The similarities between beer aging and biotransformation


ABSTRACT
Have you ever wondered what happens to the bitter acids in your beer that you swallow inside of you ? Belgian researchers have, and using liver microsomes isolated from rabbit liver and human microsomes they found that metabolism of beta-acids was mainly characterized by conversion into hulupones and the formation of a series of tricyclic oxygenated products. The most important metabolites of alpha-acids were identified as humulinones and hulupones. Iso-alpha- acids were found to be primarly metabolized into cisand trans-humulinic acids, next to oxidized alloiso-alpha- acids. Interestingly, the phase I metabolites were highly similar to the oxidative degradation products in beer. Does this mean in consequence that aged beer is better for the liver?

Barley news Canada, MB: Growers association will lead research and market development for wheat and barley
The interim board of directors for the Manitoba Wheat and Barley Growers Association has received conditional approval from the Province to act as the designate organization for spring wheat and barley farmers in Manitoba, mySteinbach.ca reported on October 27.

This allows the producer-led association to provide leadership in wheat and barley research and market development in a restructured and evolving cereals industry. It also paves the way for a check-off to be established in the future to fund the organization’s efforts.

The petition for the designation was submitted to the Province in early June after consultations with Manitoba farmers last fall and winter.

“Manitoba farmers told us they recognize the value in being able to control where wheat and barley research dollars are being spent,” said interim chair Don Dewar. “They were also very clear that any new association granted authority to collect check-off revenue for this purpose should not waste funds on administration.”

As a result of this farmer direction, the interim board determined that it would be most appropriate for a single organization to be formed to represent both spring wheat and barley growers in the province to avoid duplicating administrative costs.

Brewery news USA, WV: Craft beer industry continues to grow in the US and in West Virginia
Once a thriving industry in the state of West Virginia, craft beer brewing is finally returning to the Mountain State.

In fact, craft breweries across the entire country have seen a surge in recent years, Mountaineernewsservice.com reports.

The Brewers Association, the largest brewing trade association in America, says that craft breweries are defined by three distinct traits – they must produce less than six million barrels a year, they must be independently owned, and they must employ a traditional brewing style, (“at least 50 percent of the brewery’s volume is either all malt beers, or beers that use adjuncts to enhance rather than lighten flavor.”)

One hundred percent of the breweries in West Virginia are craft breweries.

Some are strictly microbreweries, and others are what’s called brewpubs – usually smaller breweries where either all or at least a majority of the beer that’s brewed is sold on site with food in a restaurant or pub.

The Brewers Association, which also represents a majority of U.S. brewing companies, reports that 2,483 craft breweries are active across the country as of June 2013, the highest total in the United States for more than 126 years.

Brewery news Canada, ON: Ontario will not allow convenience stores to sell beer
Large convenience store chains will make another pitch on October 29 to allow them to sell beer and wine, but Ontario's Liberal government says it is not interested, according to Global Post.

The Ontario Convenience Stores Association — which includes Avondale, 7-11 and Mac's as well as Petro-Canada, Imperial Oil and Canadian Tire — wants to sell local wines and craft beers.

Finance Minister Charles Sousa says while the Liberals plan to put Liquor Control Board of Ontario (LCBO) outlets in some grocery stores, they won't allow sales of beer and wine in corner stores.

Sousa says the Liberals will stick with existing plans, in part because government-run liquor stores and the foreign-owned Beer Store do a good job of keeping minors from buying booze.

The Progressive Conservatives have released a white paper calling for the expansion of beer and wine sales to privately-owned retail outlets.

But the New Democrats say they support the government's position that the LCBO provides get services and product selection in a socially-responsible manner, and there's no need to expand beer and wine sales to corner stores.

Barley news Canada, AB: Alberta Barley holding regional farmer meetings
Alberta's barley farmers will be gathering from all across the province this fall to find out how their organization is working for them, Digital Journal reported on October 28.

"Our industry is what we make it and farmers' involvement is key to our success," said Alberta Barley Chairman Matt Sawyer. "We encourage our members to come out to our regional meetings and learn about the exciting work we're doing."

Alberta Barley's regional meetings take place throughout November, giving producers a chance to learn about the events of the past year, including updates on research and market development. This year's meetings are paired with the Alberta Wheat Commission and the Alberta Pulse Growers Commission at select locations.

Elections also take place at each meeting, giving farmers the opportunity to select their Alberta Barley directors and delegates. This year, there are three potential elections for directors (region three, region four and one director-at-large position). Delegate positions are available in all six regions.

"Whether you plan to run or vote, we encourage all of our members to participate in our elections," said Sawyer. "We are a farmer-directed organization and we need those farmers' voices to be heard."

Brewery news USA, MS: Crooked Letter Brewing of Mississippi expands to Louisiana market
Since 1995, Paul Blacksmith, his wife, Wanda Blacksmith, and John Myers toured in rock bands. All that travel turned out to be research for their latest venture: Crooked Letter Brewing Co. in Ocean Springs, MS. After tasting beers across America, they knew what they liked to drink and what they wanted to make, Nola.com reports.

Crooked Letter, which launched in January 2013, entered New Orleans on October 28. Southern Louisiana is Crooked Letter's first market outside Mississippi.

"New Orleans being our musical neighbor," Paul Blacksmith said, "it's almost like a second home."

Crooked Letter will bring to Louisiana all four of its flagship beers: Gipsy IPA, Mystery Romp coffee porter, Crooked Heffy hefeweizen and Stabello, an Italian-style lager.

"We wanted to come out of the box with a wide array of beers," Blacksmith said. "We definitely did not go with the advice of a lot of people that we should start with a single yeast strain."

Currently Crooked Letter beers are only available on draft. Bottles should come to Louisiana in the next few months.

Brewery news USA, MN: Indeed Brewing plans to expand, partners with new distributor
Indeed Brewing is set to expand its production capacity and distribution footprint, with growing demand for its products, Drinks Business Review reports.

Expansion plans include addition of extra cellar tanks, production equipment and increasing workforce at its existing 13,000 ft² brewery in Minneapolis. To increase the distribution, it has also partnered with a new distributor, Dahlheimer Beverage.

The company expects to produce 12,000 BBLs in 2014, with its new expansion plans into effect.

For this, the company will add a set of two 60 BBL fermenters and one 60 BBL bright tank in January 2014, followed by a matching set in April 2014 at its manufacturing facility.

Additionally, it is also planning to add new 120 BBL tanks in an old boiler room during the summer of 2014.

It will also purchase other equipment such as hop cannon for dry-hopping beers; and a separator to improve the consistency and shelf-stability of beers.

Dahlheimer Beverage will distribute Indeed Brewing's beer to the outer Metro area in Minnesota starting 1 November 2013.


Brewery news USA, ME & IL: Maine Beer Company expands distribution to Midwest, plans to increase production
Popular boutique brewer Maine Beer Co. recently signed a new wholesale agreement with Windy City Distribution — part of the Reyes Beverage Group of beer distributors — and made its first shipment of beer to the Midwest just last week.

Windy City announced the new partnership on Facebook on October 25, posting a picture of two of Maine’s signature brews, Mo and Peeper. Brewery spokeswoman Colleen Croteau told Brewbound that other Maine Beer Co. offerings will also be available in the Metro Chicago area.

Maine Beer was able to broaden its distribution footprint — which currently includes 12 states — after the company moved its brewing operations from Portland to Freeport in April. Croteau said Maine Beer will look to increase production from an expected 4,500 barrels in 2013 to 6,500 in 2014.

Chicago is the farthest west Maine Beer has sent its products to date.

When asked why the brewery made the decision to make Chicago its next market for distribution, Croteau said owners David and Daniel Kleban have family in the area.

“It seemed like a reasonable market to open up,” she said.


Brewery news USA, WI: Biloba Brewing to open first craft brewery in Brookfield
A new craft brewery is expected to open this winter in Brookfield, the first microbrewery in the area, according to the company.

Biloba Brewing Co. expects to open in 2,000 square feet of leased space at 18720 Pleasant St. in late December or early January, said brewery manager Bryan Dallmann. It will have an initial brewing capacity of 1,000 barrels per year and will open a tasting room on site for beers that could include a traditional pilsner infused with Wisconsin maple, a Belgian-style ale and a special “Brookfield 1836 Beer” brewed from a recipe chosen among submissions by local homebrewers.

The brewery’s leaders see opportunity in opening a craft brewery in a suburb rather than in the “urban core,” Dallmann told The Business Journal on October 28.

Biloba refers to the Ginkgo biloba tree, which has “erratic” branches and deep roots, reflecting the new brewery’s aim to concoct unique craft beers and form a strong bond with the local community, Dallmann said.

Dallmann co-founded Spring Ale Fest in the Twin Cities last year as an annual event to highlight that area’s craft brewing scene. He was tapped as Biloba brewery manager by the company’s founders, the Lane family.

Brewery news USA, NH: New brewery to start shipping beer from Hampton
Smuttynose Brewing Co.'s new facility on Towle Farm in Hampton, NH could start shipping beer as soon as late January, CEO Peter Egelston said on October 25, according to Patch.com.

Egelston gave Gov. Maggie Hassan a tour of the facility on October 25, saying brewing is only months away. The new brew pub planned for the facility, however, isn't expected to open to the public until late spring.

Egelston told Hassan he hopes the new facility will be great for entertaining visitors. Its close proximity to Hampton Beach should also make it a destination in the warmer months.

Right now, Egelston said, Smuttynose ships about 45,000 barrels a year. The new facility will have 60,000 barrel capacity, with room to double that.

Right now, Smuttynose employs 52 people, but Egelston said the company will add another 45 to 50 employees once the brew pub is up and running.


Brewery news USA, IL: Goose Island Brewery adds two beers to 'Sisters' Line
Goose Island Brewery was bought by Anheuser-Busch/InBev two years ago. Production of the brewery’s flagship beers at A-B’s facilities across the country has allowed Goose Island to focus on expanding their other beer lines like the “Fulton and Wood” experimental series, their Belgian-style ales and the Bourbon County Stout line.

Now Goose Island has added two beers to their famed “Sisters” series of wild-fermented, wine barrel-aged fruit ales, reports Chicagoist. Halia and Gillian join Juliet, Lolita and Madam Rose and are welcome additions to the series. (Although Madame Rose hasn't been seen since 2011.)

Senior brewer Keith Gabbert created the recipe for Gillian in 2009, although back then it was called Scully and wasn’t barrel aged. Gillian is first fermented in stainless steel and some of the batch is then transferred to red wine barrels with between 40 and 50 pounds of unsterilized strawberries and Brettanomyces bruxellensis yeast culture. Two months after entering the barrels Goose Island adds honey, white pepper and champagne yeast to the mix. Three months later Gillian is ready for drinking.

Tasty as Gillian is, Halia is the better of the two new offerings. It is a wonderfully sour farmhouse ale.

Brewery news USA, LA: Courtyard Brewery one of many breweries coming to New Orleans
Early next year in the Lower Garden District in New Orleans, Scott Wood and his wife Lindsay Hellwig plan to open Courtyard Brewery: a "nano brewery" with a tap room, reported Nola.com on October 25. Both of those terms might require an explanation.

"A nano brewery is kind of a loose definition," Wood said. "Anything from three to four barrels and under is considered a nano brewery."

Courtyard Brewery will initially have a three-barrel brewing system. One barrel holds 31 gallons. By comparison, nearby NOLA Brewing has a 20-barrel brewing system.

The tap room at the Courtyard Brewery, Wood said, won't be a bar. Instead, it will be a tasting room, with a rotating selection of six to eight Courtyard beers along with four to six "guest" beers from other breweries. Small samples and full glasses can be ordered. Wood compared it to a tasting room at a winery.

There are more than 200 similar tap rooms around the country, Wood said. Legally, Courtyard's tap room will be different from the tap rooms now open at production breweries, such as NOLA and Broussard's Parish.

Brewery news USA, VA: A new microbrewery to open early next year in Stafford County
Adventure Brewing Company will be in a 4,000-square-foot space at 33 Perchwood Drive, Unit 101, off U.S. 1 near Stafford Regional Airport according to Fredericksburg.com.

Adventure Brewing — which is owned by Stafford residents and home-brewing enthusiasts Tim Bornholtz, John Viarella and Stan Johnson — hopes to be open by St. Patrick’s Day. The company has submitted the paperwork for its federal brewer’s license.

Adventure Brewing will offer four year-round beers — Super Power Pilsner, Expedition IPA, Backpack Wheat and Stiletto Stout – as well as seasonal and special batches. The name of the brewery comes from the owners’ love of the outdoors and adventurous pursuits such as climbing, rafting and camping.

The company will join a growing list of microbreweries in the Fredericksburg area. Already open are the Blue & Gray Brewing Co. and the Battlefield Brewery in Spotsylvania County, and the Rusty Beaver Brewery in Caroline County.

Surly Brewing Company released its Darkness brew on October 26 at its facility in Brooklyn Center, MN, KSTP reported on October 27.

It only comes out around Halloween, and from the turnout it is very popular.

A single 750-milliliter bottle of the Russian imperial stout-style beer costs $20. To celebrate the release, Surly also had food and live music for the people who waited out all night to get Darkness.


Brewery news USA, WA: Heathen Brewing expansion plans contingent on county fee holiday
A local beermaker's dream of showcasing his brew in a Salmon Creek-area pub could be realized next year if his plan meets criteria for Clark County's fee holiday, Columbian reported on October 28.

A 100 percent waiver of traffic impact and permit fees could make the project — estimated at between $1.2 million and $1.6 million — pencil out, said Sunny Parsons, owner of Vancouver's (WA) Heathen Brewing. The direct-sale brewery is one of the fastest-growing in the local craft beer industry, expanding from Parson's hobby to a three-employee operation during its first year of business.

Parsons now operates the brewery in a commercial building next to his Vancouver home. He said Heathen Brewing participates in direct sales to pubs and private parties all over the Portland-Vancouver-metro area and as far south as Eugene, OR, and east to Bend, OR.

"As fast as we can make beer, people are buying it," said Parsons.

Flemming Besenbacher, chairman of Carlsberg and of its main owner the Carlsberg Foundation, said that the strong consolidation in the brewing sector will continue.

Barley news Australia: Nitrogen application and soil mineralisation in growing malting barley
Applying enough nitrogen to malting barley crops so they yield well, yet meet the protein grade, is a tricky balance.

And much research is needed to "open up this black box", according to Foundation for Arable Research Australia managing director Nick Poole, Weekly Times Now reported on October 28.

Nick Poole explained to growers the progress of nitrogen management trials and the influence of mineralisation at Southern Farming Systems' AgriFocus field day at Westmere, near Lake Bolac.

"When growing malt barley you are trying to produce grain for a specific market, that has a very specific protein range," he said.

"And therefore, trying to determine how much nutrition, or in this case, how much nitrogen you need to apply to that crop is critically important."

Poole said one of the ways to be more accurate was to prepare a nitrogen budget.

This takes into account how much nitrogen is already in the soil at the start of spring, how much nitrogen is in the crop and how much, typically, malting barley crops yield on that farm.

Brewery news Angola: Empresa Angolana de Cervejas currently brewing 53.3 mln litres of beer and is looking to export its products
Empresa Angolana de Cervejas is producing 53.3 million litres of beer per month at its factory in the Cambambe municipality of Kwanza Norte province, the factory’s production director, Mateus Isabel Matumona, was quoted as saying by Macauhub on October 30.

He also said the company’s production was capable of supplying the Angolan market and that the brewer was analysing the possibility of exporting to neighbouring markets.

He noted that current production at the factory was based on two bottling lines, the first of which (the oldest) has capacity to fill 20,000 bottles per hour, and the second to fill 35,000 bottles per hour.

He said that, as well as EKA beer, the Dondo factory also makes Nocal beer. The company buys its raw materials from companies in South Africa, France and Belgium.

EKA, which is considered to be one of the biggest production units in the province, alongside the Cambambe hydroelectric dam, is also the province’s biggest taxpayer.

Brewery news Australia: Craft beer gaining popularity
Craft beer is becoming increasingly popular with consumers in Australia and the region, Australia Network News reported on October 30.

While beer consumption in Australia is declining, recent data shows craft beer is becoming more popular with consumers - and brewers.

Chuck Hahn, director and brewmaster of Malt Shovel Brewery, says the beer consumer's taste is changing.

"The drinker now is actually tasting the beer rather than just drinking a lot of it," he said.

"We have an expression "slam it down slowly... savour that flavour'."

Mr Hahn says the rising number of breweries reflects the growing interest in the drink.

"Back then, there were only about 25 small breweries, now we have 160 of them all producing some really good beers."

Mr Hahn says China's beer drinkers are looking for beers with a more distinct flavour, such as beers that are more malty.

"Fifteen years ago, they still were after an easy drinking lager," he said.

"But that whole profile has changed in China, just the way it's changed in Australia.

"It's great from a flavours perspective."

South Africa's beer market has undergone some noticeable changes over the last few years. The country, dominated by commercial lagers, has started to develop a thirst for craft beer, and the number of microbreweries in the country has quadrupled in just four years, Voice of America reported on October 29.

South Africa has long been a beer drinking country. South African Breweries the second largest brewery company in the world, owns brands like Miller and Foster's, and national brands like Castle and Hansa.

For years, those beers dominated liquor store shelves and the bar scene. Tastes have evolved, though, making way for a craft beer boom.

"And there was a big move a few years ago, toward artisanal products in farmers markets. People wanted to try locally produced cheese and bread and jams and chutneys and all of this kind of thing. A lot of people attribute the craft beer boom to these kinds of markets," said Lucy Corne, author of the book African Brew. She said four years ago, there were about 15 or so microbrews in the country. Today there are roughly 70 craft breweries. That could reach 100 by next year.
