The similarities between beer aging and biotransformation


ABSTRACT
Have you ever wondered what happens to the bitter acids in your beer that you swallow inside of you ? Belgian researchers have, and using liver microsomes isolated from rabbit liver and human microsomes they found that metabolism of beta-acids was mainly characterized by conversion into hulupones and the formation of a series of tricyclic oxygenated products. The most important metabolites of alpha-acids were identified as humulinones and hulupones. Iso-alpha- acids were found to be primarly metabolized into cisand trans-humulinic acids, next to oxidized alloiso-alpha- acids. Interestingly, the phase I metabolites were highly similar to the oxidative degradation products in beer. Does this mean in consequence that aged beer is better for the liver?

Brewery news USA, OK: Avery Brewing announces return to Oklahoma market following company expansion
Avery Brewing has announced its return to the Sooner State, the first market that the brewery has re-entered since it scaled back distribution two years ago. The return was made possible in part due to expanded production at Avery’s current brewing facility.

In April 2011, Avery Brewery stopped distributing to eight states, including Oklahoma, and seven other partial-state markets due to increased demand in Colorado, where the brewery is based.

At the time, Avery pulled out of Arizona, Connecticut, Indiana, Nebraska, New Mexico, Oklahoma, Rhode Island and Tennessee as well as several partial state markets including Northern California, Eastern Arkansas, Upstate New York, Central Florida and Wisconsin.

Avery is once again partnering with Red Dirt Beverage Co. for distribution in Oklahoma, where the brand has been available since early October.

Oklahoma is the first of those markets that Avery is re-entering, but it likely won’t be the last. Avery’s national marketing director, Darin McGregor told Brewbound that the company will likely re-enter one of the other seven states it left in 2011, before the end of the year.

Brewery news Canada, AB: Calgary’s Big Rock Brewery returns to craft beer scene
One of Canada’s original craft breweries says it’s returning to its roots.

When Big Rock Brewery launched in Calgary 28 years ago, it offered all-natural high quality beer. Subsequent years saw a rapid expansion, Global News reported on October 31.

Now the company is once again ready to take risks.

“We need to be fresh, we need to be very community oriented and most important, we need to be innovative,” says President and CEO Bob Sartor.

It’s a welcome change for Big Rock brewmaster, Paul Gautreau, who says the company lost its way by mimicking the big beer companies. Now the brewery is aggressively experimenting with different products – 20 in the past year.

“We’ve been using very rare, different techniques to make beers with different methods that haven’t been seen for hundreds of years,” says Gautreau. “So we are a lot bolder.”

And just in time – with the craft beer market exploding, Big Rock says it’s back in the game.

The company recently announced it is opening a new brewery in Vancouver, which is expected to be in production within a year.

Brewery news Canada, NL: Labatt Brewery sales not affected during labour dispute
Labatt says it has maintained its market share over the past seven months, even though striking workers have been calling for a boycott on the company's products, CBC reported on October 30.

Despite a seven-month strike at the Labatt Brewery in St. John's, NL, the boycott requested by the plant's striking workers is having little to no effect on the company's beer sales.

About 50 employees have been off the job since late March, when a wildcat strike preceded a legal walkout that started April 10.

The Newfoundland and Labrador Liquor Corporation said the company's beer sales are holding their own.

Labatt spokesperson Wade Keller agrees.

"We're very fortunate to have maintained our market share over the last seven months," he said.

Keller said Labatt is being rewarded because of its sponsorship efforts.

"The company gives a lot back to Newfoundland and Labrador, and the people there appreciate that," he said.


Brewery news USA, CO: Black Shirt Brewing expands, adds beer canning line
When Black Shirt Brewing opened just over a year ago, it had limited hours, a glorified homebrewing system and three owners with fulltime jobs elsewhere. One year later, the RiNo brewery, which only makes red ales, has become an integral part of Denver's ever-expanding craft-beer scene and just completed a major expansion that will give it an even bigger presence, according to Westword blog.

Part of that expansion is physical. Black Shirt now has a fifteen-barrel brewing system (its second expansion in 2013) and six thirty-barrel fermenters. It purchased a canning line that will allow it to begin selling four flagship beers to liquor stores - and allow customers to take those beers with them wherever they go.

Their new canning line was manufactured by Wild Goose Engineering in Boulder and is an expandable system. In its current configuration, if everything is optimal, it can fill forty cans per minute. The company will be packaging in six-packs, twelve-ounce cans, release is planned for the first part of 2014.

The company will be canning Colorado Red Ale, Red Saison, India Red Ale and Red Porter.

Brewery news USA, WI: Big Head Brewing opens in Wauwatosa, Milwaukee suburb
Big Head Brewing Co. opened in September and will hold a grand opening celebration in mid-November in Wauwatosa, Milwaukee suburb, Business Journal reports. It is located in 5,000 square feet of leased space at 6204 W. State St. and has an initial annual brewing capacity of between 750 and 1,000 barrels of beer.

“I’ve always gotten the impression that Wauwatosa is a very local first community,” said Andrew Dillard, one of the owners. “It has an emphasis on getting new businesses going and supporting those local businesses.”

Big Head’s specialty will be a diabetic-friendly line of beers with low carbs that still taste like craft brews, Dillard said. Dillard said he also wants to concoct gluten-free beer.

Dillard, a homebrewer for seven years, struggled to find financing through banks and investors to start a brewery. But when local media picked up his story, he was approached by two potential partners who have joined the business, he said.

Eventually Dillard plans to install bottling and canning lines.

Brewery news USA, NE: Lucky Bucket announces return of Snowsuit Spiced Belgian Abbey Ale
Lucky Bucket Brewing Company is happy to announce the return of their winter seasonal beer appropriately named Snowsuit Spiced Belgian Abbey Ale. Starting next week, the beer is being released as their winter seasonal beer for the second year in a row and will be available in grocery stores, restaurants, pubs, and the brewery’s tasting room, Brewbound reports.

Snowsuit became highly popular for Lucky Bucket three years ago when brewed as a single batch beer. The beer was an instant hit within the community due to its distinct fruity characteristics, subtle sweetness, and spiced flavor notes. President Jason Payne and Brew master Michael Cunningham were so pleased with the single batch recipe that they decided to produce Snowsuit again in 2012 as the recurring winter seasonal beer – this time making it available in six packs for purchase in the market. Snowsuit Spiced Belgian Abbey Ale will be available throughout the winter season.

The owners of Prairie Berry Winery are getting into craft beer production, according to Argusleader.com

The Hill City-based business has started Miner Brewing Co. in a new location next door to the winery.

Owners Sandi Vojta and Matt Keck are also planning a Sioux Falls expansion next spring.



Brewery news Canada, NB: Railcar Brewing announces new location in Florenceville-Bristol
Railcar Brewing, a new brewery being founded by homebrewer Mitch Biggar, will no longer be located in its namesake Railcar #3 on the Shogomoc Historical Railway Site as originally planned, but will instead be setting up shop elsewhere in Florenceville-Bristol, New Brunswick, according to Canadian Beer News.

According to a recent post on Facebook Biggar reports that he has confirmed a new spot at 9172 Main Street in Florenceville-Bristol. Measuring 58 by 26 feet, the space will accommodate a large tasting room and retail space along with the brewery, and railway memorabilia will be used as decor to keep with the brewery name which will be retained despite the change of venue.

Biggar intends to have the bar and retail area before the end of the year, with a selection of craft beers from other breweries available while brewery construction takes place through early 2014, after which on-site beer production will begin.



Brewery news USA: Boston Beer enjoys 30% increase in Q3 net revenue
The Boston Beer Company, Inc., America’s largest craft brewery, on October 30 reported third quarter 2013 net revenue of $216.4 million, an increase of $50.0 million or 30% over the same period last year, mainly due to core shipment growth of 29%.

Net income for the third quarter was $25.7 million, or $1.89 per diluted share, an increase of $4.9 million or $0.36 per diluted share from the third quarter of 2012. This increase was primarily due to shipment increases, partially offset by increased investments in advertising, promotional and selling expenses and a write-down of land of $0.10 per diluted share.

Net revenue for the 39-week period ended September 28, 2013 was $533.7 million, an increase of $106.5 million, or 25%, from the comparable 39-week period in 2012.

3rd Quarter 2013 Summary of Results

Depletions grew 26% from the comparable 13-week period in the prior year, primarily due to increases in the Angry Orchard®, Samuel Adams® and Twisted Tea® brands.

Core shipment volume was approximately 993,000 barrels, a 29% increase over the third quarter of 2012.

Barley news Canada: Canadian Malting Barley Technical Centre releases the recommended barley varieties list for 2014-15
The recommended malting barley varieties list for 2014-15 has been released by the Canadian Malting Barley Technical Centre (CMBTC). The recommendations are based on the varieties expected to be selected by grain and malting companies for both domestic and export markets for the 2014 harvest.

"These recommendations were derived from information CMBTC members obtained through their sales and marketing efforts and contact with domestic and international maltsters and brewers, as well as from test malting and brewing results achieved at CMBTC in their pilot malthouse and pilot brewery," CMBTC managing director Rob McCaig said in a release.

CMBTC members are Alberta Agriculture, Alberta Barley Commission, Alfred C. Toepfer Canada, CWB, Canadian Grain Commission, Canterra Seeds, Cargill AgHorizons, Fedoruk Seeds, Manitoba Agriculture Food and Rural Development, Manitoba Liquor Control Commission, Molson Coors, Parrish & Heimbecker, Richardson International, SABMiller, Saskatchewan Agriculture, Prairie Malt Limited, the Public Malt Barley Breeders, SeCan, Syngenta Canada and Viterra.

Barley news USA, ND: Malting barley seen as good fit for producers in western North Dakota
Growing malting barley is a good fit for producers in western North Dakota, according to Doyle Lentz, North Dakota Barley Council, The Prairie Star reported on October 31.

Lentz was part of a group of barley growers, brewers, maltsters, researchers and others that toured barley facilities at NDSU and also toured malting barley country, including the often arid western region where producers grow barley as a rotational crop.

The group was showed the type of farm equipment used in planting and harvesting barley and met barley growers.

“There is a lot of interest in western North Dakota as a barley growing area, especially with craft brewers who like the two-row varieties growing in the west,” Lentz said.

Brewers wanted to meet the malting barley producers who grow their barley, and also see the two-row varieties that do well in the west, he said.

“The malting barley industry continues to be a good industry, and brewers are getting a better understanding of what our growers do to produce good malting barley in North Dakota,” he added.

Archer Daniels Midland Co. (ADM) expects to soon achieve all regulatory approvals for the company’s acquisition of GrainCorp Ltd. and to close the acquisition early next year, World-Grain.com reported on October 31.

Seven out of nine jurisdictions have cleared the acquisition of GrainCorp, an Australian agribusiness, said Juan Luciano, executive vice-president and chief operating officer for ADM.

“In the third quarter we received clearance from South Africa, Japan, the European Commission and South Korea,” he said. “We continue to work with authorities in Australia and China to achieve the final approvals.

“Earlier this month, the Australian treasurer issued an interim order which commits the government to a decision by Dec. 17 at the latest. Based on this, we expect closing to be sometime in the first quarter of 2014.”

In May of this year ADM announced plans to acquire GrainCorp in an offer that implied an aggregate transaction value of about A$3.4 billion ($3.2 billion).

In just eight weeks Diageo, the world’s largest drinks group by sales, set up and launched a beer made of cassava, a local tuber crop, in Ghana last year, Financial Times reported on November 1.

Ruut Extra was Diageo’s first cassava beer – the British company is more accustomed to brewing Guinness stout and distilling Johnnie Walker whisky – and the project involved securing a tax break for cassava sourcing from 7,000 local farmers.

“Is that eight weeks or eight months?” queried a sceptical analyst at Diageo’s investor conference in London last month.

“Under normal circumstances you’d go: ‘It’s not possible’,” acknowledged Ekwunife Okoli, Diageo’s managing director for regional markets in Africa. “But we had SABMiller as our competitor . . . We had to act in an extraordinary way . . . And I assure you, absolutely, eight weeks from idea to delivery.”

Diageo’s rapid delivery of Ruut Extra is a sign of a head-to-head scramble for market share in Africa, which western drinks companies view as the world’s most exciting emerging market because of its fast-growing economies, rising purchasing power and expanding populations. Brewery news Japan & Philippines: Kirin interested in buying the rest of San Miguel Brewery Inc. if approached
Kirin Holdings Co., Japan’s biggest drinks company, is interested in buying the rest of Philippine beverage maker San Miguel Brewery Inc. if approached, a person with knowledge of the matter was quoted as saying by Bloomberg on November 1.

Kirin, which holds about 48 percent of the brewer, isn’t in talks with co-owner San Miguel Corp., said the person, who asked not to be identified because the deliberations are private. The Japanese company would consider a deal should San Miguel offer to sell its 51 percent stake to Kirin, the person said.

A valuation of about 20 times earnings before interest, taxes, depreciation and amortization is now “normal” for deals in the industry, San Miguel President Ramon Ang said via text message. That multiple implies a $5.9 billion price for the stake, based on the brewer’s Ebitda last year, data compiled by Bloomberg show.

“Other major international brewers such as InBev and SABMiller would definitely be interested,” said Mikihiko Yamato, deputy head of research at JI Asia in Tokyo. “It’s possible that the price skyrockets. The brewery is almost a monopoly in the Philippines.”

Brewery news South Africa: SABMiller says workers strike won’t affect production
South African Breweries (SABMiller) on October 30 said a strike by the Food and Allied Workers Union (Fawu) in Gauteng won’t affect production.

The company says consumers don’t have to worry about a possible beer shortage this festive season.

Fawu members in Gauteng have been on strike for exactly a month, but their colleagues in coastal areas have returned to work.

SABMiller spokesperson Robyn Chalmers says the company’s contingency plan has minimised the impact of the strike.

“At this stage, we have seen no shortage in terms of beer. We don’t anticipate that there will be any shortage of beer going into the peak season.”

Workers are demanding a wage hike of nine percent, while the company is only offering seven percent.

Members are also protesting against a new performance-related payment system.

Fawu is calling for the system to be scrapped altogether, saying it believes its members deserve more money.

The union represents about 1,000 employees.


Brewery news The Netherlands: Heineken extends sponsorship of UEFA Champions League by three years
Heineken, the world’s third biggest brewer, has extended its sponsorship of the UEFA Champions League by three years.

The Dutch beer group has sponsored the European football competition, which is watched by over 4.2 billion people, since 2005.

Heineken is the first sponsor to renew its contract beyond the current 2012-2015 term, although German sportswear maker Adidas has already extended its agreement as official supplier.

It has been estimated by sports research firm IMR that the current sponsorship agreement costs Heineken $70 mln per year, with the new deal worth more. Neither parties disclosed financial details.

Heineken, previously a sponsor through its Amstel lager brand, said that its sponsorship of the football tournament was the largest platform for the beer brand and in its eight year partnership customer awareness has grown to 60pc among UEFA Champions League fans.

The contract renewal sees Heineken win the rights to exclusive UEFA Champions League content, such as back stadium tour and UEFA Champions League Trophy Tour, presented by Heineken.

Alexis Nasard, global chief marketing officer and president of Western Europe, at Heineken said: "The UEFA Champions League's unrivalled international reach and professional standards make it the perfect match for Heineken.”
