Discoveries in the bitter reception world
ABSTRACT
Flavonoids and Isoflavonoids, not only from hops but
also from other plants, are in the focus of several
health related investigations and potent candidates
for nutraceuticals. However they have a relatively
strong bitter taste. These researchers discovered the
relevant bitter taste receptors for these compounds
namely hTAS2R14, a recepter that has been regarded
as a more broadly tuned receptor (also know to
interact with isohumulones), and hTAS2R39 a less
"famous" bitter receptor. These Dutch researchers
were able to identify many different flavonoids as
intrinsically bitter and elucidated the structural
requirements for bitterness of (iso)flavonoids.
However their objective is not to take advantage of
the bitterness these compounds cause but rather to
prevent the introduction of bitter taste in the design
of functional foods enriched with (iso)flavonoid
bioactives. Isn't this bitter?

USA: Goose Island Beer Company releases Ten Hills Pale Ale
|
Anheuser-Busch-owned Goose Island Beer Co. has introduced Ten Hills Pale Ale, the first of three limited release brews set to launch through 2014, Shanken News Daily reported on November 20.
Made with Perle, Cascade and Saaz hops sourced from Idaho’s Elk Mountain Farms, the new 6.2%-abv offering is brewed at the Anheuser-Busch breweries in Fort Collins, Colorado, and Baldwinsville, New York.
Ten Hills will be available from December 2 through the end of March 2014, both in six- and 12-pack bottles and on draft. Goose Island’s next two limited releases, meanwhile, will also use hops sourced from Elk Mountain Farms, which currently grows more than 200,000 hills of hops for the Chicago-based craft brewer.

USA, NE: Goldenrod Brewing to change name
|
It's back to the drawing board for the founders of Goldenrod Brewing Company. The soon-to-open brewery will have to change its name, Omaha World-Herald reported on November 21.
The brewery formerly known as Goldenrod received a cease-and-desist letter from Los Angeles-based Golden Road Brewing about a month ago. Goldenrod cofounder Tony Thomas said they tried to work it out with Golden Road, but the California brewers decided the names sounded too similar.
“We're struggling with coming up with a name that is as suitable as Goldenrod was to the Nebraska community,” Thomas said.
The brewery is hoping to come up with something similar to Goldenrod so that they will not have to rebrand.
Thomas hopes they will be up and brewing before Omaha Beer Week starts on February 14.

USA, MA: Wormtown Brewery moving into bigger facility in Worcester
|
Wormtown Brewery, which has been brewing several types of beer in a cramped former ice cream shop connected to Peppercorn's Restaurant on Park Avenue, Worcester, MA has leased about 10,00 square feet of new space on Shrewsbury Street, Worcester Telegram reported on November 21.
Master Brewer Ben Roesch said the brewery has leased space in the former Edward Buick building at 72 Shrewsbury St.
The building, which is also home to Volturno Restaurant, is a renovated former auto dealership. Wormtown plans to use the former dealership's detailing and repair bays as warehouse space.
Roesch said the move will happen next summer, and the brewery will eventually offer tours and tastings.
Wormtown Brewery had considered moving into warehouse-type space at Union Station, but that plan fell apart when the Worcester Redevelopment Authority offered to pay for some of the brewery's equipment as part of $400,000 loan order, but the costs for the equipment came in far above that. The loan was never approved, and the plan was officially scrapped by the WRA earlier this summer.
Wormtown Brewery brews Seven Hills Pale Ale, Be Hoppy IPA, Turtle Boy Blueberry Ale, Hopulence, and seasonal beers like Wormtown Pumpkin Ale and Wintah Ale.

USA, CO: New Belgium Brewing Company increases wood aging capacity
|
New Belgium is about to double its wood beer aging capacity by adding 32 new French Oak foeders to its Fort Collins, CO headquarters by the end of the year, bringing the brewery’s grand total of foeders to 64, according to Brewbound.
New Belgium began expanding its wood collection back in May, when it added 12 new foeders as part of a 140,000-barrel expansion project.
Beside the initial foeders, the expansion also created an additional 400 metric tons of malt capacity, four 2,200 hectoliter hL bright beer tanks and twelve 2,200 hl fermentation vessels.
The expansion allowed for current growth trends to be sustained while the brewery works to get its second production facility in Asheville, North Carolina online by 2015.
New Belgium plans to be distributed in all 50 states by 2018.

USA, CA: Barley Forge Brewing Co. to open in Costa Mesa early 2014
|
Barley Forge Brewing Co. has received federal and city approval to operate in Costa Mesa, California’s hip SOBECA district – making it the city’s first-ever Type 23 production brewery. State approval is pending final inspection, Brewbound reported on November 20.
Barley Forge will be a 15-barrel production brewery located in a 10,000 square-foot space making many different styles of beer, primarily ales but also some lagers within the first year. Beers will be available via on-premise and off-premise accounts and at the brewery’s public tasting room.
The brewery’s President and Co-founder Greg Nylen says, “The SOBECA area is a perfect location for us, with its mixed uses and Barley Forge’s potential synergy with the businesses there.” City of Costa Mesa Commissioner Colin McCarthy agreed at Barley Forge’s Conditional Use Permit hearing.
Barley Forge Brewing Co. plans to open in early 2014, pending final construction and staffing.

USA, FL: Wynwood Brewing Company is set to open
|
Miami's first production craft brewery is getting ready to open in the heart of Wynwood Art District, WLRN reported on November 21.
The building housing it was, not long ago, another piece of real estate in the old warehouse district. Owner Luis Brignoni, a Puerto Rican-American and Wynwood native, says he spent months working to get the necessary permits for a type of business the city had never seen before, in a part of Miami where zoning laws cause much debate.
After roughly one week of events promoting the brewery's soft opening in late September, WBC will be ready to open December 4.
Brignoni hired a new brewmaster just this November, now-defunct Gordon Biersch's Nik Mebane. Mebane, a Pennsylvania State grad, moved to Miami just four months before the Brickell brewpub shuttered. Before the move, he worked at Otto's Pub and Brewery in State College, PA.
Now he's in charge of producing Wynwood's La Rubia blonde ale, Pop's Porter and the brewery's other signature suds.

USA, CO: Strange Brewing settles trademark dispute with homebrew shop
|
After more than a year of heated exchanges, Denver's Strange Brewing Company has settled its contentious federal trademark battle with Strange Brew Beer & Wine Making, a Massachusetts homebrewing store. Neither company would disclose the details of the settlement until the paperwork has been signed. But the full terms will be revealed in the next few weeks, according to a joint statement released Thursday, November 21 by both companies, Westword reported.
Still, the statement hinted at what the settlement might involve, including the fact that Strange Brewing will be able to keep the word "Strange" in its name, and that the homebrew shop will retain its trademark and is planning to start its own brewery.
"As a small craft brewery, our objective is to create exceptional craft beer for our local, Denver community," said Strange Brewing co-founder Tim Myers in the statement. "We're extremely optimistic about the future and look forward to finalizing the agreement so that we can continue doing what we love -- brewing quality, small-batch craft beer."

USA, IL: Two Brothers Brewing to add new fermenters by the end of 2013
|
Two Brothers Brewing is set to expand its brewery with four new 200 barrel fermenters, developed by US-based Paul Mueller, before the end of 2013, Drinks Business Review reported on November 20.
Earlier Paul Mueller has developed six fermenters currently in use and a bright tank, where the brewery matures its beer and naturally carbonates through secondary fermentation.
The brewery will have 800 barrels of fermentation space with the addition of these new tanks, which will increase their cellar space 30%.
Two Brothers Brewing also plans to install a new centrifuge for the beginning of 2014. This centrifuge is under construction by GEA Westfalia of Germany.

Canada, AB & ON: Big Rock Brewery to release SAAZ Republic Pilz in Ontario
|
One of Canada's oldest and pioneering craft breweries is positioning themselves for a resurgence in Ontario. This week, Big Rock is releasing Saaz Republic Pilz, the first of three upcoming new releases in Ontario, MarketWatch reported on November 20.
Dating back to the mid-1800s, Pilsners are a pale lager in style that take their name from their birthplace: Pilsen, Czech Republic.
Brewmaster Paul Gautreau has created a Pilsner that pays homage to original European style Pilsners while continuing Big Rock's tenacious pursuit of local innovation. "I believe that in a craft segment dominated by ales, there is a place for a true European style Pilsner," says Paul. "SAAZ Republic Pilz is a light lager generously spiced with Czech hops which fills that niche."
SAAZ Republic Pilz has a distinct but mild bitterness on the front end followed by a slight hop middle and a clean, refreshing finish.
In addition to launching new brews to the province, Big Rock has appointed the newly launched Craft Brand Company as their new agency and branding partner in Ontario.

Australia: Asahi Premium Beverages to facilitate the production of one-off craft beers
|
Asahi Premium Beverages will acquire a pilot brewery to facilitate production of one-off beers for recently acquired boutique brand Cricketers Arms, as the Laverton, Victoria site increases its overall focus on beer, The Shout reported on November 22.
Beer currently represents just five per cent of the output of the former Independent Distillers facility, which to date has been predominately about production of ready-to-drink spirits.
But beer is forecast to eventually represent 25 per cent of production, following the redevelopment of the Laverton plant with considerable investment by new owner Asahi.
Unveiling the new kit this week, Asahi Premium Beverages CEO Greg Ellery told journalists the future growth in beer production will come from Cricketers Arms, as well as the company’s private label business, for which it already counts Coles, Woolworths and Aldi as customers.
“It’s very common knowledge, we’re very acquisitive,” he added.
“We’ll continue to buy businesses that we believe fit our portfolio.”
Ellery said Cricketers Arms will be developed to an optimum scale of 400,000-plus cases annually, which he believes would still preserve its credibility as a craft beer brand.
“How big do you take Cricketers before it loses its sexiness [or] quirkiness? We won’t take it over that level,” he said.

Molson Coors and Coca-Cola Amatil executives introduced Australian publicans to the Blue Moon craft beer range this week, as CCA reaffirmed its ambitions for its December 17 re-entry into beer and cider, The Shout reported on November 22.
At the Sydney launch function at Black By Ezard restaurant, CCA managing director of Australian Beverages, John Murphy told customers the company has retained valuable intellectual property from its previous beer venture, enabling it to hit the ground running in a few weeks’ time.
He was referring to capabilities such as draught beer services, CCA’s FORMULA app and on-line beverage training technology, its in-house point of sale and promotions agency and existing beer and cider sales force.
“We’ve spent the last two years getting ready,” he said.
“A lot of it’s been with your help as well and a lot of other customers in Australia as to how we would do that.”
“Tonight, we won’t be able to take any orders, but we can take IOUs,” Murphy joked.
The dinner was hosted by Blue Moon founder and brewmaster Keith Villa, who introduced the brand’s flagship Belgian White Ale, which is served with an orange garnish.

China: Craft beer pubs proving to be hugely popular in Beijing
|
Brew pubs offering hearty English-style real ales and beers with unusual ingredients such as watermelon, Sichuan peppers and tea are proving to be hugely popular in Beijing, packed with drinkers who, at last, have an alternative to bland local offerings, South China Morning Post reported on November 22.
The main three newcomers, Great Leap Brewing, Slow Boat Brewery and Jing-A Brewing Company, initially targeted their craft beers at expatriates. They knew they would have a ready-made clientele of British, Americans and Germans pining for the high alcohol-content beer and pub atmosphere of their homelands.
But the alehouses have quickly developed a strong following of mainlanders, who have acquired a taste for more complex beers. All nationalities appreciate that the craft ales are brewed with real expertise - and sold at prices that undercut already-established outlets serving imported keg beers.
Serious drinkers, especially those who endured the wasteland years of having a choice of only bland lager, or paying a hefty price for a properly brewed pint at the German-style brauhaus operations, still can't quite believe places such as Great Leap Brewing offer up to 16 beers at any one time, all brewed on the premises by owner Carl Setzer.

Australia: Australia’s most expensive beer hits shelves
|
With a recommended retail price of A$99 for 750ml, Crown Ambassador Reserve Lager 2013, Australia's most expensive beer, has hit retailers' shelves, Food Magazine reported on November 22.
Ten thousand individually boxed bottles of the beer, Carlton and United Breweries' (CUB) sixth vintage, are now available, and were brewed from 100 percent Australian malt and hops, it is reported.
CUB produces the beer once a year to coincide with the Myrtleford, Victoria hop harvest, using Galaxy hops which are hand harvested and added to the kettle within 24 hours.
A portion of the beer is matured in French oak barrels, and the product boasts a 9.6 percent alcohol content. This, combined with its level of hops, means the beer can be cellared.
