. She said the company has added several tanks that will be used for aging and fermentation, enabling the brewery to increase production.

“Our brewing team continues to work hard and is excited about the additional capabilities,” Paar stated in an email.

Boston Beer would not disclose the amount of the investment it is making in its Cincinnati brewery, and the application filed with the city is for only the foundation, valued at $700,000. Boston Beer’s full year 2013 capital spending was increased at the end of July to between $100 million and $140 million from $85 million to $105 million. That spending includes investment in the company’s breweries.

Barley news USA, MT: Malting barley 2013 harvested for MillerCoors in Montana
They say wheat is king in Montana, but according to MillerCoors officials, malting barley is just as important to the state’s agricultural economy, and certainly to the MillerCoors plant in Huntley, reports Prairie Star.

“Montana growers produce about a quarter of the barley our company uses,” said Wade Malchow, manager of Strategic Sourcing of Brewing Materials for MillerCoors. “We couldn’t achieve what we need to in the brew house or in the marketplace without the hard work the growers put into producing pristine, high quality barley.”

While official harvest tallies aren’t in yet, Montana is expected to be one of the top barley-growing states in the nation – if not the top – in 2013.

According to the National Agricultural Statistics Service, Montana producers harvested 44.82 million bushels of barley this year, a 7 percent increase from the 41.87 million bushels harvested last year and much more than the 31 million bushels produced in 2011.

The average yield this year was 54 bushels per acre, up 1 bushel from last year, and much of that is malting barley contracted to MillerCoors in Huntley.

Brewery news USA: Consumer sues Anheuser-Busch for “misleading” Beck’s beer advertising and packaging
Missouri water isn’t the same as the water from German rivers, according to a Beck’s beer drinker who’s suing Anheuser-Busch, St. Louis Post Dispatch reported on October 18.

A Florida resident has filed a lawsuit against A-B, alleging that the brewer is leading customers to believe that Beck’s beer sold in the United States is brewed in Germany.

A-B denies the allegation, saying that Beck’s beer sold in the U.S. is clearly labeled as being made in America.

Francisco Rene Marty filed a federal lawsuit in the U.S. District Court, Southern District of Florida, on Oct. 9, claiming A-B’s advertising and packaging mislead customers to pay more for a beer they incorrectly believe is an import. The lawsuit seeks class action status on behalf of Beck’s beer drinkers.

St. Louis-based A-B is the North American headquarters of AB InBev, which owns the Beck’s brand. Beck’s, a pilsner style beer, was founded in Germany.

After Belgium-based InBev’s purchase of A-B in 2008, production of Beck’s sold in the U.S. shifted to A-B’s brewery in St. Louis, drawing the ire of some customers who say they can detect a difference.

Brewery news USA, OK: Black Mesa Brewing Co. reopens after being hit by OKC tornado
Black Mesa beers are back after being wiped out by the May 31st Oklahoma City tornado. The tornado was a hard hit since Black Mesa Brewing also helps out two other Oklahoma breweries according to Tulsa World Blog.

Black Mesa has partnered with a St. Louis brewery and has complete control of their brewing process.

“We are partnering with the O’Fallon Brewery near St. Louis, MO, while our brewing facility in Oklahoma is being rebuilt,” said Brad Stumph, partner, Black Mesa. “We chose the O’Fallon Brewery after visits and interviews with several potential partner breweries.”

“We look forward to returning to some fine Tulsa establishments and hope that all Tulsans have missed us as much as the folks at Fassler Hall who purchased 19 kegs (147.25 gal) of our ESB immediately after hearing that a tornado had hit the cooperative where we brew,” said Stumph. Black Mesa currently offers two beers: Black Mesa Blonde (an American-style blonde) and Black Mesa ESB (a British-style ale).

Hideaway Pizza is also serving Black Mesa's Blonde in four locations.

Brewery news USA, NE: Omaha's latest craft brewery to open its doors by late November
By late November, the doors to Borgata Brewery and Distillery, Omaha’s newest craft brewery, should be open, reports Omaha World-Herald on October 17.

Owners Zac Triemert and Holly Mulkins are putting an emphasis on all things local. Instead of putting together their own menu, they’ll serve small plates from some of their favorite Omaha restaurants, including Dante, the Jackson Street Tavern and the Grey Plume. They’ve hired a local artist to paint a mural in the brewing and distilling area. Another Omahan is designing their tap handles. And even the Kickstarter project has turned into a way for friends of the couple and fans of local craft beer to feel some ownership in the venture.

Family is important to Triemert and Mulkins, a couple in both work and life. The two hope they can eventually pass the business down to their three children.

Borgata will feature a mix of barstools, tables and easy chairs, which Mulkins and Triemert hope create a feeling that’s part local taproom, part cozy living room. The couple also hope to replace the big windows at the front of the tasting room with garage doors, which can be opened when the weather is nice.

Brewery news USA, PA: Troegs Brewing Company in Hershey expands and wins medals
The release of the much-anticipated Mad Elf the week of October 13-19 isn't the only big news coming out of Troegs Brewing Company in Hershey.

The craft brewer is in the midst of an expansion project and is rolling out a "cork and cage" bottling line and a canning line. And, just this week Troegs added more hardware to its lengthy list of accolades, reports Penn Live on October 17.

Troegs took home two medals on October 10-12 at the Great American Beer Festival in Denver, CO.

It won a gold for its Troegenator Double Bock and a bronze for its Sunshine Pils. It has won multiple awards for its beers through the years dating back to 2007.

In addition, the brewery will add 24 fermentation tanks with eight of the tanks now awaiting delivery from Baltimore. Co-owner Chris Trogner said it is one of the brewery's largest expansion projects since its move two years ago from Harrisburg to Hershey.

A pad for the 50-foot high tanks has been prepared at the brewery off of Hersheypark Drive. Each tank will hold 800 barrels of beer, or the equivalent of 10,000 cases of beer, he said.

Brewery news USA, OR: Fat Head's Brewery to open Portland location in mid-2014
Fat Head's Brewery issued a news release on October 17 announcing that it will open a brewpub in downtown Portland in mid-2014, reports Akron Beacon Journal.

"We're looking forward to introducing Fat Head's to one of our favorite cities," Fat Head's founder Glenn Benigni said in a prepared statement. "Heads up Portland!"

Fat Head's now operates a restaurant in Pittsburgh, and a brewpub and production brewery in suburban Cleveland. Award-winning brewer Matt Cole also has talked about opening a location in Columbus. "Bringing our beer to Portland is a dream come true for us. We love this town. Portland is like a brewer's mecca," Cole said in a statement.


Brewery news USA, TX: Hudson Bend based Infamous Brewing Company has big aspirations
A Hudson Bend-based brewing company is looking to expand the suds in its own backyard. Infamous Brewing Company was started in June 2012 when marketing professional Josh Horowitz and Wall Street banker Zack Perry were introduced by a mutual friend at a bar in New York. The pair bonded over their love of beer and their penchant for business and decided on Austin as the site of their first frothy endeavor. Eventually, welder Matt Bitsche joined the team as head brewer, helping repurpose old food manufacturing equipment and a dairy tank into something that could brew beer, reports Statesman.com.

“There’s 10 hours in a brew day, and that doesn’t include setup and cleanup. The first brew day we had was literally sun up to sun up, and by the end of it we didn’t even want to speak to each other … brewing is really hard,” Horowitz said. “But I love it; it’s the best thing I’ve ever done.”

The Infamous brand, stamped with gun chambers and riddled with bullet holes, is a throwback to Prohibition days, when it was “cool to be bad,” Horowitz said. The beer itself, Horowitz said, is similarly old-fashioned rebellious.

Brewery news USA, PA & MA: Yuengling plans to re-enter Massachusetts beer market
Yuengling is locking into a plan to finally bring its popular lager and other beers back to Massachusetts early next year for the first time since it exited the market two decades ago. According to Banker & Tradesman, Representatives of Pennsylvania-based D.G. Yuengling & Son are spending this week meeting with retailers and distributors across Massachusetts to solidify its plan for the move into the Bay State in the spring.

One of those company reps is Bob McCormick, sales development and administration manager. He said meetings with retailers and distributors are still in the "informal" stages, while he develops a better understanding of how the industry here operates.

Whether the company would build a brewery in Massachusetts is undetermined. While the plan is to go through the established network of beer distributors, it's possible the company could underestimate demand. If its existing facilities cannot keep up, Yuengling could eventually be driven to build its own Bay State brewery, said David Casinelli, the company's chief operating officer.

Brewery news USA, NY: Greenport Harbor Brewing Company to be open in Peconic in spring
Beer loves hankering for the opening of the Greenport Harbor Brewing Company's Peconic location on Main Road will have to wait a few months longer.

On the business' Facebook page, the word is that the new location on Main Road in Peconic will open in mid-spring, 2014.

Until then, owners are gearing up plant four acres of winter malting barley in the field across from the new brewery in Peconic. The plan is to brew an all-Long Island harvest of local grain and hops next fall at the Peconic location, owners wrote on Facebook.

In May, Rich Vandenburgh, who owns the business with his partner John Liegey, said some issues including permits pushed the project back between six weeks and two months, with an opening tentatively slate for August, and a tasting room and beer garden open by early fall.

Originally, Vandenburgh had hoped to open the doors of the new location by July.

"It would have been awesome to open for the summer but just like anything, things always seem to move a little more slowly," Vandenburgh said in May.

Brewery news USA, AL: Druid City Brewing releases dry Irish stout, its first dark beer
The folks at Druid City Brewing Company just keep on chugging along, releasing their first-ever dark beer in their Tuskaloosa Stout.

According to The Birmingham News they launched the brand new dry Irish stout at Egan's on October 16.

"It's our first dark beer, something people have been asking for," Druid City Brewing Company co-owner Bo Hicks said. "It will be really nice once the weather cools down.”

Starting later in the week, any bar who wants to carry it will begin to do so, Hicks says. Until then, Egan's is your best bet to give it a try.


Brewery news USA, CO: Odell Brewing’s introduces Woodcut No. 7, a Russian Imperial Stout
According to Odell Brewing’s press release, the company will introduce Woodcut No. 7, the seventh brew in the acclaimed series on October 21, 2013. Each Woodcut offering is aged in new oak barrels, and this year, the brewery channeled their dark side crafting a rich Russian Imperial Stout.

“This Woodcut offering is our biggest beer yet,” said pilot brew and barrel aging manager, Brent Cordle. “We combined a hearty portion of pale, roasted and chocolate malts for a strong backbone and a deep thick body.”

Aged in brand new American oak barrels toasted to the brewery’s specifications, Woodcut No. 7 rings in at 12.5% ABV and boasts notes of chocolate, vanilla, graham cracker, and brown sugar in the nose. The chocolate carries through in the flavor with hints of maple, vanilla, & toffee from the wood.

Odell Brewing will celebrate the debut of Woodcut No. 7 in the Tap Room on Saturday, October 26 and Sunday, October 27. Guests can try the brew paired with a variety of cheese and chocolate samples from Whole Foods Market Fort Collins, as well as live music from 3-5p on Sunday.

Brewery news Canada, AB: Big Rock Brewery releases Anthea Wet Hop Ale, part of Alchemist Edition
Canadian beer maker Big Rock Brewery has introduced its new Alchemist Edition release - Anthea Wet Hop Ale in Canada.

Anthea Wet Hop Ale is a blend of Cascade hops that are from the vine in Washington's Yakima Valley. It offers smooth taste and citrusy notes similar to the company's inaugural 2012 version, as reported by Drinks Business Review.

The company is producing only 3,600 numbered bottles, making this brew as one of their most limited releases.

Packaged in a 650 ml bomber bottle, Anthea Wet Hop Ale makes its appearance in Alberta and British Columbia from October 2013.

Big Rock Brewery brewmaster Paul Gautreau said: "Anthea is an aroma and mouthful of hops that will transport you to the fields of Yakima."

Headquartered in Alberta, Big Rock Brewery produces premium, all-natural craft beers. Its portfolio includes 10 ales and lagers, Rock Creek dry cider, a selection of seasonal beers and limited-run brews.

Brewery news Australia: Victoria Bitter sales growth offset by decline in demand for Carlton Draught in the last six months - SABMiller
The continued resurgence of Victoria Bitter over the last six months was offset by a decline in Carlton Draught, SABMiller reported on October 17.

SABMiller said VB was up five per cent for the six months to September 30, “although this positive performance was offset by a decline in Carlton Draught”, while Crown Lager volumes grew by 10 per cent.

Peter Filipovic, director of sales at subsidiary Carlton & United Breweries (CUB), said the figures showed the rejigged Victoria Bitter and Crown Lager were resonating with drinkers, and in a tough beer market, the brewer had to keep the momentum going.

“There is no doubt that beer continues to be a very challenging category and we have invested significantly in developing strategies to grow the beer and cider categories for all of us,” he said.

“We’re committed to working with all our partners to keep raising the profile of beer and cider.”

SABMiller said Peroni Nastro Azzurro continued to grow strongly in Australia, up 25 per cent. Total domestic volumes, including discontinued brands, were down by seven per cent.

Brewery news Malaysia: Malaysia losing huge revenues to beer smuggling
Malaysia is now losing huge revenues to cheap imported beer, much of it being smuggled in without taxes being paid.

Due to high import duties on beer, many smugglers have been smuggling beer in illegally. Current estimates conclude that Malaysia may be losing as much as RM 250 million to beer smuggling, Value Walk reported on October 17.

While Malaysia is a Muslim country, it is also a big drinking country. In fact, the World Health Organisation reports that Malaysia is the 10th highest beer consuming country in the world. Malaysia officially spent over 1.5 billion ringgit on beer in 2010, with about 11 litres of beer consumed per person. It should come as no surprise then that the government may be losing hundreds of millions of dollars in revenue to smugglers.

As Malaysia is a moderate Muslim country and home to millions of non-Muslim people, the government has generally taken a lax stance towards alcohol consumption. It does, however, charge high import duties on any alcohol imported into the country. Indeed, the mark up of beer and alcohol can be has high as 300% or more when compared to neighboring countries such as Thailand and Cambodia.

Brewery news EU: The Brewers of Europe welcome new report recognizing the job-generating potential of the beer sector
The Brewers of Europe have welcomed a new report adopted by the European Economic and Social Committee (EESC) that recognizes the potential of the beer sector to generate jobs and growth.

This new report calls on EU policymakers and member states to back the beer sector. It presents the important role of the brewing sector in providing jobs both as a direct employer and as part of the hospitality sector value chain.

According to the report, breweries in the EU provide over 128,800 direct jobs and that two million jobs can be attributed to the sale of beer, about 1% of all EU jobs.

The Brewers of Europe secretary general Pierre-Olivier Bergeron said that the new report shows that Europe's brewers remain global leaders and that they have adapted in the face of economic crisis.

"However, the report makes clear that there is untapped potential in our sector and that supportive taxation and trade policies, along with full recognition of the important role of the hospitality sector, can help us maintain our global standing and provide growth and jobs," Bergeron added.

Brewery news Singapore: Asia Pacific Breweries’ Singapore top executive leaving the company
Asia Pacific Breweries' (APB) top executive for Singapore is the latest senior manager to leave the Tiger Beer brewer, BT Premium reported on October 17.

Bennett Neo, regional director for Singapore, Indochina and Exports, will serve out his last day at the end of the year to pursue "new challenges" outside of the industry, according to him and APB spokesman Mark Campbell.
